Orange is highly nutritious and a source of phytochemical compounds. However, its by-products are usually discarded. In this study, we evaluated the effect of orange peel (OP) addition in orange jam on sensory, physicochemical, and nutritional characteristics. Four jam formulations were elaborated with different OP levels: OP0 (standard), OP4, OP8, and OP12 (Orange Peel 0, 4, 8 and 12%, respectively). All samples were evaluated for sensory acceptability, and physicochemical and nutritional composition. The addition of 12% orange peel in jam reduced (p < 0.05) the acceptability for all evaluated attributes, as well as overall acceptance and purchase intention. However, OP utilization increased (p < 0.05) the levels of water activity, soluble solids, titratable acidity, and sugars. Soluble solids/titratable acidity ratio, luminosity (L*), and yellow content (b*) decreased in all added OP jams, while red content (a*) increased. No change in the pH and moisture values of the product were observed after OP addition. Ash, protein, lipid, dietary fiber, ascorbic acid, carotenoids, phenolic compounds, and antioxidant capacity values increased after OP addition, while carbohydrate and energy content decreased. A texture test showed that adhesiveness decreased, while gumminess, chewiness, and elasticity increased after OP addition. We concluded that the addition of up to 8% orange peel in jam maintains sensory acceptability similar to that of the standard product. OP addition is a viable alternative to improve some of the product’s physicochemical and nutritional characteristics.

The aim of the study was to evaluate the chemical, physical and nutritional composition and sensory acceptability of different sweet potato cultivars to classify the best genotypes for human consumption. We evaluated ten genotypes extracted from the Germplasm bank of Midwest State University, Brazil. The cultivars were evaluated regarding their sensory acceptability and chemical (reducing sugar; nonreducing sugar; total sugar; pH; total soluble solids; titratable acidity; total soluble solids/titratable acidity ratio; and instrumental colour) and nutritional composition (moisture; ash; protein; lipid; carbohydrate; energy value; total carotenoid; and ascorbic acid). Greater scores (p < 0.05) for overall acceptance were obtained for the white pulp genotypes Amorano, Júlia, UGA 45, and UGA 49. There was a statistical difference (p < 0.05) in the chemical and nutritional composition of sweet potatoes, except for the pH values. Generally, tuber have a light colour (values of L* greater than 50) with a yellow shade (b*) and green subshade (negative a* values). The exception was noticed in the UGA 34 genotype, which presented a higher red shade (positive a* value) and a yellow subshade. The cultivars more indicated for human consumption were the UGA 34 (favorable nutritional profile), UGA 45 (better acceptability and favorable chemical and nutritional composition), and Amorano (better acceptability and favorable chemical composition). On the other hand, the UGA 29 genotype may be characterized as the less appropriated for consumption. That, due to its less acceptance from the consumers and an inferior chemical and nutritional characterization. We conclude that the Brazilian sweet potato cultivars more indicated for human consumption are the UGA 34, UGA 45 and Amorano, considering that present more favorable chemical, nutritional and sensory acceptability characteristics. The UGA 29 genotype may be characterized as less recommended for consumption.

This study aimed to evaluate the influence of different levels of irrigation on the quality parameters involved in the dried-bananas production from 3 different cultivars. The experimental design was a completely randomized factorial 3 x 3, with three genotypes of bananas (Prata-Anã, FHIA-18 and BRS Platina) produced in the semi-arid region of Minas Gerais.) and three irrigation levels (50, 75 and 100% of crop evapotranspiration - ETC), with three replications. For the processing purpose, the fruits were selected at the maturity stage 6. Then they sanitized in hypochlorite of sodium solution at 100 mg L-1, peeled and dehydrated through the drying convective method with hot air, in dryer with forced air, in dryer with forced air circulation at 65ºC for 24 hours. The dried bananas were evaluated according to the following physical and chemical aspects: moisture, length, diameter, firmness, color (brightness, chroma and ºHue), soluble solids and titratable acidity, and sensory characteristics: purchase intention and acceptance. The humidity, length, diameter, firmness, color and acidity of dried bananas were influenced by the different studied irrigation levels. In the sensory evaluation, the best result regarding appearance, color, texture and flavor requirements was observed in banana processed from 'Prata-Anã' irrigated with the total level of water (100%). The dried banana processed from 'BRS Platina' was the least accepted in the sensory tests.

Fruits and vegetable are highly perishable and are subjected to rapid post harvest losses. Their value addition can enhance shelf life, new product development and finally commodity value in market. The present work was planned to prepare papaya based beverage with whey incorporation (0, 25, 50 and 100%), which is a major environmental pollutant from dairy industry. RTS was evaluated for its nutritional composition, physicochemical attributes like titratable acidity, total soluble solids, total and reducing sugars and sensory quality. Microbial quality was also observed for 60 days. Results revealed that on increasing whey incorporation, nutritional quality was enhanced, but poor sensory and microbial quality was observed. Beverage with 25% addition was found most acceptable with overall acceptability of 8.59±0.21. Selected beverage has 15.05±0.18 oBrix TSS, 0.30±0.11% acidity, 5.37±0.01g/100g reducing sugar, 14.06±0.46 g/100g total sugar and 5.60±0.02 mg/100g ascorbic acid, thus depicting enhanced nutritional value and this creates a scope for better health, enhanced papaya postharvest value and whey utilization.

