Blackberry (Rubus fruticosus spp) is a fruit that has a significant antioxidant activity, due to its content in anthocyanins and antioxidant compounds. Emerging technologies are required as the thermoultrasound technique that ensures microbial reduction and release of compounds with antioxidant properties. The objective of this study was to evaluate changes in the antioxidant content and fatty acid profile of blackberry juice when it is subjected to conservation treatment (pasteurization and thermoultrasound). The blackberry juice and the extracted oil of blackberry juice with n-hexane (control, pasteurized and thermoultrasonicated) were evaluated in antioxidant activity, fatty acid profile and antioxidant content. The thermoultrasound juice had the highest (p < 0.05) amount of total phenols (1011 mg GAE/L), anthocyanins (118 mg Cy-3-GlE/L); antioxidant activity by ABTS (44 mg VCEAC/L) and DPPH (2665 µmol TE/L) compared to the control and pasteurized samples, as well as, as well as, oil extract of obtained of the thermoultrasound juice presented high antioxidant activity (177.54 mg VCEAC/L to ABTS and 1802.60 µmol TE/L to DPPH). The fatty acid composition of the oil extract showed the presence of myristic, linolenic, stearic, oleic, and linoleic acid, the fatty acid profile was similar in the different samples with the exception of stearic acid where this was higher in control sample. The thermoultrasound treatment can be an alternative to pasteurization treatments because keeps and releases antioxidant bioavailable compounds, preserving their fatty acids.

To our knowledge, this study is the first to report on the nutritional characterization, bioactive compounds and antioxidant activity of Amazonian G. macarenensis fruit. The fatty acid profile was determined using a high performance liquid chromatography analysis. The total phenolic content and antioxidant activity were determined using Folin Ciocalteu’s method and by radical scavenging activity, respectively. Moreover, a cluster analysis was carried out in order to classify the G. macarenensis fruit oil according to its fatty acid profile. Seven Fisher linear discriminant functions were obtained from the discriminant analysis. These models allow one to classify new fruits on the basis of their fatty acid profile. A high value for total lipids was obtained (53.57%). Its main components were palmitic and oleic acid. The TPC value (156.49 ± 2.62 mg GAE/Kg of oil) obtained from the G. macarenensis fruit pulp oil is higher than what was reported for some olive oil and Brazilian mango oil varieties.

ABSTRAK Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan berbagai konsentrasi minyak kelapa murni ke profil asam lemak, aktivitas antibakteri dan antioksidan kefir. Kefir VCO yang dibuat pada penelitian ini terbuat dari susu sapi yang difermentasi selama kurang lebih 2 hari menggunakan biji kefir dengan konsentrasi 5%, dengan suhu inkubasi 28ºC. Penelitian ini terdiri dari empat perlakuan dimana masing-masing perlakuan terdiri dari tiga ulangan yaitu P0 (kefir tanpa VCO), P1 (kefir dengan VCO 2%), P2 (kefir dengan VCO 4%), P3 (kefir dengan VCO 6%). Hasil penelitian menunjukkan bahwa penambahan VCO memberikan hasil yang signifikan (P <0,01) pada aktivitas antibakteri dan antioksidan. Hasil uji antibakteri kefir dalam semua perlakuan memiliki daya hambat terhadap pertumbuhan bakteri. Semakin tinggi konsentrasi VCO, semakin besar zona penghambatan terbentuk. Aktivitas antioksidan dalam VCO kefir meningkat nilainya dengan peningkatan konsentrasi VCO. Sementara hasil profil asam lemak menunjukkan peningkatan dan penurunan asam lemak karena proses fermentasi.Kata kunci: aktivitas antibakteri, antioksidan, kefir, lemak, minyak kelapa murni, profil asam lemakABSTRACTKefir in this research made of milk fermented for 48 hours with grain kefir a concentration of 5%, with incubation temperature is 28ºC. This study was used with four treatments and each treatment consisted of three replications. The treatment used was P0 (kefir without VCO), P1 (kefir with VCO 2%), P2 (kefir with VCO 4%), P3 (kefir with VCO 6%). The results showed that the addition of VCO give a significant effect (P<0.01) on the antibacterial and antioxidant activities. The antibacterial activity of VCO kefir in all treatments were unable to strongly inhibit bacterial growth. The higher VCO concentration has added the vast inhibition zone was formed. The antioxidant activity in VCO kefir increases in value with increasing VCO concentration. While the result of the fatty acid profile showed an increase and decrease in fatty acids due to the fermentation process.Keywords: antibacterial activities, antioxidant, fat, fatty acid profile, kefir, virgin coconut oil

Cocoa nibs ( cacao L.) are the cocoa beans after being fermented, dried, broken into small pieces, and then toasted. The cocoa nib composition is primordial for producers, industry, and final consumers because it affects the final quality of the raw material and any derivative product. The chemical composition was analyzed using , , , and Scharrer-Kurschner methods. The results showed that the cocoa nibs studied were rich in lipids (44.02 ± 5.22%), followed by carbohydrates (25.30%), raw fiber (12.85 ± 3.67%), protein (10.73 ± 1.80%), and ash content (2.58 ± 0.15%). The fatty acid profile was determined by gas chromatography and showed the presence of , , and acids. The low moisture content (4.52 ± 0.12%) and total acidity (2.25 ± 0.45 NaOH 100 g-1) contributed to the low count of microorganisms, which may give cocoa nibs a longer shelf life. Additionally, it presented high antioxidant activity, with a total content of 843.45 ± 11.85 mg acid / 100 g extract and 89.42 ± 0.02% iron reducing power.
