Ninety-six Charolais and Limousin steers were used to evaluate 75% grain (whole barley or corn) diets and two slaughter endpoints (7 mm backfat or 568 kg liveweight) in an experiment designed to constrain carcass weights to under approximately 341 kg yet produce optimal beef quality. Each breed was represented by eight progeny from each of six sires. The trial was terminated after 281 d feeding regardless of individual steers attaining designated slaughter endpoints. Limited availability of dietary energy in whole-barley diets resulted in decreased (P < 0.01) average daily gain and increased (P < 0.01) dry matter intake, feed/gain and days on feed for barley- vs. corn-fed cattle. Charolais outgained (P < 0.05) Limousin but dry matter intake was similar on a g BW00.75 basis. Feeding to 568 kg liveweight was associated with high (P < 0.10) ADG and decreased (P < 0.05) feed/gain compared with feeding to 7 mm. Corn feeding increased (P < 0.001) carcass weights, fat deposition and longissimus muscle area. Lean deposition was greater (P < 0.01) in Limousin than Charolais. Taste panel assessment of tenderness, flavour and juiciness in longissimus muscle was generally not affected (P > 0.10) by diet, breed or slaughter endpoint. Twelve primal ribs from each of Agriculture Canada's marbling classifications (A, AA, AAA) were purchased and processed identically to ribs from the test cattle. Shear and tenderness scores were similar (P > 0.10) across test cattle and purchased ribs, despite intramuscular fat contents of 20.2, 27.1, 35.6 and 49.7 g kg−1 respectively, for test cattle and trace, slight and small marbled ribs. Slight and small marbled ribs did have higher (P < 0.05) taste panel scores for initial juiciness and flavour than ribs from the test cattle. While 26% of carcasses from test cattle graded Canada B1 due to either inadequate finish or marbling, similar tenderness and shear scores were probably due to age of test cattle at slaughter which averaged 481 ± 45 d plus the fact that all roasts were aged 7 d prior to freezing. Recent research indicated that reduced carcass muscling and weight are associated with beef dark cutting. Existing data from a single farm (44 heifers, 136 steers) from three normal beef quality grades (Canada AAA, AA, A) and the dark cutting grade (Canada B4) (n = 35, 106, 28, and 11, respectively) were used to identify relationships between sex, live animal, and carcass characteristics and the incidence of dark cutting. Categorical modelling showed a trend (P = 0.106) for heifer carcasses to have a greater probability [11.36 ± 4.78% standard error of the mean (SEM)] of dark cutting than carcasses from steers (4.4 ± 1.76% SEM). Mixed model analysis of variance indicated dark cutting heifers weighed less than cattle from normal grades at weaning (P = 0.0229) and slaughter (P = 0.0295). Logistic regression revealed that the probability of each carcass grade occurring was influenced by dry matter intake (DMI) (P = 0.0034), and the probability of dark cutting was lowest (P = 0.0286) in cattle with carcasses greater than 300 kg. Results suggested that cattle at risk of dark cutting may be identified by weight, average daily gain (ADG), and feed intake.

This study was carried out to evaluate the effects of selection criteria for post-weaning daily gain (PWDG) and early sexual heifer precocity (PP14) on the performance, carcass traits and meat quality of Nellore bulls. In year one, 50 animals were selected according to their expected progeny differences (EPDs) for PWDG and grouped as high (HG) or low (LG) groups. In year two, 50 animals were selected according to EPD for PP14 and also grouped as high (HP) or low (LP). After slaughter, samples of the longissimus muscle area (LMA) were used to evaluate meat quality. Most of performance traits were not affected by the selection criteria. However, the HG group had higher dressing percentage (p = 0.028), LMA (p = 0.02) and fat trim in the forequarter (p = 0.04) compared to the LG group. The HP group tended to have greater dry matter intake (p = 0.08), LMA (p = 0.05), rump fat (p = 0.04), heavier striploins (p = 0.07), tenderloins (p = 0.09) and briskets (p = 0.08) compared with LP group. In conclusion, the selection based on divergent groups PWDG or PP14 has a small impact on performance, carcass and meat quality traits.

