Novel strategies for wheys application, decreasing its negative environmental impact, represent a challenge for dairy industries. The use of wheys as replacers may lead to adverse sensory quality changes in conventional dairy products. This study aimed to investigate the sensory effects of the use of ricotta whey (RW), cheese whey (CW), and butter whey (BW) in replacement to whole milk (WM) at different ratios (0:100%, 25:75%, 50:50%, 75:25%, and 100:0%, w/w) in chocolate ice creams. All formulations, including a commercial sample used as a reference, were analyzed for overall liking, purchase intention, just-about-right (JAR), and survival analysis. RW, CW, and BW up to 75%, 100%, and 25% did not affect (p > 0.05) the overall liking, respectively. Purchase intention was only decreased (p < 0.05) by BW at 50%, 75%, and 100% compared to a commercial sample. Considering data from PCA and PLSR associated with hedonic scores and penalty analysis, the main adverse sensory effects on overall liking were: increased perception (p < 0.05) of chocolate flavor by RW, CW, and BW, melting velocity by RW, sweetness by CW and BW, and chocolate aroma by BW. Survival analysis indicated that BW could be added up to a maximum of 84.15%, while no rejection was detected for RW and CW. Based on results, RW, CW, and BW represent potential milk replacers to be used by the dairy industry, decreasing the environmental impact of these dairy by-products.

Recently, milk consumption has been declining and there is a high demand for non-dairy beverages. However, market offers are mainly cereal and nut-based beverages, which are essentially poor in protein (typically, less than 1.5% against the 3.5% in milk) and are not true milk replacers in that sense. In this work, new beverages from different pulses (i.e., pea, chickpea and lupin) were developed using technologies that enable the incorporation of a high level of seed components, with low or no discharge of by-products. Different processing steps were sequentially tested and discussed for the optimization of the sensorial features and stability of the beverage, considering the current commercial non-dairy beverages trends. The lupin beverage protein contents ranged from 1.8% to 2.4% (w/v) and the chickpea beverage varied between 1.0% and 1.5% (w/v). The “milk” yield obtained for the optimized procedure B was 1221 g/100 g of dry seed and 1247 g/100 g of dry seed, for chickpea beverage and lupin beverage, respectively. Sensory results show that chickpea beverage with cooking water has the best taste. All pulses-based beverages are typical non-Newtonian fluids, similarly to current non-dairy alternative beverages. In this respect, the sprouted chickpea beverage, without the cooking water, presents the most pronounced shear-thinning behavior of all formulations.

The aim of the study was to analyze emissions in the supply chain and to identify, based on a literature analysis, which supply chain strategies could contribute to reducing these emissions. A broad spectrum of new supply chain strategy solutions was identified and, based on simulations of selected products, conclusions were drawn and the advantages and disadvantages of theoretical solutions were presented for individual cases. A critical analysis of the literature and simulation methods were used to illustrate the problem presented in this paper, to identify the factors causing greenhouse gas emissions and to draw conclusions in the form of proposals to redesign existing strategies, considering the factors determining the increase in pollution caused by the performed logistics processes. The results of the simulations and the literature analysis indicate that solutions related to the redesign of strategies must consider the specificity of the product and the nature of the chain. Not all proposed strategies are applicable to all chains, and each new strategy must be carefully considered and consider many factors. An important element to reduce the negative environmental impact of chains is a well-thought-out relationship with suppliers, a well-chosen and adapted logistics infrastructure, including means of transport. The presented solutions clearly indicate that the environmental aspect plays an increasingly important role in chain management and influences the applied chain strategies. However, reducing the environmental impact of a chain is not a revolutionary approach and an easy-to-implement strategy change, but a well-thought-out, long-term process that considers the specifics of the products, the possibilities of alternative sourcing and distribution modes, and the need to invest in logistics infrastructure to make it as environmentally neutral as possible.

This article discusses the problems of the influence of electromagnetic compatibility (EMC) violations of electrical and electronic devices on the surrounding ecosystems. The analysis is carried out and the classification of EMC violations is given, the causes of the compatibility violation are examined, and the economic losses and the negative environmental impact, as a consequence of the considered violations, are analyzed. A classification and generalization of methods to minimize the negative consequences of EMC violations was carried out, criteria for reducing economic losses were considered, methods for preventing and preventing EMC violations of various power and electronic devices were classified. The methods of monitoring the compatibility of devices are considered and recommendations are given for observing the necessary safety and control requirements.

This work presents the evaluation of the environmental impact and compressive strength of Compressed Earth Blocks (CEB) stabilized with hydrated aerial lime and Portland cement. For this, 12 series of blocks stabilized with different proportions of lime and cement were manufactured and the Life Cycle Analysis (LCA) methodology was used. After conducting these assays and simulations, it could be concluded that, using earth and sand typical of the city of Santa Fe (Argentina), stabilized with certain percentages of Portland cement between 5 and 10% in weight, CEB can be produced with sufficient levels of strength for them to be used in load-bearing walls, in this way minimizing the negative environmental impact associated with their manufacturing. It is also concluded that the stabilization with aerial lime does not increase the CEB’s compressive strength and, on the contrary, significantly increases their negative impact on the environment.

PurposeThe self-cleaning properties of nanostructured titanium dioxide facade coatings are useful in Singapore's tropical climate. However, its potential maintenance issues need to be determined right at the design stage. The purpose of this paper is to highlight the development of the design for maintainability tool which is a multicriteria design decision score sheet that evaluates the maintainability potential of nano-facade coating applications on high-rise façades with concrete and stonemasonry finishes and curtain walls.Design/methodology/approachQuantitative methods (expert and practitioner surveys) are conducted in this research study. Analytic hierarchy process (AHP) and sensitivity analysis were used to develop a robust Design for Maintainability tool.FindingsSafety measures indicator received the highest weighted score by experts, while the maximizing performance, minimizing risk, minimizing negative environmental impact and minimizing consumption of matter and energy were the top ranking main criteria by both experts and practitioners. The top ranked design for maintainability sub-criteria identified by practitioners and experts were risk management, maintenance considerations, climatic conditions, safety measures, lifecycle cost and maintenance access, sun's path, rainfall intensity, biological growth measures and building age profile.Originality/valueMost researches on the maintainability of nano-façade coatings uses experimentation to test the durability of nano-façade coatings, while this study focuses on design based empirical data such as establishing and ranking the list of design for maintainability criteria or indicators to minimize future defects and maintenance issues. The design for maintainability tool contributes to the maintainability of nano-façade coatings leading to maximizing its performance while minimizing cost, risks, resource consumption and negative environmental impact.

The purpose of the present chapter is to demonstrate how an econometric application supported by the use of simple software can augment an environmental nonprofit organization’s (ENPO) environmental performance. An ENPO, whose scope of operation is the protection of natural resources, usually deals with the problem of how to reduce its negative environmental impact without sacrificing the positive one resulting from its work. This chapter argues that the application of cointegration analysis on available time series environmental data can offer an indication for the policy decision-making in terms of such a contrast in impacts. If the time series are not cointegrated, then the ENPO can reduce its negative environmental impact without affecting the positive one. If they are cointegrated, then alternative policies have to be designated for dealing with the negative impact.
