Abstract Four hundred and thirty-three Angus and Angus cross-bred steers (Body Weight 344 ± 13.3 kg) were utilized in this experiment to compare different varieties of grain corn and α-amylase enzyme on feedlot cattle performance and carcass characteristics. Steers were blocked by body weight and breed and randomly assigned to treatments. Treatments consisted of: 1) Commercial commodity corn (CON); 2) Experimental test corn (TEST;), 3) 50:50 blend of CON and TEST corn sources (BLEND), and 4) CON with 5g of α-amylase enzyme added/hd/d (AMZ; Amaize®, Alltech). Steers were slaughtered after 138 days on feed. Feedlot performance, net energy recovery, hot carcass weight, dressing percentage, subcutaneous adipose tissue depth, longissimus muscle area, marbling score, and calculated yield grade data were analyzed as a randomized complete block design using PROC MIXED of SAS. Dietary treatment had no effect (P > 0.20) on BW, average daily gain, feed efficiency, or net energy recoveries. There was a tendency for daily dry matter intake (DMI) to be influenced by treatment: d 0 – d 90 (P < 0.09), d 91 – slaughter (P = 0.11), and d 0 – slaughter (P < 0.08). Dry matter intake was consistently greater for steers receiving the AMZ treatment when compared to all other treatments. Daily DMI for the TEST treatment was consistently lower than DMI for all other treatments. Hot carcass weight (P = 0.56), dressing percentage (P = 0.10), 12th subcutaneous fat depth (P = 0.88), longissimus muscle area (P = 0.84), yield grade (P = 0.91), marbling score (P = 0.76), quality grade (P = 0.67), and the distribution of USDA yield and quality grades (P > 0.74) were similar across treatments. These results indicate the value of the TEST corn as an energy source in feedlot cattle diets is similar to the value of COM corn an energy source.

Abstract The objective of this study was to evaluate the effects of different energy sources on performance, and carcass characteristics in hair lambs finished in feedlots. Twenty-eight hair lambs with an initial body weight (BW) 20.8 ± 3.01, were randomly assigned to one of four dietary treatments included with seven lambs per treatment. The dietary treatments included an energy source included at 18% Dry matter: S. spectabilis flour (SF), palm kernel (PK), corn bran (CB) and rice bran (RB) in a diet based in corn silage, ground corn, soybean meal formulated to 13.0% PC and 2.6 Mcal/Kg of DM. The feeding trial was performed for 13 weeks. Water was allowed ad libitum. Animals were slaughtered after the feeding trial, and the carcasses were kept at 4°C for 24 h under Colombian standard guidelines. Data were analyzed by using the ANOVA procedure, SAS version 9.1 to perform a randomized complete experiment with four diets. For each studied variable, the mean and standard error of the mean (SEM) were calculated and differences between means were evaluated Using Tukey′s Test (P ≤ 0.05). Final body weight, hot carcass weight, cold carcass weight, hot dressing carcass (%), and cold dressing weight (%) were not different between the four treatments (P > 0.05). Dry matter intake was superior to the S. spectabilis flour (P < 0,001). Feed efficiency was higher in the CB and RB treatments (P < 0,05). These results indicate that the inclusion of S. spectabilis and palm kernel could improve the dry matter intake and corn bran and rice bran the feed efficiency without effects on carcass characteristics

Abstract The objective was to evaluate growth performance and carcass characteristics for feedlot cattle fed two sources of rumen protected capsaicin at two dose rates. A total of 450 steers, stratified by BW, were assigned into 30 pens. Pens were randomly assigned to receive 1 of 5 treatments containing (DM basis) of 86.2% barley grain, 6.0% barley silage, 6.2% canola meal, and 1.6% vitamin and mineral supplement. Treatments contained no additive (CON) or included a low or high dose of Nexulin (100 mg/d for NEXLO and 330 mg/d for NEXHI) or CapsXL (77 mg/d CAPLO or 250 mg/d for CAPHI). Steers averaged 507 kg BW at the start of the study and 686 kg at the end of the study (69 days on feed) with no differences among treatments (P > 0.28). Dry matter intake, ADG, gain:feed, dressing percentage, backfat thickness, and rib-eye area were not affected by treatment (P > 0.33). Steers fed CAPLO and NEXLO tended (P = 0.07) to have lesser marbling scores than CON, CAPHI and NEXHI. The proportion of steers in Canadian yield grades 1 and 2 did not differ among treatments, while those in yield grade 3 were greater (P = 0.03) in NEXLO (29%) than the CON (10.0%) and NEXHI (12.2%) treatments, with those fed CAPLO (20%) and CAPHI (19%) being intermediate but not different. Treatment did not affect the proportion of steers in quality grades B4, A, or prime, but tended to increase the proportion of steers grading AAA (P = 0.08) and decrease the proportion grading AA (P = 0.06). Overall, the data from this experiment suggest the potential for capsaicin to affect carcass yield grade, marbling score and quality grades without affecting DMI, ADG, or dressing percentage.

