“Ruaner” pear (Pyrus ussuriensis Maxim.) is a fruit crop that is frequently served frozen in China. It is a typical postharvest ripening fruit that needs to ripen after harvest before it can be eaten, and freezing–thawing is one way that pears are treated during postharvest ripening. In order to study the physical–chemical composition and quality-related changes in “Ruaner” pears that result the freezing–thawing period, “Ruaner” pears were kept in a freezer (−20 °C) for 7 days, after which they were transferred to room temperature for thawing. The color of the peel of the “Ruaner” pears changed from yellow-green to yellow and then brown. The chlorophyll content and titratable acidity (TA) decreased significantly throughout 0–12 h period. The carotenoid content tended to rise and then decrease, peaking at 3 h after thawing (HAT), while the soluble solids content (SSC), firmness, total phenolic content, and total flavonoid content all generally decreased. The composition of soluble sugars and organic acids was examined in “Ruaner” pears, and the major soluble sugars were fructose and glucose, with citric acid being the most abundant organic acid. The data suggest that freezing–thawing significantly changes firmness, water content, SSC, and TA in “Ruaner” pears. At 3–4 HAT, “Ruaner” pears have moderate hardness, high water content, low acid content, and higher total phenolic, total flavonoid, and soluble solids content. Therefore, 3–4 HAT is the best time for pears in terms of both table and processing quality.

The research was done at Aleksandras Stulginskis University (Vytautas Magnus University Agriculture Academy since 2019) in 2017–2018. The research object was kombucha beverage brewed from Camellia sinensis L. black, green, oolong, pu-erh tea and fermented for 9 and 22 days by microorganisms at different room lighting conditions. The soluble solids content, active acidity and titratable acidity were determined in teas fermented for 22 days. The total amount of phenolics compounds, antioxidant activity, yeast colonies and sensory evaluation of tea were determined in teas fermented for 9 days. The research results showed that the quality of fermented tea was dependent on the tea species, but fermentation conditions were not essential. During the fermentation the soluble solids content of tea decreased by an average of 0.60% and the content of acetic acid increased by 0.34%. The highest content of acetic acid was found on the 22nd day of fermentation in all species of teas. The active acidity (pH) of all investigated species of teas decreased significantly during the fermentation process. The total content of phenolic compunds in all species of teas during the fermentation increased from 20 to 57% regardless of fermentation conditions. The highest content of total phenolic compounds was established in teas fermented for 9 days. The antioxidant activity of teas fermented for 9 days varied depending on the fermentation conditions. For black and green teas fermented in the light the antioxidant activity decreased, for oolong and pu-erh teas fermented in the dark the antioxidant activity increased. The number of yeast colonies increased in all tea samples during the fermentation. The best taste was fixed for pu-erh tea, which scored the highest (11.4) in sensory evaluation.

Abstract The purpose of the research was to predict quality attributes of ‘manalagi’ apples using near infrared spectroscopy (NIRS). The desired quality attributes were water content and soluble solids content. Spectra data collection was performed at wavelength of 702 to 1065 nm using a Nirvana AG410 spectrometer. The original spectra were enhanced using orthogonal signal correction (OSC). The regression approaches used in the study were partial least squares regression (PLSR) and principal component regression (PCR). The results showed that water content prediction acquired coefficient of determination in calibration set (R2cal) of 0.81, coefficient of determination in prediction set (R2pred) of 0.61, root mean squares error of calibration set (RMSEC) of 0.009, root mean squares of prediction set (RMSEP) of 0.020, and ratio performance to deviation (RPD) of 1.62, while soluble solids content prediction displayed R2cal, R2pred, RMSEC, RMSEP, and RPD of 0.79, 0.85, 0.474, 0.420, and 2.69, respectively. These findings indicated that near infrared spectroscopy could be used as an alternative technique to predict water content and soluble solids content of ‘manalagi’ apples.

Over the past several growing seasons researchers at Texas Tech University have observed that certain onions appeal to rabbits more than other onions, meaning that rabbits tend to nibble on certain lines or varieties and leave other lines undisturbed. We were interested in determining the cahracteristics of the onions that rabbits seemed to like. Onions were planted at random in the TTU breeding nursery. During the growing season all onions were rated for rabbit appeal - those with chewed leaves and or bulbs were recorded as liked by the rabbits. All onions in each plot, whether disturbed or undisturbed by the rabbits, were tested for pyruvate concentration and soluble solids content after harvest. Pyruvates were measured by mmol/gram pyruvic acid and soluble solids content by °Brix refractometer reading. The most damage occurred in onion lines that had the lowest pyruvate levels. Soluble solids did not appear to affect the rabbits' nibbling.

