The benefits of natural honeybee products (e.g., honey, royal jelly, beeswax, propolis, beevenom and pollen) to the immune system are remarkable, and many of them are involved in the induction of antibody production, maturation of immune cells and stimulation of the immune system. The type of plants in the geographical area, climatic conditions and production method have a significantly influence on the nutritional quality of honey. However, this variability can influence consumer liking by the sensory attributes of the product. The aim of this work was to compare the most popular honeys from Poland in terms of nutritional value, organoleptic properties and antioxidant activity. In the study, five varieties of honey (honeydew, forest, buckwheat, linden and dandelion) from conventional and organic production methods were tested. The nutritional characteristics of honey samples included acidity, content of water, sugars, vitamin C, HMF and phenolics (total and flavonoids), while honey color, taste, aroma and consistency were investigated in the organoleptic characteristics. The antioxidant activity was determined in water- and ethanol-soluble honey extracts using DPPH and ORAC tests. The results showed that organoleptic and nutritional characteristics of popular Polish honeys differ significantly in relation to plant source and production method. The significant effect of honey variety on the content of HMF, saccharose and phenolics, as well as acidity and antioxidant capacity were noted. The impact of variety and variety × production method interaction was significant in the case of the content of vitamin C, glucose and fructose. A visible difference of buckwheat and forest honeys from other samples was observed. The highest content of total phenolics with antioxidant activity based on the SET mechanism was found in buckwheat honeys, while forest honeys were richer in flavonoids.

This study compares the content of basic nutrients (proteins, fats, digestible carbohydrates, dietary fiber and ash), steviol glycosides, selected antioxidants (vitamin C, total polyphenols) and antioxidant activity in dried leaves of Stevia rebaudiana Bertoni cultivated in Poland, Paraguay and Brazil and available in the direct sale. The basic chemical composition was determined by standard AOAC (Association of Official Analytical Chemists) methods. Content of steviol glycosides was determined by the UHPLC-UV chromatographic method. Total polyphenols content was expressed as gallic acid equivalent (GAE) and catechins equivalent (CE). Antioxidant activity was measured as ABTS●+ free radical scavenging activity. Dried leaves of S. rebaudiana grown in Poland had significantly higher contents of dietary fiber, and lower protein and ash content, compared to those derived from Paraguay and Brazil. The former had, however, considerably higher contents of total steviol glycosides, stevioside and rebaudioside D, compared to the remaining two plants. In the Paraguay-derived dried leaves, the content of rebaudioside A, C, E and rubusoside was found to be significantly lower. Dried leaves of S. rebaudiana Bertoni, cultivated in Poland, contained substantially more vitamin C and a similar content of total polyphenols, compared to those from Brazil and Paraguay. The examined material from Brazil and Paraguay plantations showed similar antioxidant activity, while that obtained from Polish cultivation was characterized by a significantly lower value of this parameter.

Climate change, expanding soil salinization, and the developing shortages of freshwater have negatively affected crop production around the world. Seawater and salinized lands represent potentially cultivable areas for edible salt-tolerant plants. In the present study, the effect of salinity stress on plant growth, mineral composition (macro-and micro-nutrients), and antioxidant activity in dune spinach (Tetragonia decumbens) were evaluated. The treatments consisted of three salt concentrations, 50, 100, and 200 mM, produced by adding NaCl to the nutrient solution. The control treatment had no NaCl but was sustained and irrigated by the nutrient solution. Results revealed a significant increase in total yield, branch production, and ferric reducing antioxidant power in plants irrigated with nutrient solution incorporated with 50 mM NaCl. Conversely, an increased level of salinity (200 mM) caused a decrease in chlorophyll content (SPAD), while the phenolic content, as well as nitrogen, phosphorus, and sodium, increased. The results of this study indicate that there is potential for brackish water cultivation of dune spinach for consumption, especially in provinces experiencing the adverse effect of drought and salinity, where seawater or underground saline water could be diluted and used as irrigation water in the production of this vegetable.

In this study, cornelian cherry (Cornus mas L.) peel (CCP) was incorporated into a probiotic ice cream formulation containing Bifidobacterium lactis to investigate the potential effect of CCP on the viability of B. lactis in the ice cream after simulated gastrointestinal stress and during 120 days of storage. Furthermore, the effect of the addition of CCP (3, 6, and 9%) on bioactive compounds, antioxidant activity, and physicochemical and sensory attributes of the ice cream was evaluated. The results showed that the addition of CCP significantly enhanced vitamin C, total polyphenols, total anthocyanin content, and antioxidant activity of the ice cream. During frozen storage of the ice cream, phenolic compounds and anthocyanins were quite stable, but vitamin C significantly decreased. The addition of CCP had no significant effect on the viability of B. lactis throughout the freezing process, but increments of 6% and 9% CCP increased the viability of B. lactis in the ice cream and after simulated gastrointestinal processes in all storage periods. These findings imply that CCP is a promising candidate to be used for producing functional ice cream.

