The objective of this study was to determine the influence of three production systems (intensive, semi-extensive and extensive) with differing nutrition on the descriptive sensory and fatty acid profiles of sub-adult (±15–18 months old) male impala longissimus thoracis et lumborum (LTL) muscles. The discriminant analysis plot showed that extensively produced impala had a sensory profile distinct from the intensive and semi-extensive system impala. Extensively produced impala had the highest sensory ratings for overall intensity, gamey, beef-like, herbaceous, and sweet-associated aroma and flavor of their meat. The intensive and semi-extensive system impala did not differ for most of the sensory attributes, except for higher ratings for gamey flavor, liver-like flavor, tenderness and mealiness, and lower ratings for residue found in semi-extensive system impala. The overall aroma and flavor intensities of impala meat in general had strong positive correlations with gamey, beef-like, herbaceous, and sweet-associated aromas and flavors; however, marketing should be adjusted depending on the nutrition received by the impala, to allow consumers to select their preferential sensory profile. Impala meat from all three production systems had low fat contents (<2%), and desirable fatty acid profiles.

In this work, fatty-acid profiles, including trans fatty acids, in combination with chemometric tools, were applied as a determinant of purity (i.e., adulteration) and provenance (i.e., geographical origin) of cosmetic grade argan oil collected from different regions of Morocco in 2017. The fatty acid profiles obtained by gas chromatography (GC) showed that oleic acid (C18:1) is the most abundant fatty acid, followed by linoleic acid (C18:2) and palmitic acid (C16:0). The content of trans-oleic and trans-linoleic isomers was between 0.02% and 0.03%, while trans-linolenic isomers were between 0.06% and 0.09%. Discriminant analysis (DA) and orthogonal projection to latent structure—discriminant analysis (OPLS-DA) were performed to discriminate between argan oils from Essaouira, Taroudant, Tiznit, Chtouka-Aït Baha and Sidi Ifni. The correct classification rate was highest for argan oil from the Chtouka-Aït Baha province (90.0%) and the lowest for oils from the Sidi Ifni province (14.3%), with an overall correct classification rate of 51.6%. Pairwise comparison using OPLS-DA could predictably differentiate (≥0.92) between the geographical regions with the levels of stearic (C18:0) and arachidic (C20:0) fatty acids accounting for most of the variance. This study shows the feasibility of implementing authenticity criteria for argan oils by including limit values for trans-fatty acids and the ability to discern provenance using fatty acid profiling.

Pollen of pecan [Carya illinoinensis (Wangenh.) K. Koch] from five protandrous and five protogynous genotypes was analyzed for germinability and fatty acid profile. Fatty acid profiles as a function of genotype were distinctive in all selections, but only three of the genotypes had fatty acid profiles that were easily distinguishable from others by canonical discriminant analysis. Specific fatty acid percentages influenced germination in some genotypes. Total saturated and unsaturated fatty acids influenced pollen germination to a greater degree than individual fatty acids. The effects of fatty acids on pollen germination of protandrous genotypes were opposite those on `Stuart', the only protogynous genotype to be influenced by fatty acid percentages.

The purpose of this study was to compare the effects of short-term low-fat (LF) and high-fat (HF) diets on fed-state hepatic triacylglycerol (TAG) secretion, the content of proteins involved in TAG assembly and secretion, fatty acid oxidation (FAO), and the fatty acid profile of stored TAG. Using selectively bred obese-prone Sprague–Dawley rats, we directly measured fed-state hepatic TAG secretion, using Tyloxapol (a lipoprotein lipase inhibitor) and a standardized oral mixed meal (45% carbohydrate, 40% fat, 15% protein) bolus in animals fed a HF or LF diet for 2 weeks, after which the rats were maintained on their respective diet for 1 week (washout) prior to the liver being excised to measure protein content, FAO, and TAG fatty acid profiles. Hepatic DGAT-1 protein expression was ∼27% lower in HF- than in LF-fed animals (p < 0.05); the protein expression of all other molecules was similar in the 2 diets. The fed-state hepatic TAG secretion rate was ∼39% lower (p < 0.05) in HF- (4.62 ± 0.18 mmol·h−1) than in LF- (7.60 ± 0.57 mmol·h−1) fed animals. Hepatic TAG content was ∼2-fold higher (p < 0.05) in HF- (1.07 ± 0.15 nmol·g−1tissue) than in LF- (0.50 ± 0.16 nmol·g−1tissue) fed animals. In addition, the fatty acid profile of liver TAG in HF-fed animals closely resembled the diet, whereas in LF-fed animals, the fatty acid profile consisted of mostly de novo synthesized fatty acids. FAO was not altered by diet. LF and HF diets differentially alter fed-state hepatic TAG secretion, hepatic fatty acid profiles, and DGAT-1 protein expression.

The effect of Acacia karroo supplementation on fatty acid profiles and sensory attributes of Xhosa lop-eared goats meat was evaluated in 18 4-month-old goats exposed to a single dose of 6000 L3 Haemonchus contortus larvae. The goats were allotted into two groups: non-supplemented (NSP) and supplemented (AK). The AK goats received 200 g of fresh A. karroo leaves. At the end of the experiment, all the goats were slaughtered to determine the fatty acid profiles and sensory perceptions. Faecal larval counts decreased significantly in the AK group as the infection progressed, while it increased in the NSP group. At necropsy, the NSP group had significantly higher worm counts than the AK group. The AK group contained significantly higher (P < 0.05) amounts of intramuscular fat and had almost twice (P < 0.05) the total polyunsaturated fatty acids and polyunsaturated fatty acid/monounsaturated fatty acid ratio. Furthermore, the AK goats also had higher amounts (P < 0.05) of n-3. Mean sensory scores for juiciness and tenderness were superior in the AK goats (P < 0.05). In conclusion, A. karroo supplementation positively influenced the fatty acid composition and sensory attributes of chevon from goats infected with H. contortus.
