The use of smoking kiln for drying catfish is on the increase in Nigeria due to its effectiveness in reducing moisture and contamination with toxic compounds during smoking. Chemical properties of kiln-smoked catfish in selected locations in Ilorin metropolis were determined in this study. Kiln-smoked catfish were obtained from four major locations (Oyun, Asa-Dam, Tanke and Agbo-Oba) in Ilorin, Nigeria. The samples were subjected to chemical and polycyclic hydrocarbon content analyses. Dried catfish from all the locations had low moisture and crude fibre contents. There were no significant differences (p>0.05) in the crude fibre contents of the kiln-smoked catfish. Protein contents ranging from 53.72-56.49% were obtained for the kilnsmoked catfish samples. Fat contents ranged from 9.92-11.77% while the carbohydrate contents ranged from 19.02-23.59%. Potassium was the most abundant mineral in the samples with no traces of lead and cadmium. Agbo-Oba samples contained the highest pyrene (2983.215 ng/ml) and total polycyclic hydrocarbon (PAHs) (3349.090 ng/ml). Data on steroid fractions indicated that 17b-estradiol was significantly greater in quantity than those recorded from other steroid fractions. Microbial analyses of the samples revealed the presence of the following pathogenic organisms: Klebsiella spp, Salmonella spp, Shigella spp, Pseudomonas aeruginosa, Staphylococcus aureus, Bacillus cereus, Vibrio spp, Aspergillus niger, penicilium spp, Trichoderma spp which are harmful to man. Microbiological health risks related to water quality are persisting issues especially in the developing countries. Present study was conducted to evaluate the microbiological quality of municipal supply water of a defined region within Dhaka metropolis, Bangladesh. A total of 20 water samples were collected from 10 selected pump stations and 10 different consuming points to examine the burden of Salmonella spp., Shigella spp., Citrobactor spp., Escherichia coli, Klebsiella spp., Aeromonas spp. and Vibrio spp. The study also included the evaluation of impacts due to the consumption of municipal water. The results revealed that the quality of municipal supplied water was not microbiologically safe for the consumers and also demonstrated the possible commencement of various diseases including diarrhoea, typhoid, dysentery and others. Due to delicious taste and readily availability, desserts are one of the most popular foods in Dhaka city. High amount of carbohydrate and protein in dessert items make them more susceptible to proliferation of microbial growth. Present study depicted a complete microbiological profile of some popular desserts such as, sweet, pastry, ice cream, pudding, falooda, yogurt and custard available in different food shop at Dhaka city, Bangladesh. All the samples were found to be contaminated with heterotrophic bacteria as well as fungi within the range of 103 to 106 cfu/g. In case of specific microflora, the growth of Staphylococcus spp., Klebsiella spp. and Pseudomonas spp. were observed in most of the samples indicates the poor quality of these products. Bioburdens of E. coli in sweet, pudding and yogurt were found in the range of 1.2×102 to 2.7×103 cfu/g. Salmonella spp., Shigella spp. and Vibrio spp. could not be isolated from any of the samples. Current study indicates that hygienic conditions should be maintained during preparation, packaging and retailing of dessert items in order to reduce the load of contamination in ready to eat foods which will ensure good health of consumers. Present study attempted to isolate and quantify the microorganisms from the pear samples collected within Dhaka metropolis. Out of the five samples studied, total viable bacterial count and the total coliform count were near about 105 cfu/g and 104 cfu/g, respectively. Among the specific pathogens, prevalence of Salmonella spp. and Vibrio spp. were found only in two samples. Whereas Klebsiella spp, Pseudomonas spp. and Staphylococcus aureus were detected in all the samples studied. Fungal growth was also observed in each sample within the range of 8.8×104 – 9.5×104 cfu/g. The study of antibiogram revealed that, most of the pathogens were resistant to more than one antibiotic. Interestingly the pear samples showed no anti-bacterial activity against any of the laboratory isolates such as, Escherichia coli, Pseudomonas spp., Salmonella spp. and Bacillus spp.Stamford Journal of Microbiology, Vol.5(1) 2015: 1-4

