Honey is thermally heated at various methods to decrease the moisture content and prolong the shelf life. The heating methods might decrease the quality of honey's physicochemical and biochemical properties. The present study thermally treated the honey with a pasteurizer, evaporator, and dehumidifier. The most thermally affected to decrease the moisture content were treatment by dehumidifier (14.09%), subsequent evaporation (8.41%), and pasteurization (8.41%). After heating, significant differentiation was also observed in the variation of both HMF (Hydroxymethylfurfural) content and diastase activity according to the botanical origin of the honey sample. In line with the biochemical analysis of honey, total phenolic decreased significantly during the pasteurization treatment. Evaporation was the most resistant thermal treatment due to its ability to maintain the level of HMF and the enzyme diastase as a standard for honey quality. However, changes made in physicochemical and biochemical quality are still in compliance with national and international legal limits.

It has been demonstrated previously in the literature that utilization of PEF or a combination of a pulsed electric field (PEF) and ultrasounds (US) can facilitate dehydration processes and improve the quality of dried products even better than the application of thermal methods such as blanching. The aim of the study was to evaluate the quality of red bell pepper subjected to freeze-drying preceded by blanching or PEF or US treatment applied in a single and combined mode. Furthermore, the freeze-drying was preceded by shock freezing or vacuum freezing performed inside the freeze-dryer as a result of pressure drop during the first stage of freeze-drying. All of the analyzed technological variants enhanced the drying kinetics when compared to the intact material. Freeze-dried bell pepper subjected to non-thermal pretreatment exhibited higher vitamin C, total phenolic and carotenoids content than blanched material despite the fact that blanching reduced drying time the most compared to all other analyzed methods.

In this study, the pre-drying effect of HA-RF disinfestation treatment of rough rice with different initial moisture contents (IMCs) (16.7%, 24.8%, 34.7%, and 39.6% d.b.) was investigated along with associated quality change. HA-RF treatments had better pre-drying effect of rough rice with various IMCs than that of hot air (HA) treatment and larger electrode gap obtained lower moisture removal. IMCs of rough rice also influenced the moisture removal for HA-RF treatments, and the corresponding moisture loss were 4.3%, 5.3%, 6.1%, and 8.7% for the treated rough rice with IMC of 16.7%, 24.8%, 34.7%, and 39.6%, respectively. More quality loss was observed for the rough rice with higher IMC, especially for broken rate, fissure, and water uptake ratio. HA-RF treatment had no influences on total phenolic acids, protein, and fat contents, but amylose and vitamin E contents were affected. Non-milled rice treated by HA-RF had an obvious decrease in the lightness (L*) except for the samples with highest IMC (39.6%). RF disinfestation treatment can be used as a pre-drying method to partially reduce the moisture content (MC) of rough rice. The biochemical contents of plants may vary depending on soil and climatic conditions. Under unsuitable conditions, the resistance mechanismof plants is determined by the biochemical properties of the plants. For this reason, it is of great importance to determine thebiochemical contents of some plants that are naturally grown and generally used as dye plants. For this purpose, Salix albaL., Verbascum thapsusL., Urtica dioicaL., Digitalis lanataEhrh, Galium aparineL., Lythrum salicariaL., Hypericum perforatumL., Hypericum scabrumL., Quercus roburL. subsp. robur, Glycyrrhiza glabraL. plants were collected. Antioxidant enzyme activity, hormone, organic acid, total phenolic substance and some other biochemical analyzes were made in these plant samples. As a result of the study, depending on the plant varieties, total antioxidant, total phenolic content and organic acid levels showed significant differences. According to the results of this study, Verbascum thapsusL. plant had high antioxidant enzyme activity, while Digitalis lanataEhrh. plant was found to be higher in terms of hormone and total organic acid content. The highest amount of carotenoid, abscisic acid and hydrogen peroxide were determined in Urtica dioica L. plant. Different results were obtained in other plant varieties, and it was observed that a different biochemical content was more effective in each plant. For this reason, it has been determined that the biochemical contents of these plants, which have different uses. The usage area of this plant should be created after the main active ingredient is determined.

