The cost of sustainability in higher education: staff and student views of a campus food culture

Purpose This study aims to investigate the sustainability of the food culture at Deakin University and to determine what the barriers to increasing the sustainability of food on the Burwood campus may be. Design/methodology/approach An online survey of staff and students from the Faculty of Health at the Burwood campus of Deakin University (n = 697) was undertaken. The survey included questions relating to eating habits on campus, views on the current food culture, food security, food disposal, visions for the future and demographic information. In addition, a short paper-based survey was developed for the ten food outlets on campus. Findings The results show that although sustainability considerations are important to staff and students, cost is the main issue and is a significant barrier to the development of a more sustainable food culture. It is also a significant barrier to staff and students making healthy choices when it comes to the purchase of food on campus. However, sustainable food initiatives such as community gardens could help alleviate this barrier and also contribute to improving student engagement. Research limitations/implications The online survey was limited to the Faculty of Health, and, therefore, a potential bias exists towards individuals who may have an interest in health. This should be considered when interpreting the results. Originality/value This research demonstrates that although cost may be a barrier to universities improving the sustainability of their food culture, there are other ways in which universities can create an environment that embraces sustainable food production to benefit both the environment and the university community.

Purpose This paper aims to determine the eating habits and physical activity in students of the Rafael Núñez University. Design/methodology/approach Descriptive cross-sectional study, based on the application of a survey on eating habits and physical activity. Furthermore, height, weight, hip circumference and abdominal circumference were also recorded. Findings Total, 170 students were included, 29 (17.1%) males and 141 (82.9%) females, with a mean age of 20.0 ± 5.2 years. Among the students, 22 (12.9%) were underweight, 95 (55.9%) were normal weight, 40 (23.5%) were overweight and 13 (7.7%) with obesity. Regarding eating habits, the majority preferred to consume three daily meals: breakfast 140 (82.3%), lunch 170 (100%) and dinner 96 (56.5%). Regarding fruits intake, 18 (15.9%) males reported consuming them seven days a week, and 54 (31.2 %) females reported consuming them occasionally. In physical activity, most of the population (n = 103, 60.6%) exercises with a frequency of one to three days/week. Originality/value The authors’ work is original and has not been sent to another magazine.

Purpose The purpose of this paper is to identify sustainability aspects that overlap with local and organic consumer profiles in order to provide evidence that can be used to promote both kinds of foods in a sustainable food consumption (SFC) integrated framework. Design/methodology/approach Discriminant analysis was applied to a national sample of 3,004 respondents in Italy to separately depict local and organic consumers’ profiles based on personal values, eating habits, food purchase motivations, and involvement. Findings Organic consumption showed a lower penetration compared to local consumption. However, organic consumers adhered to more sustainable consumption principles. Adopting healthy diets and sharing self-transcendence values emerged as common traits of both consumers. Regular consumption made both consumers’ profiles look similar by sharing more sustainability-related traits. Research limitations/implications Only two out of the different types of foods promoted as sustainable were considered. Further insights could be made regarding fair trade foods and food promoted by voluntary sustainability standards. Practical implications The overlapping motivations of the two consumer profiles provided evidence of the potential efficacy of joint promotion in favour of sustainability and demonstrated that a synergic approach among food systems could foster more sustainable consumption. Originality/value This study identified common sustainability motivations among different consumer groups, based on sustainable food categories, adopting a holistic vision of SFC.

Purpose Burnout has been studied by organizational researchers for nearly 50 years (Maslach and Schaufeli, 2017; Schaufeli et al., 2009); however, little attention is given to burnout experienced by employed students who may be prone to the symptoms of burnout as they juggle multiple demanding roles. Burnout in employed students has previously been conceptualized as a bi-factor model consisting of three dimensions: general burnout, apathy and exhaustion (see Rauti et al., 2019 for further information). The purpose of this paper is to develop and validate a novel and theoretically driven tool to assess burnout in employed students. Design/methodology/approach A sample of 239 employed undergraduate students from a university in southwestern Ontario completed an online survey which included the University of Windsor Employed Student Burnout Survey. Participants also completed six additional measures for scale validation purposes. Findings Confirmatory factor analysis supported a four-factor model of the employed student burnout scale: apathy toward employment, exhaustion toward employment, apathy toward academics and exhaustion toward academics. The findings also supported a bi-factor version of the four-factor model. Correlation analyses provided evidence for convergent and divergent validity. Originality/value The experience of burnout for employed students is unique as employed students balance the demands of work and school simultaneously. This research suggests that experiences of burnout from work and burnout from school may be distinct from one another and that burnout is context specific.

