Natural extracts (rich in bioactive compounds) that can be obtained from the leaves, peels and seeds, such as the studied extracts of Pomegranate (P), Rosemary (RA, Nutrox OS (NOS) and Nutrox OVS (NOVS)), and olive (Olea europaea) extracts rich in hydroxytyrosol (HYT-F from olive fruit and HYT-L from olive leaf) can act as antioxidant and antimicrobial agents in food products to replace synthetic additives. The total phenolic compounds, antioxidant capacity (measured by 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2-Azinobis (3-ethylbenzothiazolin) -6-sulphonic acid (ABTS), Ferric Reducing Antioxidant Power (FRAP), and Oxygen Radical Absorbance Capacity (ORACH)) and their antimicrobial power (using the diffusion disk method with the Escherichia Coli, Lysteria monocytogenes, and Staphilococcus Aureus strains) were measured. The results showed that all the extracts were good antioxidant and antimicrobial compounds in vitro. On the other hand, their antioxidant and antimicrobial capacity was also measured in fish products acting as preservative agents. For that, volatile fatty acid compounds were analysed by GS-MS at day 0 and 11 from elaboration, together with total vial count (TVC), total coliform count (TCC), E. Coli, and L. monocytogenes content at day 0, 4, 7 and 11 under refrigerated storage. The fish patties suffered rapid lipid oxidation and odour and flavour spoilage associated with slight rancidity. Natural extracts from pomegranate, rosemary, and hydroxytyrosol delayed the lipid oxidation, measured as volatile compounds, and the microbiological spoilage in fish patties. Addition of natural extracts to fish products contributed to extend the shelf life of fish under retail display conditions.

AbstractWe conducted this study to determine and compare the content of phenolic compounds and flavonoids in the argan and olive leaves as well as their antioxidant capacity in aqueous, methanolic, and ethyl acetate extracted fractions. In vitro antioxidant activity was evaluated in comparison with synthetic antioxidants by assessing DPPH• radical scavenging capacity, ferric reducing antioxidant power, scavenging ability by inhibiting the β-carotene/linoleic acid emulsion oxidation, and by the ABTS radical scavenging activity assay. Total phenolic content in argan samples ranged from 221.69 ± 2.07 to 1.32 ± 0.01 mg GAE/g DW and in olive samples from 144.61 ± 0.82 to 1.21 ± 0.02 mg GAE/g DW. Total flavonoids content in argan samples varied from 267.37 ± 1.12 to 25.48 ± 0.02 mg QE/g DW, while in olives from 96.06 ± 0.78 to 10.63 ± 0.05 mg QE/g DW. In vitro antioxidant studies strongly confirmed the antioxidant potency of argan and olive leaves and their richness in secondary metabolites that are effective in free radicals scavenging and metal chelating capacities, indicating their antioxidant power.

Edible flowers have been used as ingredients because of their biological activities, taste, and overall appearance. This research was aimed to characterize the chemical composition and in vitro antioxidant activity of the marigold flower (Calendula officinalis L.) extracted with different proportions of water and ethyl alcohol, and the lyophilized extract with higher content of antioxidant compounds was incorporated into an organic yogurt. Results showed that the hydroalcoholic extract (50:50 v/v) presented the highest total phenolic content (TPC), flavonoids, and antioxidant activity (ferric reducing antioxidant power (FRAP), total reducing capacity (TRC), and Cu2+/Fe2+ chelating ability). Phenolic acids and flavonoids were quantified in the extract by LC-DAD, while 19 compounds were tentatively identified by ESI-MS/MS. The lyophilized marigold extract (LME) also inhibited 12% of Wistar rat’s brain lipid oxidation in vitro, inhibited α-amylase, and α-glucosidase activities, but showed no cytotoxicity towards cancerous cells (HCT8 and A549). However, marigold flower extract protected human erythrocytes against mechanical stress. When added into an organic yogurt model (0 to 1.5%), LME increased TPC and antioxidant activity (2,2-diphenyl-1-picrylhydrazyl (DPPH) and TRC), and the sensory analysis showed that the organic yogurt had an acceptance of 80.4%. Our results show that the use of LME may be a technological strategy to increase the content of bioactive compounds in yogurts.

Objective: This research is to study the production of natural red pigment by Monascus purpureus TISTR3615 in the submerged and solid-statefermentation system using Pathumthani-1 rice as a carbon source.Methods: The antioxidant activity of the red pigment was evaluated in vitro 2,2-diphenyl-1-picrylhydrazyl (DPPH), ABTS radical scavenging assay,and ferric-reducing antioxidant power (FRAP) assay, including total phenolic compound.Results and Discussion: The maximum of red pigment production was 0.55±0.02/ml (OD 680 nm) after incubation at 30°C for 24 days. Theantioxidant activity based on inhibition DPPH (%), ABTS radical scavenging activity (%), and FRAP activity (mM Fe2+/g) was 97.80±1.51,68.64±0.46, and 0.32±0.021, respectively. The total phenolic content was 164.78±2.82 μg GAE/mg.Conclusion: It was estimated that Monascus pigments, leading to nutraceutical and pharmaceutical applications, cosmetic industry, and foodindustry.

