Fruit vinegars are popular condiments worldwide. Antioxidants and organic acids are two important components of the flavors and health benefits of fruit vinegars. This study aimed to test the antioxidant activities, phenolic profiles, and organic acid contents of 23 fruit vinegars. The results found that the 23 fruit vinegars varied in ferric-reducing antioxidant power (FRAP, 0.15–23.52 μmol Fe(II)/mL), Trolox equivalent antioxidant capacity (TEAC, 0.03–7.30 μmol Trolox/mL), total phenolic content (TPC, 29.64–3216.60 mg gallic acid equivalent/L), and total flavonoid content (TFC, 2.22–753.19 mg quercetin equivalent/L) values. Among the 23 fruit vinegars, the highest antioxidant activities were found in balsamic vinegar from Modena (Galletti), Aceto Balsamico di Modena (Monari Federzoni), red wine vinegar (Kühne), and red wine vinegar (Galletti). In addition, polyphenols and organic acids might be responsible for the antioxidant activities of fruit vinegars. The most widely detected phenolic compounds in fruit vinegars were gallic acid, protocatechuic acid, chlorogenic acid, caffeic acid, and p-coumaric acid, with tartaric acid, malic acid, lactic acid, citric acid, and succinic acid the most widely distributed organic acids. Overall, fruit vinegars are rich in polyphenols and organic acids and can be a good dietary source of antioxidants.

Tea is among the most consumed drink worldwide, and its strong antioxidant activity is considered as the main contributor to several health benefits, such as cardiovascular protection and anticancer effect. In this study, the antioxidant activities of 30 tea infusions, which were obtained by the mimic of drinking tea of the public, from green, black, oolong, white, yellow and dark teas, were evaluated using ferric-reducing antioxidant power (FRAP) and Trolox equivalent antioxidant capacity (TEAC) assays, ranging from 504.80 ± 17.44 to 4647.47 ± 57.87 µmol Fe2+/g dry weight (DW) and 166.29 ± 24.48 to 2532.41 ± 50.18 µmol Trolox/g DW, respectively. Moreover, their total phenolic contents (TPC) were detected by Folin-Ciocalteu assay and were in the range of 24.77 ± 2.02 to 252.65 ± 4.74 mg gallic acid equivalent (GAE)/g DW. Generally, Dianqing Tea, Lushan Yunwu Tea, and Xihu Longjing Tea showed the strongest antioxidant activities among 30 teas. Furthermore, the phenolic compounds in tea infusions were identified and quantified, with catechins most commonly detected, especially in green tea infusions, which were main contributors to their antioxidant activities. Besides tea polyphenols, considerable content of caffeine also presented in 30 tea infusions.

Grapes are widely used in the wine and juice industries, which can lead to massive amounts of waste, mostly grape peels and seeds. The antioxidant capacities, total phenolic and flavonoid contents and phenolic profiles of peels and seeds from 30 grape varieties were systemically assessed. The antioxidant activities of fat-soluble, water-soluble and insoluble-bound fractions of grape peels and seeds were evaluated using ferric-reducing antioxidant power and Trolox equivalent antioxidant capacity assays, and their total phenolic contents and total flavonoid contents were determined by the Folin-Ciocalteu method and AlCl3 colorimetry, respectively. It was found that the antioxidant capacities were diverse among different grape peels and seeds. Moreover, several phenolic compounds were identified and quantified, including gallic acid, cyanidin-3-glucoside, epicatechin, catechin gallate, ferulaic acid, rutin and resveratrol, which could contribute to the antioxidant capacities of these grape peels and seeds. Several grape wastes with strong antioxidant activity could be abundant sources of natural bioactive compounds, and have the potential for development into functional foods, food additives and pharmaceuticals.

