Influence of soaking temperature and time on the kinetics of water absorption and pasting properties of glutinous rice

AbstractThe physical properties and water absorption kinetics of three varieties of Mucuna beans (Mucuna pruriens, Mucuna rajada and Mucuna veracruz) were determined in this study. Physical properties including length, width, thickness, geometric mean diameter, sphericity, porosity, bulk density, area, volume and one thousand seed mass were calculated while hydration kinetics was studied by soaking Mucuna beans in water at 30 °C, 40 °C and 50 °C and measuring water uptake at 9 h interval. Peleg’s equation was used to model the hydration characteristics and Arrhenius equation was used to describe the effect of temperature on Peleg’s rate constant k1 and to obtain the activation energies for soaking. Significant variations were observed in almost all the physical properties of the different varieties, however, there were no significant differences (p < 0.05) in their thicknesses and bulk densities. The effectiveness of fit of Peleg’s model (R2) increased with increase in soaking temperature. Peleg’s rate constant k1 decreased with increase in soaking temperature while k2 increased with temperature increase. Activation energies of Mucuna pruriens, Mucuna rajada and Mucuna veracruz were 1613.24 kJ/mol, 747.95 kJ/mol and 2743.64 kJ/mol, respectively. This study provides useful information about the properties of three varieties of Mucuna beans that could be of importance to processors and engineers for process design and optimization.

Purpose Here, attempts have been made to explore the possible use of Marine waste as filler materials into the bio-fibre composites. Clam shell is a type of marine waste which belongs to the class of Bivalvia. It is mainly made of aragonite crystalline polymorphs. This paper aims to develop a new class of natural fibre composite in which jute fibre as reinforcement, epoxy as matrix and clam shell, as particulate microsphere filler. The study investigates the effects of different amounts of clam shell powder on the kinetics of water absorption of jute fibre-reinforced epoxy composite. Two different environmental conditions at room temperature, i.e. distilled water and seawater, are collected for this purpose. Moisture absorption reduces when clam shell is added to the jute-epoxy composite. The curve of water absorption of jute-epoxy composites with filler loading at both environmental conditions follows as Fickian behaviour. Design/methodology/approach Hand lay-up technique to fabricate the composite – Experimental observation Findings The incorporation of Clam shell filler in jute epoxy composite modified the water absorption property of the composite. Hence the present marine waste is an potential filler in jute fibre reinforced polymer composite. Originality/value The paper demonstrates a new class hybrid composite material which uses a marine waste as important phase in the bio-fibre-reinforced composite. It is a new work submitted for original research paper.

Abstract Pupuru and pupuru analogues are fermented, smoked food products usually produced from cassava or cassava substituted with a varying ratio of breadfruit. This study aims at determining and comparing the functional and pasting characteristics of pupuru and pupuru analogues with a view to expanding the utilization of breadfruit as pupuru analogue. The functional properties (water absorption capacity (%), swelling power (g/g), solubility (%)) and pasting characteristics were determined using standard methods. The results showed that the yield of the products ranged between 24.66 and 29.65%, and it was not affected by the amount of breadfruit substituted. The water absorption capacities of the pupuru and pupuru analogues ranged between 216.0 and 449.0%; this parameter increased with temperature increase. Both swelling power and solubility had a rapid increase from 80 °C to 90 °C. Pasting temperature ranged between 73.15 and 83.66 °C, with peak time between 4.58 and 5.33 min. The final viscosity ranged between 94.08 and 391.83 RVU, and it decreased with increase in breadfruit substitution. The study concluded that adding breadfruit to cassava in pupuru analogue production improved some of the functional and pasting properties of the product.