Abstract Objectives were to determine the effects of implants on growth performance, carcass characteristics, and estradiol-17β (E2) concentrations in the serum and longissimus muscle of Holstein steers fed a grain-based diet. Seventy Holstein steers (initial BW = 275 ± 6.4 kg) were assigned to treatments: (1) Implanted on d 0 with Component TE-IS with Tylan (Elanco Animal Health, Greenfield, IN) and on d 84 with Component TE-S with Tylan (Elanco Animal Health) of the experiment; or (2) not implanted (control). Implanted Holstein steers were heavier (P ≤ 0.01) than nonimplanted Holstein steers on d 84, at time of reimplant, and at the end of the experiment (d 186). Implanting Holstein steers increased (P &lt; 0.01) average daily gain (ADG) and dry matter intake (DMI) without affecting (P = 31) gain-to-feed ratio (G:F) when compared to steers that were not implanted. Carcasses from implanted Holstein steers had greater (P &lt; 0.01) hot carcass weights (HCW) and longissimus muscle (LM) area than carcasses from nonimplanted steers. Implanting did not affect (P ≥ 0.21) other carcass characteristics. There was an increase (P = 0.03) of 1.3 pg of E2/g of muscle when LM from implanted Holstein steers was compared to LM from nonimplanted steers. There was an implant × day interaction (P &lt; 0.01) in circulating serum E2 concentrations. Serum E2 concentrations remained relatively constant in nonimplanted Holstein steers. In implanted steers, serum E2 concentrations increased (P &lt; 0.01) after each implant. Serum E2 peaked at 28 d after the first implant and then declined after d 56. Implanting Holstein steers fed grain-based diets increased ADG, HCW, and LM area due to increased circulating E2 concentrations. Implants did increase LM E2 concentrations; however, changes were minimal compared to E2 concentrations in other human foods and were not great enough to warrant concerns regarding meat consumption from implanted animals.

Abstract The goal of this study was to evaluate the performance and the carcass traits of Nelore cattle progenies from bulls selected by contrasting traits for precocity, growth and muscularity, through the Expected Progeny Difference (EPD). One hundred and five Nelore bulls (initial weight of 350kg±15kg) and 20 months of age were confined and fed with same diet (73% of concentrate). Thirty-two animals were selected to create the contrasting groups for precocity, growth and muscularity (16 animals assigned as a low EPD group - LEPD and 16 animals assigned as a high EPD group - HEPD), based on the EPD of their parents. The ribeye area and backfat thickness were performed by ultrasonography of 12–13th rib fat thickness and longissimus muscle area (LMA), as well as rump fat thickness (RF) measurements. Animals were harvested after 100 days and during the deboning, meat cuts were weight for cutting yield. The animals selected for the HEPD group had greater average daily gain (P = 0.006), which can be explained by the higher feed intake (P = 0.006). However, there are no difference between groups for the final body weight (P = 0.254) and feed efficiency (P = 0.715). The LEPD group presented higher dressing percentage (P = 0.028). Although the groups evaluated did not presented difference in LMA (P = 0.329) and weight of longissimus muscle (P = 0.480), the weight of rump displayed heaviest in the HEPD (P = 0.037). There was no difference between groups for RF (P = 0.086). Nevertheless, backfat thickness was higher in HEPD group (P = 0.006). The present study indicates that Nelore cattle progenies, with parents displaying higher potential for precocity, growth, and muscularity, show greater backfat thickness and weightiest of rump than the other genetic backgrounds. The evaluation of the Aceh cattle bulls weight which compensated between forage and concentrate at Superior Livestock Place in IndrapuriABSTRACT. This research was conducted at Superior Livestock Place in Indrapuri District, Aceh Besar  which lasted for 42 days. It was started on November 28th 2012 until January 9th 2013. This research was aims to know about the average daily gain for Aceh cattle bulls which compensated between forage and concentrate by using 12 bulls aged 2-2,5 years old. The design was used a Randomized Design Groups with 4 feed treatments and 3 repetitions. The feed percentages between forage and concentrate are ration A (100% forages), B (80%)forages and 20% concentrates), C (60% forages and 40% concentrates), and D (40% forages and 60% concentrates). The research analysis data were obtained by using ANOVA (Analysis of Variance). The parameters which observed in this study was the average daily gain, consumption, conversion, and efficiency rations. The result showed that the ration dry matter intake highly significantly (P0,01) between treatment A (4,45 Kg), and B (3,61 Kg), C (2,72 Kg), and D (3,38 Kg), but the treatment B and D highly significantly than treatment C (P0,01), the best ration consumption were derived from treatment C. The body weight Kg/bull/day significantly (P0,05) between treatment A (0,47 Kg) and B (0,65 Kg), C (0,60 Kg), and D (0,61 Kg), the best average daily gain were derived from treatment B. The conversion ration showed that highly significantly (P0,01) between treatment A (9,55 Kg), and B (5,55 Kg), C (4,60 Kg), and D (5,59 Kg), the best ration conversion were derived treatment C. Similarly, the efficiency ration showed that highly significantly (P0,01) between treatment A (0,11%), and B (0,18%), C (0,22%), and D (0,18%), C is the best ration efficiency on the treatment.

