Five plum hybrids (38/62/70, IV/63/81, 32/21/87, 34/41/87 and 22/17/87) and newly released cultivar ‘Nada’, obtained by planned hybridisation and singled out within breeding programme at Fruit Research Institute, Čačak, were assessed for the main physical (fruit and stone weight and flesh percentage), chemical (soluble solids content, total and inverted sugars content, sucrose content, total acids content, pH value of fruit juice, ratio of soluble solids and total acids content and ratio of total sugars and total acids content) and sensorial (attractiveness, taste, aroma and consistency) traits compared with the standard cultivar ʻČačanska Lepoticaʼ. Results showed that the studied plum genotypes differed significantly in all of the assessed traits. Regarding the physical features, the best results were shown by hybrid 38/62/70, which had the highest fruit weight (56.92 g) and flesh percentage (96.91%), as well as by the new cultivar ‘Nada’, for which a larger fruit was observed in comparison to the standard (45.54 g and 42.24 g, respectively). Also, ‘Nada’ had better sensorial properties such as attractiveness, taste, aroma and consistency in relation to the other promising hybrids and the standard cultivar. From the aspect of all the studied sensorial characteristics, in addition to ‘Nada’, only hybrid 38/62/70 was aligned with the standard cultivar. Out of the studied genotypes, late ripening hybrid 22/17/87 had the best values of parameters of fruit chemical composition such as the soluble solids content (17.01%), total and inverted sugars contents (12.31% and 8.96%, respectively). The highest sucrose content (3.39%), pH value of fruit juice (3.51), as well as the highest ratio between soluble solids and total acids content (43.72) and ratio between total sugars and total acids content (32.58) were found in cultivar ‘Nada’. The highest total acids content (1.42%) was recorded in hybrid 32/21/87. Compared to ʻČačanska Lepoticaʼ, the same or better results in terms of the fruit chemical composition were determined in cultivar ‘Nada’ and hybrids 34/41/87 and 22/17/87. The study revealed existence of significant correlations between individual studied parameters of the fruit physical, chemical and sensorial properties.

Abstract The study was conducted to determine the effects of Myrobalan rootstock and Blackthorn interstock on fruit physical and chemical traits of five apricot cultivars. The results showed that cultivars grafted on Myrobalan rootstock appear to induce a higher fruit mass when compared with the Blackthorn interstock. Blackthorn interstock showed a tendency to induce a higher soluble solids/titratable acidity ratio than Myrobalan. Values of soluble solids content, total sugars, titratable acidity and fruit firmness between Myrobalan rootstock and Blackthorn interstock were not significant. Regarding cultivars, the greatest fruit mass observed in Roxana in both treatments, and the lowest in Biljana on Myrobalan and in Vera on Blackthorn. The lowest soluble solids, total sugars and soluble solids/titratable acidity ratio were found in Roxana in both variants of grafting, whereas the greatest titratable acidity also observed in Roxana in both cases, respectively. Based on the results from this study, the fruits of Roxana can be recommended for fresh consumption, whereas fruits of the other cultivars can be recommended for processing.

The effects of prolonged ethylene exposure on external and internal quality parameters of tomato fruits were studied in order to explore the feasibility of its use as a nondestructive technique for screening immature and inferior quality fruit. `Agriset' and `CPT-5' tomatoes were hand harvested at Stage 1 (green) and held at 20°C and 50 ppm ethylene for 1-7 days. Each 24 hours, fruits reaching Stage 2 (breaker) were removed from C2H4 and transferred to 20°C air for subsequent ripening. Tomatoes were considered at edible maturity upon reaching full red-ripe stage and 4 mm deformation and final quality parameters were determined. For both cultivars, fruits which required prolonged C2H4 exposure to reach Stage 2 had lower overall visual appearance. `Agriset' tomatoes which required short exposure times to C2H4 (1 to 3 days) had somewhat higher quality than those requiring prolonged times (4 or 5 days). Days to reach edible maturity were 9.5 and 7.7, respectively. For the short exposure times, peel color was more intense (higher chroma value), while soluble solids content and total sugars were significantly higher (P = 0.05). Quality of `CPT-5' tomatoes was not adversely affected until requiring 6 or 7 days exposure to C2H4. Days to reach edible maturity decreased from an average of 12.5 to 11.0 for 1 to 5 or for 6 to 7 days exposure, respectively. For fruits requiring 7 days exposure, soluble solids content, total sugars and pH were significantly higher than for those reaching Stage 2 in fewer days. There were no significant differences in titratable acidity or ascorbic acid content for either cultivar.

