The purpose of the study is to change the properties of water in order to achieve the optimum impact on wheat grain in preparation for variety milling. The results of influence on the properties of drinking water by acoustic waves in the frequency range of 10-1000 Hz for 1 minute were determined. It is established that the optimal range of exposure is the interval of 80-100 Hz. At the same time water activation is achieved, leading to changes in its properties, such as specific water resistance, electric conductivity, content of dissolved salts, which positively affects the technological indicator - the amount of conductometric ash.

The relevance of the development of new methods of refrigeration and storage of food products, ensuring the preservation of quality, safety, and an increase in the duration of storage, is reflected. The possibility of using fish superchilling as a method of refrigeration and storage of fishery products, which makes it possible to obtain products comparable to chilled ones, has been experimentally confirmed. The importance of determining the values of the cryoscopic temperature of raw materials as their significant technological indicator has been substantiated.

The widespread use of reagent coagulation in the technology of purification of natural and waste waters is due to the complexity of the chemical composition and phase-dispersed state of the aqua systems of these waters, on the one hand, and the multifactorial action of coagulants on them, on the other. The mechanisms of interaction between coagulants and pollutants of wastewater which are in different phase-dispersed states include the physicochemical phenomena of coagulation, heterocoagulation, adagulation and sorption. The physicochemical concept “coagulation” reflects only one mechanism of coagulants’ action on pollutants. This leads to the appearing of the problem in terminological description of the physicochemical processes’ combined action when adding coagulants to the water being cleaned. The purpose of the study is to justify the use of universal indicators characterizing the multifactorial nature of the coagulation process, its formalization and quantitative assessment. The solution of the problem is to use the concept of “coasorption”, which determines the multifactorial nature of the interaction between coagulants and pollutants, and to use the technological indicator “specific coasorption”, which establishes a quantitative relationship between the pollutants’ indicators and the dose of coagulant. The test coagulation’s results of two different types of synthetic dyes’ solutions using aluminum salts reflect the difference in the mechanisms of their interaction with the coagulant. The formula for coasorption isotherm can be used to determine the required doses of reagents for coagulation of water basing on the initial and residual content of pollutants in the purified waters.

The viscosity of the glaze is an important technological indicator. To reduce the viscosity of chocolate masses, vegetable phosphotide concentrates are used. One of the most widely used food emulsifiers is lecithin. The study conducted a study of the visual determination of color and odor of samples. The values of the maximum and optimal dosages for introducing lecithin into industrial samples of fat compositions for confectionery glazes are established.

The use of plant biodiversity in the elaboration of products or processes contributes to the progress of technological innovation and to the recognition of the profitable potential of biological resources. Therefore, this research aims to perform a systematic review on technological indicators of the use of genetic patrimony, specifically of vegetal biodiversity, to identify concepts and measurement techniques. A systematic survey was carried out at the bases of Scopus, Web of Science, and Science Direct using thematic strings (Genetic Patrimony, Plant Biodiversity and Technological Indicator). The recovered files were exported for analysis in StArt software. There was no mention of the topic, so the systematic review analyzed articles selected by combining strings adopting inclusion and exclusion criteria. The research made it possible to identify relevant and guiding data on the subject studied, but did not reveal the existence of an indicator or index that relates the use of vegetal biodiversity to the production of patents.

Were identifi ed based on the changes in ζ-potential from physical and chemical indicators of source and waste waters. It is established that in the process of washing vehicles changed signifi cantly such water quality parameters as its color, turbidity and alkalinity. Change the values of other indicators were within the statistical errors. It is proved that the increase of colour of water (and, probably, its turbidity) the range of values of the zeta-potential (ζ-potential) has narrowed. In the waste water compared to the original, the range of alkalinity values was much wider, but with a smaller range of changes in ζ-potential.
