The general objective of this work was to assess the functional properties of composite flours obtained from the flour of Ivorian taro corms (Colocasia esculenta, Cv Fouê) with wheat flour (Triticum aestivum L.). The results concerning the functional properties revealed significant differences (p <0.05). Indeed, the water absorption capacity, the water solubility index and the hydrated density increase considerably in the various composite flours. On the other hand, the bulk density, clarity, wettability and porosity have decreased in these flours. In addition, the stability of the foam and the dispersibility have increased over time. On the other hand, the hydrophilic / lipophilic ratio is greater than 1 with the exception of red oil.

Abstract Objectives Taro (Colocasia esculenta) is a starchy root crop and a major food source for individuals across Pacific Islands, Asia, and Africa. As a gluten free, hypoallergenic crop with high digestibility, taro may serve as a dietary carbohydrate alternative for food production that adds nutrient value and potential health implications. Thus, this study aimed to explore the nutritional, physicochemical and functional properties of different taro varieties grown in Hawaii. Methods Five varieties of taro (Bun-long, Mana Ulu, Moi, Kauai Lehua, and Tahitian) grown in Hawaii were harvested and processed immediately. The nutritional, physicochemical, and functional properties were analyzed and compared. Results Among the five taro varieties, Moi had the highest concentrations of potassium, copper, and manganese at 1.75 g/100 g, 0.97 mg/100 g, and 12.46 mg/100 g, respectively. Tahitian exhibited the highest concentrations of iron and zinc at 7.74 mg/100 g and 13.68 mg/100 g, respectively. Tahitian, Bun-long, and Moi showed high total starch content of 40.8 g/100g,   38.9 g/100g,   and 34.1 g/100g,   respectively. Tahitian exhibited the highest water absorption capacity (WAC), oil absorption capacity (OAC), and water solubility index (WSI) at 3.48 g/g, 3.15 g/g, and 33.30 g/100g,   respectively. Total starch content of taro was significantly correlated with its WAC, OAC, emulsifying activity, water absorption index, and WSI. Conclusions These results indicate that the taro varieties can be utilized as a carbohydrate alternative for different food processing requirements based on their physicochemical and functional properties to improve nutritional value, food quality and human health. Aims: The aim of this study was to evaluate the nutritional and functional properties of powder from 2 Cameroonians squash pulp species (Cucurbita moschata Yellow and Orange pulp, and Cucurbita pepo orange pulp) and squash pulp-base biscuit to promote the integration of squash in the diet to help fight against micronutrient deficiencies and non-communicable diseases Methodology: The squash were cleaned and the pulp was blanched in boiling water for 3 minutes and dried at 60 °C for 24 h. The dried pulp was then finely crushed and sieved to obtain the powder. The proximal composition, the levels of macronutrients, vitamin C, carotenoids and minerals were determined as well as the functional properties. The powder sample with the highest carotenoid content was substituted by wheat flour in the proportions 0%, 5%, 10%, 15% and 20% for the biscuit formulation. Sensory properties (color, taste and overall acceptability) and total carotenoids content of the biscuit were then evaluated. Results: The nutrient contents per 100g of powder were 1.65g, 6.38-23.36 mg, 15.70-20.54 mg, 102.56-119.65 mg respectively for crude fibers, total carotenoids, vitamin C and potassium. Water absorption capacity (WAC), Water holding capacity (WHC) and oil holding capacity (OHC) varied from 7.50-8.25, 3.35-6.05 and 1.02-2.04 respectively. Values of swelling capacity (SC) and water solubility index (WSI) varied from 119-140 and 15-17.63, 314-348 and 22.33-24.9, 388-459 and 35.08-38.75 at room temperature, 65°C and 95°C respectively. Sensory analysis of the biscuits showed that the biscuit made with 10% of squash powder was the most appreciated and contained 2.29 mg/100g of total carotenoids. Conclusion: Regular consumption of these Cameroonians squash pulp powder or foods formulated with them could help to combat nutritional disease.

