Food Worker Hand Washing Practices: An Observation Study

Improvement of food worker hand washing practices is critical to the reduction of foodborne illness and is dependent upon a clear understanding of current hand washing practices. To that end, this study collected detailed observational data on food worker hand washing practices. Food workers (n = 321) were observed preparing food, and data were recorded on specific work activities for which hand washing is recommended (e.g., food preparation, handling dirty equipment). Data were also recorded on hand washing behaviors that occurred in conjunction with these work activities. Results indicated that workers engaged in approximately 8.6 work activities per hour for which hand washing is recommended. However, workers made hand washing attempts (i.e., removed gloves, if worn, and placed hands in running water) in only 32% of these activities and washed their hands appropriately (i.e., removed gloves, if worn, placed hands in running water, used soap, and dried hands) in only 27% of these work activities. Attempted and appropriate hand washing rates varied by work activity—they were significantly higher in conjunction with food preparation than other work activities (46 versus ≤37% for attempted hand washing; 41 versus ≤30% for appropriate hand washing) and were significantly lower in conjunction with touching the body than other work activities (13 versus ≥27% for attempted hand washing; 10 versus ≥23% for appropriate hand washing). Attempted and appropriate hand washing rates were significantly lower when gloves were worn (18 and 16%) than when gloves were not worn (37 and 30%). These findings suggest that the hand washing practices of food workers need to be improved, glove use may reduce hand washing, and restaurants should consider reorganizing their food preparation activities to reduce the frequency with which hand washing is needed.

PurposeThe purpose of this paper is regarding the execution of business processes by Business Process Management Systems (BPMS), during design-time modelers have to specify the potential performers of a work activity according to their organizational position or role. Once several workers may share the same role, at run-time all of them (indistinctively) can be assigned by BPMS to execute a work activity. However, distinct individuals have different personality traits and, for certain instances of work (requiring, for example, specific soft skills) some of them might perform better. A new approach to work distribution in business processes supported by BPMS, which takes into account the psychological characteristics of workers was proposed.Design/methodology/approachAs stated in Section 3 of the paper, in this work the Design Science Research (DSR) methodology, as proposed by Kuechler and Vaishnavi (2008) was used. All the five steps, from the “Awareness of problem” to the “Conclusion” were accomplished, being described in the paper.FindingsIt is demonstrated that, by using the proposed approach, BPMS might deliver work to people in a more effective way, by selecting those workers that seem to be more suitable to accomplish each particular piece of work, taking into account the characteristics of the work itself and the specific profiles of the workers eligible to execute it.Originality/valueBPMSs are responsible for the execution of business process models, by delivering work activities to suitable agents (human or artificial), which execute them. Addressing a gap in the BPM literature, this paper presents a new approach for improving work distribution in business processes supported by BPMS, enabling to assign (in run-time) the most suitable workers to perform specific work activities, grounded on the concept of psychological profile and taking into account technical, human and social aspects.

Introduction: The purpose of this study was to describe the job-seeking and work experiences of transition-age youths with visual impairments. Methods: We analyzed follow-up data from a quasi-experimental study of a job-search intervention conducted from 2016 to 2019. Participants were 88 youths with visual impairments from three states; approximately half received the job-search intervention, and the other half served as a comparison group. Measures included job-search activities and outcomes, job-seeking barriers, volunteer and work experiences, and parental support for job-seeking. Results: Commonly reported job-search activities were preparing or revising resumes, talking to people about jobs, submitting applications, and submitting resumes, but most participants performed these activities infrequently. Many job-seekers encountered barriers during their job search, and few searches resulted in paid employment. Participants generally reported moderate levels of preparation to handle job-seeking barriers and parental support for job-seeking. Intervention and comparison participants had similar results on most measures, with few exceptions. Discussion: When youths actively search for a job but do not find one, their motivation to continue job-seeking may be reduced, particularly if their preparedness to overcome job-seeking barriers is low. Although many participants had some engagement in volunteer or work activities, short-term work experiences were the most common—and perhaps most misunderstood—work activity. Implications for practitioners: Youths with visual impairments may benefit from feedback on their job-seeking approach, application materials, and interview skills so they can make changes and determine how to focus or refocus their efforts. In addition to offering feedback, service providers can provide ongoing support to youth job-seekers and encourage them to persist in their job search. Explicit discussions about different types of work activities may help transition-age youths understand how short-term work experiences differ from paid jobs.