This study analyzed the antioxidant properties of Portulaca oleracea L., known as purslane. The samples (leaves, flowers and stems) were collected at two different locations in Portugal: Tavira (L1) and Vendas Novas (L2). Assays for total antioxidant activity, total phenolic content and ferric-reducing antioxidant power were conducted and, for both locations, significantly higher values ( P<0,05) were observed for stems (508.8 and 982.3 mg AAE/100 g DW, 1008.6 and 2285.5 mg GAE/100 g DW, 121.0 and 166.3 mg TE/100 g DW, respectively for each location), than in leaves or flowers. In the DPPH assay, the three-plant parts from L2 reached the 50% inhibition rate in lower concentrations than plants from L1. On the other hand, higher concentrations of total monomeric anthocyanins were found in samples from L1 (95.5, 88.8 and 86.0 mg/L) than in samples from L2 (81.7, 70.5 and 59.8 mg/L). The same was true for phenolic acids, estimated by liquid-chromatography, where methanol extracts were used. Phenolic extracts from all three-plant parts from both locations showed protective effects on DNA against hydroxyl radicals. This work suggests the possibility of benefit to human health from its consumption, related to the high antioxidant activity of purslane, even the stems, usually discarded in daily consumption.

The current study investigates the content of sugars, organic acids, phenolic acids and flavonoids, as well as antioxidant and antimicrobial activity of Balkan-endemic Micromeria frivaldszkyana. Glucose was the most abundant sugar in the plant (2.77%), followed by fructose (1.18%) and galactose (0.82%). Eight organic acids were detected with quinic acid being in the highest content—556.3 mg/100 g DW. From the individual phenolic acids, rosmarinic acid was found in the most significant amounts (2040.1 ± 1.97 mg/100 g) and hesperidin was the major representative of flavonoids with content 131.2 ± 5.6 mg/100 g DW. The antioxidant activity of the plant was studied by six methods: 2,2′-diphenylpicrylhydrazyl (DPPH)—286.4 ± 10.43 mM TE/g, 2,2′azinobis (3)-ethylbenzthiazoline-6-sulfonic acid (ABTS)—358.4 ± 10.4 mM TE/g, ferric reducing antioxidant power (FRAP)—388.0 ± 32.4 mM TE/g, cupric reducing antioxidant capacity (CUPRAC)—905.6 ± 19.2 mM TE/g, Oxygen Radical Absorbance Capacity (ORAC)—3250.5 ± 208.1 µmol TE/g and Hydroxyl Radical Averting Capacity (HORAC)—306.1 ± 23.5 µmol GAE/g. In vitro antimicrobial activity against nine microorganism was evaluated but the extract displayed antimicrobial activity only against Listeria monocytogenes ATCC 19111 with inhibition zone diameter 9 mm and minimal inhibitory concentration (MIC) 10 mg/mL.

Moringa oleifera Lam (Moringaceae) is a highly valued plant its content phytochemicals, rich in vitamin and minerals and high nutritional value. The objective of this study was to investigate the effect of bioactive compounds in Moringa oleifera (MO) leaves and their potential as antimicrobial agents for use as natural food additives to increase the shelf-life of chicken burgers. Seven types of chicken burger were prepared including a control (without antioxidant), with 0.5 % MO polyphenol extract (MOPE) added, 1 % MOPE, 2 % MOPE, 0.5 % whole MO powder (WMOP), 1 % WMOP, and 2 % WMOP. The results showed that chicken burgers treated with MOPE and WMOP at concentrations of 0.5 %, 1 %, and 2 % had significantly (p < 0.05) lower total plate counts (TPCs) at the end of the storage period (6 days) compared to the control. Burgers with added MOPE and WMOP had significantly (p < 0.05) higher total phenolic content, flavonoids content, and antioxidant activity compared to the control. Acceptability of chicken burger was not affected by the addition of MOPE or WMOP. Our findings suggest that adding MOPE and WMOP at concentrations of 1 % and 2 % could be an effective natural food preservative in chicken burgers.