Abstract One hundred and sixty-five crossbred steers were used in this experiment to investigate the influence of supplemental zinc (Zn) and chromium (Cr) on performance and carcass characteristics of feedlot steers fed steam-flaked corn-based finishing diet. Steers were blocked by initial BW (518.9 ± 8.4 kg) within cattle source (2 sources) and housed in pens containing 6–7 steers per pen. Pens within blocks were randomly assigned to treatments in a 2 x 2 factorial arrangement, with factors being: 30 or 90 mg of Zn/kg DM and 0.0 or 0.25 mg Cr/kg DM. Treatments consisted of: 1) 30 mg Zn/kg DM; 2) 90 mg Zn/kg DM; 3) 30 mg Zn + 0.25 mg Cr/kg DM; and 4) 90 mg Zn/kg + 0.25 mg Cr/kg DM. Zinc was supplemented as ZnSO4 and Cr supplemented as Cr propionate. Steers were individually weighted on 2 consecutive days prior to initiating dietary treatment and on 2 consecutive days at the end of the experiment. Dietary treatment were initiated 64 days prior to slaughter (total days on feed = 240). All cattle were transported to a commercial abattoir on the same day and slaughtered. Steers receiving supplemental Cr had greater final BW (P < 0.02) and ADG (P < 0.03) when compared to non-Cr supplemented steers. Additionally, hot carcass weight (P < 0.005) and marbling score (P < 0.03) were greater (P < 0.005) for steers receiving 30 mg Zn/kg DM + 0.25 mg Cr/kg DM when compared with all other treatments. Dry matter intake, morbidity and mortality, and all the other carcass measurements were similar across treatments. These data indicate that under the conditions of this experiment, Zn and Cr supplementation may influence feedlot cattle growth and carcass characteristics.

Forty Pelibuey × Kathdin lambs (35.5 ± 0.4 kg) were used in a 56-day feeding experiment to assess the effects of feeding different levels of chromium-enriched live yeast (Cr-YC) on growth performance, dietary energetics, carcass traits and visceral organ mass. The Cr-YC source contained 5.5 × 109 colony forming units (CFU) and 0.40 mg of Cr per gram. Treatments consisted of a dry rolled corn-based finishing diet supplemented with 0, 1, 2 or 3 g Cr-YC/lamb.day. Total daily dosages were: 5.5 × 109 CFU and 0.4 mg; 1.1 × 1010 CFU and 0.8 mg Cr, and 1.65 × 1010 CFU and 1.2 mg Cr for supplementation levels of 1, 2 or 3 g Cr-YC/lamb.day, respectively. There were no treatments effects on dry matter intake. As the level of Cr-YC supplementation increased, average daily gain, gain to feed and dietary net energy were linearly increased, and observed/expected dry matter intake was linearly decreased. Chromium-enriched live yeast supplementation increased empty bodyweight (EBW), gastrointestinal fill and full viscera weight, but did not influence organ weights as a proportion of EBW (g/kg EBW). Cr-YC level did not affect carcass length, backfat thickness, kidney, pelvic and heart fat or body wall thickness, but increased hot carcass weight and longissimus muscle area. In general, treatment effects on percentage yield of wholesale cuts (tissue weight as a percentage of cold carcass weight) were small. However, Cr-YC decreased percentage flank. Chromium-enriched yeast supplementation enhances growth rate, longissimus muscle area, and dietary energetic efficiency in finishing feedlot lambs.