Abstract White turmeric (Curcuma amada) is a traditional medicine that contains phenolic as an antioxidant—usually processed into drinks or capsules. Currently, the drying method used is sunlight can reduce the quality of white turmeric. The study’s objectives were to investigate the most optimal drying method based on physical and chemical quality and drying rate. There were seven drying methods employed: sun-drying (SD), cabinet drying with the heating temperature of 50 °C, 60°C, and 70°C (namely CD50, CD60, and CD70, respectively), freeze-drying with the final heating temperature of 30°C, 40°C, and 50°C (namely FD30, FD40, and FD50, respectively). Quality parameters measured were moisture content, color, volume, particle density, morphological visualization, and total phenolic compound. The results showed that the drying method affected the observed parameters. The freeze-drying with a heating temperature of 30°C was the most optimal drying method, with moisture content reduced from 91.41% to 7.56%. After the drying process, the color changed value was 19.18, with a volume shrinkage of 69.37% and particle density of 0.41 g/cm3. The total phenolic compound of freeze-dried white Tumeric was 8.427 mgGAE gsolid −1.

This study was conducted in 2013 to determine the biochemical properties of 10 different monofloral honey types produced across Turkey. For the study, honey samples were obtained from beekeepers and the identity and relative percentage of dominant pollen types in samples was determined through microscopic analysis. Pollen analysis revealed that honey types chaste tree (Vitex agnus-castus) and sunflower (Helianthus annuus) contained high proportions of each respective pollen type. These proportions reached as high as 86%, while other honey types such as Anason had low Anasom pollen content, occurring at 45% in whole honey samples. Biochemical analysis revealed that the average honey sample quality characteristics were as followings: ash 0.37±0.04, electricity conductivity 0.79±0.07 mS/cm, moisture 19.15±0.09%, pH 3.97±0.02, acidity 29.07±0.39 meq/kg, hydroxymethylfurfural (HMF), 6.17±0.76 mg/kg, diastase 22.05±0.00, invert sugar 69.72±0.49% and sucrose 2.90±0.30%. These analyses confirmed that honey samples met standards outlined by the Turkish Food Codex Honey Standard, European Union Honey Standard and Codex Standards respectively.

This paper explores the analysis of sound speeds in the longitudinal direction and their reduction to the reference moisture content w = 12 %. The sound speed cw was determined with Sylvatest Duo device. Moisture content of beech sawmill assortments (round timber: N = 16, logs: N = 2 × 16, structural boards: N = 54) in the range of 12 – 72 % was measured. For the analysis purposes, the sound speed was converted to reference conditions (c12, uref = 12%). A second-degree polynomial (parabola) with a regression equation of the form: c// = 5649 - 27,371 × w + 0.0735 × w2 was used to convert cw to c12, and correction of measured and calculated values was used as well. The sound speeds c12 in sawmill assortments (c12,round, c12,log, c12,board) were evaluated by linear dependences. Dependence was not confirmed for c12,round and c12,board1 (r = 0.168), in contrast for c12,round and c12,log2 the dependence is statistically very significant (r = 0.634). The results of testing showed that the most suitable procedure for predicting quality of structural timber is the first step round timber – log2, the second step: log2 - board2. More exact results of the construction boards were obtained from log2 than from log1. The sound speed is used in the calculation of dynamic modulus of elasticity (Edyn). EN 408 mentions the possibility of using dynamic modulus of elasticity as an alternative method in predicting the quality of structural timber.

Recent advances made in the reuse of pulp and paper industry sludges in hardboard production are explained. Data obtained from pilot and full-scale plants using primary sludge of a pulp and paper industry as an additive in the production of hardboard is presented. An economic analysis of the reuse of pulp and paper primary sludge in hardboard manufacturing is given. The quality of the hardboard produced is tested and compared with the qualities of the hardboard produced by the same plant before the addition of primary sludge. The hardboard with primary sludge additive has been used in Turkey for about a year in the manufacturing of office and home furniture. The results are very satisfactory when the primary sludge is used at 1/4 ratio.

AbstractFifteen attached macroalgae from the Madeira Archipelago, comprising three green, three red and nine brown algal species, as well as two beach-cast macroalgal samples, collected along the north shore of Gran Canaria, were assessed for their biochemical properties. The analysis included the determination of total minerals, total carbohydrates, protein, lipids, chlorophyll a, total carotenoids, total phenolic content, fucoxanthin and phycobilins (allophycocyanin, phycocyanin and phycoerythrin). The results showed a high variability of biochemical composition, allowing for the targetting of specific bioresources for particular purposes, including functional foods. This work provides the foundation for a biorefinery strategy implementation plan, for which specific macroalgae may be targeted for valuable and beneficial compounds.
