Carrot pomace is the main waste residue obtained during carrot juice extraction. Plant tissues respond to abiotic stresses (i.e., wounding stress and ultraviolet C (UVC) radiation) by accumulating bioactive compounds. Due to the mechanical damage occurring during juice extraction, carrot pomace undergoes extreme wounding stress. In this study, the effects of UVC light (11.8 W m−2, 0–120 min) and storage time (48 h, 25 °C) on the accumulation of phenolics compounds and the antioxidant activity (AOX) of carrot pomace were evaluated. Carrot pomace that was non-treated with UVC (control) showed a 709.5% increase in total phenolics at 48 h. A high correlation of AOX values against total phenolics (R2 = 0.87) was observed, indicating that phenolics were the main contributors to the AOX of the tissue. After UVC treatment, the pomace that was radiated for 120 min with UVC showed an increase (40.4%) in chlorogenic acid (CHA) content. At 24 h, protocatechuic acid and 3,5-dicaffeoylquinic acid, which were not detected before storage, showed accumulation by 166.5 mg/kg and 169.4 mg/kg, respectively, in UVC treated pomace. Chlorogenic acid showed the highest increase (143.6%) at 48 h in the control. Valorization of carrot pomace was achieved by increasing its concentration of antioxidant phenolics through UVC radiation.

Three different style fresh-cut (shredded, French fry, and sliced) sweetpotatoes [Ipomoea batatas (L.) Lam.] were stored at 0 and 5 °C for 4 and 8 days. At specified storage intervals, the fresh-cut sweetpotatoes were analyzed for total phenolics, individual phenolic acids, and antioxidant activity. Sweetpotato tissue analyzed immediately after cutting was considered the control. Storage at 5 °C resulted in an increase in total phenolics in all types of fresh-cut sweetpotatoes, except in shredded tissue analyzed after 4 days of storage. However, at 0 °C, only sliced tissue accumulated higher total phenolics than the control. In general, antioxidant activity in all fresh-cut sweetpotatoes held at 5 °C was higher than in the control. No significant increase in antioxidant activity was observed in shredded sweetpotatoes stored at 0 °C. Chlorogenic acid followed by 3,5-dicaffeoylquinic acid were the predominant phenolic acids present in fresh-cut sweetpotatoes. The highest content of chlorogenic acid (539.9 μg·g−1 dry weight) in sliced tissue stored for 8 days at 5 °C was ≈6-fold higher than in the control (88.3 μg·g−1 dry weight). No significant development of tissue browning, off-odors, or off-flavors were observed after 8 days of storage and the products were considered to be marketable.

Wounding stress is an effective strategy to increase the content of bioactive compounds in horticultural crops. Potato tubers subjected to wounding stress accumulate chlorogenic acid (CGA) and CGA isomers (neo-CGA and crypto-CGA), which are phenolics that prevent and treat different chronic and degenerative diseases. In this study, the effects of wounding stress and storage temperature (10 °C and 20 °C for 168 h) on the accumulation of CGA isomers in potatoes were evaluated. Results indicated that CGA accumulation was favored when wounded potatoes were stored at 20 °C for 120 h, obtaining a 1923.1% higher concentration when compared with samples before storage. Furthermore, wounded potatoes stored at 10 °C for 120 h showed the highest neo-CGA increase in concentration (712.2%). Likewise, the highest crypto-CGA concentration (84.9% higher than control samples) was quantified in wounded potatoes stored at 20 °C for 144 h. Based on the results from both the present study and previous reports, a strategy that summarizes effective postharvest stress conditions that induce the accumulation of specific CGA isomers in potatoes is presented. The tissue with an increased content of bioactive compounds could be used as raw material to produce functional foods or could be subjected to downstream processing to produce dietary supplements.

