Water Activity Role on Dried Agaricus Bisporus L. Lipid Oxidation During Storage Time

The aim is to determine the influence of water activity on dried Agaricus bisporus lipid oxidation stored for 180 days at a temperature of 25�C. Water sorption isotherms were determined using desiccators methods. Agaricus bisporus samples were equilibrated on saturated salt solutions in a range of water activity from 0.1 to 0.753. The equilibrium moisture content was obtained when there was no appreciable change in sample weight. GAB model was tested to determine the monolayer of Agaricus bisporus, m0, and there were monitored peroxide value, acidity value and refraction index as a function of Agaricus bisporus moisture (0.032 and 0.062 g water g-1 Agaricus bisporus) during the period of storage and the influence of Agaricus bisporus moisture on lipid oxidation.

Moisture sorption isotherms play an essential role in preservation and storage of dehydrated food. To study the behavior of sucrose, it’s moisture adsorption isotherm was investigated using the static gravimetrique method at laboratory temperature (29 ±1°C) in a water activity range (aw) of 0.07-0.97. The results showed that the equilibrium moisture content of sucrose increase substantially above aw = 0.6. The moisture adsorption isotherm was sigmoid in shap, showing a type III BET isotherm. The data obtained were fitted to several models including two-parameter (BET, Hasley, Kuhn and Oswin), three parameter (GAB). A non-linear least square regression analysis was used to evaluate the models constants. The GAB model best fitted the experimental data in the wide range of water activity. The best fitted equation provide a sound basis for futur work on the drying and storage of sucrose. The accurate moisture content and the stability profile of sucrose were determined. The results of determination show that sucrose powder was stable below 7.7% RH at 29°C. The content of water adsorbed in the monomolecular layer was calculated (GAB Xm=0.950 g H2O/100 g solids; BET Xm= 1.072 g H2O/100 g solids).

Moisture sorption isotherms of Thai Jasmine rice crackers were determined at 30, 45 and 60°C over a water activity range of 0.10 to 0.95 using a static gravimetric technique. Moisture sorption isotherms of rice crackers exhibited the sigmoid (Type II) shape. The moisture content of rice crackers decreased as temperature increased at a given water activity of the storage environment. The Brunauer, Emmett and Teller (BET) and Guggenheim-Anderson-de Boer (GAB) models were applied to fit the experimental data. The isosteric heat of sorption at different moisture levels was also determined using the Clausius–Clapeyron thermodynamic equation. A nonlinear regression analysis method was determined to evaluate the parameters of sorption equations. The criteria used to evaluate the goodness of fit of each model were the mean relative percentage deviation modulus (E) and the percentage root mean square error (RMSE). The more extended range of application of the GAB equation over the BET equation was evident. The GAB model gave the best fit to the experimental sorption data for a wide range of water activity (0.10–0.95) while the BET model gave the best fit for a water activity range of less than 0.60. The GAB model is considered suitable to predict the moisture sorption isotherm of rice crackers since it gave low E and RMSE values. The heat of sorption values of rice crackers were found to be large at low moisture content and decreased with an increase in food moisture content.

   The moisture sorption isotherms of Mefenamic acid tablets were investigated by measuring the experimental equilibrium moisture content (EMC) using the static method of saturated salt solutions at three temperatures (25, 35, and 45°C) and water activity range from 0.056 to 0.8434. The results showed that EMC increased when relative humidity increased and the sorption capacity decreased, the tablets became less hygroscopic and more stable when the temperature increased at constant water activity. The sorption curves had a sigmoid shape, type II according to Brunauer’s classification. The hysteresis effect was significant along with the whole sorption process. The results were fitted to three models: Oswin, Smith, and Guggenhein - Anderson and de Boer. According to the fitting results, the GAB model was the most appropriate model to describe the sorption behavior of Mefenamic acid; it had a regression coefficient range (0.9803-0.994), %E (0.69-4.06), and low values of SEE (0.85-2.2). The monolayer moisture content was calculated using the GAB model and it was concluded that the tablets should be stored at moisture content equal or slightly higher than (0.2046, 0.1843, and 0.1437 %) for desorption and (0.2073, 0.1269, and 0.1452 %) for adsorption for the three temperatures.

Background: Instant pumpkin cream soup enriched with tempeh had fulfilled 10% Recommended Dietary Allowances (RDA) for elderly so that it can be used as an easy-to-serve snack, but decreasing quality of instant cream soup will be happened if the instant cream soup was stored for a long time. Objectives: This study aimed to analyze quality of water content, water activity and lipid oxidation in instant pumpkin cream soup during storage and estimated the shelf life of pumpkin cream soup enriched with tempeh.Method:  Quality storage was analyzed using of water content, water activity (aw) and lipid oxidation. Estimation of shelf life was analyzed using Arrhenius Accelerated Shelf Life Testing (ASLT) model.Results: The results showed that the water content, aw levels and lipid oxidation of instant pumpkin cream soup increased during the storage period. The critical parameter used in this study was lipid oxidation. Instant cream soup without the addition of tempeh can last 447 days  while the cream soup with the addition of tempeh has a shelf life of 433 days.Conclusion: Quality of instant pumpkin cream soup decreased during the storage period and it would be expired over a year.

