Garlic (Allium sativum L.) is an important constituent of many of traditional medicines. The nutrient composition and biochemical ingredients of garlic vary among varieties and locations. The current experiment was conducted with 35 genotypes of garlic to study variation in morphological and biochemical properties among these genotypes. The weight of bulbs ranged from 6.9 g to 22.6 g. Highest number of clove bulb-1 was recorded in collection -286 (44.6) followed by GG-2 (40.6). Clove weight was higher in collection - 316 (1.41 g). The dry weight ranged from 28.6 per cent to 38.65 per cent. Highest total soluble solids were found in collection -79 (35.1°Brix).  Potassium, iron and zinc content were higher in GG-2 (1.70%, 47 ppm and 19.2 ppm, respectively).  Sulphur and copper content were higher in G-41. Manganese content ranged from 6.90 to 23.1 ppm. Highest anthocyanin pigment was found in the peel of cv. Godavari (5.35 mg). There was not much difference in anthocyanin content in pulp of purple and white colour varieties. Pyruvic acid content ranged from 20.9 µ mol ml-1 to 24.9 µ mol ml-1. Over all cvs. G-50, G-41, collection -316 were found superior over others.

Biochemical juice attributes and color-related traits of muscadine grape genotypes have been investigated. For this study, 90 muscadine genotypes, including 21 standard cultivars, 60 breeding lines, and 9 Vitis x Muscadinia hybrids (VM), were evaluated. The biochemical properties of total soluble solids (TSS), titratable acidity, and TSS/Acid (T/A) ratio showed modest diversity among genotypes with a range of 10.3 °Brix, 2.1 mg tartaric acid/L, and 4.6, respectively. Nonetheless, the pH trait exhibited a tight range of 0.74 among the population with a minimum and maximum pH of 3.11 ± 0.12 and 3.85 ± 0.12. Color-related traits showed more deviation between individuals. Total anthocyanin content (TAC), luminosity index (L*), hue angle (h°), and chroma index (C*) displayed a range of 398 µg/g DW, 33.2, 352.1, and 24, respectively. The hierarchical clustering map classified the population into two large groups of colored and non-colored grapes based on L* and h°, suggesting the predominance of these two characters among the population. The colored berries genotypes clade was further divided into several sub-clades depending on C*, TAC, and TSS levels. The principal component analysis (PCA) separated the four-color characteristics into two groups with a negative correlation between them, L* and C* versus TAC and h°. Further, PCA suggested the positive influence of acidity in enhancing the different nutraceutical components. Despite the nature of anthocyanins as a member of phenolic compounds, a lack of significant correlation between TAC and nutraceutical-related traits was detected. The dissimilatory matrix analysis highlighted the muscadine individuals C11-2-2, E16-9-1, O21-13-1, and Noble as particular genotypes among the population due to enhanced color characteristics.

Foxtail millet (Setaria italica L.) is nutri-cereal crop having it is rich in β-carotene, vitamin B-complex and micronutrients like minerals. In the present research, we have studied biochemical properties and molecular profiling to identify the core set of foxtail millet (Setaria italic L.) accessions for high Iron (Fe) and Zinc (Zn) content. Total seventy-nine accessions and selected mutants variety PS4 of foxtail millet were used. The biochemical investigation revealed that accessions M2-106, IC120407, M3-61/HB-13, and IC120255 consist of high iron and zinc content. The genetic variability among the genotypes was revealed by 28 Promoter Anchored Amplified Polymorphic (PAAP-RAPD) primers of which OPE9+GC1, OPE9+CA1, UBC001+CA1, UBC001+TA1, UBC693+G1 showed 100% polymorphism, whereas UBC693+GC1 and OPE7+G1 showed 88% and 80% polymorphism, respectively, with an average of 45.95 % polymorphism. Total alleles per locus were 3.31, whereas, the average number of monomorphic and polymorphic alleles were 1.72 and 1.56, respectively. The extent of polymorphic information content (PIC) of PAAP-RAPD loci ranged from 0.5 to 0.87 with an average value of 0.41. For PAAP-RAPD, the maximum PIC value was observed in marker UBC693+GC1 (0.87 %) and the minimum were OPE5+CA1 and OPE9+CA1 (0.5 %). Molecular characterizations result showing highest similarity (0.932) between accessions Shrilakshmi and Prasad, whereas, the lowest similarity coefficient was observed between IC120255 and M3-75/AM-1 (0.697) with PS4.UPGMA dendrogram grouped the foxtail millet accessions in five clusters which marked high diversity in M3-61/HB-13 and M3-75/AM-1. It implies that PAAP-RAPD markers are significantly screened in the foxtail millet accessions and have enumerated high genetic diversity.

