ABSTRACT Mashanza is a traditional fresh cheese produced in eastern DRC, particularly in South Kivu. Unfortunately, its production has remained artisanal, despite its commercial importance and practices differ from one place to another. The purpose of this study is to diagnose the health status and manufacturing practices of this product. 12 manufacturing units located in the Kabare, Kalehe, Uvira and Walungu territories were used as subjects of study. The 5M method classified the various factors that may contribute to the depreciation of the quality of the Mashanza. The results showed that the majority of manufacturing units are of the artisanal type and are not compliant in terms of facilities and sanitation. The equipment used is rudimentary. The staff is poorly educated and has not been trained in good manufacturing and hygiene practices. The results of the physicochemical analysis of the products show values between 31.1% and 48.8% for the dry matter, 3.5 and 3.9 for the pH, of 0.87 and 0.95 for Aw and 41.5 and 100.8 ° D for acidity, reflecting, among other things, the influence of process variability on Mashanza quality. The microbiological analysis reveals a total mesophilic aerobic flora varying between 4 and 8 × 10 2 cfu / ml for whey and 0 and 9.8 × 10 2 cfu / g for Mashanza. The whey accuses the presence of coliforms: E. coli, S.aureus, anaerobic sulphite-reducing germs, yeasts and moulds. Their enumeration shows values ranging between 0 and 1.4 × 10 2 cfu / g for total coliforms, 0 and 36 cfu / g for faecal coliforms, 0 and 1.6 × 10 2 cfu / g for E. coli; 0 and 1.2.103, cfu / ml for the sulphito-reducing anaerobes and between 0 and 1.5.103. ufc / g for yeasts and moulds. Salmonella sp. is absent from all whey and Mashanza samples. In general, Mashanza is satisfactory. The results obtained make it possible to guide producers and researchers on the factors that can degrade the quality of Mashanza and that can be acted on.

Quality of water for consumption and food processing activities is universally accepted as an essential component to ensure food safety at household (HH) level. Along with safe water, hand hygiene is also an important factor for reducing diarrheal illnesses. This was a cross-sectional study conducted in rural and urban HHs to detect hygiene indicators in drinking water samples at point of use (PoU) (n = 150) and their association with the hand hygiene of primary food preparers (n = 150). Overall, 24.7% and 9.3% of drinking water samples (PoU), 48% and 20% of hand rinse samples were contaminated by faecal coliforms and E. coli, respectively. Both drinking water (PoU) and hand rinse samples collected from rural HHs showed higher contamination, followed by those from urban slums and low income HHs. Significant association (p < 0.05) and probable risk with faecal coliforms (OR. 2.5; 95% CI: 1.1–5.4) and E. coli (OR. 14.5; 95% CI: 4.1–50.7) was found between hand rinses and drinking water samples that had bacteriological contamination. These results suggest that there was an extensive cross contamination at HH level. So, targeted education is essential on safe food/water handling practices in HHs to prevent food safety risks.

The prevalence and characteristics of Escherichia coli and Salmonella spp. as well as counts of E. coli in raw oysters, condiments/spices, and raw oyster cocktails sampled from 72 vendors across Western Trinidad were determined. The microbial quality of the water used in the preparation of raw oysters was also investigated. Of 200 samples each of raw oysters, condiments/spices and oyster cocktails tested, 154 (77·0%), 89 (44·5%) and 154 (77·0%) respectively yielded E. coli. The differences were statistically significant (P=[les ]0·001; χ2=62·91). The mean E. coli count per g in the ready-to-eat oyster cocktail ranged from 1·5×103±2·7×103 in Couva to 8·7×106±4·9×107 in San Fernando. One hundred and forty-six (73·0%) oyster cocktails contaminated with E. coli had counts that exceeded the recommended standard of 16 per g. Of a total of 590 E. coli isolates from various sources tested, 24 (4·1%), 20 (3·4%) and 69 (11·7%) were mucoid, haemolytic and non-sorbitol fermenters respectively. Twelve (2·0%) isolates of E. coli were O157 strains, while 92 (46·0%) of 200 E. coli isolates tested belonged to enteropathogenic serogroups. Ninety (45·0%) and 73 (36·5%) of 200 water samples contained total coliforms and faecal coliforms respectively, with counts that exceeded 2·2 coliforms per 100 ml. Salmonella spp. were isolated from 7 (3·5%), 1 (0·5%) and 2 (1·0%) of 200 samples each, of raw oysters, condiments/spices and oyster cocktails respectively. Oysters pose a health risk to consumers in Trinidad, particularly from colibacillosis and salmonellosis, and the need for increased public awareness of this hazard cannot be over-emphasized.

