The article is devoted to the development of functional meat food products made by partially replacing beef and poultry meat with lentils and carrots. When developing the pate, a partial replacement of grade 2 beef and chicken fillet with lentils and carrots is provided. A technology for the production of pate with vegetable raw materials based on the use of sprouted lentils obtained by processing it with electroactivated solutions of sodium and ammonium chlorides has been developed. Studies of functional, technological and organoleptic parameters of the developed pates have been conducted, which have shown that the proposed pate recipe allows replacing expensive ingredients – grade 2 beef and chicken fillet with lentils and carrots, to get a product that is not inferior in quality to the standard pate preparation technology. The article describes the detailed amino acid composition of the pate under study and compares it with the reference protein.

Abstract In various regions of the Far East, the nutritional status of the population suggests that the diet of Russians is characterized by excessive consumption of animal fats, as well as micronutrients. Based on this, it will be promising to enrich the macro-and micronutrients of ordinary food products such as boiled sausage products for the benefit of the consumer. The use of vegetable raw materials in the production of meat products enrich them with functional ingredients, increase their digestibility and get products that meet the physiological norms of nutrition, contribute to the improvement of their therapeutic and preventive properties and the stabilization of consumer properties. The results of the tasting evaluation of the presented samples allowed us to draw conclusions about the possibility of improving the organoleptic parameters by adding raw materials of plant origin in various combinations and mass fraction. The use of carmine made it possible to get a color familiar to the buyer and to abandon the use of artificial food additives. Partial replacement of animal fat with soybean oil allowed to give the product useful properties and improved the appearance of the product.

Экспериментальные исследования кормовых добавок Абиотоник и Чиктоник проводили на базе вивария кафедры эпизоотологии и организации ветеринарного дела, а ветеринарносанитарную экспертизу продуктов убоя цыплятбройлеров проводили на кафедре паразитологии и ветеринарносанитарной экспертизы ФГБОУ ВО МГАВМиБ МВА имени К.И. Скрябина и ФГБНУ ФНЦ ВИЭВ РАН, аминокислотный состав мяса перепелов в Государственном бюджетном учреждении Краснодарского края Кропоткинская краевая ветеринарная лаборатория . Из цыплят в суточном возрасте кросса Кобб500 было сформировано три группы по 10 голов в каждой две опытные и контрольная опытным группам выпаивали кормовые добавки из расчета 1 мл/кг живой массы птицы до 50 суток выращивания, убой птицы проводили на 56 сутки. Тушки птицы после 24х часов созревания в холодильной камере при температуре 4 С подвергали исследованиям по общепринятым методикам: ГОСТ Р 519442002. Мясо птицы. Методы органолептических показателей, температуры и массы ГОСТ 314702012. Мясо птицы, субпродукты и полуфабрикаты из мяса птицы. Методы органолептических и физикохимических исследований аминокислотный состав мяса исследовали согласно М 0438 2009. Корма, комбикорма и сырье для их производства. Методика измерений массовой доли аминокислот методом капиллярного электрофореза с использованием системы капиллярного электрофореза Капель. Применение кормовых добавок в дозе 1 мл/кг живой массы способствовало увеличению живой массы птицы при применении Абиотоника на 54,23, а при применении Чиктоника на 37,70 по отношению к контролю. Во всех исследуемых пробах количество ЛЖК находится в пределах нормы и составило: в 1й опытной 1,390,03 мг КОН, во 2й опытной 1,420,04 мг КОН и в контрольной группе 1,810,06 мг КОН, что говорит о свежести и доброкачественности мяса. Значение рН мяса цыплятбройлеров находилось в трех группах в пределах нормы и не превышало 6,0. The paper emphasizes the importance of not only the quantitative but also qualitative composition of protein in nutrition. The authors propose protein classification into three main groups according to the concept of reference (ideal) protein. A mathematical model is examined to solve the task of rational mixture production upon the given profile of reference protein. Two variants of the criterion for formation of optimal composition are described. One of them presents the classical sum of squares of the residual for essential amino acid scores and 1. The second also presents the sum of squares of the residual for essential amino acid scores and 1 but with regard to only those amino acids, which scores are less than 1. The minima of these criteria at the set of variants for the content of ingredients are taken as targeted functions. The algorithm and the program of calculation were realized in the program environment Builder C++ 6.0. The macro flowchart of the algorithm is presented and detailed description of each block is given. The program interface before and after the start of the calculation module is shown. The main windows and interpretation of the presented data are described. An example of realization of the proposed mathematical apparatus when calculating a food model composition is given. Plant components (white kidney beans, flax, peanut, grit “Poltavskaya», dry red carrot) were used as an object of the research. Most plant proteins were incomplete. It is possible to regulate the chemical composition including correction of a protein profile by combination of plant raw materials. Analysis of alternative variants demonstrated that minimum essential amino acid score in the first composition was 0.79 (by the first criterion), in the second 1.0 (by the second criterion); the reference protein proportion in the mixture was 10.8 and 13.5, respectively, according to the first and second criterion. The comparative results by other quality indicators for protein in the mixture are also presented: the coefficient of amino acid score difference (CAASD), biological value (BV), coefficient of utility, essential amino acids index (IEAA).

