In this study we investigated the influence of rice wine (Jinbiao, Yinbiao, Wunianchen, Nv’erhong) on the activity of endogenous proteases, myofibrillar degradation and quality characteristics in topmouth culter muscle. Rice wines had pH of about 4.3, and micromolar level of calcium ions. Nv’erhong (NEH) had the highest total phenolics content, while Wunianchen (WNC) showed the strongest total antioxidant capacity. WNC showed the considerable inhibitory action on the endogenous proteases, and delayed the degradation of myosin heavy chain and α-actinin, which occurred more quickly in other groups, especially in blank and alcohol controls. Total volatile base nitrogen production and texture profile for the fish fillets confirmed the improvement role of rice wine on the quality. In general, rice wine can inhibit the endogenous proteases and reduce the extent of myofibrillar degradation on the combined role of acidic pH and antioxidative components, resulting in the maintaining of good quality of the fish.

The objective of this work was to evaluate the role of two types of conditioning process in quality of frozen and stored araticum’s pulp at -18ºC. The fruits were collected at pre-maturing developmental stage, packed into boxes wrapped with bubble plastic, transported to the laboratory and stored for 7 days at 22ºC and 90% RH to complete the maturation. Afterwards, they were pulped and the pulp was stored in: 1) low-density polyethylene packages (LDPE) 60 micro, hermetically packed in a sealing machine or 2) low-density polyethylene packages (LDPE) 60 micro vacuum sealed. Those units were frozen at -18ºC for 402 days and were evaluated at processing day and at 30; 90; 150; 210 and 402 days of storage, for soluble solids contents (SS), titratable acidity (TA), SS/TA, ascorbic acid, total extractable polyphenols and total antioxidant activity using the Ferric Reducing Antioxidant Power (FRAP) method. The results were submitted to an analysis of variance and the means were each other compared using Tukey test with Sisvar software. It is conclued that is not necessary the use of vacuum to package the frozen araticum’s pulp for 402 days, at -18ºC. Keywords: Annona crassiflora Mart, freezing, vacuum.

Response surface methodology was used to optimize the fermentation conditions for the total phenolics content and antioxidant activity of black tea (Camellia sinensis). Fresh tea leaves were fermented following a rotatable central composite design of eleven experiments replicated thrice. The minimum and maximum fermentation time and temperature were respectively of 1 - 3 h and 30 - 40 °C. The results demonstrated that fermentation time and temperature significantly affect the total phenolics content and antioxidant activity of black tea. The optimum fermentation conditions for the present study were at 36 °C for 35 min which the values for total phenolics content and total antioxidant activity were 38.99 g GAE/100 g dw and 19.74 mg VitC Eq/100 g dw, respectively. Antioxidant activity was strongly correlated with total phenolics content of black tea.

Pterocarpus marsupium is a popular spice incorporated into culinary preparations around the world, which is also used for its antidiabetic treatment in traditional medicine. The objective of the study was to evaluate the antioxidant and starch hydrolase inhibitory properties of Pterocarpus marsupium leaves. The total antioxidant capacity, total phenolics content, starch hydrolase inhibitory activities and superoxide dismutase mimetic (SODm) activity of various leaf extracts of Pterocarpus marsupium were studied. Extracts of dichloromethane (DCM), ethanol (EtOH), ethyl acetate (EtOAc), hexane (HEX), methanol (MeOH) and water were compared. The total phenolics contents of the extracts decreased in the order of water > EtOH > EtOAc > MeOH > DCM > HEX. The antioxidant and SODm activity values of the extracts decreased in the same order as the total phenolics contents, while the DPPH EC50 values increased in the reverse order. Pterosupin and pterostilbene had the highest content out of all the phenolic compounds quantified across all solvent extracts. The highest starch hydrolase inhibitory activities were observed in the water extract. Pterocarpus marsupium was observed to be a good source of antioxidant compounds and therapeutic properties.

The present work aims to explore the potential to improve quality of purslane microgreens by combining water salinity and LED lighting during their cultivation. Purslane plants were grown in a growth chamber with light insulated compartments, under different lighting sources on a 16 h d−1 photoperiod—fluorescent lamps (FL) and two LED treatments, including a red and blue (RB)) spectrum and a red, blue and far red (RB+IR) LED lights spectrum—while providing all of them a light intensity of 150 µmol m−2 s−1. Plants were exposed to two salinity treatments, by adding 0 or 80 mM NaCl. Biomass, cation and anions, total phenolics (TPC) and flavonoids content (TFC), total antioxidant capacity (TAC), total chlorophylls (Chl) and carotenoids content (Car) and fatty acids were determined. The results showed that yield was increased by 21% both in RB and RB+FR lights compared to FL and in salinity compared to non-salinity conditions. The nitrate content was reduced by 81% and 91% when microgreens were grown under RB and RB+FR, respectively, as compared to FL light, and by 9.5% under saline conditions as compared with non-salinity conditions. The lowest oxalate contents were obtained with the combinations of RB or RB+FR lighting and salinity. The content of Cl and Na in the leaves were also reduced when microgreens were grown under RB and RB+FR lights under saline conditions. Microgreens grown under RB light reached the highest TPC, while salinity reduced TFC, Chl and Car. Finally, the fatty acid content was not affected by light or salinity, but these factors slightly influenced their composition. It is concluded that the use of RB and RB+FR lights in saline conditions is of potential use in purslane microgreens production, since it improves the yield and quality of the product, reducing the content of anti-nutritional compounds.