Amadumbe commonly, known as taro is a traditionally underutilised tuber crop in Southern Africa. Nutritionally, amadumbe corms contain appreciable levels of carbohydrate mainly in the form of starch which is resistant to digestion. It also contains mucilage, a soluble fibre, which is good for the human digestive health. Thus, amadumbe starch and mucilage can be used as functional ingredients in food formulations. The aim of this research was to investigate the effects of genotypes and growth location on the physicochemical properties of amadumbe flour and starch. Eighteen (18) amadumbe genotypes grown in Roodeplaat, Gauteng and Umbumbulu, Kwazulu-Natal, South Africa, were studied. Roodeplaat received a lower annual average rainfall (514 mm) and high environmental temperature (24oC) compared to Umbumbulu (828 mm, 19oC) during the cropping season. Specifically, the influence of growth location and genotypes on the chemical composition (proximate composition and mineral contents) as well as the functional properties of amadumbe flours were investigated. Furthermore, starch was extracted and its physicochemical and functional properties were also studied. The carbohydrate contents (73-81%) of amadumbe flours were substantially high and varied with growth location. Mucilage contents (6-9%) were very low across genotypes in both locations. Water absorption and oil absorption capacities positively correlated to carbohydrates and mucilage in the flour irrespective of growth locations. Swelling power and solubility index was influenced by the amylose content of the flour. Genotype and growth location significantly affected the pasting properties of amadumbe flour. The pasting temperature was very high (approx. 90oC) across genotypes in both locations, while peak viscosity differed significantly (54-242 RVU) for genotypes grown in different environments. The amylose contents (0-14.4%) of amadumbe starches were low and varied significantly with growth location and among genotypes. Three genotypes, G2, G20, and G21 grown in Roodeplaat lacked amylose. Amadumbe starches showed reflective peaks at 2θ=15o and doublet at 17o, 18o and 24o typical of A-type starches. Amadumbe genotypes had small sized (1-5 µm) and polygonal starch granules. Functional properties including water absorption, swelling power, gelatinisation temperature and peak viscosity significantly positively correlated with amylose content. These findings further suggest that water availability could have a major effect on starch synthesis as the two locations received a different amount of rainfall during the growing season. Findings from this study are important for future improvement programmes and selection of appropriate genotypes for industrial production or food application of amadumbe flour and starch.

Adhesion, physicomechanical properties, and also kinetics of water absorption of priming coatings on basis the E-41 epoxy resin modified by liquid Thiokol 1 and by Laproxide AF, and also their phase structure are investigated. As hardeners of primer compositions organic silicon ammine ASOT-2 and low-molecular polyamide PO-200 has been used. It is shown that use of the reactive modifier Laproxide AF and hardener ASOT-2 in the epoxy and thiokol film-formers allows to receive priming coating with uniform finely divided phase structure with low porosity and high water resistance.

Abstract Shallot harvesting and processing produce various waste streams, and the current study aims to investigate the effects of shallot bio-waste powder (SWP) substitution on different flour properties. Increased SWP to 50% substitution of stalk and petiole showed a rise in swelling capacity (43.33%) and water absorption (342.22%), and oil absorption (320.73%), respectively. Foaming capacity improved from 48.00% in control to 60.26% in 30% flower substitution and further decreases to 51.28% at 50%. Pasting properties reduced at higher SWP substitution and the highest drop in peak viscosity was observed at Stalk-50 (457.33 cP). Subsequently, developed functional cookies showed enhanced fiber, ash, total phenol, and total flavonoids with 3, 2, 7, and 5 fold, respectively. Cookies developed with higher substitution were of darker color and higher hardness and fracturability. Sensory evaluation with fuzzy analysis revealed better acceptance for stalk and petiole (10%) and peel (5%) of final cookies with elevated nutritional value.

Researches in plant fiber composites have been developed with greater frequency during the last years, especially on environmental issues. The opening of the market, especially in the automotive sector, points to the replacement of synthetic additives by natural reinforcements. Characteristics such as low density and abrasiveness, superior mechanical properties and low cost are the most sought in these composites. The aim of this study was to evaluate the behavior of composites based polyester matrix and fiber of the babassu coconut epicarp, at levels of 5, 7.5 and 10% under testing of tensile strength and impact, as well as the morphology by microscopy scanning electron and water absorption. All composites were prepared raw fibers and fiber with treated with alkaline solution of 5% NaOH. As regards the mechanical properties, an increasing of the rigidity of the system was observed, and the kinetics of water absorption increased levels indicated for compounds with high content of fibrous reinforcement. By SEM there was greater interaction between fiber and matrix.
