An Evolutionary Game Model of the Establishment of Tracebility System in Food Supply Chain

For a two-echelon supply chain system which consists of upstream node enterprises and downstream node enterprises, cooperation mechanism between bounded rational upstream and downstream nodes through collaborative establishment and implementation of food traceability system was modeled based on evolutionary game theory. The study shows that the probability of cooperation between both sides has a a negative correlation with the total cost of establishment and positive correlations with the probability of risk occurrence, the total excess income and reduction in risk loss from cooperation of both sides, and the excess income from the establishment of one side. Cost shared by both sides should be positively related to the excess income they obtaine. And there are an optimal coefficient of total excess income allocation and an optimal coefficient of reduction in risk loss allocation to maximize the probability of cooperation.

This paper focuses on the game evolution process and its influencing factors of financial risk cooperation behavior between suppliers and manufacturers in global supply chain system. Using two-population evolutionary game theory, the performance of supply chain members under financial risk environment is modeled. Further, the proposed financial risk game model is applied to simulation cases of global supply chain. Based on the theory analysis and simulation results, it is shown that the cooperation strategy is the optimal evolutionarily stable strategy (ESS) for all supply chain members, when facing the high financial risk. The financial risk-sharing coefficient can be regarded as an adjuster that affects risk ESS of both suppliers and manufacturers under the low financial risk setting. By reducing the financial risk-sharing ratio of one supply chain player, his intention of adopting cooperation strategy would be enhanced. Finally, it is observed that financial risk sharing approach may lead to the alignment among supply chain members. Therefore, setting up an effective financial risk-sharing mechanism is beneficial to realize sustainable development of global supply chain.

Fruits are easily damaged, therefore, a tracing system is needed to ensure the commodity is well received by consumers.  This study is a systematic review aims to  identify areas where the fruits traceability provides the most value for supply chain management and  to develop elements of a future research agenda for the fruits traceability in supply chain management.  PRISMA or Preferred Reporting Items for Systematic Reviews and Meta-Analyses is used to help the systematic literature review.  The result showed thad there are several values ​​in applying traceability to the fruit supply chain, such as traceability guarantees the quality of fruit in the supply chain, traceability protects from fraud.  Traceability will help increase consumer confidence in food safety, particularly on fruit.  Blockchain technology  is a promosing technology for a   traceability system in industry and can be used successfully, by modifying the supply chain system and meeting the limitations first.

The frequent occurrence of food safety accidents and the globalization of food import and export circulation make it very important to establish a food traceability system. Due to the bulk and low-value characteristics of grain, it is difficult to achieve traceability in a single unit like meat products; as grain has a longer supply chain, involving much more links and even more complicated factors, it is easy to cause information disconnection. In response to the above problems, this paper has done the following tasks: First, propose a RFID-based grain supply chain traceability model, which mainly describes the information flow and grain flow in the grain traceability system, and secondly, in combination with the GTIN coding standard in the GS1 system, a stage traceability code is set for each batch of grains at each link, providing a method for uniquely identifying the batch of grains at that link, to improve the accuracy of grain traceability. In addition, in order to enable consumers to inquire all the detailed information of the grain in the supply chain through a traceability code, the PRESENT algorithm and the format-preserving algorithm are used to encrypt the traceability codes of each link and generate a final traceability code. Finally, a security and performance analysis of the proposed traceability scheme was carried out. The results show that the proposed scheme is safe and effective, ensuring the safety and traceability of the traceability system of the grain supply chain.

Food safety has drawn worldwide attention because of its enormous impact on human health and social stability. Although traceability systems based on Internet of Things (IoT) can improve the visibility of the food supply chain, the trust service is necessary to ensure the data origin and data integrity. This paper proposes a food traceability system supported by a trust service based on Domain Name System Security Extensions(DNSSEC). A DNSSEC-enabled traceability system is implemented for food safety in China. In the traceability system, the master data and event data of the products is stored in distributed databases owned and managed by the enterprises respectively in the supply chain. Enterprise oriented Internet of Things Information Service (iotIS) is an important component of the distributed traceability system. A trust service for the Internet of Things, iotTS, is proposed to guarantee the data integrity. With this service, it can be ensured that the information stored in the enterprise database is original and has never been manipulated. Lightweight public keys are distributed based on the DNSSEC in this solution. Compared with the existing solutions, the proposed solution has better scalability and credibility.

The globalization of the food supply chain industry has significantly emerged today. Due to this, farm-to-fork food safety and quality certification have become very important. Increasing threats to food security and contamination have led to the enormous need for a revolutionary traceability system, an important mechanism for quality control that ensures sufficient food supply chain product safety. In this work, we proposed a blockchain-based solution that removes the need for a secure centralized structure, intermediaries, and exchanges of information, optimizes performance, and complies with a strong level of safety and integrity. Our approach completely relies on the use of smart contracts to monitor and manage all communications and transactions within the supply chain network among all of the stakeholders. Our approach verifies all of the transactions, which are recorded and stored in a centralized interplanetary file system database. It allows a secure and cost-effective supply chain system for the stakeholders. Thus, our proposed model gives a transparent, accurate, and traceable supply chain system. The proposed solution shows a throughput of 161 transactions per second with a convergence time of 4.82 s, and was found effective in the traceability of the agricultural products.