A new C-6 flavone glycoside (6), together with seven known compounds, cryptochlorogenic acid (1), chlorogenic acid (2), 2- O- trans-caffeoylhydrocitric acid (3), isovitexin 7-β-D-glucopyranoside (4), 7,4′-dihydroxy-5-methoxyflavone-6- C-β-D-glucopyranoside (5), 3,5- O-dicaffeoylquinic acid (7) and 4,5- O-dicaffeoylquinic acid (8), were isolated from the aerial parts of Knautia arvensis. Their structures were elucidated by extensive spectroscopic methods including 1D- (1H, 13C and TOCSY) and 2D-NMR (DQF-COSY, HSQC, HMBC) experiments, as well as ESIMS analysis. Compounds 1, 3-5 and 8 are reported for the first time in Knautia arvensis.

ABSTRAKIkan patin merupakan ikan air tawar yang mengandung lemak dan protein tinggi sehingga apabila dilakukan penyimpanan rentan terjadi oksidasi yang mengakibatkan ketengikan. Sargassum sp. dengan kandungan fenol dan flavonoid mampu menghambat terjadinya oksidasi pada fillet ikan patin. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan ekstrak Sargassum sp. dan lama penyimpanan dalam menghambat terjadinya oksidasi pada fillet ikan patin. Materi yang digunakan dalam penelitian ini adalah ekstrak Sargassum sp. dan fillet ikan patin. Metode penelitian yang digunakan adalah experimental laboratories dengan menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan 2 faktor yaitu konsentrasi ekstrak Sargassum sp. (0%, 1%, 1,5% dan 2%) dan lama penyimpanan (hari ke-0, hari ke-2, hari ke-4, dan hari ke-6. Hasil penelitian menunjukkan bahwa perbedaan penambahan konsentrasi ekstrak Sargassum sp. dan lama penyimpanan memberikan pengaruh nyata terhadap nilai PV, nilai TBA, kadar lemak, kadar protein, kadar air serta organoleptik (P < 0,05). Hasil penelitian tahap I didapatkan rendemen Sargassum sp. dengan pelarut etanol 96% sebesar 1,39%, kandungan fenol 1,813%, flavonoid 0,278% dan aktivitas antioksidan 99,1659 ppm (kuat). Hasil penelitian tahap II didapatkan nilai PV berkisar antara 2,03 - 19,82 meq/kg, nilai TBA 0,63 - 6,72 mg.mal/kg. Konsentrasi 1,5% merupakan konsentrasi terbaik ekstrak Sargassum sp. dalam menghambat oksidasi lemak pada fillet ikan patin selama penyimpanan.Kata kunci: Antioksidan, Ekstrak Sargassum sp., Lama Penyimpanan, Oksidasi lemak, Fillet Ikan patinABSTRACTCatfish is a freshwater fish that contain high fat and protein so that if its stored it will susceptible to oxidation process which leads to rancidity. Sargassum sp. with its phenolic and flavonoid content are able to inhibit the oxidation process in catfish fillet. This research was aimed to know the effects of different concentrations of Sargassum sp. extracts and storage time in inhibiting the oxidation process in catfish fillet. The materials used in this research were Sargassum sp. extracts and catfish fillet. This research was using experimental laboratories research method with factorial Completely Randomized Research Design (CRD) of 2 factors which were concentrations of Sargassum sp. extracts (0%, 1%, 1.5%, and 2%) and storage time (0 day, 2 days, 4 days, and 6 days). The results showed that the adding of different concentrations of Sargassum sp. extracts and storage time gave significant effect to the PV value, TBA value, fat content, protein content, moisture content, as well as organoleptic point (P < 0.05). The results obtained from stage I research were the yields of Sargassum sp. with ethanol 96% solvent was 1.39%, phenol content was 1.813%, flavonoid was 0.278%, and antioxidant activity was 99.1659 ppm (categorized as strong antioxidant). The results obtained from stage II research were the PV value were ranged from 2.03 to 19.82 meq/kg, TBA value were ranged from 0.63 to 6.72 mg.mal/kg. The 1.5% concentration was the best concentration of Sargassum sp. extracts in inhibiting the lipid oxidation of catfish fillet during storage.Keywords: Antioxidant, Sargassum sp.
