The paper investigates technological parameters of the quality of low-alkaloid lupin of five cultivars selected and grown in the Republic of Belarus during the years from 2007 to 2017. Prospects for the use of the obtained seeds have been studied. This study reveals great influence of cultivar and climatic conditions during growth of lupin seeds on correlation of anatomic parts in seeds as well as on their physical properties. Cultivar of lupin seeds Jan is recommended for whole grain flour and graded flour production based on its anatomic composition, uniformity and physical properties. A comparative analysis of chemical composition, quality parameters and technological properties of lupin flour has been done. The chemical composition of lupin flour, of whole grain lupin flour, in particular, has been found to be relatively low in starch, high in protein, food fibers, minerals and organic acids. As a result, whole grain lupin flour has been proved to have higher food value when compared to traditional wheat flour. This paper demonstrates the difference between lupin flour characteristics and those of wheat flour in terms of color, acidity, enzymatic activity and adsorbing properties. This study reveals the possibility of use of lupin flour in bakery products by substituting traditional types of flour with lupin flour at 10-30% levels, as well as by replacing egg products with lupin flour at 25-50% levels. The work highlights the use of lupin flour at the stages of dough kneading, dough preparation, foam and emulsion production mainly by using rapid dough making methods.Practical applicationsRecommendations have been made on the usage of lupin flour in the technological process of bakery products manufacturing, macaroni and flour confectionery products production.

Diabetic dyslipidemia and hyperglycemia contribute to excessive reactive oxygen species (ROS) production, leading to deleterious complications, such as nephropathy, atherosclerosis and cardiac dysfunction, and target major organs in the body. The aim of this study was to investigate the effect of caffeic acid (CA) on mouse weight and survival, serum level of fasting blood glucose (FBG), serum lipid parameters and atherogenic indices, oxidative damage in blood, liver and kidney tissue, pathophysiological changes and their function markers in healthy and alloxan-induced type 1 diabetic mice. Diabetes was induced in mice with a single intravenous injection of alloxan (75 mg kg−1). Two days later, CA (50 mg kg−1) was given intraperitoneally for seven days in diabetic mice. Diabetes affected glucose level, lipid profile, hematological and biochemical parameters, induced DNA damage and apoptotic/necrotic death in whole blood cells, liver and kidney, leading to weight loss and a decreased lifespan. CA treatment of diabetic mice revealed a protective effect on the liver and kidney, hypoglycemic and hypolipidemic properties and high protection against atherogenic outcomes. The obtained results suggest that CA is a safe and potent agent against diabetes that acts as an effective antioxidant in reducing serum glucose, lipid profile and atherogenic indices, leading to increased lifespan in mice.

Aim: Functional food and their bioactive compounds have been considered as a new approach for the prevention and management of type 2 diabetes and its complications. According to this approach current study was carried out as an elucidation of antidiabetic properties of Corchorus capsularis and Corchorus olitorius varieties of jute leaf (ethanolic extract) on nSTZ-induced type-2 diabetic rats. Methodology: The type-2 diabetic model rat was developed by a single intraperitoneal injection of freshly prepared STZ (90 mg/kg/10 ml) in sterile citrate buffer (0.1 M, pH 4.5) to rat pups (48 hour old). After three months, OGTT was performed to select diabetic (FSG > 6.5mmol/L and after 90 min of glucose load > 14 mmol/L) experimental rats. The rats were randomly divided into four groups [DWC, GT, Ext-1 and Ext-2 represent, diabetic water control, glybenclamide treated (20 mg/5 ml/kg body weight), C. capsularis treated and C. olitorius treated group (1.25 g/10 ml/kg body weight) respectively]. One group was kept with normal rats [normal water control, NWC]. The treatment was given once daily or 28 consecutive days. Fasting serum glucose, liver glycogen and lipid profile were estimated by using standard methods. Results: The results showed that Ext-1 and Ext-2 treated groups gradually decreased serum glucose level (7.15 ±0.67 to 5.94 ± 1.19 and 7.20 ± 0.93 to 5.28 ±1.03 respectively) and reducing effect by Ext-2 was significant (p=0.001). Both extract showed lower liver glycogen level compared with GT group [5.0±2.5 Vs 17.7±6.5 (Ext-1 vs GT) and 7.5±6.4 Vs 17.7±6.5 (Ext-2 vs GT)] and even Ext-1 manifested significant effect (p=0.05). Additionally, lipid profile estimation revealed no significant improvement by the consumption of both the extracts. Conclusion: On the basis of current investigations, it may be concluded that both variety of jute’s leaf demonstrated hypoglycemic properties in Type 2 diabetic model rats; further in-depth studies are recommended to explore the exact mechanism(s) of hypoglycemic effect.

Background: Bisphenol-A [BPA, 2, 2-bis (hydroxyphenyl) propane] is widely used in the manufacture of polycarbonate plastic, water bottles, feeders , baby bottles, epoxy resins and inside coating in metallic food cans. Black seed oil (BSO) (Nigella sativa) commonly known as black cumin, reported to be beneficial in function of various systems in the body. The study was carried out to investigate the effect of BPA and BSO on body weight, lipid profile and serum glucose in male and female mice. Methods : A total of thirty (15 male and 15 female) Swiss Albino mice (Mus musculus), aged 25-28 days with an average body weight of 27.4±1g were randomly divided into 3 groups consisting 5 mice in each for each sex. Group A served as vehicle control. Group B was administered BPA @ 50 mg/kg bw daily, while group C received both BPA @ 50 mg/kg/day and BSO @ 1ml/kg/day respectively. Results: Data revealed that BPA treated mice showed slight increase in body weight gain while BSO controlled the weight gain in BPA treated mice. Cholesterol and LDL values were significantly (p<0.01) increased and Triglycerides value was significantly (p<0.01) decreased in BPA-treated mice without significant alterations in HDL value. BPA & BSO treated female mice showed significant (p<0.01) decreased in cholesterol, triglycerides and LDL values. BPA reduced the blood glucose level and addition of BSO had synergistic effects of glucose utilization. Conclusions: It can be concluded that BPA is one of the potential risk factors for hyperlipidemia and obesity. These harmful effects could be alleviated by the ingestion of black seed oil.
