Abstract The effect of roasting conditions on antioxidant activity Opuntia Ficus Indica seeds from Morocco and their phenolic compounds were optimized by the Central Composite Design (CDD) method. The CCD was used to optimize the roasting conditions: temperature (X1: 60–200 °C) and roasting time (X2: 10–50 min). The best roasting conditions were used in order to optimize the optimal value of the response : TPC (Total Phenolic Content): X1: 200°C, X2: 50min with 104.86±1.94GAE/g extract predicted response, TFC (Total Flavonoids Content) : X1: 200 °C, X2: 50 min with 81.23±0.90 mg QE/g extract predicted responses, TTC (Total Condensed Tannins Content): X1: 128.9°C, X2: 34.92min with 6.12±0.95 mg QAE/g extract) predicted response. Moreover, the optimal potential antioxidant activity by ABTS assay and DPPH assay was found in extracts of Opuntia Ficus Indica seeds roasted: at a high temperature of the roasting. Furthermore, the positive significant correlations were determined by the principal component analysis (PCA) on the one hand, between the antioxidant capacity of the extracts and their antioxidants compounds (TPC and TFC), and on the other hand, between the two assays ABTS and DPPH. Consequently, the results of this work indicated that roasted Opuntia Ficus Indica seeds from Morocco can be considered as an essential ingredient for human foods.

This study aims to establish qualitative as well as quantitative phytochemical profiles and determine the free radical scavenging activity of phytochemical constituents of the entire plant of Achyranthes aspera Linn. The extraction of dried plant material was carried out by cold maceration with    methanol followed by partitioning with ethyl acetate. Preliminary phytochemical screening of the plant was carried out by performing various chemical tests. Phenolic and flavonoid contents were determined by Folin-Ciocalteu and Aluminum chloride methods, respectively.  Antioxidant activity was studied using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging method.  The result of study revealed the presence of flavonoids, alkaloids, terpenoids, phytosterols, tannins, saponins, phenolic compounds, and carbohydrates. Total phenolic content, total flavonoids content, and antioxidant activity of the extract were found as 209.007 µg GA/mg, 17.59 µg QE/mg, and 25.12% (100 µg/mL), respectively. The study showed that plant could be a source of antioxidant compounds.

This work is aimed to optimize the effects of different roasting factors on the bioactive compound’s antioxidant capabilities of opuntia ficus indica seeds by using DPPH and ABTS assays. The Box-Behnken design (BBD) was applied to optimize the roasting temperature (X1:60-200 °C), roasting time (X2:10-50 min), and extraction time (X3: 3–6h). The optimal conditions of roasting applied in order to optimize the greatest content of the responses were: TPC (Total Phenolic Content): X1:200 °C, X2: 50 min, and X3: 5.49 h with 103.5±0.76 GAE/g extract experimental response, TFC (Total Flavonoids content): X1:200°C, X2:50min, and X3:3.16 h with 104.29±0.54 mg QE/g extract experimental response, TTC (Total Condensed Tannins Content ): X1: 200°C, X2: 50min, X3: 6h with 10,16±0.89 mg QAE/g extract experimental response, TSC ( Total Sugars Content ): X1: 60°C, X2:50 min, X3:5.12 h with 40.35±0.99 mg D-Glu E/g extract an experimental response. The maximal antioxidant power by DPPH and ABTS assays was recorded at a strong temperature of roasting. Moreover, the significant correlations were obtained by the principal component analysis (PCA), the first step, between the bioactive compounds, and on the second step, between their antioxidant capacities (DPPH, ABTS). Hierarchical Cluster Analysis (HCA) classified extracts into three clusters on the basis of measured antioxidant activity characteristics. Therefore, the result of this work indicates that roasted Opuntia ficus Indica seeds could be used as a significant human nutrient.

Nyctanthes arbour-tristis is a shrub belongs to the family Oleaceae. The flowers of this plant are fragrant since the presence of flavonol glycosides. It has also been reported for the presence of β-sitosterol, iridoid glycosides, tannins etc., and known to have immunostimulant, hepatoprotective, antiviral and antifungal activities. In the present study an attempt is made to identify antioxidant capacity and anthelminthic potential of methanolic flower extract of Nyctanthes arbour-tristis. Antioxidant activity was evaluated by total phenolic content assay, total flavonoids content assay, free radical scavenging activity and reducing ability methods. Anthelmintic activity was evaluated on Perithima posthuma using Piperazine citrate as standard drug. The results obtained for the above activities reveals that Nyctanthes arbour-tristis shows considerable antioxidant activity for all the methods and anthelminthic potential at 300 mg/ml. The study compared the content of eight phenolic acids and four flavonoids and the antioxidant activity of six Polish varietal honeys. An attempt was also made to determine the correlations between the antioxidant parameters of the honeys and their polyphenol profile using principal component analysis. Total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity (ABTS) and reduction capacity (FRAP) were determined spectrophotometrically, and the phenolic compounds were determined using high-performance liquid chromatography (HPLC). The buckwheat honeys showed the strongest antioxidant activity, most likely because they had the highest concentrations of total phenols, total flavonoids, p-hydroxybenzoic acid, caffeic acid, p-coumaric acid, vanillic acid and chrysin. The principal component analysis (PCA) of the data showed significant relationships between the botanic origin of the honey, the total content of phenolic compounds and flavonoids and the antioxidant activity of the six Polish varietal honeys. The strongest, significant correlations were shown for parameters of antioxidant activity and TPC, TFC, p-hydroxybenzoic acid, caffeic acid and p-coumaric acid. Analysis of four principal components (explaining 86.9% of the total variance), as a classification tool, confirmed the distinctiveness of the Polish honeys in terms of their antioxidant activity and content of phenolic compounds.

