Background: Elimination of gluten-containing cereals and consumption of ultra-processed gluten-free foods might cause an unbalanced diet, deficient in fiber and rich in sugar and fat, circumstances that may predispose celiac children to chronic constipation. Aim: to evaluate if counseling with a registered dietitian (RD) was capable of improving eating and bowel habits in a celiac pediatric population. Methods: Dietetic, lipid profile and stool modifications were analyzed, comparing baseline assessments with those twelve months after receiving heathy eating and nutrition education sessions. At both time points, 3-day food records, a bowel habit record and a lipid panel were conducted. Calculated relative intake of macro- and micro-nutrients were compared with current recommendations by the European Food Safety Authority (EFSA). Student’s paired t-test, McNemar test, Mandasky test and Pearson correlation tests were used. Results: Seventy-two subjects (58.3% girls) with a mean (standard deviation (SD)) age of 10.2 (3.4) years were included. Baseline diets were imbalanced in macronutrient composition. Significant improvements were observed in their compliance with dietary reference values (DRVs), where 50% of the subjects met fat requirements after the education and 67% and 49% with those of carbohydrates and fiber, respectively (p < 0.001). Celiac children decreased red meat and ultra-processed foods consumption (p < 0.001) and increased fruits and vegetables intake (p < 0.001), leading to a reduction in saturated fat (p < 0.001) and sugar intake (p < 0.001). Furthermore, 92% of the patients achieved a normal bowel habit, including absence of hard stools in 80% of children constipated at baseline (p < 0.001). Conclusions: RD-led nutrition education is able to improve eating patterns in children with celiac disease (CD).

Abstract The gluten free (GF) diet is the only treatment for celiac disease (CD). While the GF diet can be nutritious, increased reliance on processed and packaged GF foods can result in higher fat/sugar and lower micronutrient intake in children with CD. Currently, there are no evidence-based nutrition guidelines that address the GF diet. The objective of this cross-sectional study was to describe the methodological considerations in forming a GF food guide for Canadian children and youth (4-18 years) with CD. Food guide development occurred in three phases: 1) evaluation of nutrient intake and dietary patterns of children on the GF diet, 2) pre-guide stakeholder consultations with 151 health care professionals and 383 community end users, and 3) development of 1260 GF diet simulations that addressed cultural preferences and food traditions, diet patterns and diet quality. Stakeholder feedback identified nutrient intake and food literacy as important topics for guide content. Except for vitamin D, the diet simulations met 100% macro- and micronutrient requirements for age-sex. The pediatric GF plate model recommends intake of >50% fruits and vegetables, <25% grains and 25% protein foods with a stronger emphasis on plant-based sources. Vitamin D fortified fluid milk/unsweetened plant-based alternatives and other rich sources are important to optimize vitamin D intake. The GF food guide can help children consume a nutritiously adequate GF diet and inform policy makers regarding the need for nutrition guidelines in pediatric CD.

Abstract Objectives To assess the overall nutritional quality of meals chosen by undergraduate students during weekday lunches at campus all-you-care-to-eat dining halls. Methods A previously validated exit survey was used to collect self-reported data from undergraduate students on foods and beverages they consumed during a single visit to two all-you-care-to-eat dining halls on the George Mason University Fairfax campus, during 4 weeks. (n = 468) Nutritional quality of each meal was evaluated on a 7-point rubric, according to the ‘Wellness Meal’ standards from the Partnership for a Healthier America: ≤700 kilocalories, ≤10% calories from saturated fat, ≤800 mg sodium, ≥2 ounces whole grains, ≥1 cup lowfat dairy, ≥ 1.75 cups fruits and vegetables, and ≥ 2 ounces lean protein. Results Of the maximum score of 7 on the meal nutritional quality rubric, 4 participants earned the highest score of 5, whereas 43, 150, 132, 88, and 51 participants had scores of 4, 3, 2, 1, and 0, respectively. The most commonly attained rubric standard was saturated fat, where 60% of participants consumed ≤ 10% calories from saturated fat and average consumption was 9.1% (± 5.4%) of calories. The least achieved rubric category was lowfat dairy, where only 2% of students consumed 1 cup equivalent, followed by only 9% of participants having consumed the 2 ounce equivalent of whole grains. Approximately one-third of students met calorie, lean protein, sodium, and fruit/vegetable standards. Conclusions Despite a wide variety of food options in the campus all-you-care-to-eat dining halls during the lunch hours, most undergraduate students consumed meals of subpar nutritional quality, with the vast majority meeting fewer than half the categories on the meal nutritional