The influence of post-harvest UV-C and pulsed light treatments on quality and antioxidant properties of tomato fruits during storage

Objective: To study the effect of storage temperatures and dehydration conditions (solar and convective drying; SD, CD), on the quality, physicochemical parameters and antioxidant properties of tomato fruits. Methodology: The physicochemical characteristics pH, titratable acidity, soluble solids (°Bx) and color parameters (L*, a* and b*), were evaluated. The lycopene, carotenoids and antioxidant activity percentages retention of tomatoes fruits stored at 7 and 22 ° C for 5 days and subjected to SD (Temperature (T) of 67 °C and luminescence of 685 lum/sqf) and CD (T 70 °C, flow rates 0.5, 1.0 and 1.5 m/s), were analyzed. Results: The fruits reached humidities of 17 and 15% for SD and CD. The parameters pH, °Bx, L*, a*, b* were highest with 22°C and CD (1.5 m/s). The value of the carotenoids was higher in fruits stored at 7 ° C and subjected to CD (1.0 and 1.5 m/s) and SD with values of 83.85, 85.98 and 99.43%, respectively. The CD (0.5 m/s) and SD improved lycopene (94.37 and 95.14%) and the antioxidant activity with values of 73.06 and 97.21%. Implications: The application of solar dehydration depends on luminescence condition; however, it is inexpensive and environmentally friendly alternative. Conclusions: The results derived in a viable alternative for the conservation and commercialization of tomato fruits in rural communities

The article provides a review of world data on the characteristics of the chemical composition of tomato fruits and the impact on their quality of the soil and climatic conditions of cultivation, varietal characteristics and maturity. It is noted that the current regulatory and technical documentation in the Russian Federation does not provide for the determination of functional substances. It has been shown that tomato fruits are a promising plant-growing raw material for the production of functional food products and directions for obtaining lycopene-containing products, canned foods, in particular, from tomato fruits, have been determined. The types of canned food and tomato products containing the highest concentrations of lycopene have been established. The regularity of increasing the concentrations of lycopene in tomato products with various methods of heat treatment is substantiated. The irreplaceable physiological significance of lycopene for the human body is proved, due to its antioxidant properties and the lack of the possibility of its synthesis. The biochemical nature of lycopene as a carotenoid and pigment is analyzed. The progressive foreign technologies of tomato processing have been studied, allowing to reduce the economic costs of production, increase the duration of storage of products containing extremely high concentrations of lycopene. The necessity of developing domestic food products of physiological importance, available for consumption in baby and diet food, is substantiated. It is proved that the Republic of Dagestan has a high climatic and resource potential for growing hybrid varieties of tomatoes containing high concentrations of lycopene and the mass fraction of dry matter necessary for the rational production of canned tomatoes.

The study investigated fungi associated with post harvest tomato fruits sold in the open market in Port Harcourt Metropolis. The antifungal activity (bitter leaf) extracts against spoilage was studied using well-in-agar diffusion method. Results showed that mean percentage incidence of fungi isolated from tomato fruits were Rhizopus stolonifer (56%), Aspergillus niger (62%) and Altermaria altermata (35%). Aqueous and ethanolic extracts of Vernonia amygdalina at different concentrations (20%, 40%, and 60%) (w/v) were used against fungi isolates, while water and ketoconzole (0.5 mg/mL) served as negative and positive control, respectively. Aqueous and ethanolic extracts of V. amygdalina inhibited the growth of all three test fungi. There were significant differences (p > 0.05) in the mean inhibitory effects of plant extracts and control. Antifungal activity measured as diameter of zone of inhibition revealed that V. amygdalina acqueous extract at 60% was very active against Aspergillus niger (16.50 mm) and Alternaria altermata (16.00 mm), while being moderately active against Rhizopus stolonifer (13.00 mm). However, 60% ethanolic extract of V. amygdalina was very active against A. niger (19.00 mm), A. altermata (17.00 mm) and Rhizopus stolonifer (15.80 mm). Phytochemical screening of V. amygdalina revealed the presence of tannins, oxalate, saponnins, flavanoid, cynogenic glucoside, phytate and Alkaloids V. amygdalina could serve as a potentially viable alternative to chemical fungicides in the preservation of post harvest tomato fruits (Lycopersicum esculentum).

<p>Tomato is one of the most produced and consumed olericole plants in the world, being a highly perishable fruit, which presents high levels of losses in the post-harvest period. As a form of reducing these losses, it is necessary to know the product physiology. The fruit-ripening phase involves changes in the sensorial characteristics that are unchained by ethylene, a hormone naturally synthesized within the cells and liberated in the form of gas. Ethylene can also be applied on an exogenous way, thus accelerating and making even the ripening of fruits as the tomato. On the other hand, the ripening process can be delayed with the use of 1-methylcyclopropene (1-MCP), an inhibitor of ethylene synthesis, thus prolonging the useful life in the post-harvest period. In the present investigation, with the purpose of a literature revision, in a general way, it was to demonstrate the forms of controlling the ripening of tomato fruits, in the post-harvest period, in order to prevent and reduce losses. The collected data showed that, with better care during the fruit handling and, mainly, with the use of different technologies, as the application of 1-MCP, post-harvest losses in tomato plant culture can be reduced significantly.</p><p>&nbsp;</p><p><a href="http://dx.doi.org/10.14685/rebrapa.v4i1.116">http://dx.doi.org/10.14685/rebrapa.v1i1.6</a></p>