The influence of nano-emulsified curcumin (NEC) added to the hair sheep milk, prior to cheese-making, on the chemical composition, lipolysis, and proteolysis of manchego-style cheeses were evaluated throughout 80 days of ripening. The addition of NEC to the milk resulted in cheeses with the same moisture content (42.23%), total protein (23.16%), and water activity (0.969) (p > 0.05). However, it increased the fat and ash levels from 26.82% and 3.64% in B 10 ppm to 30.08% and 3.85% in C 10 ppm, respectively, at the end of the ripening (p < 0.05). The total phenolic content and antioxidant activity of experimental cheeses increased during ripening, and the fatty acid groups showed significant changes occurred to a greater extent in the first days of ripening (p < 0.05). The lipolysis increased consistently in all cheeses until day 40 of ripening, to decrease at the end, while proteolysis increased during all ripening time in all samples (p < 0.05); the addition of NEC did not alter the primary proteolysis of manchego-style cheeses, but it modified secondary proteolysis and lipolysis (p < 0.05). Principal component analysis was useful for discriminating cheeses according to their chemical composition and classified into four groups according to their ripening time. This research highlights the potential of CNE to fortify dairy foods to enhance their functionality.

The brewing industry produces high quantities of solid and liquid waste, causing disposal issues. Brewing spent grains (BSGs) and brewing spent hop (BSH) are important by-products of the brewing industry and possess a high-value chemical composition. In this study, BSG and BSH, obtained from the production process of two different types of ale beer (Imperial red and Belgian strong beer) were characterized in terms of valuable components, including proteins, carbohydrates, fat, dietary fiber, β-glucans, arabinoxylans, polyphenols, and phenolic acids, and antioxidant activity (Ferric Reducing Antioxidant Power Assay (FRAP), 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS)). Significant concentrations of total polyphenols were observed in both BSH and BSG samples (average of about 10 mg GAE/g of dry mass); however, about 1.5-fold higher levels were detected in by-products of Belgian strong ale beer compared with Imperial red. Free and bound phenolic acids were quantified using a validated chromatographic method. A much higher level of total phenolic acids (TPA) (about 16-fold higher) was found in BSG samples compared with BSHs. Finally, their antioxidant potential was verified. By-products of Belgian strong ale beer, both BSG and BSH, showed significantly higher antioxidative capacity (about 1.5-fold lower inhibitory concentration (IC50) values) compared with spent grains and hop from the brewing of Imperial red ale. In summary, BSG and BSH may be considered rich sources of protein, carbohydrates, fiber, and antioxidant compounds (polyphenols), and have the potential to be upcycled by transformation into value-added products.

Many imported honeys distributed on the Polish market compete with local products mainly by lower price, which can correspond to lower quality and widespread adulteration. The aim of the study was to compare honey samples (11 imported honey blends and 5 local honeys) based on their antioxidant activity (measured by DPPH, FRAP, and total phenolic content), protein profile obtained by native PAGE, soluble protein content, diastase, and acid phosphatase activities identified by zymography. These indicators were correlated with standard quality parameters (water, HMF, pH, free acidity, and electrical conductivity). It was found that raw local Polish honeys show higher antioxidant and enzymatic activity, as well as being more abundant in soluble protein. With the use of principal component analysis (PCA) and stepwise linear discriminant analysis (LDA) protein content and diastase number were found to be significant (p < 0.05) among all tested parameters to differentiate imported honey from raw local honeys.

Ten indeterminate tomato cultivars differing in fruit shape and typology, grown simultaneously in a greenhouse from Oltenia (Southwestern Romania) and harvested at red ripe stage, were investigated for the contents in ascorbic acid, lycopene, β-carotene, total phenolics, minerals (K, Na, Ca and Mg) and trace elements (Fe, Cu, Mn, Cr, Zn and B). In addition, their antioxidant activities were determined. Significant differences were found among tomato cultivars in all studied antioxidant compounds, as well as in the antioxidant activity. Ascorbic acid ranged from 91.9 to 329.7 mg kg-1 fw, lycopene ranged from 19.7 to 49.0 mg kg-1 fw, while total phenolic compounds varied between 300.2 and 557.8 mg kg-1 fw. Antioxidant activity ranged from 0.81 mmol Trolox kg-1 fw to 1.74 mmol Trolox kg-1 fw and it was significantly correlated to total phenolics content (r = 0.91; p< 0.05). The cocktail type cultivar ‘Tiger’ and the cherry type cultivar ‘Belle’ proved to be the most powerful in antioxidant activity and phenolic compounds while the rectangular plum shaped cultivar ‘Porto’ recorded the highest average lycopene content. A valuable cultivar proved to be the brownish red ‘Sacher’ which registered among the highest contents of phenolics, lycopene and ascorbic acid. Mineral and trace elements contents were also significantly affected by cultivars. Values recorded for K, Ca and Mg ranged from 2139.6 to 3056.9 mg kg-1, 137.7 to 325.8 mg kg-1 and 27.3 to 168.7 mg kg-1 respectively.
