Energy-saving heat technologies for obtaining soy based plant powders

The monograph is devoted to solving the problem of energy-saving and development of resource-saving heat technology for processing soybeans and their mixtures with carotene-containing raw materials on functional phytoestrogenic food powders. The paper considers modern research and methods of processing phytoestrogenic raw materials. The study of heat and mass transfer processes during convective drying and the study of thermophysical and physicochemical properties of phytoestrogenic raw materials and its proteincarotene mixtures are presented. Innovative heat technology for the production of phytoestrogenic powders based on soybeans, recommended for use in the pharmaceutical, dairy and food industries, has been developed. The monograph is intended for employees of the food industry, students of higher educational institutions, masters and graduate students of engineering and technical specialties.

The article presents the overview of the main technological processes in fish structured products dehydration. The rational modes of the technological process of minced fish raw materials with various initial moisture and fat content heat treatment are determined. One of the main tasks of the fish processing industry development which allows increasing the profitability of products and their quality is improving technological processes. The scientifically substantiated choice of resource and energy-saving modes of processing food materials is highly important in this case. It will reduce not only production costs but also emissions of harmful substances into the environment and increase the efficiency of using equipment. It must be taken into consideration that the optimization of dehydration technological processes without identifying their patterns is extremely difficult. Increasing efficiency and controlling technological processes makes sense only on the basis of patterns. The effectiveness of the hydrobionts processing determines the quality and cost of finished products manufacturing while fish processing enterprises working. The development and implementation of highly efficient technologies with the use of resource-saving technical systems, for example, using heat pumps, makes it possible to produce cost-effective high-quality products.

Outdated technologies in drying processes can lead to iПеrrational use of energy, as a consequence, high energy consumption and increased energy consumption. Therefore, the issues of energy saving and energy efficiency are the most important tasks to be solved. Nowadays, energy saving and energy efficiency are also part of the environmental problem. Ukraine, which has a unique geographical position for Europe, is fully supplied with natural resources, - one of the countries where there is inefficient use of energy resources. One of the energy-consuming areas of vegetable processing is drying. In the modern world, the issue of energy efficiency of drying methods is one of the most relevant areas of research. Convective drying of vegetable raw materials requires a rational use of regime parameters of the process corresponding to the biochemical properties of the processed object. The primary objectives of this area of processing of vegetable raw materials are to reduce energy costs and ensure high quality characteristics of the final product. This article presents the developed heat-technology for obtaining phytoestrogenic powder from soybeans and spinach. Which includes 3 stages: preliminary preparation of raw materials for drying; drying of thermolabile vegetable raw materials; dispersion and packaging of the obtained phytoestrogenic powder. As a result of previously conducted comprehensive research, it was found that the use of heat technology reduces energy costs at the stage of preparation of raw materials through the improvement of existing hydrothermal treatment of soybeans, as well as energy savings of 21% through the use of developed step modes. Studies of the qualitative characteristics of the obtained phytoestrogenic powder confirm the high quality of the final product.

Alder gains increasing popularity just like alternative to expensive raw materials. Detai-led technique of the studies is proposed. The basic physical and mechanical properties of black alder wood are given, its properties as a material for furniture and interior decoration are examined. Beforehand dehydrating pro-cess of alder was mathematically modeled, values of transient humidity and other key operating parameters were obtained, and then practical industrial drying on parabolic modes was implemented. These modes include four stages with the initial warming and final WTP.

The article provides a scientific justification of energy and resource-saving reserves that are not taken into account and are available for the implementation of industry, modernization of fixed assets and mastering the production of high-level products. They were evaluated on the basis of systematic industry analysis of technological divisions of processing of raw materials and materials. The energy-saving potential of the most expensive technological complexes is scientifically justified. The main result of the article is a description of the improvement of technical devices by developing innovative art achievements for the comprehensive processing of various materials and obtaining the necessary products to meet human needs.