Abstract The objective of this work was to evaluate the influence of the use of UV-C radiation at an intensity of 0.53 KJ m-2, during strawberry (Fragaria x ananassa) cultivation, on the physicochemical and phytochemical parameters of the fruits. The used experimental design was completely randomized, in a single-factor arrangement with 11, 19, 29, and 39 UV-C applications and without UV-C application. The hue of the fruits was smaller at the end of the study period. pH varied in strawberries that received 39 applications of UV-C, and the soluble solids content differed with 19 applications. Antioxidant activity was lower in fruits with 11, 19, and 29 UV-C applications, whereas vitamin C content was lower only in fruits that received 29 applications. The use of UV-C radiation at an intensity of 0.53 KJ m-2, during strawberry cultivation, affects the physicochemical and phytochemical parameters of the fruits, but does not cause losses in their quality.

Wualae (Etlingera elatior (Jack) R.M Smith) is one of the plants in the Zingiberaceae family, widely used in medicine ranging from rhizomes, fruits, and flowers. Empirically Wualae are usually used by people for treating skin diseases, flavoring food, a natural soap, and in Southeast Sulawesi, it is used to treat typhoid fever. This study aims to examine the antioxidant activity of Wualae (Etlingera elatior) plant. The plant extracts were extracted by maceration method, antioxidant activity test was performed by 2,2-Diphenyl-1-picrylhydrazyl (DPPH) method. The results showed that ethanol extracts of fruits, leaves, stems and rhizomes of Wualae (Etlingera elatior) has the potential antioxidant activity with the IC50 values of 72.518 mg/L, 99.890 mg/L, 52.345 mg/L and 58.638 mg/L, respectively. and Vitamin C has IC50 value of 3,787 mg/L.

ABSTRACTDayak onion plant (Eleutherine americana Merr.) or commonly called forest onion is a typical plant of Central Kalimantan that has been used by local peoples for cure a various types of diseases. This study aims to determine the activity of antioxidant compounds from Dayak bulb ethanol extracts from Kotamobagu City. This research method is an experimental laboratory. Initially the Dayak bulb sample was extracted maceration with 96% ethanol solvent then evaporated until a thick extract was obtained. As a parameter, the DPPH method (1,1-diphenyl-2-picrylhydrazyl) was used to test the antioxidant activity of the samples at concentrations of 50, 60, 70, 80 and 90 mg / L and as a comparison standard used Vitamin C with concentrations of 2, 4, 6, 8 and 10 mg / L. The results obtained showed antioxidant activity in Dayak bulb ethanol extracts with IC50 values of 41.46 mg / L and on vitamin C IC50 values of 1.04 mg / L. Based on these results it can be concluded that the onion bulb ethanol extract has very strong antioxidant activity. Keywords: Dayak Onion bulbs, Activity, Antioxidant, DPPH  ABSTRAK Tanaman bawang Dayak (Eleutherine americana Merr.) atau biasa disebut bawang hutan merupakan tanaman khas Kalimantan Tengah yang sudah dipergunakan masyarakat lokal sebagai obat berbagai jenis penyakit. Penelitian ini bertujuan untuk mengetahui aktivitas senyawa antioksidan dari ekstrak etanol bulbus bawang Dayak yang berasal dari Kota Kotamobagu. Metode penelitian ini adalah eksperimental laboratorium. Awalnya sampel bulbus bawang Dayak diekstraksi maserasi dengan pelarut etanol 96% kemudian dievaporasi hingga didapatkan ekstrak kental. Sebagai parameter, digunakan metode DPPH (1,1-diphenyl-2-picrylhydrazyl) untuk pengujian aktivitas antioksidan sampel pada konsentrasi 50, 60, 70, 80 dan 90 mg/L dan sebagai standar pembanding digunakan Vitamin C dengan konsentrasi 2, 4, 6, 8 dan 10 mg/L. Hasil penelitian yang didapat menunjukkan aktivitas antioksidan pada ekstrak etanol bulbus bawang Dayak dengan nilai IC50 sebesar 41,46 mg/L dan pada vitamin C nilai IC50 sebesar 1,04 mg/L. Berdasarkan hasil tersebut dapat disimpulkan bahwa ekstrak etanol bulbus bawang Dayak memiliki aktivitas antioksidan yang sangat kuat. Kata kunci: Bulbus Bawang Dayak, Aktivitas, Antioksidan, DPPH