ABSTRACT Background Wearing a dental prosthesis is known to increase oral candidal colonization and predispose the wearer to oral candidosis. Denture wearers frequently use fingers to take the prosthesis out of their mouth. Oral Candida, if present may contaminate wearer's finger. The objective of this study was to investigate the simultaneous candidal colonization of oral cavity and fingertips of complete denture wearers. Materials and methods A total of 25 apparently healthy male subjects who had worn complete dentures for at least 1 year were selected. Information about each patient's denture age, denture hygiene, handling, and wearing habits, and hand washing habits after denture handling were be obtained. Intraoral examination of all the patients was done. For microbiological examination samples were collected from the fingertip and oral rinse of each patient. Candida species were identified with use of germ tube test and commercially available yeast identification system. Data was statistically analyzed. Significance was set at p < 0.05. Results It was found that frequency of hand washing, denture handling and denture stomatitis with respect to fingertip candidal isolation was not statistically significant. But poor denture hygiene and denture stomatitis with respect to oral candidal colonization was statistically significant. Conclusion Denture wearers with oral Candida had a higher prevalence of Candida contamination on their fingers. Patients with removable prostheses should be informed about the importance of proper prosthesis and personal hygiene and the possibility of microbial contamination of the hands and other parts of the body. Handwashing with soap is an effective and economical means to reduce the likelihood of Escherichia coli infection from indirect contact with contaminated surfaces during food preparation. The purpose of this study was to conduct a quantitative microbial risk assessment (QMRA) to evaluate the risk of infection from indirect contact with fomites contaminated with E. coli after hand washing with antimicrobial hand soaps. A Monte Carlo simulation was done with a total of 10,000 simulations to compare the effectiveness of two antimicrobial and one control (non-antimicrobial) bar soaps in reducing the exposure and infection risk compared to no hand washing. The numbers of E. coli on several fomites commonly found in household kitchens, as well as the transfer rates between fomites and onto fingertips, were collected from the literature and experimental data. The sponsor company provided the E. coli survival on hands after washing with antimicrobial and control soaps. A number of scenarios were evaluated at two different exposure doses (high and low). Exposure scenarios included transfer of E. coli between meat-to-cutting board surface-to-hands, meat-to-knife surface-to-hands, and from a countertop surface-to-hands, kitchen sponge-to-hands, hand towel-to-hands, and dishcloth-to-hands. Results showed that the risks of illness after washing with the control soap was reduced approximately 5-fold compared to no handwashing. Washing with antimicrobial soap reduced the risk of E. coli infection by an average of about 40-fold compared with no handwashing. The antimicrobial soaps ranged from 3 to 32 times more effective than the non-antimicrobial soap, depending on the specific exposure scenario. Importance: The Centers for Disease Control and Prevention indicate the yearly incidence rate of Shiga Toxin producing E. coli infections is about 1.7/100,000, with about 10% of cases leading to life-threatening hemolytic uremic syndrome and 3–5% leading to death. Our findings confirm handwashing with soap reduces the risks associated with indirect transmission of E. coli infection from contact with fomites during food preparation. Further, in these exposure scenarios, antimicrobial soaps were more effective overall than the non-antimicrobial soap in reducing exposure to E. coli and risk of infection.

This paper investigates the outdoor non-work activity allocation behaviors of commuters in Xiaoshan District of Hangzhou, China, as well as the underlying relationship among different types of outdoor non-work activities. As per their commute and work schedules, commuters’ outdoor non-work activities are classified into six categories and considered as binary dependent variables for modeling analysis, including from home before work, on commute way from home to work, going home during work, going out (not going home) during work, on commute way from work back home, and from home after work. Independent variables include commute attributes, work schedules, sociodemographic attributes, and built-environmental attributes. A multivariate probit model is developed to explore the effects of explanatory variables and capture correlations among unobserved influential factors. The model estimation results show that daily work time, education years, and traffic zone have substantial impacts on commuters’ non-work activity allocations. As for the underlying relationship among unobserved factors, a positive correlation is found between the outdoor non-work activities on commute way to and from work, indicating a mutually promotive relationship. All other correlations are negative, indicating other types of non-work activities are mutually substitutive. These findings will help to better understand commuters’ behaviors of outdoor activity arrangement subject to the time-space constraint from fixed work schedules, and shed some light on the mechanism of complex work tour formation, so as to guide the development of activity-based travel demand models for commuters.

