Abiotic factors coupled with varietal differences have a special bearing on the synthesis of bioactive compounds and enhancement of antioxidant capacities of sweet bell pepper. The aim of the present study was to characterize the content of bioactive compounds (lycopene, vitamin C, β-carotenes, total phenols, and the antioxidant activity of sweet bell pepper (Capsicum annum L) grown under different Agro climatic regions with different environmental conditions, the Eastern Highlands (High veld region) and the Save Valley (low veld region). The results from the study showed statistical differences (p ≤ 0.05) between the different growing locations with regard to the bioactive compounds which were identified and quantified. Capsicum annum var. Lafayette presented the highest concentration of vitamin C content, lycopene content and total phenols as well as the greatest antioxidant activity in the high veld region. In addition, the results indicated that low temperatures favour in vivo biosynthesis of bioactive compounds and enhances antioxidant capacities of sweet bell pepper.

The objective of this work was to evaluate the antioxidant capacity and bioactive compounds content in two Jalapeño pepper varieties, both fresh and smoked-dehydrated (chipotle) and in commercial chipotle pepper sauces. The antioxidant capacity, capsaicin content, carotenoids and total phenols were evaluated. The smoked-dehydrated process had an effect on all the variables analysed (P?0.05). The chipotle pepper presented higher antioxidant activity (112.33 µmol ET/g) and content of bioactive compounds than fresh pepper and commercial sauces. In fresh pepper, the 100-Grande variety had higher antioxidant capacity (71.92 µmol ET/g) than Apache (48.31 µmol ET/g), while no effect on any of the analysed variables was reported in chipotle peppers. It is concluded that the smoked-dehydrated process of jalapeño pepper affects quality in a positive way, significantly increasing the nutritional and functional value derived from an increase in the bioactive compounds content and the antioxidant activity of chipotle peppers due to this process.

Resistant maltodextrin (RMD) is a water-soluble and fermentable functional fiber. RMD is a satiating prebiotic, reducer of glucose and triglycerides in the blood, and promoter of good gut health, and its addition to food is increasingly frequent. Therefore, it is necessary to study its potential effects on intrinsic bioactive compounds of food and their bioaccessibility. The aim of this study was to evaluate the effect of adding RMD on the bioactive compounds of pasteurized orange juice with and without pulp, and the bioaccessibility of such compounds. RMD was added at different concentrations: 0 (control sample), 2.5%, 5%, and 7.5%. Ascorbic acid (AA) and vitamin C were analyzed using HPLC, whereas total phenols, total carotenoids (TC), and antioxidant capacity were measured using spectrophotometry. After that, sample in vitro digestibility was assessed using the standardized static in vitro digestion method. The control orange juice with pulp presented significantly higher values of bioactive compounds and antioxidant capacity than the control orange juice without pulp (p < 0.05). RMD addition before the juice pasteurization process significantly protected all bioactive compounds, namely total phenols, TC, AA, and vitamin C, as well as the antioxidant capacity (AC) (p < 0.05). Moreover, this bioactive compound protective effect was higher when higher RMD concentrations were added. However, RMD addition improved phenols and vitamin C bioaccessibility but decreased TC and AA bioaccessibility. Therefore, the AC value of samples after gastrointestinal digestion was slightly decreased by RMD addition. Moreover, orange pulp presence decreased total phenols and TC bioaccessibility but increased AA and vitamin C bioaccessibility.

ABSTRACT Sponges are a component of coral reef biota that has bioactive compounds with a greater percentage of activity compared to compounds produced by terrestrial plants. This study aims to determine the presence of antioxidant activity in the ethanol extracts of sponge Ianthella basta from the waters of Tumbak Village. Ianthella basta sponge was extracted using maceration method with 96% ethanol solvent. Antioxidant activity testing was carried out using the DPPH method with a concentration of 100 µg / mL, 75 μg / mL, 50 μg / mL, and 25 μg / mL and Vitamin C p.a as positive control. Each sample was made three repetitions of the test. Testing using a UV-Vis spectrophotometer. The results showed that the ethanol extract of the Ianthella basta sponge had antioxidant activity with a percentage of 48.73% at a concentration of 100 µg / mL. Keywords: Ianthella basta sponge, Antioxidants, Extraction, DPPH  ABSTRAK Spons merupakan salah satu komponen biota penyusun terumbu karang yang mempunyai senyawa bioaktif dengan persentase keaktifan lebih besar dibandingkan dengan senyawa-senyawa yang dihasilkan oleh tumbuhan darat. Penelitian ini bertujuan untuk mengetahui adanya aktivitas antioksidan di dalam ekstrak etanol Spons Ianthella basta dari perairan Desa Tumbak. Spons Ianthella basta diekstraksi menggunakan metode maserasi dengan pelarut etanol 96%. Pengujian aktivitas antioksidan dilakukan dengan menggunakan metode DPPH dengan konsentrasi 100 µg/mL, 75 µg/mL, 50 µg/mL, dan 25 µg/mL dan Vitamin C p.a sebagai kontrol positif. Masing-masing sampel dibuat tiga kali pengulangan uji. Pengujian menggunakan alat spektrofotometer UV-Vis. Hasil penelitian menunjukkan bahwa ektrak etanol Spons Ianthella basta memiliki aktivitas antioksidan dengan persentase sebesar 48,73% pada konsentrasi 100 µg/mL. Kata Kunci: Spons Ianthella basta, Antioksidan, Ekstraksi, DPPH

