This paper discussesthe results findings on the effect of nitrogen fertilizers as urea-ammonia liquor (KAS-32) and ammonium nitrate of various application rates (40,80 and 120 kg of primary nutrient per ha) on the quality of tomato fruits grown on the field and under cover.Various research methods were tested. They made it possible to identify biologically active substances of tomato fruits which helped to examine fruit chemical composition of experimental vari-eties with the determination of dry solids, total sugar, vita-minC, total acidity, lycopene and nitrates. It was found that under cover, the application of nitrogen-containing fertiliz-ers increased dry solids by an average of 23-25%, total sugar -by 55-61%, vitamin C -by 33-41% as compared to the control. On the field, the dry solids content increased by 35-45%, total sugar -by 74-83% and vitamin C -by 37-42%. However, the application of the maximum rates of N120fertilizer decreased dry solids content by 5-6% as compared to N80. At the same time, there was an increase of fruit total acidity as compared to the control: up to 32% under cover, and up to 16% on the field. Although as sugar content increased, the acidity had almost no effect on the eating qualities. In all variants, the nitrate content did not exceed themaximum permissible concentration. The ob-tained data confirmed the positive effect of certain rates of nitrogen-containing fertilizers on the structure, quality and safety of the obtained tomatoes. This result will make it possible to recommend the testedmethods and rates of fertilization during the growing season.

Nowadays the success vegetable and fruit production are unimaginable without regular nutrient management. One of the ways to supply the required nutrients in an environmentally friendly way is the application of composts, which is less widespread so far. Compost doses were applied in biological and integrated apple orchards in cooperation with the Institute of Horticultural Science in the years 2010 and 2011. Different changes were resulted by the compost treatments in the examined parameters in case of both apple varieties (Golden Delicious and Pinova). There is no clear effect of compost on the changes of ash-, total acids, Vitamin C and the sugar content until now, because the improvement of the nutritional indicators takes more time. However significant differences were observed after one year between the apple varieties. Higher ash-, total acids and sugar content were measured in case of the apple variety Pinova, while the measurements showed higher Vitamin C content in case of the variety Golden Delicious.

<em>Research on the utilization of liquid smoke especially for preservation of fruit has been done and become one of alternative methods that can be used to maintain fruit shelf life. Liquid smoke raw materials can come from a variety of sources one of which comes from the Alang-alang (Imperata cylindrica). This study aims to determine the ability of liquid smoke made from  alang-alang as a preservative of bananas and to know the effect on the characteristics of bananas. The sample used in this research is a local banana known as Pisang Makau (Musa spp). This research uses experimental method with 7 days of storage time. Initial stages of the research are cleaning the fruit, dyeing, drying, and storage at room temperature. This research uses liquid smoke from alang-alang by using 2 various concentrations 50% and 100%. The next stage is the analysis of the characteristics of bananas such as color, fruit texture, fruit weight, sugar content, and vitamin C levels. Based on the analysis results obtained by Pisang Makau with the treatment of liquid has a longer shelf life than the control. Based on the results of the analysis of the shelf life of fruit treated with liquid smoke decreased levels of sugar and vitamin C levels. Percentage decrease levels of sugar and vitamin C between the fruit with the treatment and control not much different. This shows that liquid smoke from alang-alang has the ability to retain the shelf life of bananas without affecting sugar and vitamin C levels in bananas in this case for Pisang Makau. Tomatoes are one of the most consumed vegetables in the world. Unfortunately, obtaining a high quality tomato yield in our latitudes is inconceivable without additional lighting. Changes in biochemical composition are mainly dependent on the light received by the plant. During the winter months, natural daylight at 55 ° latitude is insufficient to provide the necessary vegetation for fruit-bearing vegetables. The aim of this study is to investigate the changes in the biochemical composition of tomato fruits by using less conventional lighting methods, which could offer potential energy savings by providing higher levels of biologically active substances in tomatoes. The study was conducted in a greenhouse of Latvia University of Life Sciences and Technologies during the winter season 2018-2019, using a 16-hour photoperiod. LED, Induction, and High Pressure Sodium Lamps (as control) were used in the study. These lighting devices, with some differences, simulate daylight. Three tomato cultivars: ‘Diamont F1’, Encor F1’and ‘Balzano F1’were studied. The study specified the tomato yield and the following biochemical parameters: soluble sugars (BRIX), vitamin C, organic acids, lycopene, carotenoids, phenols and flavonoids. As expected, the yield and species-specific pigment content of tomato fruit is largely dependent on the genetics of the variety. On the other hand, biologically active compounds such as organic acids, soluble sugars, ascorbic acid and flavonoids undergo more changes due to the composition of the light. The obtained biochemical parameters give an opportunity to consider different illumination methods and the need to carry out further studies in order to confirm the conclusions. Significantly higher yields were observed in the variant with conventionally used high pressure sodium lamps. In mean time, it should be noted that in the variant with LED lamps, higher content of lycopene as well as phenols and vitamin C were observed.

The main purpose of this study was to highlight the nutraceutical value of the tomato fruit for five hybrids recently introduced in culture, during the harvesting phases: mature green, half ripen and full ripen: ‘Antalya’, ‘Cemil’, ‘Lorely’, ‘Tiger’ and ‘Sacher’. They differentiate because of their size and fruit colour. The parameters to be followed for each harvest phase were: the chlorophyll a and b content, the total carotenes, the soluble substance, vitamin C, the titratable acidity, and also a maturity index was established. The results obtained showed significant differences between the hybrids, but also during the maturation phases. It singularised Tiger F1 with a total carotene contentof 7.1 (green) to 12.5 (half ripen) and 18.6 mg/100g f.w. (in full ripen) and Sacher F1 with vitamin C from 6.2 (green) to 17.2 (half ripen) and 20.7 mg/100g f.w. (in full ripen). This variability can be attributed to these harvesting phases, but also to the genetic factors, such as cultivar type, fruit size and colour.