Milk chocolate is particularly popular with different age groups. It is characterized by low protein content with a large amount of fats and carbohydrates determining the food imbalance of the product. In conditions of high-grade animal proteins deficiency the selection of high-quality protein-containing ingredients for food production is very relevant. The aim of this work is to study the protein adequacy of various components of milk chocolate to enhance its biological value. The amino acid scale method has been used to assess the biological value of proteins; it is based on the determination of amino acid (chemical) score. It has been found that the limiting biological value amino acid for classical white raw ingredients of milk chocolate (cocoa products and milk powder) is methionine + cysteine. For constructing chocolate formulas with increased biological value it is advisable to use protein-containing raw materials (whey protein concentrate, oat flour, etc.) to compensate for the limiting amino acids. The indicator of amino acids utilitarianity of proteins of raw milk chocolate components has been calculated. On the basis of the utilitarian index we have established the coefficient of utilitarian of the amino acid composition of the raw materials characterizing essential amino acids' balance. We have determined the biological value of protein and the amino acid composition imbalance coefficient. It has been found that the amino acid composition of milk and whey protein concentrates is most balanced compared to the amino acid composition of traditional protein-containing raw components of milk chocolate. The limiting acid of whey protein concentrate is valine, which makes its use in the manufacture of chocolate products more attractive compared to milk protein concentrate (the limiting amino acid is methionine + cysteine). In the group of vegetable non-conventional raw materials oat and buckwheat flour are characterized by the best indicators of biological value. The amino acid adequacy of oat flour is comparable to the qualitative protein indicators of cocoa products, the limiting amino acid is lysine. Buckwheat flour is characterized by the smallest imbalance in amino acid composition, which distinguishes the proteins of this raw material with the highest degree of digestibility compared with the proteins of all the studied protein-containing components of milk chocolate.

. In the article, the data are given of research carried out in vitro to determine the amino acid composition and the degree of digestibility of the reference and experimental samples of cooked sausage, with the use of the protein-containing composition developed. The protein digestibility-corrected amino acid score (PDCAAS) has been calculated to clarify the assimilation of amino acids that enter the body as part of proteins in experimental cooked sausage samples.It has been established that replacing a part of the meat raw material with the protein-containing composition in the formula of cooked sausages does not affect significantly the amino acid composition of the finished product. The addition of mechanically deboned poultry meat reduces the amount of such essential amino acids as isoleucine by 68 %, compared with the control formula, leucine by 38 %, and valine by 48 %. At the same time, the content of lysine significantly increases by 1.5 times.  The in vitro index of digestibility for an experimental sample of cooked sausages with protein-containing composition at the pepsinolysis stage is slightly reduced compared with the reference sample (by an average of 7 %). At the second stage of hydrolysis (trypsin enzyme), this parameter does not differ from the reference one. During the two stages of hydrolysis, this parameter, with mechanically deboned poultry meat introduced, decreased by an average of 20 %, compared with the reference sample.Calculated PDCAAS has allowed establishing that the true efficiency of proteins in cooked sausages is different from the in vitro index of digestibility, which is due to the presence of limiting values of the essential amino acids content in the product.