Context The use of two feed additives, to maximise rumen fermentation, in finishing diets offered to feedlot cattle may positively impact performance. Aims This study, conducted at the São Paulo State University feedlot, Botucatu campus, Brazil, was designed to evaluate the effects of the combined use of monensin (MON; 30 mg/kg of dry matter; (DM)) and virginiamycin (VM; 25 mg/kg of DM) in high-concentrate diets during the adaptation and finishing periods on feedlot performance, carcass traits, feeding behaviour, blood gas profile, rumen morphometrics and apparent total tract digestibility of nutrients of Nellore cattle. Methods The experiment was designed as a completely randomised block, replicated six times (3 bulls/pen), in which 72 20 months of age yearling Nellore bulls (388.0 ± 31.1 kg) were fed in 24 pens for 90 days according to the treatments: (1) MON during the entire feeding period (T1), (2) MON + VM during adaptation and only VM during the finishing period (T2), (3) MON + VM during the entire feeding period (T3), and (4) VM during the adaptation and MON + VM during the finishing period (T4). The adaptation program consisted of ad libitum feeding of three diets over the adaptation period of 19 days with concentrate level increasing from 69% to 84% of diet DM. Key results Overall, bulls fed on T2 had a greater DM intake (P &lt; 0.01), final bodyweight (P = 0.04), average daily gain (P = 0.03), hot carcass weight (P &lt; 0.01), final Longissimus muscle area (P = 0.05), Longissimus muscle area daily gain (P = 0.01), improved carcass G:F (P &lt; 0.01) and increased dressing percentage (P &lt; 0.01). Similarly, bulls fed on T2 were faster to consume 1 kg of either DM (P &lt; 0.01) or neutral detergent fibre (P &lt; 0.01) after 60 days on feed. Furthermore, bulls fed on T2 presented a greater (P = 0.05) cell proliferation index in the rumen papillae. Conclusions According to the results, Nellore yearling bulls should be fed high-concentrate diets containing MON and VM during adaptation, and only VM during the finishing period to improve overall feedlot performance. Implications The use of both MON and VM proved to be helpful only during the adaptation period.