quality rubric. All-you-care-to-eat university dining halls may be a prime location for nutrition education and interventions. Introduction Celiac disease (CD) is an enteropathy that requires a gluten-free diet (GFD), a restriction often generating nutritional imbalances Objective. to assess the nutritional status of a pediatric CD population. Population and methods. Among 84 CD patients recruited, 64 were retained (37 F/27M) and aged 1-<17 years old (1-<5 y (n=24), 5-<10 y (n=17), and 10-<17 y (n=23)). The anthropometric measurements, parents education level and profession were collected. Eating habits, GFD quality, daily energy expenditure (DEE) were evaluated. Food consumption was estimated by a 24 hour recall, followed by a 3 day record. Results were compared to the recommended intakes (RI). Results. Nine % of 1-<5 y CD were thin, and 19% were overweight/obese. Significant improvement of body mass index (BMI) z-score was noted in CD girls (p<0.0001), and boys (p<0.01), after GFD. Non-existent breakfast was noted in 23% of children and 22% of adolescents. Sugary drinks consumption was observed in 38% of 1-<5 y infants, and snacking was found in 79% of them, as well as, in half of 5-<10 y, and 10-<17 y population. Twenty six % of adolescents had GFD voluntary deviations. Energy balance (total energy intake (TEI) - DEE) was positive in 5-<10 y, and negative in 10-<17 y. In all CD population, breakfast energy intake was lower than RI, but was important for snack time, also during morning snack in 1-<5 y and 5-<10 y infants. Simple carbohydrates and saturated fatty acids intakes were higher than RI, and iron and vitamin (Vit.) D deficiency was noted in CD population. Adolescents had low calcium and zinc intakes. Conclusion. The studied CD pediatric population presents some nutritional imbalances, requiring a dietary monitoring.

Evidence points to a link between gluten-free diet or celiac disease and eating disorders, but not with orthorexia. This study is the first to examine adults with celiac disease in terms of the prevalence of risk of orthorexia. The study included 130 adults diagnosed with celiac disease. The standardized ORTHO-15 questionnaire was used to assess the risk of orthorexia. Cronbach's alpha test was used to determine the reliability of the ORTHO-15 questionnaire. Eating habits of the subjects were assessed using a questionnaire. The effect of celiac disease on diet was assessed on a 5-point scale. A risk of orthorexia was found in 69% of subjects with celiac disease. A statistically significant (p&amp;lt;0.005) positive correlation was observed between age and ORTHO-15 test scores (rho=0.37). In the group with orthorexia risk, meals were more often self-prepared (93.3%) compared to those without orthorexia (80%) (p=0.023). For 80% of those at risk for orthorexia versus 20% without risk, mood was a factor influencing dietary choices (p=0.001). The study observed a strong association between celiac disease and the presence of orthorexia risk. The numerous risk factors for orthorexia suggest the need for holistic care, including nutritional and psychological support among individuals with celiac disease.

Background: Celiac disease is a chronic autoimmune disease triggered by gluten exposure in genetically predisposed individuals. A life-long intake of a gluten-free (GF) diet is required for its management. Wheat, rye and barley are eliminated in a GF diet and the nutritional adequacy of the diet has been questioned. In Norway, cereals and bread constitute a key role of the diet and are the main source of fiber intake. Gluten restrictions may therefore offer important implications for nutrient adequacy especially linked to fiber intake in people with celiac disease. Objective: The aim of the study was to investigate the nutritional quality and price of GF products and compare with gluten-containing counterparts available at instead of in the Norwegian market. Design: The macronutrient content of 423 unique GF products were compared with 337 equivalents with gluten. All products were selected from grocery stores and web-based shops, with the aim of including as many GF products as possible. Listed macronutrients content and price in 11 different food categories were compared to gluten-containing counterparts with Wilcoxon signed rank test. Results: The GF products contained less protein and fiber, and higher content of saturated fat, carbohydrate and salt compared to the gluten-containing products. The total amount of fat was not different between the groups. A similar pattern was found within several of the food categories. More gluten-containing products met the nutrition claim “high in fiber” (fiber > 6 g/100 g) compared to the GF products. The price of the GF products was higher; ranging from 46%–443% more expensive than the gluten-containing products. Conclusion: GF products are less nutritious and have a higher price compared to equivalent gluten-containing products. Knowing that an unhealthy diet is the most important risk factor for developing non-communicable diseases, the nutritional quality of a GF diet needs to be addressed and should be improved.