AbstractThe stability of a plasma diode with respect to longitudinal oscillations is investigated. If there are free particles emitted by the electrodes, the perturbations do not have the same dynamics as they would in an infinite plasma, contrary to the case where only particles trapped in the diode are present. This can be interpreted as due to a coupling of plane waves of different wave lengths, introduced by the boundary conditions at the electrodes. The occurrence of resonant-particle effects, on the other hand, is subjected to precisely the same conditions as in an infinite plasma.

This paper, which is an extension of [1], treats two-dimensional aeroelastic stability of two coupled conductors. It is found that the wake-induced flutter is symmetric with respect to the horizontal axis of the wake for all cases provided that the sign of the static coupling coefficient, ε = kxy/kxx, is changed. It appears that the spacer coupling ratio, K/kxx = Ω/ωx, is the most important factor in determining stability. For practical purposes, the system is almost always stable for K/kxx = Ω/ωx = 0.8, because the frequency ratio, κ = ωy/ωx, deviates less than ten percent from unity for a typical transmission line. On the other hand, within our range of interest, damping has little or no effect on the stability of coupled conductors. When the windward conductor is fixed, i.e., K = 0, then damping does influence the stability of the leeward conductor.

&nbsp;To investigate the responses of growth and antioxidant enzymes to osmotic stress in two different wheat cultivars, one drought tolerant (Heshangtou, HST) and the other drought sensitive (Longchun 15, LC15), 15-day-old wheat seedlings were exposed to osmotic stress of &ndash;0.25, &ndash;0.50, and &ndash;0.75 MPa for 2 days. It is found that osmotic stress decreased shoot length in both wheat cultivars, whereas to a lesser degree in HST than in LC15. The contents of malondialdehyde (MDA) and the activities of superoxide dismutase (SOD), peroxidase (POD), and catalase (CAT) of shoot in both wheat cultivars were increased by osmotic stress. It is clear that MDA contents increased less in the more drought tolerant cultivar HST than in drought sensitive one LC15. On the contrary, POD and CAT activities increased more in HST than LC15 under osmotic stress. As the activity of SOD, however, no significant differences were found between HST and LC15. These results suggest that wheat cultivar HST has higher activities of antioxidant enzymes such as POD and CAT to cope with oxidative damage caused by osmotic stress compared to sensitive LC15. &nbsp;

Abstract Varied views prevail as to the structure of the colloidal particles present in a rubber solution. According to Harries, Pummerer, and many others, these colloidal particles are formed through the association or aggregation of smaller molecules. According to Meyer and Mark they have a micellar structure, the micelles forming through the apposition of main valence chains. On the other hand, it was assumed by one of the present authors that the elementary particles in a colloidal solution of rubber are identical with the rubber molecules, these large, especially labile molecules being called macromolecules. Thus the existence of much larger molecules than any hitherto known was postulated. This view was confirmed by the conversion of rubber to hydro-rubber capable of forming colloidal solutions, and also by the pyrogenic decomposition of rubber. In order to decide definitely between the two conceptions, the stability of the colloidal particle in a rubber solution was studied by means of viscosity measurements at various temperatures as was done in the case of the polystyrols. If these colloidal particles form aggregates or if they have a micellar structure, they should decrease in size with increase in temperature, and this change should be evidenced by a diminution of the specific viscosity of the colloidal solution. On the other hand, if such a solution is composed of molecules, the specific viscosity at various temperatures is the same, provided that the molecules are not decomposed at higher temperatures. This line of research led to an explanation of the constitution of the colloidal particles in a polystyrol solution and was now applied to balata, since the latter is especially easily purified.