PurposeSalak (Salacca zalacca) is an underutilised fruit. The bioactivities of this fruit have rarely been studied scientifically. Thus, the present study aimed to determine the antioxidant activity of extracts derived from the peel, fruit and kernel of the Salak fruit, as well as the hypoglycemic and anti-hypertensive properties of Salak peel extracts.Design/methodology/approachThe peel, fruit and kernel of the Salak were extracted using distilled water, methanol and ethanol. Antioxidant activities, angiotensin-converting enzyme (ACE) and alpha-amylase inhibition properties of the extracts were estimated via in vitro standard methods. Besides, the total phenolic content (TPC) and total flavonoid content (TFC) of the extracts were also determined in the present study. The antioxidant activities of different parts of Salak extracts were determined by ferric-reducing antioxidant power (FRAP) and Trolox equivalent antioxidant capacity (TEAC) methods. Percent of radical scavenging properties were calculated via DPPH assay. The hypoglycemic and anti-hypertensive properties of Salak peel were evaluated using alpha-amylase inhibition and ACE assays, respectively.FindingsFruit extracts of Salak in methanol were found to exhibit the highest TPC (10.27 ± 0.12 mg GAE/g), TFC (11.04 ± 0.89 mg CE/g) and antioxidant properties amongst all samples whereby the TPC and TFC were strongly correlated with antioxidant activities. On the other hand, distilled water extracted Salak kernel showed to have the lowest TPC (0.53 ± 0.05 mg GAE/g), TFC (0.37 ± 0.01 mg CE/g) and antioxidant properties amongst all the Salak extracts. Peel extracts exhibit comparable antioxidant activities with fruit extracts in the current findings. In addition, peel extracts indicated some extend of ACE and alpha-amylase inhibition activities regardless of the solvents used. Methanol and ethanol peel extracts indicated no significant difference (p < 0.05) ACE (98%) and alpha-amylase (90%) inhibition activities. However, distilled water extracted Salak peel showed significantly lower ACE and alpha-amylase inhibition in comparison to methanol and ethanol peel extracts.Originality/valueThe present findings suggested that the fruit of Salak exhibits the highest antioxidant properties, followed by the peel and lastly, the kernel, which shows the lowest antioxidant properties amongst all the samples. The results also indicated that the peel extracts have ACE and alpha-amylase inhibition activities.

The consumption of herbal teas has become popular in recent years due to their attractive flavors and outstanding antioxidant properties. The Five-Golden-Flowers tea is a herbal tea consisting of five famous edible flowers. The effects of microwave-assisted extraction parameters on the antioxidant activity of Five-Golden-Flowers tea were studied by single-factor experiments, and further investigated using response surface methodology. Under the optimal parameters (53.04 mL/g of solvent/material ratio, 65.52 °C, 30.89 min, and 500 W), the ferric-reducing antioxidant power, Trolox equivalent antioxidant capacity, and total phenolic content of the herbal tea were 862.90 ± 2.44 µmol Fe2+/g dry weight (DW), 474.37 ± 1.92 µmol Trolox/g DW, and 65.50 ± 1.26 mg gallic acid equivalent (GAE)/g DW, respectively. The in vivo antioxidant activity of the herbal tea was evaluated on alcohol-induced acute liver injury in mice. The herbal tea significantly decreased the levels of aspartate aminotransferase, total bilirubin, and malonaldehyde at different doses (200, 400, and 800 mg/kg); improved the levels of liver index, serum triacylglycerol, and catalase at dose of 800 mg/kg. These results indicated its role in alleviating hepatic oxidative injury. Besides, rutin, chlorogenic acid, epicatechin, gallic acid, and p-coumaric acid were identified and quantified by high performance liquid chromatography (HPLC), which could contribute to the antioxidant activity of the herbal tea.