Apple (Malus ? domestica Borkh.) is economically the most important species of genus Malus Miller. Developing new apple genotypes is carried out on a large scale in many scientific institutes throughout the world. ?Jonathan? is one of four cultivars which have been used as the most frequent progenitors in apple breeding programmes worldwide. The paper presents six promising apple selections bred at Fruit Research Institute, and ?Jonathan? as the parental cultivar. The assessed selections derived from the crosses ?Jonathan? ? ?Idared? (J/3/60 and J/2/53), [?Jonathan? ? J/54/53/59] ? J/27/127/62 (J/4/106) and ?Jonathan? ? J/54/53/59 (J/1/55, J/1/71 and J/1/15). Major phenological properties (flowering phenophase and harvest time), cropping and pomological properties (morphometrical and chemical characteristics of fruits) were assessed. The highest fruit weight (J/2/53; 188.4 g) and yield per unit area (J/3/60; 34 t ha-1) were reported in selections derived from the cross ?Jonathan? ? ?Idared?. Selections raised from a cross between ?Jonathan? and J/54/53/59 have high quality fruits. The highest soluble solids content was found in J/1/55 (15.3%), while the highest total sugars and acids content was evidenced in J/1/71 (9.61%; 1.46%, respectively).

Two greenhouse experiments were carried out to analyze the shoot sodium (Na+) partitioning, yield, and fruit quality of ‘Cuore di Bue’, a salt-sensitive heirloom tomato (Solanum lycopersicum L.), ungrafted or grafted onto interspecific tomato hybrid rootstocks (S. lycopersicum × S. habrochaites) ‘Maxifort’ and ‘Arnold’ in 2009, ‘Arnold’ and ‘Armstrong’ in 2010, grown at different salinity stress (SS) levels (0, 20, and 40 mm of NaCl in 2009; 0 and 20 mm of NaCl in 2010). In both experiments, an interaction was observed between grafting combinations and SS levels in terms of fruit yield, and fruit juice Na+ content. Under no SS conditions, plant grafted onto ‘Maxifort’ and ‘Armstrong’ provided the highest yield in 2009 and 2010 experiments, respectively. In the presence of 20 mm of NaCl, plants grafted onto ‘Arnold’ provided a marketable yield 23.5% (on average) higher than plants grafted onto ‘Maxifort’ or ungrafted in 2009 and 33% (on average) higher than plants grafted onto ‘Armstrong’ or ungrafted in 2010. The further increase of SS to 40 mm of NaCl considerably reduced the productivity of all grafting combinations. At 20 mm of NaCl, plants grafted onto ‘Arnold’ showed also a higher capacity to modulate shoot Na+ partitioning with respect to ungrafted plants by increasing Na+ accumulation in older leaves (52%) and reducing Na+ content in younger and most active leaves (24%), thus enabling the maintenance of higher K+/Na+, Ca2+/Na+, and Mg2+/Na+ ratios compared with ungrafted plants. Fruit total soluble solids content, titratable acidity, and dry matter were unaffected by grafting at any SS level, whereas under SS, the fruit juice Na+ content of grafted plants was consistently lower (from 19% up to 68%) than that of ungrafted plants. Under moderate SS conditions (20 mm of NaCl), the use of rootstock genotypes such as ‘Arnold’ having a particular ability to reduce Na+ accumulation in younger and most active leaves may increase tomato yield and enhance tomato nutritional value by reducing the fruit juice Na+ content.