In the present work on oxidation and reduction by sterile extracts of pneumococcus, the preparations employed contain among other constituents, a hemolytic substance the properties of which have been described by Cole (1, 2) in his studies on pneumococcus hemotoxin. Pneumococcus extracts prepared by the methods described are actively hemolytic, 0.005 cc. of extract causing complete lysis of 2.5 cc. of a 1 per cent suspension of red cells from rabbit blood. This hemolytic property of pneumococcus extracts is destroyed by 10 minutes exposure to 55°C. When pneumotoxin-containing extracts are protected from the action of molecular oxygen, their hemolytic activity remains unimpaired for considerable periods of time. In the presence of air, on the other hand, the stability of the hemolytic substance depends upon whether the particular type of extract contains a "complete" or "incomplete" oxidation-reduction system. Sterile broth extracts of unwashed pneumococci are reactive with molecular oxygen, and as a result of this union peroxide is formed whenever these extracts are exposed to air. The hemolytic activity of "complete" extracts of this type is rapidly decreased and finally destroyed in the presence of molecular oxygen. On the other hand, the "incomplete" type of extract prepared by saline extraction of washed pneumococci may be exposed to air with little or no loss of hemolytic power. This "incomplete" washed cell extract, unless reactivated, does not undergo autoxidation in the presence of air; under these circumstances peroxide is not formed and the hemolytic activity of this type of extract is not impaired by exposure to air. The stability of the hemolytic agent in the "incomplete" type of extract is evidence that this substance is itself not reactive with or affected by molecular oxygen, even in the presence of the cell enzymes. The destruction of the same hemolytic substance in extracts capable of undergoing autoxidation may be ascribed to the action of some peroxide formed by the union of molecular oxygen with easily oxidized or autoxidizable substances of the extract. It is now known that a peroxide, having the reactions of hydrogen peroxide, accumulates in sterile pneumococcus extracts during oxidation. It has been shown in the present study that the addition of preformed hydrogen peroxide destroys the hemolytic activity of pneumococcus extracts, although higher concentrations were required than were detected in oxidized extracts themselves. These facts and the known action of superoxides in analogous types of reaction make it seem not unlikely that the active agent in the destruction of pneumotoxin in oxidized cell extracts may be a peroxide; either hydrogen peroxide or some higher organic peroxide formed during autoxidation of the extract.

Inheritance of stem solidness was studied in populations of F3 and B2 lines from the Red Bobs × C.T. 715 and Redman × S-615 (Triticum aestivum L.) crosses and backcrosses. The data supported the hypothesis that the varieties in each cross differed by four genes for stem solidness. In both crosses, one gene exerted a major influence in that its allele for hollowness in the homozygous condition was epistatic to the other three genes. The other three genes within each cross were similar in their influence on solidness. Between the two crosses, corresponding genes differed in some degree.Genetic analyses and correlation coefficients both revealed a close association between sawfly resistance and stem solidness in the Red Bobs × C.T. 715 cross indicating that the stem solidness character was largely responsible for conditioning the degree of sawfly reaction in a plant.In both crosses, a weak negative correlation was found between stem solidness and height. Stem solidness was not associated with bunt (race T-2) reaction, glume color, awn type, or heading date.

Silica deposition in the lower glume, lemma, and palea of wheat (Triticum aestivum L. cv. Highbury) was investigated using scanning electron microscopy and light microscopy. Silica was present in the outer walls of all the epidermal cells including prickles and papillae of the glume and lemma awns. The glume and the lemma were similar in epidermal silica deposition pattern, both having numerous silicified short trichomes and papillae on inner and outer surfaces. Epidermal long cells and short cells were also silicified. Macrohairs were restricted to isolated areas in these bracts, particularly on the inner surfaces just beneath the awns. The palea was a thin membranous structure differing markedly from the other two bracts. Most of the palea is pressed between the caryopsis and the next floret, and both surfaces are almost devoid of trichomes in these areas. However, at the apex and margins of the palea, macrohairs and papillae were abundant. The results are discussed with respect to possible taxonomic, anatomical, medical, and archaeological implications.

Abstract Functional properties of Bambara bean protein concentrates (BPCs), as a function of extraction pH and NaCl concentration, were investigated. The results showed that protein content of the concentrates ranged between 69.27% and 74.40%. The addition of NaCl during protein extraction favourably affected water solubility index particularly at pH 10–11. Moreover, the maximum water absorption capacity (4.28 g/g) and oil-holding capacity (OHC) (2.50 g/g) were recorded at extraction pH 11 and in the absence of NaCl. It was also noticed that protein extraction at pH 8–10 was not recommended for applications where high OHC is required. BPCs presenting high emulsifying activity were prepared at NaCl concentration of 0.5 M and pH 7, and at pH 11 without NaCl. Finally, foaming ability (FA) increased with NaCl concentration, and the maximum FA was recorded at pH 7 (114%).
