In this study, 8% hydrogen (H2) in argon (Ar) and carbon dioxide (CO2) gas nanobubbles was produced at 10, 30, and 50 vol.% of ethanol aqueous solution by the high-speed agitation method with gas. They became stable for a long period (for instance, 20 days), having a high negative zeta potential (−40 to −50 mV) at alkaline near pH 9, especially for 10 vol.% of ethanol aqueous solution. The extended Derjaguin, Landau, Verwey, and Overbeek (DLVO) theory was used to evaluate the nanobubble stability. When the nanobubble in ethanol alkaline aqueous solution changed to an acidic pH of around 5, the zeta potential of nanobubbles was almost zero and the decrease in the number of nanobubbles was identified by the particle trajectory method (Nano site). The collapsed nanobubbles at zero charge were detected thanks to the presence of few free radicals using G-CYPMPO spin trap reagent in electron spin resonance (ESR) spectroscopy. The free radicals produced were superoxide anions at collapsed 8%H2 in Ar nanobubbles and hydroxyl radicals at collapsed CO2 nanobubbles. On the other hand, the collapse of mixed CO2 and H2 in Ar nanobubble showed no free radicals. The possible presence of long-term stable nanobubbles and the absence of free radicals for mixed H2 and CO2 nanobubble would be useful to understand the beverage quality.

Attempting to correlate the characteristics of the fractionated components from bamboo to its susceptibility to enzyme is often inconclusive depending on the parameters of pretreatment conditions. Based on the integrated analysis of chemical components, cellulose bioconversion, characteristic property of isolated hemicellulose, and lignin, the optimal mild pretreatment operation for Moso bamboo was 4% NaOH in 20% ethanol aqueous solution. A total of 91.9% mass was successfully recovered, and 66% bioconversion efficiency of the cellulosic sample was finally achieved. Meanwhile, over 25% hemicelluloses and 7% lignin were isolated, and the characteristic analysis indicated that the fractionated biomacromolecule maintained the original core structure, which is a benefit to be further utilized for the production of chemicals or polymers.

The purpose of this experiment is to change the crystallization state of resveratrol and improve its solubility and dissolution in water by spray drying technology, so as to improve the feasibility of resveratrol in clinical application. The powder samples were spray-dried with different proportions of ethanol aqueous solution as dissolution medium. The powder samples were characterized by infrared spectroscopy, thermogravimetry/differential scanning calorimetry, and ultraviolet spectroscopy, and their dissolution characteristics were investigated. It was found that the solubility and dissolution rate of different groups of samples obtained by spray drying increased compared with resveratrol crystals, and 50% ethanol solution had the greatest solubilization effect. The experimental results show that this method has a positive effect on the solubility of resveratrol and can regulate its dissolution behavior.

Pungency is a crucial sensory feature that influences consumers’ appreciation and preferences toward alcoholic beverages. However, the quantitation of pungency is challenging to achieve using sensory analysis because of persistence, accumulation, and desensitization to the pungency perception. This study aimed to design a novel pungency evaluation method based on the measurement of tongue surface temperature. An infrared thermal (IRT) imager technique for measuring tongue surface temperature was established. To validate its feasibility, the IRT technique was used to measure tongue surface temperatures after the tongue was stimulated by (1) water and Baijiu, (2) different concentrations of ethanol aqueous solution (10, 20, 30, 40, and 50%, v/v), (3) ethanol aqueous solution and Baijiu samples with the same ethanol content, and (4) 26 Baijiu samples with different pungency level. For all cases, tongue surface temperatures showed large differences as a result of the different stimulation. The results showed that the tongue surface temperature correlated with the pungency intensity obtained by the sensory analysis. The relationship between tongue surface temperature and pungency intensity was established by multiple linear regression analysis. The IRT technique was able to be a useful support tool to quantitatively predict the pungency of alcoholic beverages, based on the measurement of tongue surface temperature.

In this designing experiment, a nuclear magnetic resonance instrument was used to study the chemical shift properties of ethanol based on the principle of magnetic shielding effect. At the same time, the nuclear magnetic resonance method was used to study the transverse relaxation time and signal strength of ethanol aqueous solution in the range of 5%to 40%. The relationship between different mass fraction of ethanol-aqueous solution and nuclear magnetic resonance signal intensity, relaxation time and solution concentration were analysed. According to the results, due to the limitation of experimental instruments, no regular changes were observed. The results show that the addition of copper sulphate can increase the ethanol content and the effect of the ethanol content on the lateral relaxation time: the ethanol content varies between 5% and 40%, and the lateral relaxation time changes from 8.42ms to 40.35ms.According to the experimental results, the empirical formulas of the concentration and lateral relaxation time of ethanol aqueous solution with fixed amount of copper sulphate were fitted. Using this relationship, the NMR measurement of the concentration of ethanol-water solution can be achieved, which provides a new method for the convenient and accurate measurement of the concentration of ethanol solution.
