ABSTRAK Ikan patin merupakan ikan air tawar yang mengandung lemak dan protein tinggi sehingga apabila dilakukan penyimpanan rentan terjadi oksidasi yang mengakibatkan ketengikan. Sargassum sp. dengan kandungan fenol dan flavonoid mampu menghambat terjadinya oksidasi pada fillet ikan patin. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan ekstrak Sargassum sp. dan lama penyimpanan dalam menghambat terjadinya oksidasi pada fillet ikan patin. Materi yang digunakan dalam penelitian ini adalah ekstrak Sargassum sp. dan fillet ikan patin. Metode penelitian yang digunakan adalah experimental laboratories dengan menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan 2 faktor yaitu konsentrasi ekstrak Sargassum sp. (0%, 1%, 1,5% dan 2%) dan lama penyimpanan (hari ke-0, hari ke-2, hari ke-4, dan hari ke-6. Hasil penelitian menunjukkan bahwa perbedaan penambahan konsentrasi ekstrak Sargassum sp. dan lama penyimpanan memberikan pengaruh nyata terhadap nilai PV, nilai TBA, kadar lemak, kadar protein, kadar air serta organoleptik (P<0,05). Hasil penelitian tahap I didapatkan rendemen Sargassum sp. dengan pelarut etanol 96% sebesar 1,39%, kandungan fenol 1,813%, flavonoid 0,278% dan aktivitas antioksidan dengan Ic 50 sebesar 99,1659 ppm (kuat). Hasil penelitian tahap II didapatkan nilai PV berkisar antara 2,03–19,82 meq/kg, nilai TBA 0,63–6,72 mg.mal/kg. Konsentrasi 1,5% merupakan konsentrasi terbaik ekstrak Sargassum sp. dalam menghambat oksidasi lemak pada fillet ikan patin selama penyimpanan. Kata kunci: Antioksidan, Ekstrak Sargassum sp., Lama Penyimpanan, Oksidasi lemak, Fillet Ikan patin  ABSTRACT Catfish is a freshwater fish that contain high fat and protein so that if its stored it will susceptible to oxidation process which leads to rancidity. This research was using experimental laboratories research method with factorial Completely Randomized Research Design (CRD) of 2 factors which were concentrations of Sargassum sp. extracts (0%, 1%, 1.5%, and 2%) and storage time (0 day, 2 days, 4 days, and 6 days). The results showed that the adding of different concentrations of Sargassum sp. extracts and storage time gave significant effect to the PV value, TBA value, fat content, protein content, moisture content, as well as organoleptic point (P < 0.05). The results obtained from stage I research were the yields of Sargassum sp. with ethanol 96% solvent was 1.39%, phenol content was 1.813%, flavonoid was 0.278%, and antioxidant activity was 99.1659 ppm (categorized as strong antioxidant). The results obtained from stage II research were the PV value were ranged from 2.03 to 19.82 meq/kg, TBA value were ranged from 0.63 to 6.72 mg.mal/kg. The 1.5% concentration was the best concentration of Sargassum sp. extracts in inhibiting the lipid oxidation of catfish fillet during storage. Keywords: Antioxidant, Sargassum sp. Chili is one of the fruits that contain vitamin C in a very large number. Vitamin C is one of the vitamins that is needed but cannot be synthesized in the body and has free radical antidote properties which will slow down the oxidation process that occurs in the body. One of the characteristics of vitamin C is a compound that is very easily oxidized due to the influence of heat, metal, and light so that in storage it needs special treatment to keep the levels low. One of the habits of the people in storing chili is in cold temperatures. This way trusted to maintain the condition of chili to always be fresh. But it is not yet known whether these conditions can guarantee vitamin C levels in them. Theoretically, the optimal storage for chili is at low temperatures between 2-15o C with humidity of 90-95% so that the chili remains fresh for � 20 days. This research is to find out whether or not there is an influence between storage time on vitamin C levels in cayenne pepper and red. The research method used was quantitative analysis by measuring vitamin C levels in chili using a spectrophotometric instrument. The storage day indicator used in this study is the first, second, fourth and sixth day and the temperature used is 4oC. The results of the study for vitamin C levels in fresh cayenne pepper were 88.19 � 1.39 mg/g, at two days storage was 82.04 � 1.34 mg/g, at four days storage was 78.43 � 1.02 mg/g and at six days storage was 78.17 � 2.05 mg/g. The results of the study for vitamin C levels in fresh red chili were 81.54 � 0.51 mg/g, at two days storage was 74.39 � 0.89 mg/g, at four days storage was 42.49 � 0.77 mg/g and at six days storage was 42.83 � 0.17 mg/g. Based on research that has been done on cayenne pepper and large red chili it can be concluded, that with 4oC temperature in storage for 2 days, 4 days and 6 days in the refrigerator the levels of vitamin C are not well maintained.

