A considerable amount of food waste ends up in centralized treatment plants due to the lack of preventive measures, resulting in significant environmental impacts. Hospitality food waste management is even more resource-intensive because of animal by-products regulation. According to this regulation, companies must store and then consign waste to specific waste managers. The extensive need for transportation of high-moisture-content materials is the leading cause of the impact. Moreover, the management of category III animal by-products is costly for companies. A previous study has shown the economic benefits of decentralized animal by-product treatment by intensive composting in catering companies. Although the produced compost was characterized by exceptional quality parameters, it was phytotoxic. The investigation of hospitality waste management is scarcely discussed among scholars, and waste management on a regional scale is nearly absent. This study examines the regional management of hospitality food waste by exploiting the municipal waste management infrastructure and intensive composting at the source. The co-maturation experiment with animal by-products and municipal green waste primary composts showed that the phytotoxicity parameters of the cured compost were in the optimal range or below the thresholds (conductivity (1.1 mS cm−1), dissolved organic carbon (82 mg kg−1), and NH4+/NO3− ratio (0.0027)). Additionally, the amounts of total nitrogen, water-soluble nitrogen, and water-soluble phosphorus in the compost were rated as very high. Finally, inventory and environmental impact analysis of the current and planned management approaches showed a reduction in 12 of 18 impact categories.

Canada’s food waste reached $31 billion in 2014. 95% of this waste ended up in landfills across the country, being a severe burden both economically and environmentally. By implementing sustainable agriculture projects, alternative uses can be found for food waste that produce positive income for companies, and alleviate stresses on the environment. Grape pomace, a food waste produced through the process of wine-making, currently ends up in landfills after wine-production. However, this agricultural by-product holds great market potential for the production of chemical microemulsions. These microemulsion systems show great potential in the food, pharmaceutical and cosmeceutical industries. The market potential was calculated by determining the volume of grape seed oil that could be extracted from grape pomace. The current market value of microemulsion surfactants were then obtained and a value was calculated based on the oil yield. Grape pomace microemulsions had the highest market potential as pharmaceutical raw ingredients, followed respectively by food additive and cosmeceutical raw ingredients. The purpose of this paper is to measure the market potential for grape pomace microemulsions in each of these industries and to provoke further investigations into the production of value added products from agricultural waste.

Despite numerous discussions between scholars and policymakers, food waste (FW) remains a great concern. European Union alone discards 88 million tons of edible food annually, and when energy, inputs from technosphere and nature, labour, waste management of edible as well as inedible parts are assessed, it amounts to significant environmental and economic impacts. Additionally, food waste is considered a social problem and a matter of food security. Since food waste is a problem of the whole foodstuff supply chain, a holistic approach for its management must be taken. For this reason, an industrial ecology (IE) concept can provide a systemic approach that might be an interesting solution for tackling issues associated with such a biogenic food waste stream. The application of IE brings novelty to the research, because the IE approach is typically used for heavy industry that is concentrated in close proximity. The idea behind the IE approach is to prevent as much food waste as possible, then exploit homogenous sub-products for value added product (either food product or not), and, eventually, to obtain energy (or value added products) via fermentation and produce organic fertilizers of a great agronomical value. The results of investigation showed that numerous prevention and technological solutions can be applied to reduce environmental impact, and when available practises are coupled with IE elements, it brings the management approach close to natural ones. The key IE elements in the model are dematerialization and industrial symbiosis; however, other elements, such as restructuration of energy systems and policy alignment, are also present. The environmental impacts of five waste management scenarios for polylactic acid (PLA)-based bioplastics and food waste were quantified using life cycle assessment. Laboratory experiments have demonstrated the potential for a pretreatment process to accelerate the degradation of bioplastics and were modeled in two of the five scenarios assessed. The five scenarios analyzed in this study were: (1a) Anaerobic digestion (1b) Anaerobic digestion with pretreatment; (2a) Compost; (2a) Compost with pretreatment; (3) Landfill. Results suggested that food waste and pretreated bioplastics disposed of with an anaerobic digester offers life cycle and environmental net total benefits (environmental advantages/offsets) in several areas: ecotoxicity (−81.38 CTUe), eutrophication (0 kg N eq), cumulative energy demand (−1.79 MJ), global warming potential (0.19 kg CO2), and human health non-carcinogenic (−2.52 CTuh). Normalized results across all impact categories show that anaerobically digesting food waste and bioplastics offer the most offsets for ecotoxicity, eutrophication, cumulative energy demand and non-carcinogenic. Implications from this study can lead to nutrient and energy recovery from an anaerobic digester that can diversify the types of fertilizers and decrease landfill waste while decreasing dependency on non-renewable technologies. Thus, using anaerobic digestion to manage bioplastics and food waste should be further explored as a viable and sustainable solution for waste management.

