Eight thia fatty acids and other sulfides have been studied as inhibitors of autoxidation of arachidonic acid. The inhibitors extend the lag phase of the oxidation, to varying degrees. A carboxyl group in the vicinity of the sulfur reduces the antioxidant activity, while unsaturated sulfides are more effective than their saturated analogues. The results are consistent with the sulfides acting to reduce fatty acid hydroperoxides, which otherwise accumulate during the early stages of reaction and propagate the free-radical oxidation process.

The antioxidant activity (AA) of various extracts of grape marc (Vitis vinifera L.) was studied. Radical absorption activity (RAA) was calculated in reactions with DPPH+ and ABTS•+ radicals and AA in rat liver homogenate by two markers of oxidative stress (OS): contents of thiobarbiturative products and carbonyl groups of proteins. All the extracts showed antioxidant activity. Water-based extract and 96 % ethanol extract obtained via heat bath method were inhibitors of the formation of free radical oxidation of lipids and proteins. 96% ethanol extract is promising for the development of pharmaceutical and cosmetic products.

The aim of this study was to determine the procedure parameters, including drying, extracting and pH on the antioxidant activity and antioxidative compounds in Perilla frutescens leaves. The extraction of antioxidants from Perilla frutescens leaves is studied considering different drying and extracting procedures to investigate the selectivity of the process. The radical-scavenging activity (RSA) of 1, 1-diphenyl-2-picrylhydrazyl (DPPH) and the determination of the total phenolic content are applied to evaluate the antioxidant activity and antioxidative compounds of the Perilla frutescens leave extracts. The highest antioxidant activity is observed for the extract obtained by freeze drying, extracting by ultrasound with 80% methanol adjusted at pH 4.The antioxidant compound extraction yield was also the highest at these extraction conditions. The total phenol contents among the Perilla frutescens leave extracts produced by different drying procedures were similar, while the antioxidant activities were different This concluding that the amount of phenolic compounds extracted was similar but the type and probable structure of the phenolic changed during heat-drying procedure providing in this way. Our study showed that proper process technology could ultimately extract compounds potentially effective against diseases related to free radical oxidation.

We examined 66 women who were 22-40 weeks pregnant and their newborns. Of these, 15 women with moderate PE were in group 1, 22 women with severe PE were in group 2, and 55 women with uncomplicated pregnancy without hypertensive disorders were in the control group. Blood was taken from women when they were admitted to the clinic, and newborns ‘ blood was taken for 3-5 days of life. Free radical oxidation and antioxidant activity were evaluated by induced chemiluminescence. It was found that in patients with severe and moderate preeclampsia, the development of oxidative stress is accompanied by a weakening of antioxidant activity. In newborns born to mothers with preeclampsia, oxidative stress is accompanied by a compensatory increase in antioxidant activity.

Several markers of lipid peroxidation are available with different degrees of specificity, from malondialdehyde as a global marker, to F2-isoprostane, which is specifically produced from arachidonic acid. Among these, 4-hydroxynonenal is recognized as a breakdown product of fatty acid hydroperoxides, such as 15-hydroperoxy-eicosatetraenoic acid and 13-hydroperoxy-octade cadienoic acid from the n−6 fatty acids. Furthermore, 4-hydroxyhexenal (4-HHE) derives from n−3 fatty acid hydroperoxides. We have recently described the occurrence of 4-hydroxydodecadienal (4-HDDE) from the 12-lipoxygenase product of arachidonic acid 12-hydroperoxy-eicosatetraenoic acid. These three hydroxy-alkenals may be measured in human plasma by GC–MS, but they may partly be generated in the course of sampling, and the relative volatility of 4-HHE makes its measurement quite unreliable. We have successfully characterized and measured the stable oxidized carboxylic acid products from the hydroxy-alkenals 4-HNA, 4-HHA and 4-HDDA in urine. The ratio between 4-HHA and 4-HNA found in the same urinary sample might provide useful information on the location of lipid peroxidation, accounting for the high enrichment of the cerebrovascular system with docosahexaenoic acid, the main n−3 fatty acid in humans.

The chemical processes occurring in the animal body under pathological conditions are of interest to researchers. The objective of the research was to study the indicators of lipid peroxidation and antioxidant activity in horses infested with helminthiases and treated with anthelmintic paste with an antioxidant. The study has proved the role of parasitic infestation in accelerating the processes of free radical oxidation, which is manifested by a decrease in the light sum of radicals (36.62-39.21), the maximum luminous intensity (6.13-6.98) and antioxidant activity (5.65-6.2) at the start of the research. Chronic invasion increases the concentration of under-oxidized products up to 38.59, and the rate of initiating free radical oxidation – up to 6.95, the values of antioxidant activity being stably low (5.51-5.91). An important role in the regulation of lipid peroxidation in horses during helminthiases, as well as in the process of deworming, is played by the antioxidants contained in anthelmintic preparations. The antioxidant santohin included as a compound in the «Alezan» preparation suppresses enhanced peroxidation and activates the antioxidant protection of the body, which is reflected in a decrease in the light sum of the radicals to as low as 26.73, a maximum luminous intensity to – 3.76, and an increase in antioxidant activity – up to 7.16.

Background: It is our opinion that amaranth seed oil’s properties merit further study due to their high quantity of squalene. Squalene has been shown to have antitoxic, antioxidant, and hepatotropic properties. The liver is one of the most important organs in the human body, and as a filtering organ, it is subjected to many toxic compounds and free radicals. Thus, protecting the liver with an antioxidant and antitoxic compound could offer significant benefits.Objective: In the present study we have evaluated the antitoxic, antioxidant, and hepatotropic (hepatoprotective) effects of amaranth oil acquired via a patented pressing method. Rats were treated with amaranth oil, a comparative compound, or a control compound and then subjected to various toxic, oxidizing, and other compounds in order to examine amaranth oil’s effects. Results: Amaranth oil was found to have a positive and dose-dependent effect both in vivo and in vitro. Amaranth oil’s hepatoprotective activity was confirmed by both biological and morphological examination. This study suggests that amaranth oil acts to prevent and reduce CT damage in liver tissue. This was especially the case in doses of 300 mg/kg, proved both by normalization of hepatic ferments-markers indexes and morphological examinations.Conclusion: The amaranth oil acquired via a patented pressing method possesses antitoxic and antioxidant activity.  In this connection, the amaranth oil can be recommended for prophylaxis of toxic and drug-induced liver lesions and as a component of the functional food and dietetics of various diseases.Keywords: antioxidant activity, free-radical oxidation, hypoxia, erythrocytes hemolysis, squalene, amaranth oil, hepatoprotector, hexenalum sleep, toxic hepatitis