During various daily activities at home and work, hands quickly become contaminated. Some activities increase the risk of finger contamination by pathogens more than others, such as the use of toilet paper to clean up following a diarrheal episode, changing the diaper of a sick infant, blowing a nose, or touching raw food materials. Many foodborne outbreak investigation reports have identified the hands of food workers as the source of pathogens in the implicated food. The most convenient and efficient way of removing pathogens from hands is through hand washing. Important components of hand washing are potable water for rinsing and soaps to loosen microbes from the skin. Hand washing should occur after any activity that soils hands and certainly before preparing, serving, or eating food. Antimicrobial soaps are marginally more effective than plain soaps, but constant use results in a buildup of the antimicrobial compound on the skin. The time taken to wash hands and the degree of friction generated during lathering are more important than water temperature for removing soil and microorganisms. However, excessive washing and scrubbing can cause skin damage and infections. Drying hands with a towel removes pathogens first by friction during rubbing with the drying material and then by wicking away the moisture into that material. Paper rather than cloth towels should be encouraged, although single-use cloth towels are present in the washrooms of higher class hotels and restaurants. Warm air dryers remove moisture and any surface microorganisms loosened by washing from hands by evaporation while the hands are rubbed together vigorously; however, these dryers take too long for efficient use. The newer dryers with high-speed air blades can achieve dryness in 10 to15 s without hand rubbing.

OB-scene is a performance centred on a live sonification of biological data gathered in real-time with a medical vaginal probe (photoplethysmograph), made by the author. The use of the photoplethysmograph, which takes inspiration from the first medical vaginal probes used for diagnostic purposes by Masters and Johnson (1966) introduces a media-archaeological aspect to this work. Data gathered through the probe is processed and transformed into sound and visuals projected in the exhibition space. OB-scene takes inspiration from Jane Bennett’s Vibrant Matter (2010) in which she argues that human agency has echoes in non-human nature and vice versa, shifting away from anthropocentrism towards the concept of ‘vital materiality’ that runs across bodies, both humans and unhuman. Furthermore, OB-scene is affiliated with an emerging movement of women and technology called ‘XenoFeminism’ (XF). It introduces the idea of techno-alienation and focuses on the concept of other/diverse desires, new forms of desiring, experiencing something other (Laboria Cuboniks 2015). In this specific work, this takes the form of a technofeminism incorporating the fluid, the non-human and the diverse. In this performance, the body is fused with the technology, rather than empowered or enhanced by technology itself, body and technology become a unique actant (Latour 2009) enabling the audience to experience the sensorial assemblage as a space for communal experience with political implications. OB-scene is as an immersive environmental work where the senses, affect and memory were key features of ‘assemblage thinking’ (Hamilakis 2017).

Purpose The purpose of this paper is to integrate job demands–resources theory and the episodic process model to examine the relationships between episodic cognitive mechanisms (i.e. cognitive interference and attentional pull), work engagement and performance. It is hypothesized that an episode characterized by less cognitive interference and more attentional pull (i.e. attraction toward the work activity) is associated with the highest levels of work engagement and job performance. Additionally, it is hypothesized that episodic challenge/hindrance job demands boost/diminish the positive relationship between episodic job resources and work engagement. Design/methodology/approach Using experience sampling methodology, 48 employees used their smartphones to complete surveys three times a day for one week, resulting in 266 observations. Findings Results of multilevel analyses suggest that episodic hindrance job demands (but not challenge job demands) moderate the positive relation between job resources and work engagement. Originality/value This study is unique in that it captures fluctuating cognitive processes (i.e. attentional pull and cognitive interference) that take place during work activities.

When considering an effective, i.e. homogenized description of waves in periodic media that transcends the usual quasi-static approximation, there are generally two schools of thought: (i) the two-scale approach that is prevalent in mathematics and (ii) the Willis’ homogenization framework that has been gaining popularity in engineering and physical sciences. Notwithstanding a mounting body of literature on the two competing paradigms, a clear understanding of their relationship is still lacking. In this study, we deploy an effective impedance of the scalar wave equation as a lens for comparison and establish a low-frequency, long-wavelength dispersive expansion of the Willis’ effective model, including terms up to the second order. Despite the intuitive expectation that such obtained effective impedance coincides with its two-scale counterpart, we find that the two descriptions differ by a modulation factor which is, up to the second order, expressible as a polynomial in frequency and wavenumber. We track down this inconsistency to the fact that the two-scale expansion is commonly restricted to the free-wave solutions and thus fails to account for the body source term which, as it turns out, must also be homogenized—by the reciprocal of the featured modulation factor. In the analysis, we also (i) reformulate for generality the Willis’ effective description in terms of the eigenfunction approach, and (ii) obtain the corresponding modulation factor for dipole body sources, which may be relevant to some recent efforts to manipulate waves in metamaterials.