Abstract Objectives The Supplemental Nutrition Assistance Program Education (SNAP-Ed) offers complementary education programs to improve public health through improving nutritional behavioral habits in preschoolers in Washington D.C. This study examines the influence of the SNAP-Ed program on changing a set of positive nutritional behaviors in preschoolers to encourage healthier eating habits. These nutritional behavioral changes include recognizing, choosing, and consuming nutritious and healthy foods. Methods The SNAP-Ed program implemented nutritional education in 37 preschools, schools, and community centers located in Washington D.C for Fiscal Year 2019. During the program, the nutritional behavior of 1679 children aged 2 to 5 years old was examined before and after educational interventions. Interventions focused on the types and the related benefits of different groups of foods including fruits, vegetables, dairy, and whole grains. Designed questionnaires were filled out by 130 teachers based on their observations of the children's nutritional behavioral habits. Teachers were asked if children had an increase in the amount of food consumption from different groups. Children were also observed for an increase in independently choosing healthier foods. Results The SNAP-Ed program observed a positive change in all questions in comparison to the beginning of the program. According to the questionnaires, there were 75%, 75%, 78%, and 75% increases in the amount of fruits, vegetables, dairy, and whole grains preschoolers consumed, respectively. After the educational interventions, 78% of preschoolers showcased healthy food choices, 76% of them selected fruits and vegetables in the cafeteria and 75% of them brought fruits and vegetables as a healthy snack. Conclusions SNAP-Ed nutrition education positively changed preschoolers’ nutritional knowledge and established healthier eating habits. Further research, done in multiple states, is essential to enhance the knowledge of preschoolers nationwide. More research can also be done to examine how effective nutritional education was between SNAP eligible and non-eligible preschoolers. Abstract Objective: To explore adolescents' views about the foods they consume and to identify their ideas about strategies to encourage healthier eating habits. Design: Individual questionnaires based on open-ended questions and group discussions (6-8 participants) were used to address the objectives. Data were analyzed using content analysis based on deductive-inductive coding. Setting: Montevideo and its metropolitan area (Uruguay, Latin America). Participants: 102 adolescents (aged between 11 and 15 years old, 52% female) recruited at two educational institutions. Results: Adolescents reported frequently consuming ultra-processed products and fast food although they were perceived as bad for their health, whereas they reported an infrequent consumption of fruits and vegetables. Multifaceted strategies to promote healthy eating habits emerged from adolescents' accounts, including public awareness campaigns, nutrition education programs, nutrition label standards and regulations, and changes in food availability and affordability. Conclusions: Results from the present work suggest that co-creation with adolescents may be an effective way to inform the development of strategies to promote healthier eating habits. The strategies suggested by adolescents were mainly focused on behaviour change communication, who emphasized the importance of social media and the involvement of celebrities and influencers. The need for educational and communication strategies to raise awareness of the social and environmental drivers of eating patterns among adolescents was identified.