The topicality. To date, the structure of the population’s diet has significant deviations from the formula of a balanced diet in terms of protein intake, including sulfur-containing, which causes the formation of risk factors for the development alimentary and alimentary-dependent diseases. For the prevention of diseases caused by protein deficiency, it is promising to increase its content in vegetable dishes due to the integrated use of raw materials and dietary supplements of high biological value. It is advisable to use food combinatorics in the innovative technologies development for vegetable dishes of improved amino acid composition. The purpose of the study is food combinatorics of amino acid composition of potato croquettes with soy flour, wheat germ; natural shrimp powder “Rieber Food Ingredients” and lentil-spirulina filling in terms of content and balance of essential and substitute amino acids and the degree of their assimilation by the human body. Research methods. Physicochemical, mathematical and statistical methods of experimental data processing with the use of information technologies, methods of ion exchange liquid column chromatography and qualimetric methods have been used. Results. Research is aimed at the use of food combinatorics and scientific substantiation of the amino acid composition of potato croquettes with the use of protein vegetable and non-fish water raw materials and dietary supplements. As a result of scientific researches the food combinatorics at development of technology of vegetable dishes has been carried out, the amino acid structure has been proved and experimentally generalized, the amino acid score and balance of sulfur-containing amino acids in the complex use of potato mass with wheat germ, soy flour, natural shrimp powder “Rieber Food Ingredients” and lentil-spirulina filling in culinary products have been analyzed. The social effect of fuller use of vegetable, non-fish water raw materials, expansion of the range of vegetable dishes with improved amino acid composition and consumer properties of potato dishes in restaurants, preservation and protection of public health has been confirmed. Conclusions and discussions. Food combinatorics was carried out during the potato croquet technology development with the use of protein vegetable and non-fish water raw materials, which contributed to the improvement of the amino acid composition of vegetable dishes and, in particular, to the increase of their biological value.

The main purpose of the work was the phytochemical study of the herb of the blood burnet drug (Sanguisorba officinalis L.) from six regions of the Republic of Bashkortostan and the rationale for the prospect of expanding its use in medicine. The collection of herbs was carried out in the flowering phase. The analysis of raw materials was carried out on the basis of the Bashkir State Medical University. Qualitative and quantitative determination of biologically active substances was carried out according to standard and modified methods. Amino acid composition was determined by x-ray fluorescence method The quantitative characteristics of the following groups of biologically active substances were determined: ascorbic acid (0.307–0.521%), organic (1.46–2.27%) and hydroxycinnamic (1.13–1.30%) acids, carotenoids (31.17–35.89 mg%), polysaccharides (0.43–1.05%), saponins (0.56–0.88%), coumarins (0.285–0.326%), tannins (5.1–6.3%). A characteristic of the amino acid composition. The possibility of using the herb of burnet drug is shown along with the rhizomes and roots, which will solve the problem of waste-free processing of this plant.

