Free radical is any molecular species that have unpaired free electrons in their outer orbital shell that make radicals highly reactive, resulting in pathogenesis conditions such as cellular injury, premature aging, cancer, hepatic disorders, neurodegenerative diseases, cardiovascular disease, and kidney disease. One source of natural antioxidant is jackfruit. The purpose of this research was to determine the phenolic and flavonoid contents in the extracts and fractions of jackfruit peel and their potential as antioxidants. Jackfruit peel powder was extracted from maceration. The total phenolic content was determined by the Folin-Ciocalteu method. Meanwhile, flavonoid content was determined using the aluminium chloride complex colorimetric method. Measurements of antioxidant activity were conducted using the 2,2-diphenyl-1-picrylhydrazyl (DPPH). The ethyl acetate fraction had high phenolic and flavonoid contents, which were 49.667±1.508 g GAE/100 g of sample and 70.199±0.374 g of quercertin equivalent/100 g. The ethyl acetate fraction had the strongest antioxidant activity with IC50 value of 4.539±0.201 µg/ mL and correlation value (R2 ) of 0.5881 for phenols and R2 of 0.7241 for flavonoids. Ethyl acetate fraction of jackfruit peel is very potential to be developed as a natural antioxidant and functional food.

AbstractThe antioxidants used in the food industry are essential to inhibit the formation of free radicals, preserving the existing properties in the different matrices. However, the insecurity of the synthetic antioxidants regarding human health propels search for natural substrates with potential antioxidant activity as an alternative to synthetic compounds. In this way, the work had as objective obtaining extracts from the seed pomace of the Hevea brasiliensis (rubber tree), relating the contents of flavonoids and total phenols in the application as an antioxidant. The methodology consisted of the extraction using four solvents, varying extractive methods, time, and seed concentrations. The antioxidant activity in vitro was evaluated by capturing the DPPH (2,2-diphenyl-1-picryl-hydrazil) radical. The optimized results demonstrate that the aqueous extracts produced in the Soxhlet in the concentrations of 85 g L−1 and retention time of 4 h reached 37.73 ± 1.69% in the antioxidant tests of the free radical DPPH capture, 1405.15 mg EAC 100 g−1 in the quantification of phenolic compounds and 223.34 mg 100 g−1 of total flavonoids. Thus, this work may contribute to the realization of studies and future research for characterization and identification concerning which phenolic compounds and flavonoids attribute the antioxidant characteristic to the extracts produced, enabling the discovery of products with high added value in the production chain. In addition, because the water used as a solvent showed greater antioxidant potential between the extracts, the non-toxic and environmentally friendly character is highlighted, allowing a wide variety of applications in the food industry.

Abstract-Currently, there is much growing interest in the use of medicinal plants as modulators of the complex immune system. Through a number of vast researches conducted in the area, it is being explored that many of the phytochemicals in the form of alkaloids,tannins,flavonoids,terpenoids,polysaccharides, lactones, and glycoside products areresponsibletocausealterationsintheimmunomodulatory properties. Keeping in mind, the tremendous potential of the medicinal plants and their derived drugs, this study is undertaken and an immunobooster tea formulation (IMBF-01-20) was designed and in vitroantimicrobial and antioxidant activity was tested. The results showed strong antimicrobial activity of formulation(IMBF-01-20) against Staph.aureuswith diameter of zone of inhibition of 32 mm in methanol extract followed by 20 mm in E.coli. While hexane extract also showing good inhibition of test organisms followed by Ethanol extract.Considering the growing demand of natural antioxidant, IMBF-01-20 was tested for their antioxidant activity using DPPH radical scavenging assay.Antioxidant activity (93.4%) was observed in immunobooster tea formulation and revealed it as a natural antioxidant.

Abstract In recent years, the role of reactive nitrogen and oxygen species (RNOS) in human disease has been the subject of considerable study. This has led to research on the potential benefit of natural products as dietary antioxidants to mitigate oxidative stress caused by increased RNOS associated with tissue damage. Five physiologically relevant reactive species include peroxyl radical, hydroxyl radical, peroxynitrite anion, superoxide radical anion, and singlet oxygen. Excessive amounts of these species can lead to the degradation of important biomolecules in vivo, and dietary antioxidants have been shown to inhibit damage both in vitro and in vivo. In this investigation, we have discovered that an extract of the fruit from Nitraria tangutorum Bobr. (Tangut white thorn) demonstrates significant antioxidant capacity against all five reactive species. Rapid bioassay-directed fractionation was used to identify antioxidant phytochemicals by collecting fractions from HPLC effluent into 96 well microplates and testing for antioxidant activity against the 2,2-diphenyl-1-picrylhydrazyl radical. Two different classes of phytochemicals, anthocyanins and flavonoids, were associated with antioxidant activity. Active components were further characterized by UV-Vis spectroscopy and high-resolution MS.