The purpose of this article is study and identification of the most promising trends and engineering solutions in order to improve resource saving and energy efficiency in the production of corundum on the basis of the conducted patent review on melting improvement and optimization. The ways to optimize the corundum production are considered in three directions from the point of view of energy saving. The first direction relates to the development of promising engineering developments. The latter are studied to select rational operating modes and determine the main factors affecting voltage surges during the technological process and useful product yield. Consideration is given to the conditions for reducing specific energy consumption and improvement of production environmental friendliness at all stages beginning from isothermal sintering of corundum, production of electrocorundum, fine corundum to single corundum crystals. The second direction is the optimization of corundum production at all stages for the development of an optimal control algorithm for the technological process. In this case the electricity consumption might be reduced by 10-12% as compared to current standards. The third direction is the development of engineering solutions involving the change of individual structural units of furnaces, namely, the use of modern components and new heat insulating materials, as well as the application of spent heat carriers as the sources of secondary energy resources and the introduction of additional controllers of the automated control system of the process. The analytical study has shown that the result of optimization should be upgraded designs of plants and electrical equipment, which can provide maximum electrochemical efficiency, and corresponding furnace tightness. Criteria for energy supply and energy quality making possible to stabilize furnace material balance and solve resource saving issues have been developed. These measures allow to reduce the loss of raw materials up to 20-25%, the specific energy consumption under the production of corundum by 2-3 thousand kWh per 1 t.

Cement and chemical grouts have often been used for soil strengthening. However, high cost, energy consumption, and harm to environment restrict their applications. Biocement could be a new green building- material and energy-saving material. Biocement is a mixture of enzymes or microbial biomass with inorganic chemicals, which can be produced from cheap raw materials. Supply of biocementing solution to the porous soil or mixing of dry biocement with clayey soil initiate biocementation of soil due to specific enzymatic activity. Different microorganisms and enzymes can be used for production of biocement.

Introduction. Processing of grain raw material with influence on starch or albumens by application of heat treatment creates the variety of functional properties of a product and is perspective in the modern terms vital functions of man. Research methods and methods. The flour obtained from wheat of the Ascanian wheat and from wheat of the soft varieties: Sophia ("sweet wheat"), Blond (soft) and Chornobrova (enriched with micro- and macronutrients) were used in the study. Thermal modification of flour samples was carried out in a convective manner. The control sample for determining the quality indicators is obtained in industrial conditions, extruded wheat flour produced by LLC "AS groups, LTD". Research results. The obtained kinetic dependence shows the gradual loss of moisture standards with different speed which accordingly influences on duration of drying. The moisture content of the drying agent most affects the intensity at the initial stage of the constant drying rate. With an increase in the moisture content of the coolant, the period of constant drying increases and the amount of evaporated moisture increases during this period. With the subsequent removal of moisture from raw materials, the degree of influence of this parameter on the intensity decreases. The nature of the drying curves is the same and the recommended process for obtaining modified flour is the process duration of 300 minutes or 5 hours. It was determined microscopically, that the samples of dried wheat flour have a purpose and are partially destroyed by starch granules and amorphization of biocomposite materials. Based on the data on the kinetics of drying flour samples, the kinetic coefficients and values of the critical moisture content for drying wheat flour were calculated, which is 1.18-1.30 %. It was determined that for the sensorial indicators the obtained samples have indicators characteristic of the varietal characteristics of wheat, from which the flour was taken. In terms of physical and chemical parameters, the modified wheat flour samples are not inferior to the well-known industrial sample of extruded flour. Conclusions. Use of flour, obtained from the wheat with different correlation of amilose and amylopectin, positively influences on a technological process and allows to extend the assortment of modified starch products, and accordingly, food products. Kinetics of the convective drying standards of the flour is investigated. Researches showed that a it is physically modified flour obtained from the different sorts of the soft wheat is not inferior in quality to the extruded wheat flour.