Andean blackberries (Rubus glaucus Benth) are fruits rich in phytocomponents with high antioxidant activity. In this work, the changes in the total polyphenol content (TPC), the total flavonoid content (TFC), and the total anthocyanin content (TAC) of four blackberry varieties at three maturity stages (E1-25%, E2-50%, and E3-100%) were measured. The antioxidant activity (AA) was evaluated using the 2,2’azinobis-(3-ethylbenzthiazolin 6-sulphonic acid (ABTS) and ferric reducing antioxidant power (FRAP) methods. TPC and TFC content decreased with the increase in the maturity stage. The blackberry Brazos cultivar presented TPC values of 51.26, 38.16, and 31.59 mg of gallic acid equivalents (GAE)/g dry weight (DW) at E1, E2, and E3, respectively. The TAC and soluble solids increased with the increase in the maturity stage of the fruits. The Andimora variety at E3 presented a high TPC content, and the Colombiana variety presented a high TFC content. The blackberry Colombiana cultivar presented TAC values of 1.40, 2.95, and 12.26 mg cy-3-glu/100g DW at E1, E2, and E3, respectively. The blackberry Colombiana cultivar presented a high AA value at 1278.63 µmol TE/g DW according to the ABTS method and 1284.55 µmol TE/g DW according to the FRAP method. The TPC and TFC showed a high correlation with the AA according to the ABTS and the FRAP methods. The Pearson correlation between the TFC and AA/ABTS has a value of r = 0.92. The TFC and AA/FRAP present a value of r = 0.94.

Eggplant (Solanum melongena L.) is an important solanaceous crop of tropics and sub-tropics, having high production potential, and also a rich source of nutrients, particularly, carbohydrates, proteins, dietary fibre and vitamins like thiamin, niacin, pantothenic acid and folic acid, minerals like calcium, iron, potash, zinc, copper and manganese as well as bioactive compounds. However, eggplant is available in diverse shape and colour and consumer preference varies and the nutrient composition is different. In this investigation, we worked out the proximate nutrient compounds (on dry weight basis) and the bioactive compounds (on a fresh weight basis) in twenty diverse eggplant genotypes varying in colour and shape.  Moisture content in the fruits ranged from 71.54 to 91.36%, while carbohydrate content from 2.80 to 6.82%, crude protein 16.98 to 31.85%, nitrogen 2.49 to 4.35%, phosphorous 0.29 to 0.51%, potassium 1.65 to 4.54%, calcium 0.83 to 0.35%, iron 106.21 to 235.34 mg/kg, manganese 89.01 to 245.54 mg/kg, copper 18.73 to 98.56 mg/kg and zinc 60.73 to 75.77 mg/kg, each on dry weight basis. Biochemical parameters like total soluble solids (TSS) ranged from 1.27 to 3.94 °Brix, total sugar content 2.26 to 4.65%, ascorbic acid 0.66 to 3.53 mg/100 g, total anthocyanin content 0.35 to 18.85 mg/100 g FW, total chlorophyll 0.11 to 2.70 mg/100 g FW, total phenol 1.03 to 15.65 mg catechol equivalent/100 g FW, total antioxidant 1.16 to 2.26 µmol Trolox equivalent/g FW and radical scavenging activity 50.52 to 96.48%. Proximate nutrients were highest in Pusa Uttam, Pant Rituraj and BRBL-01, quality parameters in BRBL-07 and 71-19, while bioactive compounds were highest in Pant Rituraj, Pusa Purple Long, Pusa Purple Cluster and BRBL-01. These genotypes may be utilized in future breeding programmes for developing effective and nutritive cultivars.

The high quality and long shelf life of strawberry fruit are largely dependent on the cultivation method. The goal of this experiment was to study the effect of different cultivation methods on molecular structure and rheological properties of pectin extracted from strawberry quality parameters during cold storage. Three methods of cultivation of strawberry cv. Honeoye were tested: organic cultivation on raised beds, organic cultivation with the flat-planted method and conventional cultivation with the flat-planted method. The nanostructure of pectin (AFM), its chemical structure (FT-IR) and rheological properties were studied. The fruits were also tested by size, dry matter, firmness, acidity and the content of soluble solids, anthocyanin, phenolics, vitamin C and galacturonic acid. Pectin isolated from organic strawberries was more rapidly degraded than conventional strawberry pectin, which limits the possibilities for their processing and use as gelling or stabilizing agents at 20 °C. The differences in fruit quality were particularly noticeable with respect to the anthocyanin content, which was significantly higher for organic strawberry. The organic fruit also had better sensory properties because of its lower acidity and higher soluble solid content (SSC). These and other results from this experiment showed that strawberries produced by organic farming methods had better biochemical properties compared to conventional fruit; however, pectin transformation undergone faster limits their further technological applications.