Purpose The potential of the Cerrado fruit could be explored by development of new products, such as jellies that can be used to add value to the fruit, as well as to preserve this biome. This paper aims to evaluate the effect of processing, the glass packaging type and storage time on the quality of jelly, prepared from reconstituted murici pulp, over 12 months of storage. Design/methodology/approach The authors used a completely randomized design (CRD) in factorial 2 × 5, with two types of glass packaging (transparent and amber) and five storage periods (0, 3, 6, 9 and 12 months), with four replications and the experimental parcel consisting of 80 g of jelly (two bottles of 40 g). The quality of jelly was monitored through 12 months using physicochemical (proximal composition, color, soluble solids, titratable acidity and pH), microbiological (coliforms at 35 °C and 45 °C, filamentous fungi and Salmonella sp) and sensory analyses (sensory acceptance and purchase intent). Findings The pulp processing effectively affected the physicochemical and nutritional composition (proximal composition, soluble solids and color). It was found that only the storage time significantly influenced (p < 0.05) jelly quality, considering the variables analyzed, except the soluble solids, ash, dietary fiber and sensory texture attributes. However, the glass packaging factor (transparent and amber) did not result in significant changes in those variables. Moreover, the pulp processing allows a seasonal fruit with a short harvest period and short post-harvest life to be available to consumers as a new product throughout the year. Originality/value Based on the present study, the native Cerrado fruit such as murici [Byrsonima crassifolia (L.) Rich] is appreciated for its pleasant peculiarities such as color, aroma and taste; however, it is underutilized as food for lack of information and studies. Although the fruit does not have widespread use as food, it is necessary to make the population aware about its importance, not only as a source of nutrients, but also for its functional and sensory potential. Therefore, the production of murici jelly can increase consumption of the fruit, besides being a way to add value and extend the shelf life and sensory acceptance of the product prepared.

Starch index (SI), color, firmness, titratable acidity (TA), soluble solids content (SSC), ethylene production, and aroma volatile emission were recorded weekly during on-tree maturation of `Mondial Gala' apples. Fruit were harvested on commercial date and held for 3.5 and 6.5 months in regular atmosphere (RA) or in three controlled atmospheres (CA) (2% O2 :2% CO2, 1% O2 : 1 % CO2 and 1% O2 :3% CO2). After each storage period plus 0 and 7 days at 20 °C, color, firmness, TA, SSC, aroma volatile emission, acetaldehyde and ethanol concentrations, and sensory acceptability were evaluated. At orchard, changes in SI, SSC, background color, and aroma volatile emission were almost concomitant or slightly previous to the increase in ethylene production. During storage, all three CA conditions, regardless of storage period, led to better preservation of standard quality. CA-stored fruit also received higher acceptability scores, although aroma volatile emission was decreased in response to these storage conditions. At the end of long storage (plus shelf life period), fruit stored in 1 :1 atmosphere showed a good retention of firmness and TA in comparison to the rest of CA-fruit. Fruit stored under all considered CA conditions showed similar aroma volatile emission after 3.5 or 6.5 months of storage. Storage period had no apparent influence on the aroma volatile emission of CA-stored apples, with the exception of fruit stored in 2:2 atmosphere immediately upon removal from storage. No significant differences in sensory acceptability were found either for fruit stored under different CA conditions during 3.5 months immediately after transfer to 20 °C. In contrast, fruit stored in either 1 : 1 or 2: 2 atmospheres during 6.5 months were better accepted by consumers than those stored in 1 : 3 atmosphere upon removal from cold storage. However, these differences disappeared after 7 days of shelf-life at 20 °C.

Raspberry production represents an alternative for farmers in the temperate zones of Mexico. Due to the environmental impact caused by conventional agriculture, there is currently greater demand for organic food in the national and international market. To achieve this need, new fertilization techniques based on organic amendments are being tested. In the present study, yields and quality were evaluated over a 3-year period (2015, 2016 and 2017) as well as the phytochemical compounds of the production in 2017, with management of organic versus conventional fertilization of raspberry crop in open field in Cuauhtémoc, Chihuahua, Mexico. During the three years of study, the conventional fertilization system obtained higher yields, compared to the organic one, with values of 2,698 and 2,351 g per linear meter in 2015, 2,423 and 1,301 g per linear meter in 2016 and the data for 2017 were 3,077 and 2,550 g per linear meter, respectively. Regarding quality, the results showed no statistical differences between the two systems of production about colour, firmness, total soluble solids, titratable acidity and pH of the fruit. Differently the composition of phytochemicals, phenols, flavonoids, total anthocyanins and antioxidant capacity was better under the organic management. In conclusion, the conventional system showed higher yields, the quality of the fruits was not different between the two systems, while the levels of phytochemicals were higher with the organic farming. Therefore, it is important to continue the research in order to improve soil fertility and achieve higher yields under the organic management.