Leafy vegetables are an excellent source of bioactive factors, traditionally used as important medical ingredients. Recently, some leafy vegetables are domesticated without the use of fertilizer, as well as the assessment of the effect of fertilizer on their nutritional value. This study aims at testing the effect of three mineral and organic fertilizers (Cowpat, NPK and NPK + cowpat) on three traditional leafy vegetables: Ceratotheca sesamoïdes, Sesamum radiatum and Justicia tenella. Their antioxidant activities were assessed at different harvesting times varying from six (6) to fourteen (14) Weeks After Transplantation (WAT) using three in vitro methods: Ferric reducing antioxidant power (FRAP), 2,2’-Azinobis3-ethylbenzothiazoline-6- sulfonic acid (ABTS) and 2,2-diphenyl-1-picryl hydrazil (DPPH). The FRAP, DPPH, ABTS assays were consistent and positively correlated (p < 0.001). Total antioxidant activities of leafy vegetables depended on species, harvesting time and methods. They ranged from 32.0 to 45.7 µmol Fe/g DW (for FRAP), with non fertilized J. tenella cut at 12 WAT giving the highest antioxidant activity. Percentage of inhibition using DPPH assay ranged from 11.4 to 87.2 % and showed that J. tenella fertilized with NPK and cowpat, and harvested at 9 WAT had the highest antioxidant activity. Regarding ABTS, the range of 17.6 to 28.9 µmol TE/g DW was recorded, and the leaves of C. sesamoïdes harvested at 10 WAT and fertilized with cowpat showed the highest level. Compared to other species, those studied here may best contribute to improve human health related to degenerative diseases. Moreover, significant and positive correlations were observed between the total phenolic compounds content and antioxidant activities of leaves regardless the methods used. The positive and significant correlations between the three assays (FRAP, DPPH, ABTS) allow to suggest the use of only anyone of them to check factors in the study. This paper highlights the potential of antioxidant capability of the leafy vegetables even fertilized.

Date (Phoenix dactylifera L.) seeds have gained interest as a valuable by-product of  the date fruit industry and have been identified as a rich source of functional and bioactive ingredients. In this study, date seeds from five varieties (Medjool, Deglet Nour, Barhee, Bou Sthammi and Dayrie) cultivated in Australia were analysed for their total phenolic and flavonoid contents, ferric reducing antioxidant power (FRAP), Trolox equivalent antioxidant capacity (TEAC), and in-vitro inhibition against α-amylase and α-glucosidase. The date seed powders (DSP) were extracted with acetone-methanol-water (2:2:1, v:v:v) to obtain free polyphenols.  The bound polyphenols were extracted from the residual solids with butanol-HCl (97.5:2.5; v/v) treatment at 100 °C. The greatest quantities of total phenols (4166±227 mg Gallic Acid Equivalents 100g-1 DSP), total flavonoids (52.1±9.6 mg Quercetin Equivalents 100g-1 DSP), FRAP (1589±47 µmol Iron[II] Equivalents g-1 DSP) and TEAC (45.2±1.4 µmol Trolox Equivalents g-1 DSP) were detected in seeds from Deglet Nour variety. Both free and bound polyphenol fractions showed significant (p<0.05) inhibition against rat intestinal α-glucosidase with little or no inhibition against pancreatic α-amylase. Bound polyphenols showed stronger α-glucosidase inhibition compared with free polyphenols.  The IC50 for α-glucosidase were reported as mg GAE mL-1 ranged from 0.39±0.02 (Deglet Nour) to 0.68±0.02 (Medjool) for bound polyphenols, and from 0.907±0.08 (Medjool) to 1.75±0.15 (Barhee-khalal) for free polyphenols. Bound polyphenol fraction, with strong α-glucosidase inhibition and weak α-amylase inhibition, was suggested as a significant source of functional food ingredients with anti-hyperglycaemic properties.

Aim of the study was to evaluate antioxidant and antimicrobial activity of porcine liver-protein hydrolysates (PLHs) and their fractions recovered from enzymatic hydrolysis. Hydrolysates and fractions were assessed for antioxidants such as 2,2-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid, 2,2-diphenyl-1-picrylhydrazyl and ferric-reducing antioxidant power and antimicrobial activity. Inhibition activity for all antioxidant parameters was significantly (P &lt; 0.05) higher for whole PLHs than for its corresponding fractions; however, among their fractions, 5–10 kDa and 1–5 kDa had a relatively higher antioxidant activity than did the other fractions. Trypsin-digested whole PLHs and their fractions exhibited the highest antioxidant and antimicrobial activity, followed by alcalase- and papain-digested PLHs, for all tested microbes. Results accomplished that whole PLHs exhibited better result than its fractions; thus, PLHs can be used as preservatives for food products or utilised for other pharmaceutical purposes.

Antioxidant capacities of ethylacetate, butanol, and water fractions of peel, pulp, and seeds ofCanarium odontophyllumMiq. (CO) were determined using variousin vitroantioxidant models. Ethylacetate fraction of peel (EAFPE) exhibited the highest total phenolic (TPC), total flavonoid content (TFC), and antioxidant activities compared to pulp, seeds, and other solvent fractions. Antioxidant capacities were assayed by total antioxidant capability, 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical activity, ferric reducing antioxidant power (FRAP), and hemoglobin oxidation assay. Total phenolic content of ethylacetate fractions was positively correlated with the antioxidant activity. This is the first report on the antioxidant activities from CO fruit fractions. Thus, EAFPE can be used potentially as a readily accessible source of natural antioxidants and as a possible pharmaceutical supplement.
