Ten indeterminate tomato cultivars differing in fruit shape and typology, grown simultaneously in a greenhouse from Oltenia (Southwestern Romania) and harvested at red ripe stage, were investigated for the contents in ascorbic acid, lycopene, β-carotene, total phenolics, minerals (K, Na, Ca and Mg) and trace elements (Fe, Cu, Mn, Cr, Zn and B). In addition, their antioxidant activities were determined. Significant differences were found among tomato cultivars in all studied antioxidant compounds, as well as in the antioxidant activity. Ascorbic acid ranged from 91.9 to 329.7 mg kg-1 fw, lycopene ranged from 19.7 to 49.0 mg kg-1 fw, while total phenolic compounds varied between 300.2 and 557.8 mg kg-1 fw. Antioxidant activity ranged from 0.81 mmol Trolox kg-1 fw to 1.74 mmol Trolox kg-1 fw and it was significantly correlated to total phenolics content (r = 0.91; p< 0.05). The cocktail type cultivar ‘Tiger’ and the cherry type cultivar ‘Belle’ proved to be the most powerful in antioxidant activity and phenolic compounds while the rectangular plum shaped cultivar ‘Porto’ recorded the highest average lycopene content. A valuable cultivar proved to be the brownish red ‘Sacher’ which registered among the highest contents of phenolics, lycopene and ascorbic acid. Mineral and trace elements contents were also significantly affected by cultivars. Values recorded for K, Ca and Mg ranged from 2139.6 to 3056.9 mg kg-1, 137.7 to 325.8 mg kg-1 and 27.3 to 168.7 mg kg-1 respectively.

Extracts of the leaves, stem, roots, and seeds of <em>Mitracarpus scaber</em> plants have been thoroughly investigated in an attempt to determine their phytochemical and antioxidant activities.<em> </em>Phytochemical screening carried out by thin-layer chromatography (TLC) revealed the presence of several secondary metabolites in all the selective extracts of the plant. The levels of phenolic compounds showed that the leaves of <em>M. Scaber</em> are the richest in polyphenols with an average value of 488.291 ± 1.205 μg GAE/g (microgram of gallic acid equivalent per gram of the dry matter of the powdered plant). The total flavonoid assay revealed a high content in the leaves (1.624 ± 0.032 %). Also, studies of the antioxidant activities by DPPH<sup>● </sup>(2,2-diphenyl-1'-picrylhydrazyl) method showed a significant effect compared to vitamin C (96.62 %). The percentages of inhibition are respectively 89.82 % and 82.3 % for ethyl acetate extracts of the leaves and seeds. Furthermore, the inhibitory percentages of n-butanol in the leaves and seeds are 90.57 % and 83.67 %, respectively. Calculated IC<sub>50</sub> showed that the n-butanol fraction of the seeds exhibited the highest activity with an IC<sub>50</sub> of 0.293 mg/mL less than ascorbic acid with an IC<sub>50</sub> of 0.387 mg/mL.

The main objective of the current work is to search the antioxidant activities of Origanum acutidens leaves by using DPPH, FRAP and CUPRAC methods severally. Three well known antioxidant compounds (BHA, BHT and ascorbic acid) were used as standards for comparing the extracts. Also, phenolic compounds of Origanum acutidens leaves were identified by UHPLC-ESI-MS/MS. The high concentrations of rosmarinic acid (11158.99 ppb) quinic acid (3200.84 ppb) and naringenin (1238.45 ppb) were detected quantitatively.

Background: Cereal grass has been brought attention as a new functional food. Wheatgrass juice was known as a super food which provides lots of advantages for human health. However, the young stage of rice sprout has not been made widely known for consumption, though it is in the similar family to wheat (Poaeceae). Accordingly, ricegrass juice can and should be introduced, especially in Asian countries, as an economical functional drink. Nevertheless, currently there is none of the apparent evidences which confirm the nutritive values of ricegrass juice compared to wheatgrass juice.Objective: To investigate the chemical compositions, major phytochemical constituents, bioactive compounds content, specific phenolic profiles, and in vitro antioxidant activities of ricegrass juice compared to wheatgrass juice. Methods: Rice and wheat seeds were germinated and grown hydroponically for 8 days. Both fresh plants were determined for chemical compositions. Next, the grasses were extracted with water, centrifuged, and the supernatants were tested for chlorophyll, carotenoid, and ascorbic acid contents. The left-over supernatant were freeze-dried. The extracts were then screened for the main group of phytochemicals, total extractable phenolic and specific phenolic compounds. Lastly, the extracts were tested for the antioxidant activities using DPPH, ABTS, FRAP, FCA and HRSA. Results: Data revealed that wheatgrass contained higher levels of protein and fat. Both ricegrass and wheatgrass juice extract exhibited the group of phenol, tannin and saponin but not alkaloid, flavonoid, sterol, terpenoid, courmarin, and cardiac glycoside. Wheatgrass juice can be detected for higher level of ascorbic acid and chlorophyll. Both grass juices were found the similar phenolic acids analyzed by HPLC included pyrogallol, vanilic acid, syringic acid and ferulic acid, however, ricegrass juice contained larger amounts of all phenolic acids excluding syringic acid. Conversely, wheatgrass juice exposed higher antioxidant activities for all methods. This may propose from the synergistic effects of ascorbic acid, chlorophyll, and phenolic compounds in wheatgrass juice, while the main composites exhibited antioxidant activities in ricegrass were phenolic compounds.Conclusion: Ricegrass juice contained great level of phenolic acid molecules. Even if ricegrass juice gave less statistically ability on antioxidant activities, they still had comparable levels of antioxidant activities. With the reduction in cost of raw materials and contribution of high nutritional values, ricegrass juice could be introduced as an antioxidant boosting drink in competition to wheatgrass juice.Keywords: Antioxidant, Phytochemical, Phenolic compounds, Ricegrass, Wheatgrass

