Food History and Women in Sub-Saharan Africa

Any account of women and food history in sub-Saharan Africa must be complicated by two main factors: first, the multitude and complexity of African societies and their interactions with the different colonial powers over five centuries, and, second, by an underestimation of the importance of women’s activities by researchers imbued with colonial patriarchal ideologies. In prehistoric and precolonial times, only glimpses of women’s roles in food production and gathering can be seen, drawing on evidence from historical linguistics, ethnography, anthropology, and archaeology. What evidence there is suggests that women’s participation in these tasks was important. The written account of Ibn Battutah and the oral epic of Sundiata provide some information about what was eaten and Sundiata does point to women’s major role in growing food and in cooking. During the colonial period, from about 1500 to the 1960s, many accounts from different parts of sub-Saharan Africa stress how women played a dominant part in the farming, processing, preparation, and cooking of food. There was a varied and often complex division of labor between men and women. Instead of the more rigid gendered private/public divide often seen in the West, women in Africa have engaged in wider roles in the public sphere, for example, in the processing of food for sale. There are some indications that women’s work was changed by the introduction of new crops from Asia and the Americas. Colonial governments favored men working on cash crops so that women focused even more on the provision of food for the family. Women also showed great adaptability in assessing and using new technologies such as peanut processing machines. Cooking has remained predominantly a woman’s occupation in sub-Saharan Africa and a divide between a “high” cuisine, mainly in the hands of men outside Africa, and a “low” or humble cuisine, has not developed. Cookery books are very useful sources for evidence of the history of women’s domestic role. Those published for European settler wives in the colonial period were focused on the housewife rooted in the home and this ideology of domesticity can be found in the cookery books of postcolonial Africa. After independence, the ruling elites of African nations set about constructing discourses of national identity, flags and anthems particular to each nation, and women have contributed to this nation-building by assembling national cuisines. Since the 1980s, an epidemic of obesity has occurred in many African urban areas, with associated chronic disease, which women have suffered more than men. An ideal image of a plumper body, along with the introduction of “fast food,” has contributed to this situation. Women have also been disadvantaged by cultural food taboos in which certain foods are prohibited to them.

The article considers the impact of the colonial past of some countries in sub-Saharan Africa and its effect on their development during the post-colonial period. The negative consequences of the geopolitical legacy of colonialism are shown on the example of three countries: Nigeria, the Democratic Republic of the Congo and the Republic of Angola, expressed in the emergence of conflicts in these countries based on ethno-cultural, religious and socio-economic contradictions. At the same time, the focus is made on the economic factor and the consequences of the consumer policy of the former metropolises pursuing their mercantile interests were mixed.

Africa’s urbanization rate has increased steadily over the past three decades and is reported to be faster than in any other region in the world . It is estimated that by 2030, over half of the African population will be living in urban areas . But the nature of Africa’s urbanization and subsequent form of cities is yet to be critically analyzed in the context of city authorities’ readiness to address the challenges . Evidence is also suggesting that urbanization in African countries is increasingly associated with the high economic growth that has been observed in the last two decades . Both underlying and proximate drivers are responsible for the urbanization, and these include population dynamics, economic growth, legislative designation, increasing densities in rural centers, as well as the growth of mega cities such as Lagos, Cairo and Kinshasa, that are extending to form urban corridors . With the opportunities of urbanization in Sub–Saharan Africa, there are also challenges in the development and management of these cities . Those challenges include provision of social services, sustainable economic development, housing development, urban governance, spatial development guidance and environmental management, climate change adaptation, mitigation and disaster risk reduction . The challenge involves dealing with the development and infrastructure deficit, in addition to required adaption to and mitigation of climate change . This paper examines the current state of urban management in Africa .

By 2050, half of the net increase in the world’s population is expected to reside in sub-Saharan Africa (SSA), driving high urbanization rates and drastic land cover changes. However, the data-scarce environment of SSA limits our understanding of the urban dynamics in the region. In this context, Earth Observation (EO) is an opportunity to gather accurate and up-to-date spatial information on urban extents. During the last decade, the adoption of open-access policies by major EO programs (CBERS, Landsat, Sentinel) has allowed the production of several global high resolution (10–30 m) maps of human settlements. However, mapping accuracies in SSA are usually lower, limited by the lack of reference datasets to support the training and the validation of the classification models. Here we propose a mapping approach based on multi-sensor satellite imagery (Landsat, Sentinel-1, Envisat, ERS) and volunteered geographic information (OpenStreetMap) to solve the challenges of urban remote sensing in SSA. The proposed mapping approach is assessed in 17 case studies for an average F1-score of 0.93, and applied in 45 urban areas of SSA to produce a dataset of urban expansion from 1995 to 2015. Across the case studies, built-up areas averaged a compound annual growth rate of 5.5% between 1995 and 2015. The comparison with local population dynamics reveals the heterogeneity of urban dynamics in SSA. Overall, population densities in built-up areas are decreasing. However, the impact of population growth on urban expansion differs depending on the size of the urban area and its income class.