O presente artigo é oriundo de estudo acerca das ações que envolvem o Projeto de Extensão: O papel da alimentação saudável para a promoção da saúde “Programa 5 ao dia” realizado em escolas públicas municipais do Maciço de Baturité, Ceará. O Público alvo são alunos do 9° ano do ensino fundamental. Os discentes são oriundos de quatro instituições de ensino situadas em Acarape, Barreira, Baturité e Redenção. O recorte temporal compreende o período de junho de 2018 a janeiro, 2019. A investigação objetiva traçar o perfil do consumo diário de frutas e hortaliças dos educandos, tanto no convívio familiar como no ambiente educacional, e contribuir para uma prática alimentar mais saudável. Para tanto, foram realizadas oficinas, seminários, cursos e jogos educativos. Dentre as abordagens temáticas pode-se destacar a relevância de uma alimentação saudável e nutritiva; o consumo de frutas e hortaliças; a higienização e conservação de alimentos. O estudo contempla critérios teórico-metodológicos da pesquisa bibliográfica exploratória, com constatações in loco e aplicação de questionários, com perguntas semi-estruturadas. Salienta-se que após a realização das atividades foi aplicada uma avaliação para mensurar o impacto do projeto junto à comunidade. A partir dos dados coletados, pode-se perceber que os educandos ampliaram suas percepções/aprendizados sobre a relevância de uma dieta equilibrada, composta por alimentos saudáveis, saborosos e nutritivos, e que a construção de bons hábitos alimentares contribui significativamente para o desenvolvimento biopsicossocial do indivíduo. Palavras-chave: Educação; Segurança alimentar e nutricional; Adolescência   The prophylactic and pedagogical reflexes of the nutrition education in the schools of Baturité Massif, Ceará Abstract: This article is based on a study about the actions that involve an Extension Project: The role of healthy eating for health promotion “Program 5 a Day” held in municipal public schools of the Baturité massif, in Ceará. The target audience was students of the 9th grade of elementary school. The students originate from four educational institutions located in Acarape, Barreira, Baturité, and Redenção. The temporal clipping comprises the period from June 2018 to January 2019. The research aims to outline the profile of daily consumption of fruits and vegetables of the students, both in the family life and in the educational environment, and contribute to a healthier eating practice. Workshops, seminars, courses, and educational games were held. Among the thematic approached, one can highlight the relevance of a healthy and nutritious diet; Consumption of fruits and vegetables; Hygiene, and Food Preservation. The study contemplates theoretical and methodological criteria of exploratory bibliographic research, in loco findings and application of questionnaires, with semi-structured questions. It is noteworthy that after performing the activities, an evaluation was applied to measure the impact of the project with the community. From the data collected, it can be perceived that the students expanded their perceptions/learnings about the relevance of a balanced diet consisting of healthy, tasty, and nutritious foods and that the construction of good eating habits contributes significantly to the bio-psychosocial development of the individual. The University of the District of Columbia is a partner of the Northeast Hatch Multistate Research Collaborative. This research project, known as the UDC NE 1439, was designed as a pilot study to determine the barriers that prevented the consumption of fresh fruits, vegetables, and whole grains among older adults in Wards 5, 7, and 8 in the District of Columbia (DC). The residents of these wards have been shown to have higher rates of chronic diseases. Data shows that Ward 7 has the highest rate of deaths due to diabetes. Furthermore, Wards 5, 7, and 8 have the highest percentage of hypertension and diabetes This project used a quantitative and qualitative survey instrument, which included 53 questions and/or statements using a Likert scale: demographics (8 questions); household information (2 questions); shopping habits (8 questions); eating habits, including the identity of the person who prepared meals in the home (21 questions); physical fitness (11 questions); and policy (3 questions). Ninety-six (96) older adults participated in the survey, with a gender distribution of 77% female (68 individuals), 22% male (24 individuals), and 1% not reported (1 individual). The racial distribution of the participants was 91% (87) African American, .01% (one) Asian American, .01% (one) Caucasian, .01% (one) Native American, and .03% (three) others/not reported. Additionally, according to the participants’ residency results, Ward 5 accounted for 23% of the participants (24 participants), Ward 7 for 38% (33 participants), and Ward 8 for 38% (33 participants). The participants’ average age was ≥ 56, (45 to 76 and over) and most were the primary financial supporters of their households and the primary grocery shoppers in their families. In conclusion, this project determined that access to fresh fruits and vegetables and travel time to a full-service grocer were less prominent barriers; this was an unexpected finding. Though the participants indicated sufficient access to fresh fruits, vegetables, and whole grains, they lacked nutrition-based knowledge. Many of them viewed unfitting food choices as healthy. An intervention centered on nutrition education using food demonstrations and grocer tours would improve nutrition knowledge in this population. This offered these nutrition and dietetics research assistants with an opportunity to provide nutrition education to the population in question. Moreover, it presents an opportunity to extend nutrition education to all seniors across the Washington, DC region.
