Functional alteration of breast muscle fatty acid profile by manipulation of dietary n-6:n-3 ratios in broiler chickens

The aim of the present study was to evaluate the effects of dietary supplementation with or without Bacillus subtilis (B. subtilis) on carcass traits, meat quality, amino acids, and fatty acids of broiler chickens. In total, 160 1-day-old Arbor Acres male broiler chicks were divided into two groups with eight replicates of 10 chicks each. Chickens received basal diets without (CN group) or with 500 mg/kg B. subtilis (BS group) for 42 days. Eight chickens from each group were slaughtered at the end of the trial, and carcass traits, meat quality, chemical composition, amino acid, and fatty acid profile of meat were measured. The results showed that the breast muscle (%) was higher in BS than in CN (p < 0.05), while abdominal fat decreased (p < 0.05). The pH24h of thigh muscle was increased (p < 0.05) when supplemented with BS; however, drip loss, cooking loss of breast muscle, and shear force of thigh muscle decreased (p < 0.05). Lysine (Lys), methionine (Met), glutamic acid (Glu), and total essential amino acid (EAA) in breast muscle and Glu in thigh muscle were greater in BS than in CN (p < 0.05). C16:1, C18:1n9c, and MUFA in breast muscle and thigh muscle were greater in BS than in CN (p < 0.05). In conclusion, dietary supplementation with B. subtilis could improve the carcass traits and meat quality of broilers, which is beneficial for the consumers due to the improved fatty acid profile and amino acid composition.

The present study was conducted to show that dietary supplementation with a fungus, Aspergillus awamori, modifies muscle fatty acid profiles in broiler chickens. A total of thirty chicks, selected from a group of 100 chicks aged 15 d, were divided into a control group and two treatment groups (ten birds per treatment). The control group was fed a basal diet, and the treatment groups were fed basal diets supplemented with A. awamori at levels of 0·05 and 0·2 %. From the start of the study at 15 d, the birds were raised for an additional 12 d, and growth and the muscle fatty acid profile were evaluated. Although feed intake was decreased by the fungus, body-weight gain and breast muscle weight were increased, and thus, feed efficiency was improved. Abdominal fat and plasma cholesterol and TAG were decreased, while plasma HDL-cholesterol and breast muscle fat content were increased. Interestingly, muscle α-tocopherol content was increased and muscle thiobarbituric acid-reactive substances were decreased by A. awamori. Furthermore, there was an observed decrease in SFA and an increase in unsaturated fatty acids in the muscle fat due to the fungus feeding. The mRNA of fatty acid synthase, acetyl-CoA carboxylase and Δ-6 desaturase in the muscle were all increased, while the mRNA of 3-hydroxyl-3-methylglutaryl-CoA reductase and carnitine palmitoyl transferase 1A were decreased by the fungus. In conclusion, the present study clearly shows that the muscle lipid profile could be modified by the addition of A. awamori to the diet.

Ziel der Studie war es, die Auswirkungen der Aufnahme von drei verschiedenen Vitamin C-Mengen (0, 200 und 400 mg / kg) in die Ernährung auf das Fettsäureprofil im Broilerbrustfleisch zu bewerten. Die Studie wurde in 3 Zyklen und 4 Wiederholungen in Dauer von 42 Tagen durchgeführt, an einer vollständig randomisierten Probe von 10 Hühnern pro Käfig, insgesamt 120 männliche Hühner im Alter von einem Tag des kommerziellen Hybrids Ross 308. Die Datenanalyse wurde unter Verwendung des statistischen SAS-Analyseprogramms vorgenommen, während der Vergleich der Mittelwerte mit dem Duncan multiplen Vergleichstest mit einer Fehlerwahrscheinlichkeit von 5% durchgeführt wurde. Die Ergebnisse zeigten, dass die Zugabe von Vitamin C in einer Menge von 200 mg / kg den Prozentsatz an gesättigten Fettsäuren wie Myristinsäure, Palmitinsäure und Stearinsäure verringert, wobei die Menge an ungesättigten Fettsäuren zunahm und die Menge an gesättigten Fettsäuren abnahm

The effect of dietary 18:2n-6/18:3n-3 ratio (by the replacement of corn oil with linseed oil) on n-3 polyunsaturated fatty acids (PUFA) enrichment in breast muscle of broiler chickens and the expression of lipogenic genes were investigated. Broiler chickens were fed ad libitum with diets containing 5% corn oil (CO), 3.75% corn oil + 1.25% linseed oil (CL1), 2.5% corn oil + 2.5% linseed oil (CL2), and 5% linseed oil (LO) based on the basic diets, respectively. Dietary 18:2n-6/18:3n-3 ratio did not affect 42-day body weight and 0–42-day feed conversion efficiency (feed/gain, P > 0.05) of broiler chickens, however, 5% linseed oil significantly increased 0–21-day feed conversion efficiency (feed/gain, P < 0.05) and decreased breast muscle weight (by 16%, P < 0.05) of broiler chickens. With the decrease of dietary 18:2n-6/18:3n-3 ratio, the enrichment of total n-3 PUFA, 18:3n-3, 20:5n-3, and 22:5n-3 increased linearly (P < 0.01), while the enrichment of total n-6 PUFA and 18:2n-6 decreased linearly (P < 0.01) in breast muscle of broiler chickens. Dietary corn oil increased the enrichment proportion of 20:4n-6 in a dosage-independent manner. Replacing 1.5% corn oil with linseed oil increased the enrichment proportion of 22:6n-3 (P < 0.05), but continuing to increase dietary linseed oil could not further elevate its deposition. Real-time quantitative RT-PCR was used to determine the expression of the mRNA levels of related genes. Dietary PUFA had insignificant effect on the expressions of LPIN2, WD and tetratricopeptide repeats 1 (WDTC1) and △-6 fatty acid desaturase (FADS2) in both breast muscle and abdominal fat. The effect of dietary PUFA on the expression of LPIN1 gene showed clear tissue dependence. Equivalent adding of corn oil and linseed oil could up-regulate the mRNA level of LPIN1 in abdominal fat (P < 0.01). This study demonstrated that decreasing dietary 18:2n-6/18:3n-3 ratio promoted the deposition of desirable n-3 long chain PUFA in the edible tissue and influenced the expression of LPIN1 in a tissue-dependent manner.