In this paper I ask how the ongoing processes of urban and local government development in Sub-Saharan Africa can and should benefit the countries, and what conditions must be met to achieve this favourable outcome. The region faces close to a doubling of the urban population in fifteen years. This urban transition poses an opportunity as well as a management challenge. Urban areas represent underutilised resources that concentrate much of the countries' physical, financial, and intellectual capital. Therefore it is critical to understand how they can better serve the national growth and poverty reduction agendas. The paper challenges several common ‘myths’ that cloud discourse about urban development in Africa. I also take a hard look at what the urban transition can offer national development, and what support cities and local governments require to achieve these results. I argue that, rather than devoting more attention to debating the urban contribution to development in Africa, real energy needs to be spent unblocking it.

Of the estimated 10 million youths living with HIV worldwide, 63 percent live in sub-Saharan Africa. This article focuses on migration as a risk factor of HIV infection among the youths in sub-Saharan Africa. The study is based on multilevel modeling, applied to the youth sample of the Demographic and Health Surveys (DHS), conducted from 2003 to 2008 in nineteen countries. The analysis takes into account country-level and regional-level variations. The results suggest that across countries in sub-Saharan Africa, migrants have on average about 50 percent higher odds of HIV infection than nonmigrants. The higher risk among migrants is to a large extent explained by differences in demographic and socioeconomic factors. In particular, migrants are more likely to be older, to have been married, or to live in urban areas, all of which are associated with higher risks of HIV infection. The higher risk among youths who have been married is particularly pronounced among young female migrants.

There is continuous expansion and growth of urban and peri urban areas in Sub-Saharan Africa with projections indicating that this will double. Some peri-urban areas such as those in the Techiman municipality of Ghana are experiencing this trend. Nonetheless, the spate of growth of these areas outstrips the supply of utilities by municipal water distribution networks. As a result, some areas have little or no public provision. In order to address the water supply challenge, places with favourable hydrological settings are witnessing the emergence of informal water suppliers as “gap fillers” or “pioneers”, providing water services. Noteworthy, however, existing studies about informal water suppliers in peri-urban areas in Ghana lump them together, without considering the water source. This study differs in that it specifically examines the evolution and the features of informal water suppliers who privately and independently abstract and supply groundwater. Additionally, it attempts to understand the nature of informality of the suppliers and the possibility of formalisation. The paper is an exploratory study using the case of private mechanised borehole operators who supply water in their respective areas. The findings showed that in some peri-urban areas in the Techiman municipality, some dwellers constructed and operated mechanised boreholes, which provide in-situ water and utilities to others. They are mostly pioneer water suppliers in some of the areas. Their services are informal by nature because they are largely independent of the formal sector and apply informal arrangements in rendering their services. Seen also as business enterprises, they are not licenced. However, the boreholes are registered with the Municipal Assembly, which indicated some level of formalisation. The study recommended that efforts to formalise them further should focus on improving water quality monitoring for consumption and promoting sustainable abstraction.

Introduction Recent debates surrounding the lagging covid-19 vaccination campaigns in low-income countries center around vaccine supply and financing. Yet, relatively little is known about attitudes towards covid-19 vaccines in these countries and in Africa in particular. In this paper, we provide cross-country comparable estimates of the willingness to accept a covid-19 vaccine in six Sub-Saharan African countries. Methods We use data from six national high-frequency phone surveys from countries representing 38% of the Sub-Saharan African population (Burkina Faso, Ethiopia, Malawi, Mali, Nigeria, and Uganda). Samples are drawn from large, nationally representative sampling frames providing a rich set of demographic and socio-economic characteristics by which we disaggregate our analysis. Using a set of re-calibrated survey weights, our analysis adjusts for the selection biases common in remote surveys. Results Acceptance rates in the six Sub-Saharan African countries studied are generally high, with at least four in five people willing to be vaccinated in all but one country. Vaccine acceptance ranges from nearly universal in Ethiopia (97.9%, 97.2% to 98.6%) to below what would likely be required for herd immunity in Mali (64.5%, 61.3% to 67.8%). We find little evidence for systematic differences in vaccine hesitancy by sex or age but some clusters of hesitancy in urban areas, among the better educated, and in richer households. Safety concerns about the vaccine in general and its side effects emerge as the primary reservations toward a covid-19 vaccine across countries. Conclusions Our findings suggest that limited supply, not inadequate demand, likely presents the key bottleneck to reaching high covid-19 vaccine coverage in Sub-Saharan Africa. To turn intent into effective demand, targeted communication campaigns bolstering confidence in the safety of approved vaccines and reducing concerns about side effects will be crucial to safeguard the swift progression of vaccine rollout in one of the world's poorest regions.