“Ruaner” pear (Pyrus ussuriensis Maxim.) is a fruit crop that is frequently served frozen in China. It is a typical postharvest ripening fruit that needs to ripen after harvest before it can be eaten, and freezing–thawing is one way that pears are treated during postharvest ripening. In order to study the physical–chemical composition and quality-related changes in “Ruaner” pears that result the freezing–thawing period, “Ruaner” pears were kept in a freezer (−20 °C) for 7 days, after which they were transferred to room temperature for thawing. The color of the peel of the “Ruaner” pears changed from yellow-green to yellow and then brown. The chlorophyll content and titratable acidity (TA) decreased significantly throughout 0–12 h period. The carotenoid content tended to rise and then decrease, peaking at 3 h after thawing (HAT), while the soluble solids content (SSC), firmness, total phenolic content, and total flavonoid content all generally decreased. The composition of soluble sugars and organic acids was examined in “Ruaner” pears, and the major soluble sugars were fructose and glucose, with citric acid being the most abundant organic acid. The data suggest that freezing–thawing significantly changes firmness, water content, SSC, and TA in “Ruaner” pears. At 3–4 HAT, “Ruaner” pears have moderate hardness, high water content, low acid content, and higher total phenolic, total flavonoid, and soluble solids content. Therefore, 3–4 HAT is the best time for pears in terms of both table and processing quality.

The effects of preharvest methyl jasmonate (MJ) application on fruit quality, flavonoid content and antioxidant capacity (ORAC) in black raspberry cv. Jewel (Rubus occidentalis L) were studied under field conditions. Raspberries treated with 0.1 mm methyl jasmonate had 20% higher soluble solids content, 20% higher total sugars, 16% higher fructose, 34% higher glucose and 30% lower titratable acids, 31% lower malic acid and 17% lower citric acid than untreated fruit. El-lagic acid, quercetin 3-glucoside, kaempferol 3-glucoside, kaempferol 3-glucuronide, cyanidin 3-glucoside and cyaniding 3-rutinoside were found in raspberry fruit extract. Cyanidin 3-rutinoside was the most dominant anthocyanin and was the major contributor to antioxidant activity in Jewel raspberries. MJ treatments significantly enhanced the content of anthocyanins by 92%, total phenolics by 53%, flavonoids by 98% and the antioxidant capacities by 74% in the fruit. The ORAC value was positively correlated with anthocyanins and total phenolics. In this study, the correlation coefficient for ORAC (y) vs anthocyanins (x) was 0.977 (y = 0.056x + 27.874), and that for ORAC (y) vs. total phenolics (x) was 0.988.

Due to their outstanding anthocyanin content, elderberries are mainly used in the food industry to produce pigment concentrations. Thanks to the increase in demand, elderberry is grown on ever greater areas in Hungary and in neighbouring countries. Cultivar use, however, is very one-sided, being practically restricted to ‘Haschberg’. As this cultivar has many negative properties, growers have begun to plant and test new cultivars. When determining the commodity value of cultivars, it is important to examine not only the physical traits of the fruit, but also their main chemical parameters. In the present experiment the chemical properties (soluble solids and titratable acid content, total polyphenol and anthocyanin content, antioxidant capacity) of the fruit of 11 elderberry cultivars (‘Haidegg 13’, ‘Haidegg 17’, ‘Haschberg’, K3, ‘Korsör’, ‘Samdal’, ‘Samidan’, ‘Samocco’, ‘Sampo’, ‘Samyl’, ‘Weihenstephan’) were analysed in three consecutive years. In addition to the comparative evaluation of the cultivars, this work also aimed to discover correlations between the components and to study the effect of the year on the chemical composition of the fruit. Significant differences were found between the cultivars for the soluble solids content (F(10;8.74)=9.71; p=0.001), the titratable acid content (F(10;22)=7.91; p<0.001), the polyphenol content (F(10;22)=9.77; p<0.001), the anthocyanin content (F(10;8.52)=36.18; p<0.001) and the antioxidant capacity (F(10;22)=3.61; p=0.006). A year effect was proved for the water-soluble solids content (F(2;30)=4.02; p=0.028) and the antioxidant capacity (F(2;30)=5.21; p=0.011). Among the chemical properties, a significant positive linear correlation was only detected between the polyphenol and anthocyanin contents (r=0.91; p<0.001). Among the cultivars, ‘Sampo’, ‘Samidan’ and ‘Weihenstephan’ exhibited outstanding polyphenol and anthocyanin contents. The soluble solids content and antioxidant capacity of ‘Haidegg 17’ were also promising.