ABSTRACT: The objective of this research was to evaluate the nutritional composition and bioactive compounds of whole umbu fruit, including pulp, seed and peel, and also of a commercial umbu pulp. Samples of the fractions and of commercial pulp were analyzed for determination of minerals and proximate composition, total phenolic and antioxidant activity. Pulps and peel were also analyzed for vitamin C and carotenoids contents. Commercial pulp presented better nutritional composition than fresh pulp (P<0.05) and the peel presented higher phenolic content and antioxidant activity than seed. Peel also stood out by its vitamin C (79 mg.100 g-1) and total carotenoids (2,751 µg.100 g-1) contents, showing that, as the main barrier of the fruit for its protection, it is a fraction rich in bioactive compounds. The highest dietary fiber and iron contents were observed in umbu seed (P<0.05). Therefore, umbu by-products may be ingredients proper for development of food richer in nutrients and bioactive compounds.

1. The copper-containing protein caeruloplasmin has several oxidase activities. 2. Its ability to catalyse the oxidation of ferrous ions to the ferric state (ferroxidase activity) makes it an important antioxidant in vivo. 3. Recent reports have suggested that oral supplementation with vitamin C can inhibit the oxidase activities of caeruloplasmin. 4. As expected, damage to DNA and membrane lipids was stimulated by mixtures of iron salt and ascorbate, and this damage could be inhibited by caeruloplasmin provided the molar ratio of ascorbate to caeruloplasmin was kept sufficiently low. 5. When the molar ratio of ascorbate to caeruloplasmin was greater than 200 substantial loss of ferroxidase antioxidant activity occurred. 6. It is unlikely, however, that oral supplementation with vitamin C can raise plasma levels sufficiently to inhibit caeruloplasmin activity in vivo.

Antioxidants are compounds with varied chemical structures that are affected by biotic and abiotic factors. The objective of this study was to characterize and compare bioactive compounds and the antioxidant capacity of fruit from four blackberry cultivars produced under different climatic conditions. Ascorbic acid content, total polyphenols, flavonoids, monomeric anthocyanins and antioxidant activity of the fruit were evaluated, and high levels of bioactive compounds as well as antioxidant activity were observed regardless of the cultivar or growing location. The results showed that bioactive production is affected by the cultivar and environment. Furthermore, the antioxidant potential of the blackberry fruit depends on the total phenolics and anthocyanin.

The objective of this work was to evaluate the influence of temperature on the content of bioactive compounds of fruits of guabiju (Myrcianthes pungens (O. Berg) D. Legrand). The peel, pulp and seed of fresh guabiju were analyzed in relation to physical-chemical composition, metals, color, phenolic compounds, flavonoids, anthocyanins, vitamin C and antioxidant activity. On the dehydrated samples at temperature of 60 °C, where also determined the moisture and water activity. The fractions of the fruit showed high amounts of metals. After drying, moisture of 1.3, 1.0 and 0.9% were observed for peel, pulp and seed and water activity of 0.44 to 0.54. All the samples darkened, with less variation in the dehydrated peel (∆E 9.2). The samples showed high values of bioactive compounds, and in the fresh peel were observed higher levels of phenolic compounds (8459.8 mg EGA/100g dry extract), anthocyanins (152.0 mg/100 dry extract) and vitamin C (222.9 mg/100g) and on the dehydrated seed higher value of flavonoids (7480.7 mg EQ/100g dry extract). There was 86.3% degradation of anthocyanins in the dehydrated peel. The best values of antioxidant activities were obtained for the dehydrated peel (IC50 1.37 mg/mL), seed (IC50 1.49 mg/mL) and in the fresh peel (IC50 1.41 mg/mL).