The phytochemicals (total phenolic, tannin, flavonoid, alkaloid, and saponin) contents in the Aloe vera gel derived from the leaf of Aloe vera (L.) Burm. f. (Synonym Aloe barbadensismiller) were extracted and their antioxidant capacity was studied by Ferric reducing antioxidant power assay (FRAP), by free radical-scavenging capability using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS). Three different solvents with three different polarities CH3OH, CH3OH: HCl, CH3CH3OH: H2O were used at v/v ratio of 100, 98:2, 70:30, respectively. The acidified methanol solvent extracted the highest amounts of phytochemicals including total phenolic (4.64 mg gallic acid equivalent/g), tannin (3.84 mg tannic acid equivalent/g), alkaloid (662 mg piperine equivalent/g), and saponin (353 mg diosgenin equivalents/g) compared to the other two solvents. Similarly, in the extract with acidified methanol solvent, high level of total antioxidant activity (about 12 mg gallic acid equivalent/g) and scavenging effects expressed as 50% inhibition concentrations (IC50) for DPPH and ABTS assay were determined to be about 61 μg/mL and 371 μg/mL, respectively, which are higher than those with the other two solvents. Kombucha is a popular beverage with various bioactivities (such as antioxidant activity), which can be attributed to its abundant bioactive compounds, especially polyphenols. Kombucha is conventionally prepared by fermentation of a sugared black tea infusion without tea residue. In this study, the effects of black tea residue and green tea residue on kombucha were studied, and its antioxidant activities, total phenolic contents, as well as concentrations of polyphenols at different fermentation stages were evaluated using ferric-reducing antioxidant power, Trolox equivalent antioxidant capacity, Folin-Ciocalteu method and high-performance liquid chromatography with a photodiode array detector. The results showed that fermentation with tea residue could markedly increase antioxidant activities (maximum 3.25 times) as well as polyphenolic concentrations (5.68 times) of kombucha. In addition, green tea residue showed a stronger effect than black tea residue. Overall, it is interesting to find that fermentation with tea residues could be a better strategy to produce polyphenol-rich kombucha beverages.

This study was conducted to determine the pH, protein concentration, mineral, phenolic, flavonoid, and organic acid contents, as well as the antioxidant activity of three batches of fruit jiaosu (F1B3, F1B4, and F1B5). The jiaosu was prepared by mixing ten types of fresh fruits, raw honey, and water (3:1:10, w/w/w), and fermented at room temperature for six months. All fruit jiaosu had low pH (2.96–3.69), and the protein concentration was ranged from 8.45 to 16.2 µg/mL. Potassium (605.0–657.2 mg/L) was found to be the most abundant mineral in all the samples, followed by magnesium, calcium, and sodium. The total phenolic and flavonoid contents were 183.1–210.5 µg gallic acid equivalent/mL and 45.2–53.8 µg quercetin equivalent/mL, respectively. Acetic acid was the major organic acid in the F1B4 and F1B5 samples (6.58 g/L and 20.7 g/L, respectively) while the F1B3 sample contained the highest amount of lactic acid (12.1 g/L). Ascorbic and citric acids were present in small amounts in all samples. All the samples showed stronger scavenging activity against 2,2-diphenyl-1-picrylhydrazyl radicals (half-maximum inhibitory concentration, IC50: 13.6–16.8% v/v) than against hydrogen peroxide (IC50: 47.2–50.6% v/ v). The ferric reducing antioxidant power and oxygen radical absorbance capacity values for the samples were 14.9–20.9 µg ascorbic acid equivalent/mL and 23.9–25.4 mg Trolox equivalent/mL, respectively. The results indicated that the fruit jiaosu is a complex acidic solution containing proteins, minerals, phenolic compounds, and organic acids with antioxidant activities. Natural fermentation may cause variations in the organic acid content of the fruit jiaosu.

This study aimed at assessing the biological activities of Mucuna pruriens seeds using cytotoxicity, phytochemical, antiparasitic screening, and antioxidant assays. Mature fruits of M. pruriens were harvested from Fort Hare University’s Research Farm located in Alice, South Africa. The collected seeds were pulverized in a standard process and taken to the laboratory for crude extraction and further treatments. Cytotoxic, antimalarial, and trypanocidal effects of crude extracts obtained from ethanol and water were tested, while the total phenolic, proanthocyanidin, and flavonoid contents of the aqueous extracts as well as their pharmacological activities were determined in vitro using 2,2-diphenyl-1-picrylhydrazyl ethanol (DPPH), ferric reducing antioxidant power (FRAP), and 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) assays. Although the extracts showed mild antiparasitic (antiplasmodial and trypanocidal) effects, results from the cytotoxic experiment revealed that M. pruriens is not toxic to human cervix adenocarcinoma (HeLa) cells when tested using 50 µg/mL of extracts. It was observed that the seeds were remarkably rich in phenol (3730.1 ± 15.52 mg gallic acid equivalent (GAE)/g) compared to flavonoids (63.03 ± 1.95 mg quercetin equivalent (QE)/g) and proanthocyanidin (18.92 ± 1.09 mg catechin equivalent (CE)/g). Also, the antioxidant activities of the extracts were comparable to those of the standard antioxidant drugs (rutin and gallic acid) used, in a concentration-dependent manner. There was a direct relationship between phenolic acid content and antioxidant effects. It is therefore suggested that M. pruriens seeds be incorporated into human diets as a supplement to promote healthy living. Pharmaceutical industries with a particular interest in natural phenolic acids should consider using seeds of M. pruriens as pharmaceutical precursors.