This study assessed the antioxidant, total phenolic, and physicochemical properties of in vitro Terminalia Catappa Linn (locally called castanhola) using the DPPH assay. The castanhola fruits had an average weight of 19.60 ± 0.00 g, combining shell, pulp, and seed weight, and a soluble solids content of 8 °Brix. The chemical composition was determined with predominance of carbohydrates (76,88 ± 0,58%).The titration method was used to determine Vitamin C content using 2,6-dichlorophenolindophenol (DCFI), known as reactive Tillmans resulting in no significant levels. Aqueous extracts of castanhola pulp showed a higher concentration of phenolics, 244.33 ± 18.86 GAE.g-1 of fruit, and alcoholic extracts, 142.84 ± 2.09 GAE.g-1 of fruit. EC50 values of the aqueous extract showed a greater ability to scavenge free radicals than the alcoholic extracts. The fruit had a significant content of phenolic compounds and high antioxidant capacity.

Summary This experiment evaluated the effect of soil management systems in a black currant planting on the generative potential (number of flowers per inflorescence, number of berries per cluster and yield per bush), physical attributes of the cluster and fruit (berry weight and cluster weight) and chemical properties of the fruit (soluble solids content, total sugars, titratable acidity, total anthocyanins, total phenolic content and vitamin C) of black currant cultivars. Three soil management systems were used: treatment I – bare fallow i.e. continuous tillage; treatment II – sawdust mulch, and treatment III – black polyethylene foil mulch. Four black currant cultivars were included - ‘Ben Lomond’, ‘Titania’, ‘Čačanska crna’ and ‘Tiben’. The soil management systems had a significant effect on the tested parameters. The cultivars also showed highly significant differences. Soil management system x cultivar interactions were observed for generative potential, and physical properties of the cluster and fruit, but not for fruit chemical traits, except in the soluble solids content.

Five plum hybrids (38/62/70, IV/63/81, 32/21/87, 34/41/87 and 22/17/87) and newly released cultivar ‘Nada’, obtained by planned hybridisation and singled out within breeding programme at Fruit Research Institute, Čačak, were assessed for the main physical (fruit and stone weight and flesh percentage), chemical (soluble solids content, total and inverted sugars content, sucrose content, total acids content, pH value of fruit juice, ratio of soluble solids and total acids content and ratio of total sugars and total acids content) and sensorial (attractiveness, taste, aroma and consistency) traits compared with the standard cultivar ʻČačanska Lepoticaʼ. Results showed that the studied plum genotypes differed significantly in all of the assessed traits. Regarding the physical features, the best results were shown by hybrid 38/62/70, which had the highest fruit weight (56.92 g) and flesh percentage (96.91%), as well as by the new cultivar ‘Nada’, for which a larger fruit was observed in comparison to the standard (45.54 g and 42.24 g, respectively). Also, ‘Nada’ had better sensorial properties such as attractiveness, taste, aroma and consistency in relation to the other promising hybrids and the standard cultivar. From the aspect of all the studied sensorial characteristics, in addition to ‘Nada’, only hybrid 38/62/70 was aligned with the standard cultivar. Out of the studied genotypes, late ripening hybrid 22/17/87 had the best values of parameters of fruit chemical composition such as the soluble solids content (17.01%), total and inverted sugars contents (12.31% and 8.96%, respectively). The highest sucrose content (3.39%), pH value of fruit juice (3.51), as well as the highest ratio between soluble solids and total acids content (43.72) and ratio between total sugars and total acids content (32.58) were found in cultivar ‘Nada’. The highest total acids content (1.42%) was recorded in hybrid 32/21/87. Compared to ʻČačanska Lepoticaʼ, the same or better results in terms of the fruit chemical composition were determined in cultivar ‘Nada’ and hybrids 34/41/87 and 22/17/87. The study revealed existence of significant correlations between individual studied parameters of the fruit physical, chemical and sensorial properties.

Worldwide, Brazil holds the fifth position in melon fruits exportation, further expanding its products to provide for the growing demand. This expansion is the result of the development and application of new technologies, including the management of the use of biostimulants. However, for melon crops, the information in the literature on the use of biostimulants remains limited to the effects of different doses on fruit quality at the time of harvest. Therefore, this study aimed to evaluate the influence of different methods of pre-harvest application of two biostimulants on the production and postharvest conservation of fruits of yellow melon cv. Iracema. The treatments consisted of a combination of three factors: two plant biostimulants (Crop Set® and Spray Dunger®), two application methods of the products (fertigation and spraying), and five times of postharvest storage (0, 14, 21, 28 and 35 days). An additional control treatment corresponded to plants without biostimulant application. The fruits were evaluated for production and physicochemical attributes: average mass, yield, flesh firmness, titratable acidity, soluble solids content, SSC/TA ratio, pH, total soluble sugars, and weight loss. Fertigation is the recommended application method of biostimulants for yellow melon due to its effect on the increase of average mass, yield, flesh firmness, soluble solids content, and total soluble sugars of the fruits in relation to the spraying method.