How to do in determining the ripeness of bananas as morphological and chemical analysis.The objectives of this study wereto explore the utilization of Gliricidia sepium leaf, cocoa leaf, banana leaf and ethylene and the duration of treatment to the maturitylevel of Musa paradisiaca forma typica, vitamin C, vitamin A, reducing sugar content as well as ripening time and rotting. CompletelyRandomized Design was used with 2 factors, the duration of curing with 3 treatments ie L1 (curing for 3 days), L2 (curing for 6 days)and L3 (curing for 9 days) and type of calibration method used was C0 (control), C1 (curing with ethylene 0,5%), C2 (curing withbanana leaf), C3 (curing with Gliricidia sepium leaf) and C4 (curing with cocoa leaf) . Each treatment combination was repeated 4times with 3 experimental units. The results showed that curing with cocoa leaves and 0.5% ethylene affected banana maturity.Ethylene (0.5%) increase the maturation score and vitamin C. Cocoa increased maturation score, reducing sugar and vitamin Ccontent. The longer the curing the more increase the maturation score and increase the reducing sugar content.Keywords: Musa paradisiaca forma typica, ethylene, cocoa leaf, banana leaf, G. sepium leaf

The effects of chamber drying under controlled temperature and moisture conditions and fermentation process on blueberry juices to obtain three wines were studied in this work. Drying was carried out with a view to increase the sugar content and obtain wines with an ethanol content similar to a commercial grape wine or to obtain sweet wines. Analyses included color parameters; browning index; and anthocyanin, flavonols, flavan-3-ol derivatives, and tannin concentrations, as well as vitamin C concentration and antioxidant activity. Based on the results, drying increases color and the concentration of anthocyanins and tannins most probably by the effect of dehydration of the berries and diffusion of the colored compounds from the skin to the pulp due to the structural alterations in their skin. In addition, drying decreases flavonols, flavan-3-ol derivatives, and vitamin C concentrations. The browning index, anthocyanins, and tannins decreased with the fermentation time, and vitamin C was constant with the fermentation time. The sensory analysis showed that the wines with the best sensory characteristics were those with residual sugar, partial fermented wines 1 and 2.

This experiment was conducted in faculty of Science labs, Kufa University, carried out during 2015 to applied methods for extraction, purification and Quantitative of Lycopene red pigments, from callus tissue and tomato fruits mother plant (Lycopersicon esculentum Mill).This study include of three parts, Firstly; Tomato seeds(Supper queen) hybrid were germinated in free MS medium and callus induction from shoot tip (3cmpieces) by using MS medium supplemented with Dichlorophenoxiactic acid (2,4-D) at different concentration (0.5,1, 1.5mg/l)with benzyl adenine (BA) at concentration of (0.3 mg/l). Secondly; identically callus fresh weight re-cultured in the same MS medium supplemented with high molecular weight polyethylene glycol (PEG) was used as selective agent at level of (5,10,15 and 25%). Thirdly; comparisons study were made between in vitro and in vivo grown plant. Powder of control lycopene used as standard solution. The content of lycopene was done by using high performance liquid chromatography (HPLC), and compare of the quantitatively of lycopene with these content in fruits of mother plant, and callus tissue. Also, include alcohol extraction of Lycopene from tomato fruit by using acetone and hexane mixture. The result showed significant increased (P< 0.05) of lycopene production and the superiority of lycopene content in callus than the content in fruits of mother plant. Antioxidant enzymes activity like Catalase (CAT),Guaiacol peroxidise (POX) and Superoxide dismutase(SOD) were high in callus under drought stress than in fruit of mother plant. However, Proline and total sugar content were at higher levels in callus under drought stress than in fruit of mother plant.

The experiment was conducted at Horticultural Research Station, Mondouri, BCKV during 2015-2017 to find out the effect of mulching and supplementary irrigation on physical and chemical properties i.e fruit weight, length, diameter, pulp percentage, TSS, acidity, vitamin-C, anthocyanin etc. of Bael (Aegle marmelos Correa.) The experiment was put on factorial RBD consist of nine treatments viz.  M0I0 -  No mulch + no irrigation (Control). M0I1 - No mulch + basin irrigation with 15 litres/plant at 10 days interval, M0I2 - No mulch + basin irrigation with 15 litres/plant at 20 days interval, M1I0 - Black polythene mulching + no irrigation M1I1 - Black polythene mulching + basin irrigation with 15 litres/plant at 10 days interval, M1I2 - Black polythene mulching + basin irrigation with 15 litres/plant at 20 days interval. M2I0 - Dry leaves mulching + no irrigation, M2I1 - Dry leaves mulching + basin irrigation with 15 litres/plant at 10 days interval, M2I2 - Dry leaves mulching + basin irrigation with 15 litres/plant at 20 days interval. Which are interaction of two factor i.e. mulching and irrigation and each treatment has three replications. Mulching with black polythene followed by basin irrigation with 15 litres/plant at 10 days interval was most effective in improving fruit weight (1089.17g), size (length 12.89cm and diameter 39.18cm) and pulp content (56.16%) followed by dry leaves mulching + basin irrigation 15 litres/plant at 10 days interval. The fruit quality like vitamin C and anthocyanin content were also improved by mulching with black polythene followed by basin irrigation 15 litres/plant at 10 days interval but TSS, acidity whereas total sugar content in the fruits were not affected due to mulching and supplementary irrigation