Metode penelitian yang digunakan adalah experimental laboratories dengan menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan 2 faktor yaitu konsentrasi ekstrak Sargassum sp. (0%, 1%, 1,5% dan 2%) dan lama penyimpanan (hari ke-0, hari ke-2, hari ke-4, dan hari ke-6. Hasil penelitian menunjukkan bahwa perbedaan penambahan konsentrasi ekstrak Sargassum sp. dan lama penyimpanan memberikan pengaruh nyata terhadap nilai PV, nilai TBA, kadar lemak, kadar protein, kadar air serta organoleptik (P < 0,05). Hasil penelitian tahap I didapatkan rendemen Sargassum sp. dengan pelarut etanol 96% sebesar 1,39%, kandungan fenol 1,813%, flavonoid 0,278% dan aktivitas antioksidan 99,1659 ppm (kuat). Hasil penelitian tahap II didapatkan nilai PV berkisar antara 2,03 - 19,82 meq/kg, nilai TBA 0,63 - 6,72 mg.mal/kg. This research was aimed to know the effects of different concentrations of Sargassum sp. extracts and storage time in inhibiting the oxidation process in catfish fillet. The materials used in this research were Sargassum sp. extracts and catfish fillet. This research was using experimental laboratories research method with factorial Completely Randomized Research Design (CRD) of 2 factors which were concentrations of Sargassum sp. extracts (0%, 1%, 1.5%, and 2%) and storage time (0 day, 2 days, 4 days, and 6 days). The results showed that the adding of different concentrations of Sargassum sp. extracts and storage time gave significant effect to the PV value, TBA value, fat content, protein content, moisture content, as well as organoleptic point (P < 0.05). The results obtained from stage I research were the yields of Sargassum sp. with ethanol 96% solvent was 1.39%, phenol content was 1.813%, flavonoid was 0.278%, and antioxidant activity was 99.1659 ppm (categorized as strong antioxidant). The results obtained from stage II research were the PV value were ranged from 2.03 to 19.82 meq/kg, TBA value were ranged from 0.63 to 6.72 mg.mal/kg. The 1.5% concentration was the best concentration of Sargassum sp. extracts in inhibiting the lipid oxidation of catfish fillet during storage.Keywords: Antioxidant, Sargassum sp. Curvas de secagem de banana passa foram determinadas, utilizando-se três temperaturas do ar de secagem. Os resultados indicaram que para reduzir o teor de umidade do produto até 23,5% foram necessários tempos de secagem de 51, 36 e 30 horas paras as temperaturas de 50, 60 e 70ºC, respectivamente. O modelo exponencial U/Uo = exp(-kt) foi ajustado para os dados experimentais mediante análise de regressão não-linear, encontrandose alto coeficiente de regressão linear. Determinou-se a atividade de água do produto ao longo do processo de secagem para as três temperaturas testadas. Estudou-se a correlação entre a atividade de água e o teor de umidade do produto, determinando-se as isotermas de dessorção da banana passa a 25ºC. Observou-se que a atividade de água diminuiu em função do tempo de secagem e do teor de umidade para as três temperaturas de secagem. Os dados experimentais foram ajustados mediante regressão não-linear ao modelo polinomial e a seguinte equação foi obtida: U = -1844,93 + 7293,53Aa – 9515,52Aa2 + 4157,196Aa3. O ajuste mostrou-se satisfatório (R2 > 0,90). DRYING CURVES AND WATER ACTIVITY EVALUATION OF THE BANANA-PASSES Abstract Banana drying curves were determined by utilizing three drying air temperatures. The results indicated that to reduce the moisture content of the product until 23.5% it were necessary drying times of 51, 36 and 30 hours for temperatures of 50, 60 and 70ºC, respectively. The exponential model U/Uo = exp(-kt) was adjusted for the experimental data by means of non linear regression analysis, and a high coefficient of linear regression was found. The water activity of the product was determined throughout the drying process for the three tested temperatures. The correlation between the water activity and moisture content of the product was studied, and the sorption isotherms were determined at 25º C. It was observed that the water activity decreased in function to the drying time and moisture content for the three drying temperatures. The experimental data were adjusted by means of non linear regression to the polynomial model and the following equation was obtained: U = - 1844.93 + 7293.53A a – 9515.52 Aa 2 + 4157.196A a 3. The final adjust was satisfactory (R2 > 0.90).
