Sci. 91: 353–361. Crossbreeding is an effective method for improving the efficiency of production in commercial cow-calf operations. It exploits available heterosis (hybrid vigour) and complementarity between different breeds or populations (lines). Before adopting a crossbreeding system, commercial cattle producers should evaluate available genetic resources and feasible crossbreeding systems, and choose one that is most beneficial for their own environment, resources, and management. This study compared profitability of alternative crossbreeding systems based on Beefbooster beef cattle breeding strains through computer simulation. Biological and economic data were collected from commercial customers of Beefbooster in Montana and western Canada, and breeding records from the database of Beefbooster, Inc. Three maternal strains (M1, M2 and M4) and two specialized paternal strains (M3 and TX), were evaluated with two simulated crossbreeding systems. System 1 uses a rotational cross between M1 and M4 with yearling crossbred heifers bred to M3 sires. System 2 is based on a three-strain rotation of M1, M2 and M4 with yearling crossbred heifers bred to M3 to facilitate ease of calving and crossbred cows bred to a classical terminal sire strain TX. Simulated base profit from system 2 was $29.57 greater ($215.21 vs. $185.64 yr−1 per cow) than from system 1.

Assessing the differences in gross margins for a north-western Queensland beef-production system was undertaken using herd-budgeting software. The analysis reviewed the viability of producing beef for the domestic market from either a steer or bull production system. A hypothetical herd of 1200 breeders was created for the case study evaluation. An integrated beef production system from breeding to feedlot finishing was found to be less profitable for bull beef production than for steers at the current market prices. Although bull production was more profitable than steer production during the feedlot phase, the production of bulls in this phase failed to compensate for the earlier economic losses in the weaning phase of –AU$24.04 per adult equivalent for bulls. During the feedlot phase, bull production systems had lower break-even sale prices than did steer production systems. In reviewing two pricing scenarios for bulls, it was found that marketing bulls at the same price as steers was the most profitable production system. We conclude that the production of bull beef from a north-western Queensland production system can be profitable only if bulls can be sold without discount relative to steers.

The effect of altering production and marketing circumstances on economic values is quantified for a complete beef production system. Absolute and relative economic values were found to vary substantially with large, but realistic fluctuations in prices and costs. In addition, several examples of different management and different genotypes gave markedly different economic values than in the base situation. Also investigated were the effects of rescaling the enterprise to accommodate three alternative limitations; fixed feed available from pasture, fixed dollars available for feed or fixed amount of beef produced. The effects of rescaling were highly dependent on whether or not fixed costs were accounted for. When fixed costs were ignored (corresponding to a small positive profit) the economic value for mature size decreased while that for fertility increased, but other traits were largely unaffected by rescaling. Overall, production circumstances that reduced survival and fertility yielded the largest changes to economic values. Key words: Economic values, beef cattle, rescaling

Forty weaned, crossbred beef calves (predominantly Angus and Simmental) were forage-finished using all-silage diets (red clover–timothy versus tall fescue) to examine forage species’ effects on growth performance, carcass traits, meat quality, and nutrient composition. Weaned calves (257 d of age) were forage-finished using red clover–timothy or tall fescue silage and harvested at approximately 1 yr of age. During carcass processing, one side from each carcass was covered with a polyliner to examine if reducing rates of chilling could compensate for limited fat cover expected from low dietary energy contents fed, and limited time on feed. Longissimus thoracis, semimembranosus, and semitendinosus steaks were aged 10, 14, and 21 d to examine effects on Warner–Bratzler shear force values while fatty acid and vitamin B12 composition were determined on 10-d-aged steaks. Average daily gain, feed efficiency, hot carcass weights, and longissimus muscle area were greater (P<0.03) when cattle were fed red clover–timothy versus tall fescue silage, most likely due to the higher protein content of red clover–timothy silage. Shear force was greater (P<0.002) in steaks from all muscles evaluated from cattle fed tall fescue versus red clover–timothy silage. In comparison to 10-d-aged steaks, 14 d of ageing were needed to reduce (P<0.001) shear force for longissimus steaks, while 21 d of ageing were needed to reduce (P<0.001) shear force for semitendinosus steaks. Use of a polyliner decreased (P=0.0001) the rate of temperature decline at selected carcass sites, but did not reduce shear force values. The percent of n-3 fatty acids and polyunsaturated fatty acid/saturated fatty acid ratio were greater (P<0.04) in longissimus from cattle fed red clover–timothy versus feeding tall fescue silage. Feeding red clover–timothy silage improved growth performance, carcass, shear force, and fatty acid composition traits versus feeding tall fescue silage.