Abstract The aim of this trial was to evaluate the effect of encapsulated calcium ammonium nitrate as a partial substitute for soybean meals in the concentrate dry matter intake, average daily gain and feed efficiency of Nellore young bulls under grazing conditions, during the dry season. Sixty-four weaned Nellore (initial BW = 177.46±3.77 kg and 9 mo old) were used in a completely randomized assay. The study lasted 84 days on the dry season. Animals were allotted into 16 paddocks of 1.0 ha each of Urochloa brizantha, randomly assigned into one of two treatments: (CTL) supplement with 25% CP, without nitrate inclusion and; (ENP): supplement with 25% CP, with a inclusion of 50 g of encapsulated calcium ammonium nitrate to each 100 kg of body weight. Animals were fed with concentrate at 1.0% of body weight. Concentrate offered was monitored daily as well as his refusals were collected and weighed to determine daily concentrate dry matter intake (DMI) and feed efficiency (F:G). Animals were weighed every 28 d for calculating average daily gain (ADG). Data were analyzed as a completely randomized design, using ANOVA (α = 0.05). No effects of treatments (P &gt; 0.3487) were observed for final BW (246.69 kg). The same for concentrate dry matter intake (P &gt; 0.0550). Animals consumed 2.34 kg of supplement per day. The average daily gain (0.832 kg, P &gt; 0.2649) and feed efficiency (0.356 kg, P &gt; 0.7315) were not affected by the inclusion of nitrate. The inclusion of encapsulated calcium ammonium nitrate in supplement to Nellore young bulls under grazing conditions during the growing phase did not affect the performance.

Forty Pelibuey × Kathdin lambs (35.5 ± 0.4 kg) were used in a 56-day feeding experiment to assess the effects of feeding different levels of chromium-enriched live yeast (Cr-YC) on growth performance, dietary energetics, carcass traits and visceral organ mass. The Cr-YC source contained 5.5 × 109 colony forming units (CFU) and 0.40 mg of Cr per gram. Treatments consisted of a dry rolled corn-based finishing diet supplemented with 0, 1, 2 or 3 g Cr-YC/lamb.day. Total daily dosages were: 5.5 × 109 CFU and 0.4 mg; 1.1 × 1010 CFU and 0.8 mg Cr, and 1.65 × 1010 CFU and 1.2 mg Cr for supplementation levels of 1, 2 or 3 g Cr-YC/lamb.day, respectively. There were no treatments effects on dry matter intake. As the level of Cr-YC supplementation increased, average daily gain, gain to feed and dietary net energy were linearly increased, and observed/expected dry matter intake was linearly decreased. Chromium-enriched live yeast supplementation increased empty bodyweight (EBW), gastrointestinal fill and full viscera weight, but did not influence organ weights as a proportion of EBW (g/kg EBW). Cr-YC level did not affect carcass length, backfat thickness, kidney, pelvic and heart fat or body wall thickness, but increased hot carcass weight and longissimus muscle area. In general, treatment effects on percentage yield of wholesale cuts (tissue weight as a percentage of cold carcass weight) were small. However, Cr-YC decreased percentage flank. Chromium-enriched yeast supplementation enhances growth rate, longissimus muscle area, and dietary energetic efficiency in finishing feedlot lambs.

The objective was to evaluate the effect of partial or total replacement of Tifton 85 hay with fresh or dehydrated spineless cactus on performance and body weight components of sheep. Thirty hair lambs, with 19 kg ± 0.35 kg initial weight, were randomly divided into five treatments, namely: Tifton 85 Hay (HA); Tifton 85 Hay + fresh spineless cactus (HAFC); Tifton 85 Hay + dehydrated spineless cactus (HADC); fresh spineless cactus (FC); dehydrated spineless cactus (DC). In addition to the spineless cactus and hay, the complete mixture contained soybean meal, mineral salt and limestone in all treatments. Animals were confined for 75 days and then slaughtered. The weight of body components was recorded. Dry matter intake, total digestible nutrients intake and voluntary water intake were higher (p < 0.05) for the DC and HADC treatments. The average daily gain was 118 g day-1 and body weight at slaughter of 25.8 kg were not influenced (p > 0.05) by treatments. The cold carcass weight, rib eye area, weight and yield of the skin, liver, kidney and large intestine were higher (p < 0.05) for the DC and HADC treatments. Partial or total replacement of Tifton 85 hay with fresh or dehydrated spineless cactus, in complete diets for sheep, increases the weight of the cold carcass and non-carcass components.