Four formulations of mixed açaí (Euterpe oleracea) (A) and cocoa´s honey (Theobroma cacao) (CH) jellies were prepared according to the following proportions: T1 (40% A:60% CH), T2 (50% A:50% CH), T3 (60% A: 40% CH) and T4 (100% A - control). All formulations were prepared using a rate 60:40 (w/w) of sucrose and pulp, plus 0.5% pectin and the products reached to average of 65% soluble solids content. The jellies were analyzed by chemical and physicochemical (titratable acidity, pH, soluble solid content, dry matter, total protein, lipids, vitamin C and calories) and sensory characteristics; also were evaluated levels of P, K, Ca, Mg, Fe, Zn, Cu and Mn. It was used a hedonic scale of 7 points to evaluate the attributes: overall impression, spreadability, brightness, flavor, texture and color, and also was verified the purchase intention score. The titratable acidity and pH ranged from 0.46 to 0.64% and 3.35 to 3.64, respectively, that are within the range found at most fruit jellies. The soluble solids content ranged between 65.2 and 65.5 ºBrix. The sensory acceptance results showed that all treatments (T1, T2, T3 and T4) presented means of sensory attributes above 4, demonstrating good acceptance of the product, but the treatment T1 presented the higher scores for the evaluated attributes. Cocoa´s honey added a positive influence on the attributes of color, texture and spreadability.

The aim of the study was to evaluate the sensory acceptability of sfiha added to different levels of chayote peel flour (CPF). Also, determine the physical-chemical composition of the standard formulation and that containing the highest CPF content and with acceptance similar to the standard. Five sfiha formulations were developed: F1 (standard, 0% CPF) and the others added 2% (F2), 6% (F3), 9% (F4) and 12% (F5) of CPF. Sixty evaluators aged 7 to 10 years participated in the sensory evaluation. The addition of levels greater than 2% of CPF reduced sensory acceptability (p<0.05) of the sfiha for all attributes and for the overall acceptance and purchase intention, in relation to the standard product. Formulation F2 was the one with the highest CPF content and with acceptance similar to the standard formulation. Higher levels of moisture, ash and dietary fiber and lower levels of carbohydrate and energy were observed for F2 compared to F1. There was no significant difference (p>0.05) for protein and lipid content between the two formulations. It is concluded that an addition level of up to 2% of CPF in sfiha is well accepted by schoolchildren. In addition, the CPF improves the nutritional value of the product, especially with the increase in dietary fiber and mineral matter.

ABSTRACT In the rural region of the municipality of Viçosa, Minas Gerais, forest patches are encountered and they present a great diversity of wild and edible fruit, where wild pineapple (Ananas bracteatus (Lindl.), var. albus) is one of those of greatest occurrence. Given that, little is known about the nutritional characteristics of this fruit, the present study aimed to investigate the physical and physic-chemical characteristics, chemical composition (titratable acidity, total soluble solids, pH, moisture content, ash, protein, lipids and dietary fiber), carotenoids (a-carotene, ß-carotene, ß-cryptoxanthin and lycopene), vitamin C (AA and DHA) by HPLC-DAD, vitamin E (a-, ß-, ?-, d-, tocopherols and tocotrienols) by HPLC-fluorescence, and minerals (P, K, Ca, Mg, Cu, Fe, Zn, Mn, Na, Cr, Se and Mo) by ICP-AES. Fruits showed a moisture content average of 78.5 g 100g-1, 16.3 ° Brix of soluble solids, titratable acidity equal to 1.71 g 100g-1 of citric acid, 1.66 g 100g-1 of dietary fiber, 1.41 g 100 g-1 of lipids and caloric density of 83.15 kcal 100g-1. We considered it a source of carbohydrates (12.82 g 100g-1), proteins (4.79 g 100g-1) and Zn (0.98 mg 100g-1); a good source of vitamin C (18.70 mg 100g-1); and an excellent source of Cu (0.48 mg 100g-1), Fe (2.05 mg 100g-1), Mn (8.87 mg 100g-1) and Mo (0.15 mg 100g-1).

Purpose The purpose of this study was to evaluate beet and orange mixed juices added with lyophilized Lactobacillus acidophilus probiotic culture. Design/methodology/approach Two formulations of probiotic beet and orange mixed juices (1:1 e 1:2 v/v) were prepared, stored at 4°C for 28 days and were evaluated for probiotic survival, physicochemical stability, antioxidant activity and sensory acceptance. The probiotic culture was added in a lyophilized form and was not propagated in culture media or juice. Findings Physicochemical characteristics (pH, titratable acidity, total soluble solids and color) and antioxidant activity showed no undesirable alterations during storage. The number of probiotics followed established minimum requirement for probiotic foods (109 CFU/200mL) during the 28 days of storage. The juices showed good sensory acceptance and purchase intention, especially regarding the color of the product. Practical implications The beet and orange mixed juices are suitable carriers for L. acidophilus with a shelf life of at least 28 days at 4°C. Originality/value Direct addition of the probiotic culture could result in high probiotic survival in mixed juices, dispensing the propagation step.