Most local authorities in Malaysia spent as much as 60-70 percent of their annual budget to dispose food waste together with other municipal solid wastes to landfills. It is time for Malaysians to start reducing food waste through sustainable method, as it is becoming an uphill task to manage food wastes generated in Malaysia. When households reduce the amount of food waste generated in a sustainable way, it could help reduce cost, and other related bills for households, and as well in running their other daily activities. The main objective of this study is to assess how sociodemographic factors of households in Selangor and Terengganu influence their behaviour towards participation in sustainable food wastes management program. The study applied purposive nonrandom sampling consisting of 333 respondents, 257 were from Selangor and 76 from Terengganu. Primary data was collected through structured questionnaire. Descriptive and logistics regression model analysis were used to analyze the data. Findings have shown 48.7 percent of Terengganu respondents spent not more than RM100 on food per week, while Selangor had 41.2 percent within the same period who spent such amount. 35.4 percent of Selangor respondents spent between RM101-200 compared to Terengganu which spent same amount at 30.3 percent within the same periods. The survey shows 43.2 percent of Selangor households disposed 1-3kg food wastes, while Terengganu on the other hand had 51.3 percent who disposed same quantities of food wastes per week. Respondents with higher education, those on government jobs, small family size and ethnicity have significant impacts on the respondents' behaviour towards participation in sustainable food waste management program. North America is a big consumer and consequently a big producer of waste. For the purpose of this project, we were primarily interested in collecting information in North America, focusing on Quebec primarily. The main research question was risen up during the fieldwork and assistance with the Canadian company. It clearly presents the enterprise readiness for obtaining a smart solution on organic/food waste problem. It is believed, how organic/food waste can be a resource of a high value. There is a capacity of creating a new path, where organic/food waste could become the important as plant/field nutrient supply. The circular approach to organic waste management is urgently needed in a way how the organic waste should be reduced and returned as productive resource input into our economy. The paper presents a new value towards a sustainability process that Canada is building at the moment. It represents the innovative approach, which is highly accepted in some cities in Quebec with the obtained pilot projects and excellent results. This paper is not only a simple research paper, but it is also the very important original innovative document which can be highly used on the level of each municipality, region and federal level.

Fermented beverages have become a powerful player in the global beverage sector because of the increased demand for health products and their nutritional benefits to societies. This study aimed to identify consumer acceptance and willingness to pay for fermented drinks developed by MARDI. It also will evaluate the market potential of products among industry players. In this study, the data was collected using structured questionnaire and face-to-face interviews focused on the population in Peninsular Malaysia. The population's selection by stratified random sampling technique and the major survey locations included mall and hypermarket. Exploratory factor analysis (EFA) was used to discover the underlying structure of observed variables. A total of 400 respondents had participated in the study. A field survey conducted showed that 54% of respondents knew about functional foods and 55% of these are aware of functional foods based on fruits were in the market. The survey found that 30% of respondents had taken fermented drinks before, while the rest had never known this drink. Age and income have a significant influence on consumers' willingness to pay fermented drinks at a reasonable price if this product is available in the Malaysian market. Government support is needed to encourage the cultivation of indigenous fruit in Malaysia. It can be done through the provision of seed subsidies and financial resources to farmers in expanding and increasing the supply of these raw materials for the production of value-added products.

Waste recovery is an important aspect towards human and environmental health protection. Unfortunately, proper food waste management is among the serious challenges in the field of solid waste management worldwide. Therefore, it is of great importance to conduct studies towards achieving efficient and cost-effective approaches for food waste management. This study investigated the potential of recovering food waste through maggots’ production as animal feed. The influence of fly attractant application on maggot production was also investigated. The study also investigated the potential of maggot production for waste recovery and reduction. Four different types of food waste (starch food leftovers, rotten bananas and peels, rotten pineapple and peels, and rotten oranges) were used in the investigation process. From the results, it was observed that the application of fly attractants had a significant effect on the production of maggots as determined by the weights after harvesting. Average weight of 94 g/kg of maggot was achieved from banana materials with an application of fly attractant during the 8th day of the cultivation; which is equivalent to a 32.4% increase from the same day when the material was cultured without applying fly attractant. Also, from the starch materials, about 77 g/kg of maggot weight was achieved; which is a 54.6% increase from the same day and the same material but without application of fly attractant. Moreover, the relative dry weight reduction in the trials varied from 52.5% to 82.4%.
