Monosodium glutamate (MSG) is a food additive used in processed food.  Long time use of MSG causes oxidative stress and damages kidney. The lycopene contents in watermelon is potential in reducing oxidative stress. This research aimed to discover the effect of watermelon juice in preventing kidney damage in rats.30 Wistar rats were divided into 5 groups: four groups fed with 10 mg of MSG / g body weight; three groups of these also fed with 3 different concentrations of watermelon juice (25% in P1, 50% in P2, and 100% in P3) whereas the MSG only is as the control positive (KP). The fifth group is supplemented with water as the negative control (KN).Blood and kidney were takenafter 30 days experiment. The urea levels were significantly higher in P1 (p=0.00) and P3 (p=0.01) in compare to KN, by 67% and 54% respectively. Creatinine levels were significantly lower in all watermelon intake groups by 32-46% in compare to KP. Kidney damages were obvious in group KP (p=0.00) and P1 (p=0.01). This research demonstrated that MSG exposure causedkidney damages and decreased kidney function. Watermelon juice at the concentration of 50% is able to reduce kidney damages by 48%.

Watermelon (Citrullus lanatus) juice is known for its refreshing flavor, but its high perishability limits its availability throughout the year. Watermelon juice concentrate has extended shelf-life and lower transportation and storage costs, but the conventional thermal evaporation process for concentrating juice degrades the nutritional components and sensory quality of the product. Thus, in this work, a large-scale, non-thermal forward osmosis (FO) process was used to concentrate fresh watermelon juice up to 65°Brix. The FO concentrate was compared to thermal concentrate and fresh juices, and to commercially available refrigerated watermelon juices, in terms of lycopene and citrulline content, total soluble phenolics, antioxidant activity, and sensory properties. The FO concentrate had statistically similar (p < 0.05) levels of all the nutrients of interest except antioxidant activity, when compared to the thermal concentrate. The reconstituted FO concentrate maintained the same antioxidant activity as the raw source juice, which was 45% higher than that of the reconstituted thermal concentrate. Sensory results showed that reconstituted FO concentrate resulted in highly liked juice, and it outperformed the reconstituted thermal concentrate in the sensory hedonic rating. This work demonstrates the possibility to produce a high-quality watermelon juice concentrate by forward osmosis.

This study aimed to determine the effects of red fruit (Pandanus conoideus Lam) oil on MDA levels and spermatozoa quality in mice (Mus musculus) exposed to MSG. The quality includes motility, viability, concentration, and morphology of spermatozoa. This experimental study used randomized post-test only control group design. The subjects of this study were 25 mice (Mus musculus), divided into 5 groups (5 mice per group). K- group received distilled water for 35 days. K+ group received 4 mg/g BW MSG for 21 days. P1, P2, and P3 treatment groups received 4 mg/g BW MSG for 21 days and 0.02; 0.04; 0.08 ml/g BW red fruit oil, respectively, from day 22 to 35. The results showed that mean spermatozoa morphology in K-, K+, P1, P2, P3 groups were as follows: 0.86; 0.56; 0.67; 0.61; and 0.87 (%). The spermatozoa concentrations were sequentially as follows: 21; 10; 15; 32,8,19 (107 cells/ml). The spermatozoa's vitalities were as follows: 0,64; 0,14; 0,24; P2: 0.36; 0.68 (%). MDA levels were respectively: 0.29; 0.60; 0.35; 0.23; and 0.19 (nm). As a conclusion, testicular MDA levels in mice exposed to MSG and given with red fruit oil were lower than those in mice exposed to MSG without receiving red fruit oil. The quality of spermatozoa in mice exposed to MSG and receiving red fruit oil was higher than that of mice exposed to MSG without being given with red fruit oil.

This study was done to analyze the effect of chemical preservatives on watermelon juice. Ten different samples of pasteurized watermelon juices with different chemical preservatives, termed as T1, T2, T3, T4, T5, T6, T7, T8, T9, T10 , were made which were stored at 4 - 15°C for three months. T1 and T2 were rejected soon due to spoilage. pH decreased from 5.094 to 4.017 and minimum pH content was reduced in T10 (7.87%), while maximum in T1 (57.55%). The total soluble solids (TSS) increased from 17.460% to 18.980% with maximum in T1 (51.67%) and minimum in T7 (4.88%). Reducing sugar was increased from 15.650 to 17.500% with maximum in T10 (18.22%) and minimum in T2 (5.90%).  Minimum microbial load was observed in T10 (0.20cfu/ml) and maximum in T1 (>24 cfu/ml) in case of coliforms; minimum in T10 (78×105 cfu/ml) and maximum in T1 (258×105 cfu/ml) in case of total viable bacteria and same results (minimum in T10 and maximum in T1) were shown in case of fungal count. E.coli was found in T1, T2, T3 and T4 and some bacteria was found in SS agar (especially Salmonella) in T1, T2, T3 and T5. Among all the treated juice samples T10 was most effective in maintaining the sensory and nutritional quality during storage. Keywords: © 2013 JSR Publications.