PurposeIn this study, a comprehensive theoretical framework was developed to investigate the influence of the determinants of online dried fruit purchase intention in China.Design/methodology/approachThe dried fruit eating experiences of 1,160 participants from China were collected using an online survey.FindingsSignificant differences were noted in the sociodemographic distributions among three age-based consumer segments. Furthermore, the cost of the marketing strategy had the strongest effect on online dried fruit purchase intention. Finally, different patterns of online dried fruit purchase intention were observed among the three consumer segments: consumers aged below 24 years regarded dried fruits as a new and healthy snack choice and favoured companies with high-quality communication with consumers; consumers aged 25–29 years viewed dried fruits as a healthy eating habit, reflecting their strong self-control over their lifestyle; and consumers aged over 30 years valued the convenience marketing strategies applied by dried fruit manufacturers.Originality/valueOverall, the results indicate that dried fruits are considered a niche market of snacks that provides added value for core products in the Chinese e-commerce (EC) market; therefore, developing cost-effective strategies to raise consumer awareness of dried fruits is crucial. Furthermore, marketing strategies should target different consumer segments.

PurposeThis paper aims to report on a cost study of document supply at Wuhan University Library, and to investigate the difference in costs over time and the cost‐effectiveness for the university.Design/methodology/approachA quantitative approach is employed.FindingsThe borrowing unit cost and lending unit cost decreased by 27 percent and 60 percent, respectively, between 2002 and 2004, but showed a small increase in 2006.Originality/valueThe paper reveals the cost of document supply in a Chinese research library and proves that the cost could be lowered rapidly by taking effective measures. The paper also demonstrates that document supply is an effective way to resolve the library budgetary crisis as well as satisfying end‐users' needs.

Purpose The aim of this paper is to know the cost of per use, to analyze the cost per use in different subjects, to analyze the most economical as well as expensive electronic database being subscribed by the University of Delhi, to identify the database(s) for cancellation and to highlight issues related to usage statistics. Design/methodology/approach Usage statistics have been collected from the publishers for the period under study of full-text databases in the counting online usage of networked electronic resource (COUNTER) JR1 excluding downloads from an archive and Indian databases not providing COUNTER compliance usage. Usages of foreign databases have been analyzed through different parameters like yearly average cost per down load, subject-wise average cost per down, most economical databases and most expensive databases have been identified. A total approximation cost has also been worked by adopting standards practice to know the saving of University of Delhi by subscribing these databases. Findings The study concludes that in case of foreign databases, the cost per use has increased by 41.77 per cent in the past 10 years and the cumulative average cost per use has been Rs.55.07 less than $1 if converted into US$. In case of subject, the cheapest cost per use has been from the databases providing statistical data (Rs.26.50) and the costliest cost per use has been from discipline social science (99–196.61), followed by management (Rs.37.33), general databases (Rs.40.58), science (Rs.41.66), humanities (Rs.48.73), technology (Rs.93.22) and computer science (Rs.102.09) per use. It has also been found that the Britannica Online has been the most economical database costing Rs.2.33 and World Intellectual Property Search as most expensive costing Rs.14,902.19 per use. The study concludes that University of Delhi have saved substantial amount by subscribing these databases instead of purchasing these article from open market. The study concluded that though the usage statistics is an important parameter for renewal or cancellation, it should not be the only criteria. Research limitations/implications This study could not able to work out the cost per use of Indian databases, as they were not able to provide COUNTER statistics. Practical implications On the basis of the study, University of Delhi and institute may decide on renewal of these databases. The institute may take necessary action to promote these databases through information literacy program. Originality/value This study is an empirical research based on original usage statistics provided by the publishers in COUNTER format. Earlier literature has also been studied and used. Purpose Using primary data from an online survey in addition to 29 semi-structured interviews among chartered accountants and academics in Cyprus, originally collected for the purposes of a PhD research, this paper aims to investigate the importance of networking with regards to women’s progression in the workplace, as well as the barriers women are faced with in their attempt to “play” the networking game in according to the male rules. Design/methodology/approach The use of an inductive approach was considered appropriate since there is little existing research on gender issues in Cypriot organisations. For the purposes of the study, a two-step qualitative approach was taken. Step 1 was an online survey with both closed and open-ended questions delivered to employed Cypriot men and women. Step 2 of the study comprised semi-structured, in-depth interviews. The interviews were conducted with specific, preselected employees, both men and women, comprising chartered accountants from the BIG Four companies in Cyprus and academics working at the University of Cyprus. Findings The research reported in this paper suggests that while there is the perception that men and women share the same opportunities within the workplace and women do not progress by choice, there appear to be various structural and cultural influences at play. It is clear that women are restricted from networking opportunities either intentionally or due to cultural and societal norms and this results in minimising their chances of breaking the glass ceiling and progressing to the top of the organisational ladder. Originality/value The research focuses on the impediments women in Cyprus are faced with in their attempt to network. There is no previous research on this subject in Cyprus.

