В данной работе проведена оптимизация параметров биодеструкции мультибелковых полимеров горохового, рисового и овсяного сырья с подбором состава композиций для поступления полноценного белка в организм человека и расширения использования данного белкового продукта в производстве пищевых изделий. In this work, the optimization of the parameters of biodegradation of multi-protein polymers of pea, rice and oat raw materials is carried out with the selection of the composition of the compositions for the intake of complete protein in the human body and the expansion of the use of this protein product in the manufacture of food products.

Functional properties of food products with the addition of germinated grain raw materials have become the object of increased attention of scientists and specialists in the food industry. In addition to the nutritional ingredients, food products with the addition of grain raw materials contain functional ingredients that positively affect the human body that helps to adapt to the effects of the external environment. Functional products with the addition of germinated grain are considered not only as a source of plastic substances and energy but also as a nutritional complex that provides a healing effect. The usage of germinated grain in the food and processing industries is very limited due to its short shelf life and the characteristics of preparing malt for further processing. A relevant technological challenge is the selection of barley malt moisture regimes. The cycle of researches concerning hydrothermal processing of dry barley malt has been carried out. The purpose of determining the optimal technological regimes of hydrothermal processing of dry germinated grain is the prospects for its further use in various food technologies as a food additive or a component of the enrichment of products with biologically active substances. The work highlights the selection process and the main technological parameters of the process that can be used in the industrial processing of barley malt. As a research object, dry germinated grain (malt) produced by a special technology was used. In the course of research, an optimal hydro module was selected for humidifying barley malt, the temperature regime of hydrothermal processing of germinated grain was determined, the degree of swelling of malted grain was determined, the optimum time of wetting of raw materials for its further processing was determined. When analyzing the data obtained, it was concluded that the optimal hydro module for swelling barley malt is 1:4, the optimum temperature is +65С and the duration of hydrothermal processing is 48 hours. The regimes of hydrothermal processing of barley malt presented in the article will allow optimizing the technological process of malt processing.

Abstract Fruits and vegetables are the most popular raw ingredients that act as a source of dietary fiber and other biologically active substances that benefit the human body. The vast majority of nutrients enter the human body with food, so the daily ration of an average person should include those useful products that can provide the body with the necessary amount of biologically active substances. Vegetable-based raw materials containing vitamins, minerals, antioxidants, dietary fibers used in the production of food products are considered a source of functional properties. A priority area of product technologies is the search for technological methods for the production of functional food products with a given biological value (high BAS and antioxidant content). The paper presents recipes and innovative technology for the production of functional syrups based on Viburnum fruits, as well as the evaluation of consumer characteristics, nutritional value and functional orientation of the corresponding products.

The last few decades have been characterized by increased attention on the part of scientists, international organizations and the public to the problem of reducing adverse external influences on the human body and timely detection and prevention of various diseases. Food — one of the main channels of interaction between the body and the environment-can be a source of a large number of potentially dangerous chemical and biological substances for human health. The harmful effects of foreign substances that enter the human body with food are characterized by a significant variety: from damage to individual organs, general toxic effects, to the occurrence of mutagenic and carcinogenic effects, acceleration of aging processes and violations of reproductive functions. Therefore, among the many problems of environmental protection around the world, the issues of cleanliness and quality of food products are singled out as the main areas that determine the health of the population. The analysis of the current state of the problem of contamination of food raw materials and food products with chemical contaminants, which are potential mutagens and/or carcinogens, is carried out. Much attention is paid to such genotoxicants as polycyclic aromatic hydrocarbons, N-nitrosamines, heterocyclic amines, acrylamide and some heavy metals that have different routes of entry and formation in food raw materials, food products, the human body and animals. Determining the potential genotoxicity and carcinogenicity of food chemical contaminants is not an easy task due to the fact that food is a complex mixture of compounds that have both mutagenic and antimutagenic effects. The obvious difficulty in studying the problem of chemical contamination of food products follows from numerous contradictory studies of the genotoxicity and carcinogenicity of food components.

Nowadays, most manufacturers are strategically focused on making healthy food products. Flour confectionery is a promising group of food products in this respect. The expansion of the range of flour products is due to the introduction of additional raw materials, one of the options for which is pectin. The aim of the research is to study the effect of different types of pectin on the detoxifying properties of biscuits and their quality indicators. The objects of research are three types of pectin (beet, apple, watermelon) and samples of butter biscuits. In the course of the work, generally accepted methods were used. The influence of the type and dosage of pectin on the quality of butter biscuits has been determined. It has been experimentally proven that the complexing ability of butter biscuits depends on both the type of pectin and its dosage. Cookies with the addition of beet pectin when kneading the dough have a greater complex-forming ability. The optimal dosage of pectin was established - 0.3% to the flour mass. The results obtained show that the addition of pectin to the recipe for butter biscuits improves its quality indicators, allows you to remove xenobiotics from the human body.

The article raises the problem of ensuring metrological traceability of the measurement results of indicators of quality and nutritional value for food products and food raw materials: water (moisture), nitrogen (protein, crude protein), fat, ash and carbohydrates. The problem under consideration can be solved by applying reference materials of food composition, traceable to state primary measurement standards GET 173-2017 and GET 176-2019 and primary reference measurement procedures (PRMP), for attestation of measurement procedures and accuracy checking of measurement results. The article discusses the results of the PRMP development of mass fraction of fat, ash and carbohydrates in food products and food raw materials, as well as mass fraction of crude fat (oil content) in oil crops seeds and products based on them. The paper also presents metrological characteristics of reference materials of composition of dry dairy products, grain-milk dry porridges for nutrition of babies, grain dry porridges for nutrition of babies, egg powder, freeze-dried meat products, animal feed. The results of the work allow for building a chain of metrological traceability from GET 173-2017, GET 176-2019 and PRMP to routine measurement procedures, thereby ensuring the uniformity of measurements of nutritional value of food products.

Consumer demand for both plant products and meat products enriched with plant raw materials is constantly increasing. Therefore, new versatile and reliable methods are needed to find and combat fraudulent practices in processed foods. The objective of this study was to identify oilseed species-specific peptide markers and meat-specific markers that were resistant to processing, for multispecies authentication of different meat and vegan food products using the proteomic LC-MS/MS method. To assess the limit of detection (LOD) for hemp proteins, cooked meatballs consisting of three meat species and hemp cake at a final concentration of up to 7.4% were examined. Hemp addition at a low concentration of below 1% was detected. The LOD for edestin subunits and albumin was 0.9% (w/w), whereas for 7S vicilin-like protein it was 4.2% (w/w). Specific heat-stable peptides unique to hemp seeds, flaxseed, nigella, pumpkin, sesame, and sunflower seeds, as well as guinea fowl, rabbit, pork, and chicken meat, were detected in different meat and vegan foods. Most of the oilseed-specific peptides were identified as processing-resistant markers belonging to 11S globulin subunits, namely conlinin, edestin, helianthinin, pumpkin vicilin-like or late embryogenesis proteins, and sesame legumin-like as well as 2S albumins and oleosin isoforms or selected enzymic proteins.