Phenological characteristics, yield and fruit quality of 14 medium-late ripening plum cultivars, were studied in the region of Belgrade during the five-year period (2013-2017). The control cultivar for comparison was ?Cacanska rodna?. Flowering of tested cultivars occurred in the first half of April, and fruit maturation was in the first half of August. The average yield per tree was the lowest in the ?Nevena? cultivar (1.6 kg), and the highest in the ?Mildora? cultivar (22.5 kg). Compared to the control cultivar, significantly lower yield was achieved in seven cultivars. The lowest vigor was determined in the standard cultivar (?Cacanska rodna?), and the highest in the ?Milka? cultivar. The average fruit weight ranged from 19.5 g in the ?Nevena? cultivar to 50.5 g in the ?Valor? cultivar. Compared to the control, fruit weight was statistically significantly higher in five cultivars. In all studied cultivars, the high soluble solids content (over 17%) was found, while in cultivars ?Mildora? and ?Valor? it was significantly higher than in the control. On the basis of the obtained results, as regards cultivation in the region of Belgrade, it is possible to recommend the following cultivars: ?Valor? and ?Cacanska najbolja? as predominantly table cultivars (for fresh consumption), ?Jojo? and ?Vengerka krupna slatka? as cultivars of combined characteristics and ?Mildora? as a cultivar for processing.

Quality of Carrots Grown for Processing as Affected by Nitrogen Fertilization and Harvest TermIn 2007-2008 the effect of nitrogen fertilization and harvest term on quality of two carrot cultivars was investigated. The field experiment was carried out in Żelazna Experimental Station of Warsaw University of Life Sciences. Karotan F1and Trafford F1cultivars, commonly grown for juice industry, were the objects of the experiment. Carrot seeds were sown at the beginning of May. Nitrogen fertilization was applied in five rates, ranged from 0 to 120 kg·ha-1and in two terms — before sowing and in the middle of growing season. Roots were harvested in three terms: mid-September, mid-October and the first decade of November. After harvest there were determined: nitrates (NO3) content in carrot roots and juice, soluble solids, colour parameters of juice in CIE L*a*b*system. The dose and the term of nitrogen fertilization influenced nitrates content in carrots, and the highest NO3concentration was found in carrots fertilized with 120 kg·ha-1of N before sowing. Karotan showed higher nitrates accumulation than Trafford. The content of nitrates in the roots was markedly higher than in carrot juice. Nitrates content in carrots decreased with delaying of harvest time, in opposite to soluble solids content. Soluble solids content and colour parameters of carrot juice were not affected by nitrogen fertilization, but the lowest L*, a*and b*values were observed at the last term of harvest.

Mango fruits `Criollo de Bocado' harvested at the mature-green stage were treated with a hydrothermic treatment of 55 °C for 3 min and stored for 20 days at temperatures of 10 ± 2, 15 ± 2 and 28 ± 2 °C. A randomized design 2 × 3 × 4 with three replications was used. Some chemical parameters were analyzed, such as total soluble solids content (% TSS), pH, tritatable acidity, and TSS/tritatable acidity ratio. TSS content increased with storage time at low temperature. The pH increased measurably with storage temperature, while tritatable acidity values results had inconsistent data.