The total phenolic contents (TPC), antioxidant activities and organic acid composition of Salacca zalacca, Mangifera indica L. Chok Anan and Baccaurea motleyana Hook. F. extracts at different maturity stages were evaluated by using modified Folin-Ciocalteu assay at 765 nm absorbance, 2,2- diphenyl-1-picrylhydrazyl (DPPH) radical scavenging assay and HPLC RP18 column at 215 nm. TPC content ranged from 63.9 mg GAE/100g to 381.23 mg GAE/100g, whereas the antioxidant activity ranged from 3.10% - 84.45%. The M. indica L. Chok Anan contained malic acid and citric acid in the range of 43.897-73.396 mg/100g FW and 2.681-18.428 mg/100g FW at young to ripe stages, respectively. B. motleyana Hook. F. contained citric acid and tartaric acid in the range of 4.649-6.114 mg/100g FW and 3.645-4.365 mg/100g FW at young to ripe stages, respectively. S. zalacca contained malic acid and citric acid in the range of 4.270-17.926mg/100g FW and 0.845-3.284 mg/100g FW at young to ripe stages, respectively. The highest TPC and antioxidant activity were found in the young stage of S. zalacca fruit extract with lowest inhibitory concentration (IC50) valued at 0.57 mgml-1. There was a positive linear correlation between the TPC and antioxidant activities of the fruit extracts. Malic acid is the predominant organic acid in M. indica L. Chok Anan and S. zalacca, while citric acid is the predominant organic acid in B. motleyana Hook. F. This research suggests that the studied fruits at young stage are a better source of TPC and antioxidants. The tested fruits showed a decrease in the concentration of organic acids with ripening.

Date (Phoenix dactylifera L.) seeds have gained interest as a valuable by-product of  the date fruit industry and have been identified as a rich source of functional and bioactive ingredients. In this study, date seeds from five varieties (Medjool, Deglet Nour, Barhee, Bou Sthammi and Dayrie) cultivated in Australia were analysed for their total phenolic and flavonoid contents, ferric reducing antioxidant power (FRAP), Trolox equivalent antioxidant capacity (TEAC), and in-vitro inhibition against α-amylase and α-glucosidase. The date seed powders (DSP) were extracted with acetone-methanol-water (2:2:1, v:v:v) to obtain free polyphenols.  The bound polyphenols were extracted from the residual solids with butanol-HCl (97.5:2.5; v/v) treatment at 100 °C. The greatest quantities of total phenols (4166±227 mg Gallic Acid Equivalents 100g-1 DSP), total flavonoids (52.1±9.6 mg Quercetin Equivalents 100g-1 DSP), FRAP (1589±47 µmol Iron[II] Equivalents g-1 DSP) and TEAC (45.2±1.4 µmol Trolox Equivalents g-1 DSP) were detected in seeds from Deglet Nour variety. Both free and bound polyphenol fractions showed significant (p<0.05) inhibition against rat intestinal α-glucosidase with little or no inhibition against pancreatic α-amylase. Bound polyphenols showed stronger α-glucosidase inhibition compared with free polyphenols.  The IC50 for α-glucosidase were reported as mg GAE mL-1 ranged from 0.39±0.02 (Deglet Nour) to 0.68±0.02 (Medjool) for bound polyphenols, and from 0.907±0.08 (Medjool) to 1.75±0.15 (Barhee-khalal) for free polyphenols. Bound polyphenol fraction, with strong α-glucosidase inhibition and weak α-amylase inhibition, was suggested as a significant source of functional food ingredients with anti-hyperglycaemic properties.