The aim of the study was to evaluate the impact of processing by cooking in natura fruits on the content of bioactive compounds - vitamin C and ascorbic acid, phenolic compounds, flavonoids, carotenoids and anthocyanins, lycopene and β-carotene - and on antioxidant activity - DPPH and FRAP - of 9 varieties of commercial and non-commercial tomatoes. The fruits were harvested when they reached the point of physiological maturation, selected and evaluated in natura, and after grinding and cooking for 30 minutes. At the end of the experiment it was found that all bioactive compounds analyzed showed quantitative reductions when the fruits were processed, with cherry cultivars - 7, 8 and 9 - those that showed superior results compared to different bioactive compounds evaluated, proving to be interesting to be better explored. Regarding the antioxidant activities, the processed fruits of these cultivars showed less losses showing potential to be submitted to processing.

Crab apple (Malus baccata (L.) Borkh.) was mainly distributed in Europe as an ornamental plant, but the nutritional properties of its edible fruits were not fully revealed. The aim of the current study was to characterize the phytochemical composition of ripen carb apple fruits and to evaluate their nutritional and antioxidant potentials. The fruits were assayed for moisture and ash content, proteins, lipids, carbohydrates, titratable acidity (TA), pH, total phenolic compounds and natural pigments. Among the analyzed carbohydrates cellulose was found in the highest content (6% dw), followed by sugars (sucrose, glucose and fructose) and 1.8 % dw uronic acids. The total chlorophylls and carotenoids contents in their fruits were 6.51 and 4.80 μg/g fw, respectively. Total monomeric anthocyanins were not detected. The highest content of total phenolic compounds (2.67 mg GAE/g fw) was found in 95 % ethanol extract from fruits, while the total flavonoids were relatively low – 0.1 mg QE/g fw. DPPH assay (17.27 mM TE/g fw) and FRAP assay (14.34 mM TE/g fw) demonstrated in vitro antioxidant activities of crabapple. Malus baccata fruits were evaluated as a rich source of dietary fibers and phenolic compounds with significant antioxidant potential that could be used in human nutrition.

Distribution of phenolic compounds and antioxidant activities was surveyed in 24 varieties of Chinese cowpea from 4 provinces. Identity of phytochemicals were determined by UPLC-ESIQTOF-MS/MS and quantified by HPLC-ESI-QqQ-MS/MS. Seven phenolic acids, 16 flavonoids and 9 other compounds were identified and several of these were quantified. Quercetin-3-glucoside and kaempferol-glucoside were the major phenolic compounds. In addition, our study indicated that OJYDH cultivar from Jiangxi province had the highest total phenolic content, total flavonoid content and stronger antioxidant activities than other cowpea cultivars. This study made a comprehensive investigation on antioxidants from cowpea and provided the useful data to support its function.

AbstractDue to the ethnopharmacological use of Campsiandra laurifolia (Fabaceae), popularly known as Acapurana, to treat wounds and ulcers, associated with the lack of alternative treatments for intestinal inflammations such as ulcerative colitis (UC), the present work sought to characterize its phytochemical and antioxidant activities, and to evaluate remedial action in experimental colitis with acetic acid. Phytochemical analyzes were performed through qualitative and quantitative colorimetric tests of the main secondary metabolites. In the colitis model, 24 male Wistar rats aged ± 60 days old were used, divided into 4 groups: Control (CO) control + aqueous extract of C. laurifolia 50 mg/kg (CO + A50); Colitis (CL); and Colitis + aqueous extract of C. laurifolia 50 mg/kg (CL + A50). Measurement of sphincter anal pressure and histological tests of the large intestine, lipoperoxidation (LPO), enzyme activity of superoxide dismutase (SOD), and levels of glutathione (GSH) were performed. For statistical analysis, the oxidative stress (OS) results were expressed as means ± standard error, adopting a significance level of p < 0.05. The screening indicated the presence of flavonoids, saponins and tannins in the extract, with high levels of phenolic compounds and tannins, and was related to high antioxidant capacity. In the histological analysis, the CL group presented loss of the crypts, edema and inflammatory infiltrate. The use of C. laurifolia extract restructured the crypts, decreased edema and increased sphincter anal pressure, with a decrease in LPO, SOD, and an increase in GSH. It is suggested that the use of C. laurifolia extract reduces OS due to its antioxidant power conferred by the phenolic compounds present in the extract.
