How should beef be produced? Consumer expectations and views on local beef production in South Tyrol (Italy)

PurposeLocal origin of meat acts as a key quality indicator for consumers. How an ideal local meat production should look like is rather unknown. The purpose of this study is to comprehensively analyse how an ideal local beef production should be constituted.Design/methodology/approach432 consumers from a North Italian province (South Tyrol) were questioned online about their views regarding (local) beef production. 12 attributes, from calf rearing to transport times, were presented with different options. Participants selected the most ideal options from their perspective. Further, willingness to pay for local beef and for the ideally produced local beef as well as the importance of local production for different food categories were assessed.FindingsThe results are quite heterogeneous but show that local production is especially of importance for eggs, dairy products and beef. Traceability to the farms, daily access to a paddock and access to pasture during summer, silage-free feeding, low transport times and suckler cow husbandry are aspects that are mostly selected as ideal. A price premium of 35% for locally produced beef and up to 50% for this ideal production seems reasonable for most consumers.Research limitations/implicationsThe study only includes South Tyrolean consumers and thus the validity is limited to this area. Although transferability to other regions can be assumed, future studies are necessary to confirm this assumption.Originality/valueThis is the first study analysing consumers expectations towards local beef production considering several production levels.

Purpose – Activities such as making personal phone calls, surfing on the internet, booking personal appointments or chatting with colleagues may or may not deviate attentions from work. With this in mind, the purpose of this paper is to examine gender differences and motivations behind personal activities employees do at work, as well as individuals’ perception of the time they spend doing these activities. Design/methodology/approach – Data were obtained from 35 individuals (M age=37.06 years; SD=7.80) from a Portuguese information technology company through an ethnographic method including a five-day non-participant direct observation (n=175 observations) and a questionnaire with open-ended questions. Findings – Results revealed that during a five-working-day period of eight hours per day, individuals spent around 58 minutes doing personal activities. During this time, individuals engaged mainly in socializing through conversation, internet use, smoking and taking coffee breaks. Results revealed that employees did not perceive the time they spent on non-work realted activities accurately, as the values of these perceptions were lower than the actual time. Moreover, through HLM, the findings showed that the time spent on conversation and internet use was moderated by the relationship between gender and the leisure vs home-related motivations associated with each personal activity developed at work. Originality/value – This study contributes to the literature on human resource management because it reveals how employees often perceive the time they spend on non-work related activities performed at work inaccurately. This study highlights the importance of including individual motivations when studying gender differences and personal activities performed at work. The current research discusses implications for practitioners and outlines suggestions for future studies.

Purpose Previous research has focused on the antecedents of fan loyalty or the link between fans and the team on sponsorship reactions, but no comprehensive framework has been developed to combine these perspectives. The purpose of this paper is to present an integrated framework of how team brand experience during the season impacts sponsorship brand experience. Design/methodology/approach To create the conceptual model, a comprehensive search of peer-reviewed articles was conducted in electronic databases and journal reference lists. The authors identified constructs from prior research aimed at understanding sponsorship effectiveness. These constructs not only included aspects of the sponsorship brand experience, but also aspects within the team brand experience that form the link between consumers’ responses derived from team-related stimuli and the responses evoked by sponsor-related stimuli. Findings This conceptual framework yields a set of 11 propositions regarding fans’ interactions with both team and sponsorship brands highlighting how to strengthen the bond between fans, teams, and sponsors. It provides a comprehensive understanding of this phenomenon and identifies opportunities to increase fan support and the appeal of professional teams to potential sponsors. Originality/value This study extends previous research by providing a unique conceptual framework that highlights the importance of understanding how fans view both the team brand and the sponsor brand. Several suggestions for future studies and strategies to increase the benefits for both teams and sponsors can be drawn from this framework.