Dental caries is the most contagious disease throughout the world. In the present study, a total of 100 dental caries patients were selected and samples from these patients were collected through sterile pincers for microbiological examination. A total of 9 different pathogenic bacterial isolates were identified through conventional culturing technique and among them maximum number of occurrence was by Salmonella spp (26.13%), followed by E. coli (17.39%), Proteus spp (17.39%), Shigella spp (8.69%), Pseudomonas spp (8.69%), Vibrio spp (8.69%), Enterobacter spp (4.34%), Yersinia spp (4.34%) and S. mutans (4.34%). Furthermore, antibiotic susceptibility tests were performed by 9 different commercially available antibiotics i.e. vancomycin, erythromycin, clindamycin, amoxicillin, tetracycline, rifampicin, ampicillin, ticarcillin and metronidazole/silver sulphadizine. Kirby Bauer disc diffusion method was used against test organisms and it was observed that all these antibiotics expressed significant activity against greater part of test organisms but few of them showed resistance to metronidazole/silver sulphadizine. In addition to this, different toothpastes encoded as TP-1, TP-2, TP-3, TP-4 and TP-5 were used at a concentration of 20 mg/mL in order to evaluate their activity against test organisms and it was observed that all these toothpastes showed significant activity against isolated bacteria. It was concluded that all these toothpastes contained fluoride which supports to avoid tooth decay and promote minty fresh breath. Furthermore, it was recommended that avoid usage of too much sweets, chocolates, candies especially in children/adults, and there must be a proper use of toothpastes twice a day at every stage of life. Freezing has long been an established method for food preservation. Freezing temperature may act as a stress factor for microbial cells, transforming the cells into injured or dormant state. Upon inoculation, these debilitated cells cannot grow on solid media and hence produce false negative results. Foods contaminated with injured cells of pathogenic bacterial strains are of potential health risk. Employing enrichment cultivation technique, present study attempted to detect such injured, dormant or viable but non culturable (VBNC) cells in different frozen food samples, collected from local markets and super-shops of Dhaka metropolis. Compared to the conventional cultivation means, the enrichment procedure revealed a significant increase in bacterial burden as well as increase in the pathogenic load. A maximum of 3 log increase in case of total bacterial load while 4 log, 5 log and 2 log increase in case of Vibrio spp., Salmonella spp. and Shigella spp., consecutively were observed. These findings clearly demonstrated the presence of injured cells in frozen foods which could be lethal under normal condition thereby posing public health risk.Stamford Journal of Microbiology, Vol.5(1) 2015: 26-29

Food borne diseases are an increasingly recognized problem involving a wide spectrum of illnesses caused by bacterial contamination of food.Microorganism poses potential human health problems and is mainly transmitted through consumption of contaminated foods .Bangladesh is one of the densely populated country where majority of the people consume cheap foods prepared in unlicensed food selling points. The objective of the present study was to investigate the microbiological quality of different street food (Amra, Fusca, Chanachur and Guava) sold by various street vendor at Dinajpur, Bangladesh. A total of 20 samples were collected randomly from street vendors and tested for the presence of bacteria following standard microbiological method used for isolation, enumaration and identification of bacreria. Among the samples all had bacterial contamination. The total viable count (TVC) in diferrent street food samples was ranged from 8.0 × 105 CFU/g to 6.7x107 CFU/g. Among samples Escherichia coli 7(35%), Staphylococcus spp. 6(30%), Klebsiella spp. 5(25%), Salmonella spp. 1(5%) and Shigella spp. 1 (5%) were isolated. Escherichia coli were found highest 3(50%) Amra samples and 2(40%) Guava samples, then another organisms Staphylococcus spp. was found highest 2(50%) Chanachur and 2(40%) Fusca samples and then Klebsiella spp. was found highest 2(40%) Fusca samples. Antibiotic sensitivity test showed that Shigella spp., Staphylococcus spp., Klebsiella spp., Salmonella spp. and Escherichia coli were sensitive to Ciprofloxacin and Salmonella spp. were resistance to Gentamycin. All isolates found resistant to Cefixime, Cefalexin, Erythromycin, Fusidic acid, Cefuroxime and Aztreonam. All of the sample harbor multidrug resistant food borne bacteria which might cause public health hazards if these antibiotic resistance transfer to human.Asian J. Med. Biol. Res. Fruit juices are very popular due to their freshness and taste. These juices contain all the nutritive values those were present in whole fruits. Fresh juices are healthful drink for people of all ages. But the condition is quite opposite if they become contaminated with pathogenic bacteria during the juice processing. Because of the nutritive properties juice can give enough opportunities to the microorganisms to survive and multiply. In our current study we included eight types of fresh juices to study the microbial load. All the samples were heavily contaminated. Total bacterial and fungal count was found to be up to 3.0×107 cfu/ml and 2.6×106 cfu/ml, respectively. Salmonella spp. and Shigella spp. was present only in one sample. Staphylococcus aureus and Pseudomonas spp. were the most prominent in all of the eight samples. Vibrio spp. was found in six samples ranging from 2.0×102 cfu/ml to 2.9×104 cfu/ml. All the pathogenic isolates showed drug resistance towards the most commonly prescribed antibiotics indicating the risk of difficulty in eradicating diseases.Stamford Journal of Microbiology, Vol.6(1) 2016: 7-10

Export quality frozen shrimps comprise as one of the major economic interests in Bangladesh. During cultivation or processing and packaging, microbial condition is an important issue to maintain the quality of shrimps. Eight shrimp samples, of which, one from hatchery, 3 from local markets and 4 processed export quality samples were studied for microbiological risk assessment (MRA). One hatchery, three market and two export quality shrimp samples were found to contain bacterial pathogens probationary identified as Escherichia coli, Klebsiella spp., Vibrio spp., Aeromonas spp., Pseudomonas spp., Listeria spp., Shigella-like organisms, Staphylococcus aureus, and Salmonella spp. and two other processed export quality shrimp samples were completely free of pathogens of any type.