Phenolic compounds have numerous beneficial effects on human health. In consequence, the development of new varieties with higher content of phenolics is of interest for the improvement of the nutritional quality of eggplant (Solanum melongena L.). However, the oxidation of eggplant phenolics causes browning of the cut surfaces of the fruit and reduces its apparent quality. The authors investigated the relationship among, as well as the variation and heritability of, the content of phenolics, ascorbic acid, and soluble solids; pH; and the degree of browning and color difference of the cut surface of the fruit flesh in a collection of 69 eggplant varieties. These included landraces from different origins, commercial varieties, experimental hybrids, and four accessions of the related S. aethiopicum L. and S. macrocarpon L. species. Analyses of variance revealed significant differences among the materials studied for all traits considered. The concentration of phenolics in S. melongena spanned a threefold range, although the highest (1122 mg·kg−1) and lowest (134 mg·kg−1) concentrations of phenolics were found in S. macrocarpon and S. aethiopicum respectively. Concentrations of ascorbic acid were very low, a mean 27 times lower than those of phenolics, and soluble solids content ranged from 3.60% to 6.60% with a pH that ranged from 5.01 to 5.93. Commercial varieties had, as a mean, a 20% lower concentration of phenolics than landraces, as well as a lower degree of browning and color difference. Positive correlations existed between phenolic concentration and degree of browning (r = 0.388) and color difference (0.477), although only 15.1% and 22.8% of the total variation in degree of browning and color difference, respectively, could be attributed to variation in phenolics. Ascorbic acid, soluble solids content, and pH were not correlated to either degree of browning or color difference. The heritability was moderate for phenolic concentration (0.50) and high for degree of browning (0.71) and color difference (0.82). The information obtained indicates that there are opportunities for the development of new varieties with a high concentration of phenolics and low or moderate browning.

The objective of this study is to evaluate the effect of rootstocks on grape production, quality and antioxidant capacity of ‘Niagara Rosada’ grape in two productive cycles. The work was developed in Jundiaí-SP, Brazil (26° 06’ S, 46° 55’ W and an average altitude of 745 m). The experimental design was in randomized blocks with subdivided plots, the plots being represented by the rootstocks and the subplots by the production cycles, with four replications, each consisting of 6 plants. The treatments consisted of a combination of ‘IAC 313 Tropical’, ‘IAC 572 Jales’, ‘IAC 571-6 Jundiaí’, ‘IAC 766 Campinas’ and ‘106-8 Mgt’ as rootstocks and ‘Niagara Rosada’ as graft, and the production cycles were 2013 and 2014. The number of bunches, production and productivity of the vines, the physical characteristics of bunches, berries and stalks and the physicochemical composition of the must (soluble solids content, titratable acidity, pH and the relation soluble solids/titratable acidity) were evaluated in production cycles of 2013 and 2014). The content of chlorophylls, anthocyanins, carotenoids, flavonoids and total phenolic compounds and the antioxidant activity of grapes were also evaluated in grape berries. The rootstocks did not influence the production and physical quality of ‘Niagara Rosada’ grapes. As for the chemical characteristics, rootstocks only had an effect on solids content, and ‘IAC 766’ and ‘106-8 Mgt’ rootstocks promoted higher values of this characteristic. Likewise, the total phenolic compounds and the antioxidant activity of the grapes were not influenced by the studied rootstocks. The vines in 2013 presented higher production and better physical characteristics of the grapes, however, the soluble solids content in this cycle was lower than in 2014.

Due to their outstanding anthocyanin content, elderberries are mainly used in the food industry to produce pigment concentrations. Thanks to the increase in demand, elderberry is grown on ever greater areas in Hungary and in neighbouring countries. Cultivar use, however, is very one-sided, being practically restricted to ‘Haschberg’. As this cultivar has many negative properties, growers have begun to plant and test new cultivars. When determining the commodity value of cultivars, it is important to examine not only the physical traits of the fruit, but also their main chemical parameters. In the present experiment the chemical properties (soluble solids and titratable acid content, total polyphenol and anthocyanin content, antioxidant capacity) of the fruit of 11 elderberry cultivars (‘Haidegg 13’, ‘Haidegg 17’, ‘Haschberg’, K3, ‘Korsör’, ‘Samdal’, ‘Samidan’, ‘Samocco’, ‘Sampo’, ‘Samyl’, ‘Weihenstephan’) were analysed in three consecutive years. In addition to the comparative evaluation of the cultivars, this work also aimed to discover correlations between the components and to study the effect of the year on the chemical composition of the fruit. Significant differences were found between the cultivars for the soluble solids content (F(10;8.74)=9.71; p=0.001), the titratable acid content (F(10;22)=7.91; p<0.001), the polyphenol content (F(10;22)=9.77; p<0.001), the anthocyanin content (F(10;8.52)=36.18; p<0.001) and the antioxidant capacity (F(10;22)=3.61; p=0.006). A year effect was proved for the water-soluble solids content (F(2;30)=4.02; p=0.028) and the antioxidant capacity (F(2;30)=5.21; p=0.011). Among the chemical properties, a significant positive linear correlation was only detected between the polyphenol and anthocyanin contents (r=0.91; p<0.001). Among the cultivars, ‘Sampo’, ‘Samidan’ and ‘Weihenstephan’ exhibited outstanding polyphenol and anthocyanin contents. The soluble solids content and antioxidant capacity of ‘Haidegg 17’ were also promising.