In the article results of researches on development of compounding and technology of manufacture of a new kind of meat production of functional purpose from poultry meat with partial replacement of meat raw material by a vegetative component – cabbage broccoli are resulted. As a result of the conducted studies and calculations, data were obtained on the indicators of quality and safety, food and energy value, economic efficiency of the production of a roll baked from chicken meat with broccoli cabbage. The addition of broccoli in the production of a roll of chicken meat contributed to the formation of an unusual figure of a roll on a cut: the light pink color of the meat and the bright green color of the broccoli cabbage. Experimental batches of roulet baked from chicken meat were produced by replacing meat with broccoli in the recipe as follows: sample No. 1 – replacement of meat raw material with broccoli 10.0%, sample No. 2 20.0%, No. 3 – 30.0% respectively. When the replacement of meat raw material with broccoli cabbage is increased, the content of fat mass fraction is significantly reduced from 19.0% (control sample) to 11.0% (sample No. 3). There is also a decrease in the protein content from 17.0% in the control sample to 11.0% in sample No. 3, as well as an increase in the mass fraction of carbohydrates from 0 (control sample) to 1.8% (sample No. 3). All examined samples of a roll baked from chicken meat with broccoli cabbage meet the requirements of regulatory documents on microbiological indicators. The results of calculations of the economic efficiency of the production of control and experimental samples of baked rolls from chicken meat indicate that it is economically most feasible to produce a roasted chicken roll with the addition of broccoli in the amount of 30% to the mass of unsalted raw materials.

Background. In order to form a balanced diet that ensures harmonious deve­lopment of human, prevention of various diseases, especially in conditions of coronavirus infection COVID-19 the recipes for jellied products based on freshwater fish with the addition of plant additives (cranberries, parsley roots, carrots, beets, fresh green and onions, spicy-flavored vegetables (green dill, parsley) and seaweedweredeveloped. The aim of the work is to study the consumer value of jellied fish products with herbal supplements. Materials and methods. The object of research is freshwater fish jellies with the addition of plant additives and seaweed. Jellied fish without vegetable additives was selected as a control sample. The content of moisture, ash, fat, protein, amino acid composition of proteins, fatty acid composition of lipids, mineral composition; the content of vitamins (thiamine, riboflavin, niacin, carotenoids, tocopherols) was studied by conventional methods. Repea­tability of experiments –five times, the relative error did not exceed 5 %. Results. Studies of the chemical composition show that the control sample, in contrast to the studied ones, contains more fat and protein, which is explained by the lack of vegetable raw materials according to the recipe. However, the addition of vegetable raw materials to the latter increases the mineral content by 15–31 %. The content of essential amino acids in the control is 45 % of the total content, and in the test samples – 46 %. The dominant amino acid in the samples is lysine, and the limited ones are valine and isoleucine. The utilitarian coefficient of the amino acid composition of the studied samples (0.61–0.63) indicates a high balance of amino acids relative to the standard. The low coefficient of redundancy (0.21–0.23) and the high coefficient of utilitarianism indicate the maximum degree of assimilation of proteins of jellied fish products by the human body. The content of polyunsaturated fatty acids (PUFA) in the filling products was 26 %. The ratio of PUFA: SFA, C18:2: C18:1 and C18:2: C18:3 is established as rational in jellied fish. The value of the absorption coefficient for the studied samples of jellied products with beets, onions and control is 0.80, and carrots and cranberries – 0.79. The content of thiamine in jellied fish with carrots, onions, beets is 2 times higher than in the control, the content of niacin – 1.2 times, vitamin E – 1.7–1.2 times. The highest content of carotenoids is found in jellied fish with carrots and onions. An increase in the level of Potassium, Calcium, Bromine, Iodine, Iron, Selenium in the experimental filling products compared with the control was determined: Potassium by 45 %,Selenium 5.5–8.0 times, Manganese 1.6 times. Conclusion. The enrichment of fish products with plant components contributes to the expansion of the range of products of high nutritional and biological value with a high degree of satisfaction of the physiological needs of the human body with biolo­gically active substances. Accordingly, the consumption of jellied fish products allows to improve the functional state of the most important systems of the human body, preven­tion of food-dependent diseases, various forms of immunodeficiency, especially in condi­tions of coronavirus infection COVID-19.