Water is an indispensable asset for humankind. Although it is renewable, it is finite, that is, it is exhaustible. Due to the need and the quantity of water for the development and progress of human activities, there is a significant increase in water consumption year after year in Brazil. Bathing is an instrument for checking the parameters that determine whether the water of a particular beach is of good quality for primary contact recreation. The objective of the research project was to verify the water quality of the artificial bathing beach of Porto Real, in the city of Porto Nacional in the state of Tocantins. This project prioritized the bathing water for use by the local population. The methodology to be employed will rely on an experimental research, according to Colilert's technique, and also according to the methodology adopted by Standard Methods (APHA 2005), with analysis of primary and secondary water quality data. The monitoring information was carried out in partnership with the Federal Institute of Science and Technology of Tocantins - IFTO. The results showed satisfactory E. coli and pH values for the Porto Real Beach bathing resort, according to parameters established in the CONAMA Resolution No. 274/2000.

Microbial quality of reclaimed water used for irrigation in two golf courses located in the southern Iberian Peninsula (Spain and Portugal) was evaluated. Bacterial indicators for faecal pollution (total and faecal coliforms, Escherichia coli and enterococci) were tested by membrane filtration using appropriate selective media. In addition, somatic E. coli bacteriophages, enteric viruses (entero-, hepatitis A and rota-) and Legionella pneumophila were also analysed. The results obtained showed that all wastewater treatment processes reduced adequately the number of indicator microorganisms although a significant correlation between pathogenic and indicator microorganisms tested was not found. L. pneumophila was detected by PCR but not confirmed by culture. Survival experiments of pathogenic microorganisms in aerosols and irrigated turf are conducted to determine the health hazards for the golf practice and to propose a microbial standard for wastewater used for irrigation of golf courses.

Microbiological quality of drinking water in market gardening sites was assessed to understand the persistence of diarrhoeal diseases and malnutrition among children under five. Households with children under five (5) were selected in Dassa, Nebia, Nariou and Tanguin-wobdo located in centre-ouest region in Burkina Faso. A total of 140 water samples were collected from storage containers in households (n=108), boreholes (n=7) and hand dug wells (n=25) during the month of February 2018. Faecal coliforms, Escherichia coli (E. coli) and faecal streptococci were isolated and enumerated according French standard methods. WHO standards guidelines for drinking water were used to assess water quality. Results showed that 100% of hand dug well water were contaminated with faecal bacteria whereas all water from boreholes were potables. 72% of hand dug well water were contaminated with E. coli, 96.3% with faecal coliforms and 96% with faecal streptococci. In households, 95.9% of drinking water from boreholes were contaminated with faecal bacteria versus 100% of water from hand dug wells. This situation is related to the lack of safe drinking water infrastructures, unimproved sanitation and lack of hygiene in households. In fact, 78.12% of water infrastructures were hand dug wells located mostly in gardens. In these areas, contaminated hand dug well water are used for both irrigation and consumption. Regarding these results, a reinforcement of safe drinking water infrastructures such as boreholes, improved hygiene and sanitation and health education are necessary to improve the quality of drinking water to reduce diarrhoeal diseases and malnutrition among market gardeners’ children.

Domiati cheese is the most popular brand of cheese ripened in brine in the Middle East in terms of consumed quantities. This study was performed to investigate the impact of the microbiological quality of the used raw materials, the applied traditional processing techniques and ripening period on the quality and safety of the produced cheese. Three hundred random composite samples were collected from three factories at Fayoum Governorate, Egypt. Collected samples represent twenty-five each of: raw milk, table salt, calf rennet, microbial rennet, water, environmental air, whey, fresh cheese, ripened cheese & swabs from: worker hands; cheese molds and utensils; tanks. All samples were examined microbiologically for Standard Plate Count (SPC), coliforms count, Staphylococcus aureus (S. aureus) count, total yeast & mould count, presence of E. coli, Salmonellae and Listeria monocytogenes (L. monocytogenes). The mean value of SPC, coliforms, S. aureus and total yeast & mould counts ranged from (79×102 CFU/m3 for air to 13×108 CFU/g for fresh cheese), (7×102 MPN/ cm2 for tank swabs to 80×106 MPN/ml for raw milk), (9×102 CFU/g for salt to 69×106 CFU/g for fresh cheese) and (2×102 CFU/cm2 for hand swabs to 60×104 CFU/g for fresh cheese), respectively. Whereas, E. coli, Salmonella and L. monocytogenes failed to be detected in all examined samples. There were significant differences in all determined microbiological parameters (p ≤0.05) between fresh and ripened cheese which may be attributed to different adverse conditions such as water activity, pH, salt content and temperature carried out to improve the quality of the product.