The influence of modifying a traditional 24-mo dairy steer calf to beef production system on the fatty acid composition of the longissimus muscle and its potential to authenticate beef provenance was examined. Fifty-four male calves (n = 18 per sire breed), progeny of Holstein-Friesian cows mated with Holstein-Friesian (HF), Aberdeen Angus (AA) and Belgian Blue (BB) bulls were at pasture from March until August of their second year when they were assigned to a 3 (breed types) × 3 (finishing strategies) factorial experiment. The three finishing strategies were (i) pasture only for a further 94 d prior to slaughter (21 mo of age) (Grass), (ii) concentrates ad libitum indoors for 94 d prior to slaughter (21 mo of age) (EC) and (iii) pasture only for a further 94 d followed by concentrates ad libitum indoors for 98 d prior to slaughter (24 mo of age) (LC). Compared to EC, muscle from Grass had a lower intramuscular fat concentration and omega-6: omega-3 polyunsaturated fatty acid (PUFA) ratio and higher proportion of conjugated linoleic acid. A longer period at pasture pre-concentrate finishing increased the concentration of omega-3 PUFA which was still lower than in Grass. To maximise the omega-3 PUFA concentration, a late-maturing breed is more appropriate while to maximise conjugated linoleic acid, an early-maturing breed is more appropriate and both should be finished on grass. Chemometric analysis confirmed that the fatty acid profile can authenticate “Grass-Finished” beef per se and has potential to distinguish “Concentrate-Finished” beef based on the length of grazing prior to finishing, but not distinguish between sire breeds.

Context Yields from Brazilian beef-production systems do not always match the expected potential of a forage-based beef-production system. This efficiency is dependent on adjustments of grazing intensity and supplement utilisation to achieve higher bodyweight gain and lower methane emission. Therefore, more studies are necessary to evaluate the association between pasture management and supplement doses. Aims The aim of the present study was to determine nutrient intake, nutrient digestibility, animal performance, carcass characteristics and enteric methane emissions of young Nellore bulls grazing Urochloa brizantha cv. Marandu pastures. Methods One hundred and forty-eight yearling bulls (230 ± 17 kg) were randomly assigned to a grazing-by-supplementation strategy that was designed to allocate three different sward heights with differing levels of supplementation during the wet season. Treatment combinations were (1) low sward height with high supplementation (LH-HS, 15-cm sward height and supplementation at 0.6% of bodyweight (BW)); (2) low height with moderate supplementation (LH-MS, 15 cm and 0.3% BW); (3) moderate height with moderate supplementation (MH-MS, 25 cm and 0.3% BW); (4) moderate height with low supplementation (MH-LS, 25 cm and 0.1% BW); (5) high height with low supplementation (HH-LS, 35 cm and 0.1% BW); and (6) high height with no supplementation (HH-WS, 35 cm). Key results Bulls in the HH groups had a greater herbage intake than did those in the LH groups (P &lt; 0.01). Bulls in the LH-HS treatment resulted in a greater (P &lt; 0.01) carcass average daily gain than that obtained with LH-MS, MH-LS or HH-WS treatment. Higher stocking rate with the LH treatment resulted in greater gains per hectare in terms of both BW and carcass (P &lt; 0.01). Carcass yield was greater for bulls maintained with the LH-HS treatment (54.3% BW). Higher enteric methane emissions were observed from bulls under the HH treatments (P &lt; 0.01). Conclusions Comparing carcass gains per hectare and low methane emissions, the present study indicated that pasture management towards a low sward height combined with 0.3% or 0.6% BW supplementation can result in a greater nutrient utilisation efficiency of bulls. Implications Results provided information to obtain better gains per animals and area, also decreasing methane emission of beef cattle production system.

Abstract To increase profitably, dairy farms across the United States have rapidly adopted breeding a portion of their cows to beef sires, generating crossbred progeny. The resulting progeny have, in some cases, increased the value of the calf to the dairy, due to their perceived potential for improved growth, feed efficiency, and carcass characteristics for beef production. U.S. research is behind our European counterparts in recommending the appropriate beef sires for dairy matings, and U.S. semen trends show Angus sales over many other breeds. However, Kempster et al. (1982) reported that calves sired by British breed bulls were actually at a disadvantage in growth performance compared to even purebred Holstein calves. Finnish researchers agreed, reporting that the resulting crossbreds from Aberdeen Angus and Hereford bulls were extremely variable, making them undesirable for beef production. However, resulting crossbred calves from late maturing breed types (Charolais, Limousine, and Simmental) had better average daily gain and carcass characteristics than their counterparts from early maturing breeds (Huuskonen et al., 2013). A comprehensive review of early crossbred systems similarly suggested that calves sired by Continental breeds, like Charolais, had an advantage in the feedlot and the packing house (Shank, 2003). Going a bit further, another European study examined the used of 3 beef breeds (Belgian Blue, Limousine, and Galacian Blonde) known for heavy muscling, but not common in the United States, for use as crossbreeding sires (Fouz et al., 2012). Holstein cows bred to Belgian Blue sires had the greatest difficulty calving; however, calving difficulties were reduced with increasing dam age (Fouz et al., 2012). Unfortunately, that trial did not go on to evaluate feedlot performance. Thus, there remains a dearth of scientific references for crossbred mating decisions as well as subsequent growth performance and carcass outcomes.