This study investigated the effect of weaning age on carcass characteristics of crossbred piglets reared up to 70 kg body weight (BW) under intensive system. A total of 24 piglets were used in a completely randomized design. The experiment comprised three treatments: piglets weaned at 21, 28, and 35 days of age with four replicates each with two piglets (castrate and female). At 70 kg BW two piglets (castrate and female) were randomly selected from each replicate and sacrificed for carcass evaluation. Hot carcass weight (HCW) was measured and thereafter dressing out percentage was calculated. Carcasses were chilled at 7 0C for 24 hours to determine cold dressed weight (CDW). Carcasses were cut into the left and right halves along the median line. The left half of the carcass was used to measure carcass length (CRLTH), average backfat depth and longissimus muscle area (LMA) at the 10th rib, while the right half of the carcass was physically dissected into bone, muscle and fat and thereafter tissue ratios calculated. Longissimus muscle was removed at the 10th and 11th ribs from the left half of the carcass for chemical composition analysis. Data were analysed using General Linear Model. Weaning age had no influence (p > 0.05) on HCW, dressing percentage, CDW, CRLTH, average backfat thickness, average backfat depth, LMA and carcass lean percentage. No significant differences (p > 0.05) were observed on average percentages of bone, muscle and fat tissue and their tissue ratios. Weaning age did not influence (p > 0.05) moisture, protein, fat and ash contents of the meat. In addition, weaning age had no (p > 0.05) effect on carcass characteristics, physical and chemical body composition of meat. These results indicate that piglets can be weaned at 21, 28 and 35 days of age without detrimental effects on carcass characteristics, physical and chemical body composition of pork.

Ninety-six Charolais and Limousin steers were used to evaluate 75% grain (whole barley or corn) diets and two slaughter endpoints (7 mm backfat or 568 kg liveweight) in an experiment designed to constrain carcass weights to under approximately 341 kg yet produce optimal beef quality. Each breed was represented by eight progeny from each of six sires. The trial was terminated after 281 d feeding regardless of individual steers attaining designated slaughter endpoints. Limited availability of dietary energy in whole-barley diets resulted in decreased (P < 0.01) average daily gain and increased (P < 0.01) dry matter intake, feed/gain and days on feed for barley- vs. corn-fed cattle. Charolais outgained (P < 0.05) Limousin but dry matter intake was similar on a g BW00.75 basis. Feeding to 568 kg liveweight was associated with high (P < 0.10) ADG and decreased (P < 0.05) feed/gain compared with feeding to 7 mm. Corn feeding increased (P < 0.001) carcass weights, fat deposition and longissimus muscle area. Lean deposition was greater (P < 0.01) in Limousin than Charolais. Taste panel assessment of tenderness, flavour and juiciness in longissimus muscle was generally not affected (P > 0.10) by diet, breed or slaughter endpoint. Twelve primal ribs from each of Agriculture Canada's marbling classifications (A, AA, AAA) were purchased and processed identically to ribs from the test cattle. Shear and tenderness scores were similar (P > 0.10) across test cattle and purchased ribs, despite intramuscular fat contents of 20.2, 27.1, 35.6 and 49.7 g kg−1 respectively, for test cattle and trace, slight and small marbled ribs. Slight and small marbled ribs did have higher (P < 0.05) taste panel scores for initial juiciness and flavour than ribs from the test cattle. While 26% of carcasses from test cattle graded Canada B1 due to either inadequate finish or marbling, similar tenderness and shear scores were probably due to age of test cattle at slaughter which averaged 481 ± 45 d plus the fact that all roasts were aged 7 d prior to freezing. Abstract The objectives of this trial were to evaluate the effect of corn processing during the finishing phase on feedlot cattle performance and carcass characteristics. We hypothesized that steers fed dry-rolled corn would have better feed efficiency (less feed necessary to the same amount of gain) than steers fed whole shelled corn. Ninety-five backgrounded Angus-cross cattle, (initial body weight (BW) = 263 ± 9.8 kg) were used in a randomized complete block design in a feedlot setting. Cattle were divided in to 3 blocks: heifers (n = 31, 4 pens; initial BW = 267 ± 1.3 kg), light steers (n = 32, 4 pens; initial BW = 253 ± 1.3 kg), and heavy steers (n = 32, 4 pens; initial BW = 279 ± 1.4 kg). Diets contained 70% corn (experimental treatment), 15% dried distiller’s grains with solubles, 7% grass hay, and 8% supplement, on a dry matter basis. Cattle were fed for 217, 224, and 231 ± 8 d for the heifer, heavy steer, and light steer blocks, respectively. Two pens within each block were randomly assigned to one of the following treatments: 1) dry-rolled corn (DRC) or 2) whole shelled corn (WSC). Animal growth performance and carcass characteristics were analyzed using the MIXED procedure of SAS, including the fixed effect of treatment. Pen and block were included as random effects. Carcass characteristics USDA Yield Grade and Quality Grade distributions were compared using the GLIMMIX procedure of using the same model than the growth performance data. Data are presented as LSMeans. Cattle fed DRC had greater average daily gain (ADG; P = 0.02) and final BW (P &lt; 0.01) when compared with cattle fed WSC. Even though ADG was greater for the DRC treatment, feed efficiency was similar (P = 0.45) because dry matter intake (DMI) was also greater (P = 0.04) for DRC when compared with the WSC treatment. Cattle fed DRC also had greater hot carcass weight (P &lt; 0.01), dressing percentage (P &lt; 0.01), and Longissimus dorsi muscle area (LMA; P &lt; 0.01) than cattle fed WSC. No differences (P ≥ 0.18) were observed for marbling score, USDA Yield Grade or USDA Quality Grade. In conclusion, feeding DRC to feedlot cattle improved ADG, hot carcass weight, and LMA, without affecting feed efficiency or meat quality.