Se evaluó la actividad antioxidante y caracterizó parcialmente la calidad proteica in vivo de harinas de amaranto obtenidas por extrusión a tres niveles de humedad de alimentación (HA) y dos niveles de temperatura (T). Se realizó análisis químico proximal, fenoles totales (FT), y actividad antioxidante (AA). Los tratamientos con mayores y menores niveles de HA y T fueron evaluados en su calidad proteica usando un modelo murino, se incluyeron como referencia harinas de amaranto inflado comercial y sin procesar. Se evaluó la razón neta de proteína (RNP), digestibilidad aparente (DAN) y verdadera de nitrógeno (DVN). Los FT y AA disminuyeron hasta en un 30 y 56 %, respectivamente debido al proceso de extrusión. El análisis de calidad proteica in vivo mostró que los extrudidos de amaranto presentaron mayor DVN (85 y 86.72 % para los menores y mayores niveles de HA y T, respectivamente) con respecto al amaranto inflado (84.55 %) y el amaranto sin procesar (83.01 %). Las pruebas de RNP fueron significativamente diferentes entre harinas extrudidas (4.11-4.32), inflado comercial (3.76) y sin procesar (3.81). En conclusión, el procesamiento por extrusión mejora la RNP y digestibilidad de proteína, sin embargo, los fenoles totales y actividad antioxidante se ven disminuidos.ABSTRACTThe antioxidant activity was evaluated and partially characterized of the in vivo protein quality of amaranth flours obtained by extrusion at three levels of feed moisture (HA) and two temperature levels (T). We performed proximal chemical analysis, total phenols (FT), and antioxidant activity (AA). Treatments with higher and lower levels of HA and T were evaluated in their protein quality using a murine model, commercial and unprocessed amaranth inflated flours were included as reference. The net protein ratio (RNP), apparent digestibility (DAN)and true nitrogen (DVN) were evaluated. The FT and AA decreased by 30 and 56%, respectively, due to the extrusion process. In vivo protein quality analysis showed that amaranth extrudates have higher DVN (85 and 86.72 % for the lower and higher levels of HA and T, respectively) with respect to inflated amaranth (84.55 %) and unprocessed amaranth (83.01 %). The RNP tests were significantly different between extruded flours (4.11-4.32), commercially inflated (3.76) and unprocessed (3.81). In conclusion, processing by extrusion improves RNP and protein digestibility, however, total phenols and antioxidant activity are diminished.

Fruit jellies are widely produced as a way to utilize fresh fruits, which are highly perishable. Orange a fruit widely consumed in Brazil, it has a significant amount of bioactive compounds. Despite the great progress in the development of jellies, several factors can change its useful life, among them is the packaging. Therefore, the objective of this study was to evaluate the effect of packaging on the physicochemical, physical, microbiological and bioactive compounds stability of low-calorie orange jellies during storage. Analyses every 30 days during the 180 days of storage. The results showed that increased storage time led to a decrease in pH, reduction of the flow rate (polypropylene packaging), reduction in yellow intensity, and growth of fungi and yeasts (higher in polypropylene packaging). In contrast, luminosity, red intensity, moisture, total sugars, and the consistency index tended to remain stable during storage. The DPPH results showed an increase in the antioxidant activity and reduction of vitamin C throughout the period of storage, especially in polypropylene packaging. The total phenolic content was stable with a tendency to decrease during storage. Notably, vitamin C showed a positive correlation with antioxidant activity in jellies. Low-calorie orange jellies packaged in glass showed the least changes during storage.

Diabetes and obesity represent major public health problems worldwide. High cost of medicines and drug treatments propose the research for less expensive alternatives, such as enzymatic inhibitors present in medicinal plants from natural sources. An example of such medicinal plant is the jambolan Syzygium sp., which is referred to be hypoglycemic and efficient in weight loss. With this in mind, we identified the bioactive compounds from Syzygium sp. commercial teas and evaluated the inhibitory potential and the antioxidant activity of digestive enzymes from a simulated gastric fluid. Syzygium sp. samples showed low percentages of enzymatic inhibition at 1 : 200 dilution. Antioxidant activity was significant, although it was not expressive of the contents of total phenolic compounds, tannins, flavonoids, flavones, and alkaloids. Maldi-Tof spectroscopy suggested the presence of luteolin in Syzygium sp. samples. Molecular docking predicted that luteolin binds at the α-amylase catalytic site in a similar manner as acarbose, the carbohydrate inhibitor from the enzyme crystallographic structure. The phytochemical content and biological activity were distinct among samples from commercial teas. Thus, additional studies should be conducted to elucidate efficacy and safety of Syzygium sp. extracts, especially in vivo experiments. Syzygium sp. might be in the near future recommended as a medicinal plant in low cost diabetes and obesity treatments.