Tobacco is an important commodity in the economy in Indonesia. Tobacco stems are worthless waste. Tobacco stems contain 56.10% cellulose, making it high potential as a particle board raw material. The process of making particleboard that affects quality is the pressing process during printing. Greater pressure printing presses make bonds between particles stronger. Strong bonding between particles is intended so that the board does not change during storage. The purpose of this study is to determine the characteristics of particleboard in various variations of printing pressure load and storage time and to find out the best treatment as a recommendation in the manufacture of tobacco stem particleboard. The research method was factorial CRD with a combination of treatments between 2 factors namely printing load (4 kg and 8 kg) and storage time (0, 12, and 24 days). The results showed 1.13 - 1.25 g.cm-3 for the density value, water content 4.97 - 12.57%, and water absorption 240.03 - 208.00%. MOE and MOR values ​​were 16000.13 - 36222.77 kgf. cm-2 and 824.47 - 1697.83 kgf.cm-2. The recommended treatment load is 8 kg printing pressure with 12 days of storage time.

Both pre- and post-rigor beef semimembranosus muscles were ground with salt (0, 2 and 4%) and then subdivided into two treatment groups (freezing and freeze drying) and evaluated during storage of 0, 5, 10 and 15 wk for chemical and sensory traits. Rehydration ratios of pre-rigor freeze-dried beef (salted or unsalted) were not significantly changed during a 15-wk storage period at 25°C. With the addition of 2 and 4% salt, pre-rigor freeze-dried beef was less susceptible (P&lt;0.05) to lipid oxidation (lower TBA values) than post-rigor, freeze-dried beef. Pre-rigor, freeze-dried beef was superior to post-rigor, freeze-dried meat in all sensory traits studied. Differences in TBA values were not significant between pre-rigor and post-rigor, frozen beef treatments at any salt level (0, 2 and 4%). Pre-rigor, frozen beef samples were superior (P&lt;0.05) to conventional post-rigor, frozen meat in panel tenderness and acceptability scores. The TBA values of pre- and post-rigor beef (frozen or freeze dried), in general, increased with increased salt level (0, 2 and 4%). Freeze-dried beef samples (pre- or post-rigor) were less (P&lt;0.05) tender, cohesive, acceptable and more rancid and/or off-flavor than frozen meat (pre- or post-rigor).

Buas-buas, meniran, secang, and rosella have biological and pharmacological activities as antioxidants. The combination of the four plants is expected to provide a more potent synergistic effect on antioxidant activity. The purpose of this study was to analyze the total phenol content, total flavonoids, and antioxidant effects before and after combination. The combination of extracts, buas-buas, meniran, secang, and rosella which are used in sequence is (1: 1: 1/2: 1/2), (1: 2: 1/2: 1/2), and (2: 1 : 1/2: 1/2). Plants used in the form of simplicia was extracted by maceration method. Radical capture activity uses DPPH and IC50 values are determined. Determination of total phenol is expressed equivalent to gallic acid. Total flavonoids are expressed as quercetin equivalents. The phenol and flavonoid content obtained are then correlated with antiradical activity. The results showed that the best IC50 values were in the combination of ratios (1: 1: 1/2: 1/2) that is (11.0 µg / mL), then (1: 2: 1/2: 1/2) which was 13.3 µg / mL, and (2: 1: 1/2: 1/2) which is 19.4 µg / mL. The highest total phenolic and flavonoid content in the ratio (1: 2: 1/2: 1/2) is 33.57% w/w EAG and 74.00% w/w EQ. Correlation analysis between IC50 values with total phenolic and flavonoid contents showed a positive correlation with R2 values of 0.8236 and 0.0102 with positive slope. Thus, it can be concluded that the total phenol content influences free radical scavenging activity by 82.36%, while the effect of total flavonoid content was only 1.02%.