Research is needed to better understand the influence of cell volume and fertility on watermelon transplant size and field performance in order to determine the most economic production practices. `Jubilee' watermelon transplants were grown using a 4 x 4 factorial experimental design consisting of 4 cell volumes (30.7, 65.5, 147.5, and 349.6 cm3) and 4 fertility rates (0, 1/4, 1/2, and full-strength Hoagland's solution). Transplant shoot dry weight significantly increased as cell volume and fertility increased. Increasing cell volume linearly increased watermelon number/ha and tons/ha for early and total harvest in 1995. The average weight per watermelon significantly increased for early-harvested fruit but not for total harvest as cell volume increased in 1995. Soluble solids concentration linearly increased with increasing cell volume for early and total harvests in 1995. Cell volume had no significant influence on the harvest parameters measured in 1997. In 1995, increasing fertility linearly increased watermelon number/ha and tons/ha for early harvests. Increasing fertility increased the soluble solids concentration linearly for early-harvested watermelons in 1997 but not in 1995. Fertility rate had no significant influence on any of the other harvest parameters measured in 1995 and 1997. The growing conditions and disease pressure in 1997 reduced melons/ha, yield, and soluble solids content when compared to 1995 values. The half-strength Hoagland's solution produced the greatest number of watermelons/ha, tons/ha, and the highest soluble solids concentration in 1995 and 1997. Pretransplant nutritional conditioning had no significant effect on total `Jubilee' watermelon production in Louisiana for 1995 and 1997.

Overall profitability is a major goal in successful prune production and a major component in any prune management system. Large prune crops in 1996 and 1997 have stimulated considerable interest in undersize fruit. Undersize prunes currently have marginal value and may represent a net loss because of costs to haul, dry, and to market order payments on low value prunes. One technique to control delivery size is to field size at harvest. Field sizing involves installing size-sorting devices on harvesters, which allow small prunes to fall out while valuable fruit is collected. Field sizing is considered a “risky” strategy because of the potential to remove prunes with economic value. During the 1997 harvest, 21 infield harvest sizing evaluations were made in prune orchards throughout Tehama county. The first evaluation occurred on 12 Aug. 1997, at the start of prune harvest. The final evaluation was done on 5 Sept. 1997, at the tail end of harvest. The objective was to sample throughout the harvest period to test field sizing under various sugar, size, and fruit pressure scenarios. The test machine was 1-inch bar sizer. Of the 21 sample dates, undersize fruit was clearly not marketable in 20 of the 21 samples. Discarded fruit averaged 133 dry count per pound. Only one sample out of 21 may have had market value at 86 dry count per pound. Although small in size, these prunes had very high sugar content contributing to their dry weight. In this evaluation, a 1-inch bar sizer did a good job of separating fruit with and without market value under the 1997 price schedule. As harvest date becomes later and soluble solids increase, the chances of sorting out marketable prunes also increases.

Makhana is an important aquatic, annual and seed propagated crop with gigantic floating leaves. It is known as Gorgon nut (Euryale ferox Salisb) belongs to family Nympheaceae. Swarna Vaidehi has been released as an ever first variety of makhana originated from selection-6. Nutritional profiling was undertaken for popped seeds of Swarna Vaidehi and local cultivar along with raw seeds of “Swarna Vaidehi”. Standard procedure was applied for nutritional profiling of the Makhana samples. Results reveled that maximum moisture content (34.7%) %) was recorded in case of raw seeds of swarna vaidehi. Maximum ash content (0.4%) was recorded in case popped seeds of both tested samples i.e. swarna vaidehi, lowest value (0.3%). Maximum seed protein (8.7%) was obtained by the swarna vaidehi. Maximum crude fiber (0.5%) was obtained in the raw seeds of swarna vaidehi as compare to popped one. Maximum total carbohydrate (79.8%) was recorded in popped seeds of swarna vaidehi; however the lowest value (57.0%) was also noticed in raw seeds of swarna vaidehi. It worth to notice that maximum calorific value (358) was recorded in popped seeds of swarna vaidehi. Maximum (18.5mg) calcium content was recorded in case of popped seeds of swarna vaidehi. Likewise maximum (1.3) manganese content was recorded in case of popped seeds of swarna vaidehi. It was worth to mention that maximum (1.1) zinc content was recorded in case of popped seeds of swarna vaidehi.

This work studied the effects of centrifugal block freeze crystallization (CBFC) on physicochemical parameters, total phenolic compound content (TPCC), antioxidant activity (AA), and process parameters applied to fresh murta and arrayan juices. In the last cycle, for fresh murta and arrayan juices, the total soluble solids (TSS) showed values close to 48 and 54 Brix, and TPCC exhibited values of approximately 20 and 66 mg gallic acid equivalents/100 grams dry matter (d.m.) for total polyphenol content, 13 and 25 mg cyanidin-3-glucoside equivalents/100 grams d.m. for total anthocyanin content, and 9 and 17 mg quercetin equivalents/100 grams d.m. for total flavonoid content, respectively. Moreover, the TPCC retention indicated values over 78% for murta juice, and 82% for arrayan juice. Similarly, the AA presented an increase over 2.1 times in relation to the correspondent initial AA value. Thus, the process parameters values were between 69% and 85% for efficiency, 70% and 88% for percentage of concentrate, and 0.72% and 0.88 (kg solutes/kg initial solutes) for solute yield. Therefore, this work provides insight about CBFC on valuable properties in fresh Patagonian berries juices, for future applications in health and industrial scale.