This article proposes a strategy for agricultural technology development for semi-arid West Africa. The strategy evaluation consists of two aspects: a) a review of the successes in the region; and b) analysis with mathematical programming of the potential impacts and constraints to various new technologies tested in the region. The technology development strategy indicates how further productivity gains can be made by responding to the two principal constraints of water availability and soil fertility. These constraints must be simultaneously resolved but the strategy needs to be adapted for different soil characteristics and economic environments. The major emphasis is on the importance of the rapid introduction of inorganic fertilizers combined with techniques to increase water availability; organic and inorganic fertilizers need to be considered complements in the semi-arid regions. Farmers are already introducing labour intensive variations of these techniques in the most degraded regions. The policy concern is to encourage government policymakers to put a high priority on fertilizer and increase the availability of inorganic fertilizer while research efforts continue to develop improved methods for complementary use of organic fertilizer.


There are no single-volume studies that address the whole topic of alcohol in Africa or its modern history. Globally, fermented alcohol has a very ancient history, with archaeological findings documenting such drinks many thousands of years ago. Given the relative lack of archaeological work in sub-Saharan Africa, the evidence for the ancient consumption of fermented drinks on the continent is thin, but the earliest records in combination with ethnographic research point to a very long history and to the ubiquity of fermented drinks. Virtually every African society produced one or more kinds of fermented drinks, whether it was palm wine in coastal regions, various wines made from honey or local fruits such as bananas, or, especially, beers produced from millet and sorghum and later maize. In Muslim societies, these fermented drinks, often classified as foods by local peoples, were not seen to violate Qurʾanic prohibition. Ethnographic studies often include detailed accounts of the complex processes through which such drinks were produced and the equally complicated social practices related to drinking. Such drinks were often bought and sold through local trade networks, but fermented drinks are expensive to transport and until the development of modern bottling technology had very short shelf lives. Distillation technology dates only to the 11th century and its spread was closely connected to international trade. During the 20th century, alcohol regulation emerged as a critical element in colonial hegemony, and the importance of alcohol to state revenue persists to the present day. Following independence, with the end of international prohibitions on distilling, industrial brewing and distilling grew rapidly in many African countries, generally led by international enterprises. South African Breweries ultimately emerged as a major international player, with large stakes across the continent. Racist thinking dominated colonial policy on alcohol sales and consumption across much of eastern, central, and southern Africa, and colonial states in those regions used revenue from alcohol monopolies to reinforce racial segregation and domination. This thinking incorporated a racially defined view of collective dependency and abuse which was fueled by colonial expediency and in turn shaped public perceptions and response to African alcohol consumption. Such perspectives have persisted in “expert” discourse in postcolonial Africa. Yet alcohol consumption has been, for men, among the most important leisure activities in many African societies, and in the 20th century, drinking establishments emerged as very important sites of popular culture.

An estimated 39.5 million people are living with HIV worldwide. There were 4.3 million new infections in 2006 with 2.8 million (65%) of these occurring in sub-Saharan Africa with important increases in Eastern Europe and Central Asia, where there are some indications that infection rates have risen by more than 50% since 2004. In 2006, 2.9 million people died of AIDS-related illnesses (UNAIDS, 2006). The continued increase in new HIV infection is a call for concern. It is imperative that more innovative ways of combating the infections are found sooner. There is an enormous body of evidence that HIV infection is caused mainly by sexual contact. There is also undisputed evidence that there are other contributing factors such as extreme poverty, survival sex, gender inequality, lack of education, fatalism, religious barriers and others. This chapter seeks to support the need to do more research in finding new technologies and innovative ways of dealing with the spread of HIV. The chapter suggests that the involvement of researched communities be effectively involved. Involving communities in finding solutions will help, in that research protocols and health programmes will take into account the cultural acceptability of the new technologies and systems and ensure that recipients of health services become effective organs of change. The chapter seeks to highlight the fact that, if the recipients are involved in all stages of development of health programmes, including technologies, we may begin to see changes in how new technologies are taken up or may shift toward getting technologies that are acceptable. There are various suggested and implemented ways which aid in achieving the protection for individuals and communities; such as community involvement, community participation and community education (Collins, 2002; Gupta 2002), this chapter will focus on community education and a proposal for a community principle.