Purpose Previous research has found that international students can experience poor mental health, low levels of life satisfaction, self-esteem and high levels of loneliness when studying in a foreign country. No study has directly compared these between international and home students studying in the UK. The paper aims to discuss these issues. Design/methodology/approach A total of 247 students completed an online survey at the University of Bedfordshire. Findings The hypothesis that international students experience higher loneliness, lower self-esteem, lower life satisfaction and poorer general mental health than home students was rejected. Home students had significantly lower self-esteem, life satisfaction and general mental health scores. Black ethnicity and home student status significantly predicted general mental health and self-esteem in regression analyses. The predictive utility of home student status was maintained when other variables were controlled for in regression models. Originality/value This research suggests that the UK universities should ensure that both home and international students are adequately supported for their mental health.

Purpose This study aims to explore the disciplinary characteristics of doctoral students’ generic skills learning experience at a Finnish university. Design/methodology/approach An online survey measuring doctoral students’ generic skills learning experience was administered to all doctoral students of the university and 1,184 responses were obtained. The study conducted exploratory and confirmatory factor analysis, principal component analysis and heatmap analyses. Findings The results suggested three major trends. First, students’ scores for research integrity skills were consistently lower in the hard sciences, such as biological and environmental sciences, pharmacy, veterinary medicine, science and medicine. Second, students of the law showed a unique trend; their scores for research integrity, leadership and entrepreneurship skills learning were remarkably higher than those in other faculties, but they had the lowest scores for communication skills. Research limitations/implications The data represented students at one Finnish university, so institutional and geographical differences fell beyond the scope of this paper. Furthermore, the results could reflect either the authentic levels of students’ acquired skillsets or self-interpretation of experiences governed by their disciplinary values. Accordingly, the immediate generalisability of the findings to individuals and different contexts should carefully be considered. Originality/value The findings can contribute to improve doctoral training practices. In addition, the survey results are useful for the further development of inventories, as doctoral students’ engagement in generic skills development has been attracting attention in higher education.

Objective: The purpose of this study was to determine the current perceptions of college students in regard to the emergency management of bioterrorism.Design: University students enrolled in Community Health courses were recruited to participate in a paper or online survey to determine their perceptions regarding likelihood of a bioterrorist attack, preparedness of the university, and preparedness of the students.Participants: Of the 309 students recruited, 265 (85.9 percent) participated in the survey.Interventions: Data from the surveys were entered into an SPSS dataset for analysis.Main outcome measure: Perceived preparedness of the university for a bioterrorism emergency.Results: Students perceived that there was a low likelihood of a bioterrorist attack at the university. Only 17.6 percent of the students felt that the university was prepared for a large-scale emergency and only 24.1 percent felt that the students were prepared. One third of the students did not know that the university had policies in place for a bioterrorist attack and 88.3 percent did not know where to go for information in the event of a bioterrorist attack. Only 9.2 percent had visited the campus emergency planning Web site.Conclusions: Effort must be made by universities to determine the appropriate amount of education to the students regarding emergency preparedness based on the cost-benefit to the university and the student body. Suggestions from students included a mandatory workshop for incoming freshman, involvement of campus emergency planning with student organizations, and increased marketing of the campus emergency Web site.