This study was carried out at the Abu Ghraib sheep and goat breeding station to study the effect of adding different levels of zinc (0, 15, 20 and 25 mg/kg. DM) which type of radians: concentrate diets 25% or alfalfa hay 75% in the performance of local goat females and some carcass characteristics of goat females. The animals were divided into four groups (T1) fed free of additives and T2 fed 15 mg zinc/kg.DM and T3 and T4 groups fed 20 and 25 mg/kg.DM of zinc. The results showed no significant effect of adding zinc to the diet on the total feed intake for all nutrients except the dry matter intake (g/ kg) that were increasing significant (P˂0.01) For all groups of adding zinc, Also the results showed that there were increase significant (P˂0.01) in some of the studied traits (total and daily weight and feed conversion ratio as well as the final weight of local goat females). The results also showed increase significant (P˂0.01) in some of the carcass characteristics (slaughter weight, empty body weight, warm carcass weight and the percentage of conversion based on body weight) compared with the T1 group.

This study was carried out to evaluate the effects of selection criteria for post-weaning daily gain (PWDG) and early sexual heifer precocity (PP14) on the performance, carcass traits and meat quality of Nellore bulls. In year one, 50 animals were selected according to their expected progeny differences (EPDs) for PWDG and grouped as high (HG) or low (LG) groups. In year two, 50 animals were selected according to EPD for PP14 and also grouped as high (HP) or low (LP). After slaughter, samples of the longissimus muscle area (LMA) were used to evaluate meat quality. Most of performance traits were not affected by the selection criteria. However, the HG group had higher dressing percentage (p = 0.028), LMA (p = 0.02) and fat trim in the forequarter (p = 0.04) compared to the LG group. The HP group tended to have greater dry matter intake (p = 0.08), LMA (p = 0.05), rump fat (p = 0.04), heavier striploins (p = 0.07), tenderloins (p = 0.09) and briskets (p = 0.08) compared with LP group. In conclusion, the selection based on divergent groups PWDG or PP14 has a small impact on performance, carcass and meat quality traits.

Abstract The objectives of this experiment were to evaluate the effect of oscillating feeding time (OFT) and corn processing (CoP) on performance and carcass characteristics of feedlot cattle. One hundred sixty-five steers (initial body weight [BW] 277.2 ± 27.80 kg) were blocked by initial BW and allotted to 24 pens. Pens within each block were randomly assigned based on a 2 × 2 factorial arrangement of treatments. The two factors were CoP (whole shelled corn vs. ground corn [GC]) and feeding time (FT) (constant FT vs. 2 hours OFT). Animals were fed the same diet, only changing the CoP method depending on the treatment. Feed offered and feed refusals were collected daily. Body weight was collected at starting day of the experiment (d1) and every 28 d until the end of the experiment. At the end of the experiment, animals were harvested in a commercial slaughter facility, and carcass data were collected by a USDA grader. Animal growth performance and carcass characteristics data were analyzed with the PROC Mixed procedure (SAS) using CoP, FT, and their interaction as fixed variables; and treatments × pen within each block and block were considered random variables. There was no CoP by FT interaction differences (P &gt; 0.10) on animal growth performance variables, nor on hot carcass weight, back fat, rib eye area, or the percentage of kidney, pelvic, and heart fat. There was a tendency for an interaction (P = 0.08) for marbling score, where the steers from the GC processing fed on the oscillating time had a lesser marbling score than the other three treatments. Oscillating feeding time improved (P = 0.05) average daily gain; but did not affect (P ≥ 0.11) dry matter intake (DMI), nor carcass characteristics compared with feeding at a similar time every day. There were no effects (P ≥ 0.11) of CoP on growth performance, nor carcass characteristics. In conclusion, a 2-hour oscillation in FT might not decrease steer feedlot performance. This may be due to the high degree of control of DMI with feed bunk management.
