RELATION OF pH TO DRIP FORMATION IN MEAT

The quantity of drip obtained from meat frozen at a constant rate is affected by the period between slaughter and freezing, and the pH of the tissue. These two factors appear to act independently, and only the latter was studied extensively. In precooled meats the maximum amount of drip was obtained at about pH 5.2, and as the pH increased the net drip decreased to zero at about pH 6.4. Pork, beef and mutton behave similarly both with respect to the form of the drip-pH relation and the quantity of drip exuded at a given acidity. Beef is normally more acid than the other meats tested, and this can account for its greater tendency to drip in commercial practice.Microscopic studies showed that large crystals were always produced by slow-freezing, regardless of the pH of the material. The absence of drip from slowly frozen tissue at pH 6.4 is therefore not due to crystal size, but must be attributed to the greater re-absorbing power of the proteins in this region. Protein denaturation does not affect the quantity of drip obtained when meat is slowly frozen or stored for periods up to three days in the freezing zone. The weak re-absorptive power of the proteins at pH 5.2 must be attributed to their isoelectric condition in this region, rather than to their denaturation. It is only in this isoelectric region that the production of small crystals by quick-freezing will reduce the quantity of drip.

The present research aims to examine the factor structure of the Hellenic WISC-III in a sample of 50 children with learning disabilities. The results show the existence of a factorial model with two factors, one aggregating the Comprehension verbal subtest with four performance subtests and the other the Picture Arrangement performance subtest with four verbal subtests. This two-factor model includes loadings in two factors that relate to the sequencing abilities and the verbal reasoning abilities of children. These findings assert the clinical value of the intelligence evaluation in these children.

Lead iodide was precipitated by a procedure in which an aqueous solution of potassium iodide at a concentration of 0.03, 0.10 or 0.20 mol l-1 was stirred while an aqueous solution of lead nitrate at one-half concentration was added at a constant rate. The mean size of the PbI2 crystals was determined by evaluating the particle size distribution, which was measured sedimentometrically. The dependence of the mean crystal size on the duration of the experiment exhibited a minimum for any of the concentrations applied. The reason for this is discussed.

One of the best-known phenomena in face recognition is the other-race effect, the observation that own-race faces are better remembered than other-race faces. However, previous studies have not put the magnitude of other-race effect in the context of other influences on face recognition. Here, we compared the effects of (a) a race manipulation (own-race/other-race face) and (b) a familiarity manipulation (familiar/unfamiliar face) in a 2 × 2 factorial design. We found that the familiarity effect was several times larger than the race effect in all performance measures. However, participants expected race to have a larger effect on others than it actually did. Face recognition accuracy depends much more on whether you know the person’s face than whether you share the same race.

AbstractThis study investigates the idea that knowledge of specialist subject vocabulary can make a significant and measurable impact on academic performance, separate from and additional to the impact of general and academic vocabulary knowledge. It tests the suggestion of Hyland and Tse (TESOL Quarterly, 41:235–253, 2007) that specialist vocabulary should be given more attention in teaching. Three types of vocabulary knowledge, general, academic and a specialist business vocabulary factors, are tested against GPA and a business module scores among students of business at a college in Egypt. The results show that while general vocabulary size has the greatest explanation of variance in the academic success factors, the other two factors - academic and a specialist business vocabulary - make separate and additional further contributions. The contribution to the explanation of variance made by specialist vocabulary knowledge is double that of academic vocabulary knowledge.

Abstract. Sulfur dioxide (SO2) is an important atmospheric constituent that plays a crucial role in many atmospheric processes. Volcanic eruptions are a significant source of atmospheric SO2 and its effects and lifetime depend on the SO2 injection altitude. The Infrared Atmospheric Sounding Interferometer (IASI) on the METOP satellite can be used to study volcanic emission of SO2 using high-spectral resolution measurements from 1000 to 1200 and from 1300 to 1410 cm−1 (the 7.3 and 8.7 µm SO2 bands) returning both SO2 amount and altitude data. The scheme described in Carboni et al. (2012) has been applied to measure volcanic SO2 amount and altitude for 14 explosive eruptions from 2008 to 2012. The work includes a comparison with the following independent measurements: (i) the SO2 column amounts from the 2010 Eyjafjallajökull plumes have been compared with Brewer ground measurements over Europe; (ii) the SO2 plumes heights, for the 2010 Eyjafjallajökull and 2011 Grimsvötn eruptions, have been compared with CALIPSO backscatter profiles. The results of the comparisons show that IASI SO2 measurements are not affected by underlying cloud and are consistent (within the retrieved errors) with the other measurements. The series of analysed eruptions (2008 to 2012) show that the biggest emitter of volcanic SO2 was Nabro, followed by Kasatochi and Grímsvötn. Our observations also show a tendency for volcanic SO2 to reach the level of the tropopause during many of the moderately explosive eruptions observed. For the eruptions observed, this tendency was independent of the maximum amount of SO2 (e.g. 0.2 Tg for Dalafilla compared with 1.6 Tg for Nabro) and of the volcanic explosive index (between 3 and 5).