One of the essential points of food manufacturing in the industry and shelf life of the products is to improve the food traceability system. In recent years, the food traceability mechanism has become one of the emerging blockchain applications in order to improve the anti-counterfeiting area’s quality. Many food manufacturing systems have a low level of readability, scalability, and data accuracy. Similarly, this process is complicated in the supply chain and needs a lot of time for processing. The blockchain system creates a new ontology in the traceability system supply chain to deal with these issues. In this paper, a blockchain machine learning-based food traceability system (BMLFTS) is proposed in order to combine the new extension in blockchain, Machine Learning technology (ML), and fuzzy logic traceability system that is based on the shelf life management system for manipulating perishable food. The blockchain technology in the proposed system has been developed in order to address light-weight, evaporation, warehouse transactions, or shipping time. The blockchain data flow is designed to show the extension of ML at the level of food traceability. Finally, reliable and accurate data are used in a supply chain to improve shelf life.

The efficiency of a traceability system depends on the ability to identify uniquely each unit that is produced and distributed in a way that enables the continuous tracking from the primary production to the retail point of sale. An efficient traceability system must follow some rules that define which data must be gathered and stored in each stage of the supply chain. This is achieved by standardization of the gathered data and typification of the messages that enable storing and communication of the data. This chapter presents a Web-platform that will be able to support efficiently food traceability by monitoring and administering the data gathered and recorded in a central database. This application will be user friendly and provide the ability to keep, display, and communicate information through widely implemented technologies, such as the Internet and electronic mail services.

Food traceability has an important role in maintaining the sustainability of the food supply chain. Every player in a food supply chain must be able to create an internal and external traceability so that the chain traceability can be formed. However, building a suitable food traceability system is not an easy task. The development of a food traceability system has been identified as a complex problem due to the difficulty of accommodating the varied characteristics of each stage in the food supply chain and the interdependence between stages in the food supply chain. Therefore, to solve these complex problems a multimethodology approach is proposed. The multimethodology approach is believed to be able to solve complex multidimensional problems. This article describes a framework for multimethodology in the development of a food traceability system that involves the integration of the Decision Making Trial and Evaluation Laboratory and Interpretive Structural Modeling (DEMATEL-ISM) and System Dynamics (SD). The vegetable oil industry which manages its products in bulk is an interesting case study for the development of a food traceability system because the upstream is in the commodity focused chain and the downstream is in the consumer driven value chain. Ultimately, the multi-methodological framework proved effective in answering the research question of "How to develop a suitable traceability system for the bulk vegetable oil industry?"

ABSTRAKTujuan dari penelitian ini adalah menggambarkan hasil implementasi dari sistem halal traceability supply chain pada produk makanan halal pengolahan daging di perusahaan Ternaknesia Farm Innovation. Analisis pada penelitian ini menggunakan model Supply Chain Operation Reference (SCOR) sebagai model utama dalam pengembangan halal traceability supply chain. Perusahaan ini tengah mengembangkan sistem jaminan ketelusurah halal (halal traceability supply chain) pada produk daging yang dijual nya dengan membuat model bisnis Ternaknesia 2.0 yang berkelanjutan sebagai perusahaan pertama di wilayah Surabaya Jawa Timur yang memiliki sistem halal traceability. Hasil identifikasi atas Implementasi dari halal traceability supply chain menunjukan bahwa penerapan sistem halal traceability di perusahaan mampu meminimalisir terjadinya ancaman kontaminasi zat haram yang ditelusuri dari implementasi pada proses model SCOR yaitu plan,resource,make, deliver return, dan enable dengan mengembangkan konsep halal dan thoyyib pada produk daging halal yang dijual. Teknologi yang digunakan dalam implementasi pelacakan proses ketertelusuran halal atau halal traceability system yaitu dengan penggunaan label QR Barcode Scan dan didukung penggunakan EPICS code pada produk daging halal yang dijual di perusahaan, sehingga memberikan jaminan ketelusuran halal rantai pasok kepada konsumen. The analysis in this study uses the Supply Chain Operation Reference (SCOR) model as the main model in the development of halal traceability supply chain. The company is developing a halal traceability supply chain guarantee system for the meat products it sells by creating a sustainable Ternaknesia 2.0 business model as the first company in the Surabaya area of East Java to have a halal traceability system. The results of the identification of the implementation of the halal traceability supply chain show that the implementation of the halal traceability system in the company is able to minimize the threat of contamination of illicit substances traced from the implementation of the SCOR model process, namely plan, resource, make, deliver return, and enable by developing the concept of halal and thoyyib. on halal meat products sold. The technology used in the implementation of tracking the halal traceability system is the use of a QR Barcode Scan label and supported by the use of the EPICS code on halal meat products sold in the company, thus providing guarantees for supply chain halal traceability to consumers.Keywords: halal traceability supply chain and halal meat products.