Nyctanthes arbor-tristis (Harshingar, Parijat) belongs to the family Oleaceae. The flower has white petals with an orange calyx. Nyctanthes stems have been found to be a rich source of antioxidant. The aqueous extracts of the flower, calyx and petals were evaluated and found to be dose-dependent and showed an increase in DPPH free radical scavenging activity in vitro. The extracts, which showed strong DPPH radical scavenging activity, are in the order Calyx > flower > petals. This signifies that the main antioxidant activity is in the orange colored calyx of the flower. We have attempted an innovative study with the Nyctanthes flower as a part of an exploration for a cheap natural source of antioxidants which can be used at the industrial scale of the food industry.

Tartary buckwheat (Fagopyrum esculentum) is widely used in the food industry due to its functionality, which is related to its high rutin content. However, rutin is easily converted into quercetin by an endogenous enzyme during processing, resulting in a bitter taste. In this study, rutin-enriched Tartary buckwheat flour extracts (TBFEs) were obtained by hydrothermal treatments (autoclaving, boiling, and steaming), and their antioxidant activity was evaluated in human intestinal cells. The intestinal absorption of the hydrothermally treated TBFEs was also investigated using in vitro models of intestinal barriers and an ex vivo model of intestinal absorption. The results demonstrated that all of the hydrothermally treated TBFEs had increased rutin, total polyphenol, and total flavonoid contents, which enhance the in vitro and intracellular radical scavenging activities. Antioxidant enzyme activity, cellular uptake efficiency, in vitro intestinal transport efficacy, and ex vivo intestinal absorption of the hydrothermally treated TBFEs were also enhanced compared with those of native TBFE or standard rutin. These findings suggest the promising potential of hydrothermally treated TBFEs for a wide range of applications in the functional food industry.

Due to the industrial processing of grapes, large amounts of by-products are produced. The main varieties of by-products are pomace, which is comprised of skins, seeds and any other solid remaining after pressing process and sediments. It is necessary to implement new effective ways of processing to minimize these residues. This problem is relevant for all the wine-producing countries, including Georgia. It is well-known fact that pomace is an important source of phenolic compounds, which are characterized by high antioxidant activity and possess healing-prophylactic properties. It is also worth mentioning that pomace is an easily spoiled product, and without the proper processing, it cannot be stored for a long time. Thus, this research aimed to obtain optimal parameters for extraction, preserving the antioxidant characteristics. The optimal range of the following parameters for extraction was determined: the temperature for drying 45-50 °C, grinding level 1.5 mm, diluent concentration 70% ethanol/water solvent, extraction module 1:20, extraction temperature 50-55 °C, and duration 2 h. This determination of technological parameters of extraction was done according to the best physical-chemical measures and antioxidant activity level. The physical-chemical tests were performed according to the European Union standards. These parameters can produce an extract with distinct antioxidant characteristics that can be used in the food industry as a natural antioxidant. The extract with distinct antioxidant properties was obtained, which can be used in the food industry as a natural antioxidant.

(2 S,2″ S)-Tetrahydroamentoflavone (THA) is a typical biflavonoid. In this study, we systematically evaluated its antioxidant activity by various antioxidant assays in vitro. The IC50 values of THA were 4.8±0.3, 743.2±49.5, 35.5±1.9, 165.7±22.8, 4.4±0.2, and 77.1±2.2 μg/mL, respectively, for superoxide (•O2-) radical-scavenging, Fe2+-chelating, Cu2+-chelating, DPPH• (1,1-diphenyl-2-picrylhydrazyl radical) scavenging, ABTS•+ (3-ethylbenzthiazoline-6-sulfonic acid radical) scavenging, and Cu2+-reducing power. The average ratio value of IC50, Trolox:IC50, THA was calculated as 2.54, suggesting that THA possesses 2.54 times the total antioxidant level than the standard antioxidant Trolox. THA exerts its antioxidant activity in vitro through metal-chelating, and radical-scavenging, which is via donating a hydrogen atom (H•) and an electron (e). Its antioxidant activity can be responsible for its pharmacological effect and make it an attractive natural antioxidant.