Patients with extremely high triglyceride levels and associated lipemia are at high risk for acute pancreatitis. Two factors can increase triglyceride-rich lipoproteins; one is overproduction and other is a defect in clearance. Either mechanism can cause hypertriglyceridemia and both may exist simultaneously. Causes can be either primary or secondary. Plasmapheresis is efficacious for severe hypertryceridemia in patients who have not responded to previous therapies. We have treated 15 cases of hypertrygliceridemia complicating the course of patients receiving Cyclosporin A after bone marrow transplantation. Five patients were treated with plasmapheresis, the other ten with cascade filtration. The removal rate for triglycerides was 58.0% for patients treated by cascade filtration and 63.5% for patients treated by plasmapheresis. The removal rates for triglycerides were low possibly as a consequence of early saturation of the filter.

There is a need to develop and validate simple, inexpensive techniques for the evaluation of traffic sign messages. This paper examines the semantic differential (a paper-and-pencil test which measures psychological meaning) as a potential instrument for such evaluation. Two experiments are described, one relating semantic differential scores to comprehension and the other relating this index to glance legibility. The data indicate that semantic differential scores on all four factors (evaluative, activity, potency, and understandability) were highly correlated with comprehension of symbolic messages. These scores were unrelated to glance legibility of verbal messages, but two factors (evaluative and understandability) did correlate with glance legibility of symbolic messages. It was concluded that the semantic differential is a valid instrument for evaluating comprehension of symbolic sign messages and that it has advantages over other techniques.

Summary In general, then, the concentrated energy at the source is actually divided among the principal wave types, which are there added together. Within very short distances, however, these wave types begin to separate because of their different velocities. There are thus two factors working to reduce the maximum shaking to which the ground is subjected. One is the natural decay of each wave with distance, as internal friction exhausts its original energy. The other, which is usually the dominating effect at short distances, is this stringing out of the wave types, each carrying its portion of the initial energy, until there is no longer any concentration where two or more types join forces to produce additive amplitudes.

All the facts which can be gathered from the study of museums or literature point to the conclusion that the sense of light was developed first, then the sense of colour. The tendency has been to regard colour-blindness as “chromic myopia;” but this is not correct unless there is a defective perception of light as well, as shown by the cases which I have recorded. A man may be able to see light of all colours at twice the normal distance, and yet be colour-blind. I specially wish to emphasise the fact that there is no definite relation between light and colour. When light falls upon the eye it sets up a nerve impulse, which is conveyed to the brain. In the impulse itself we have the physiological basis of light, and in the quality of the impulse the physiological basis of colour. My contention is that these two factors are perceived by two entirely different sets of cerebral cells, those devoted to the perception of colour being developed at a later period than those conveying to the mind the sensation of light. All the evidence which can be obtained shows that all objects were first seen as in a photograph, that is, in different degrees of black and white. In the evolution of the colour sense those waves which differ most physically, namely, red and violet, were first recognised as different, the remainder of the spectrum appearing grey. Homer's colour vision was of this class, which represents the degree just preceding total colour-blindness. I have recorded a case of this kind of a man who was colour-blind with one eye, and who was therefore able to tell me exactly how objects appeared with this eye. He said that the spectrum appeared nearly all grey, but with a tinge of red at one end and a tinge of violet at the other; he could see very much better with the colour-blind eye than with the other.

The goals of this research were to estimate the phenotypic correlations among various meat quality traits from a male broiler line and to describe the relation among these variables. Phenotypical correlations were determined among quality traits, isolating the effects of slaughter date, the age of the mother and sex. The evaluated traits were pH measurements taken at time 0 and at 6 and 24 hours after slaughtering, color parameters, water loss due to exudation, thawing and cooking of the meat, and shear force. Important associations (P<0.01) were found to be significant and, in most cases, weak or moderate, varying from -0.35 to 0.28. The initial pH of the meat was not associated (P>0.05) to the other traits of the meat, whereas the pH at 24 hours after slaughter was able of directly interfering with the attributes of the meat, since this trait was inversely related with lightness and water losses, which indicates an effect of pH fall along 24h after slaughtering on protein denaturation. This study demonstrates that the variables of poultry meat quality are related and that there is a phenotypical association between lightness and cooking losses and the other attributes of the meat. The pH at 24 hours after slaughtering, lightness and cooking losses could be efficient meat quality indicators in this broiler line.