Purpose This paper aims to present a review of articles on business negotiation published between 1995 and 2015. Design/methodology/approach This literature review is based on 490 articles on business negotiation. Findings When analyzing the conceptual underpinnings of this field, two paradigms emerge as dominant. The most prominent paradigm is a cognitive, psychological approach, typically relying on experiments and statistical testing of findings. The second dominating paradigm is a behavioral one, largely concerned with mathematical modeling and game-theoretical models. Practical implications Besides offering a description of the characteristics adhered to the business negotiation field, this paper will also suggest recommendations for further research and specify areas in which the research field needs further conceptual and empirical development. Originality/value This literature review serves to be the first representation of the characteristics adhered to the budding research field of business negotiation.

PurposeHumour and, in particular, jokes have received little serious academic scrutiny in the entrepreneurship literature to date. To address this, the purpose of this paper is to examine publicly available jokes about entrepreneurs to establish what such jokes tell us about how humour, particularly entrepreneur jokes shapes public perceptions of entrepreneurial identity. This is important because humour may be an integral part of an individual's entrepreneurial identity. The authors thus contribute to understandings of the complex nature of entrepreneurial identity and how public perceptions of humour influence such by encapsulating negative public perception of entrepreneurs which may act as a de-legitimisation mechanism.Design/methodology/approachFrom a representative sample of entrepreneur jokes located on the web using netnographic techniques, the authors apply a multi-disciplinary framework to analyse the material and its messages to establish how such jokes shape public perceptions.FindingsThe findings suggest that jokes convey a pejorative message about how entrepreneurs are perceived by the public with the content and message of the jokes being negative and derogatory. Common themes contained in the punchlines include – criminality, greed, dishonesty, hubris, stupidity, misfortune, ridicule and deviousness – all of which may de-legitimise generic entrepreneurial identity. In the process, the authors uncovered liminal aspects of joke telling and consumption in that the perception of jokes about entrepreneurs relate to the time and context in which the joke is told given that situational cleverness is a key facet of such jokes. In addition, the authors discuss variations across jokes.Research limitations/implicationsThe authors discuss learning outcomes for future research and potential future studies into humour in an entrepreneurial context.Originality/valueThis study places humour and joking on the research stage, making an incremental contribution. The authors add to the literature on the use of entrepreneurial humour and in particular in relation to how jokes influence public perception of entrepreneurs. From the data collected, the authors develop some fresh insights into the variation and range of entrepreneurship related jokes accessible online.

Purpose This study aims to look at how the intention of a person when facing a dilemma to choose a good outcome (utilitarian) or a good and ethical process regardless of the outcome (deontological) by raising the case of PT. Asuransi Jiwasraya (Jiwasraya). Design/methodology/approach This study was conducted using a literature study method where researchers will analyze through previous research and news related to ethics, psychology and Jiwasraya cases. Findings In the Jiwasraya case, it can be said that the deontology principle has been violated, but the utilitarian principle also cannot provide benefits to the parties who should benefit, namely, the premium payers and the owners of third parties funds. In terms of intentions, at first, Jiwasraya’s management may intend to save and provide benefits to customers and the public who deposit funds at Jiwasraya (utilitarian principle). However, over time, managers choose to “allow” conditions to occur and even begin to engage in activities to take advantage of certain parties and groups by taking policies that are not by the rules (violating deontological principles) for personal gain. Research limitations/implications This study only discusses the Jiwasraya case through financial and accounting reports. Future studies can continue this research by looking at the Jiwasraya case through the law and legislation to obtain a complete picture. Practical implications With this research, it is hoped that the authors can better understand that the dilemma the author faces is rooted in the limitations of the abilities as humans; the ethics will influence all intentions for the choices the authors make. Originality/value This research uses case studies that occurred in Indonesia, the discussion is carried out using a utilitarian and deontological approach that has never been discussed regarding the Jiwasraya case before.

Purpose – The purpose of this paper is to present our viewpoint on the research on foreignness and provide directions for future studies. We suggest that research on foreignness can be expanded by exploring its complexity. Design/methodology/approach – This article takes the form of a viewpoint. Findings – We identify three facets of foreignness – foreignness effect (liabilities or assets) foreignness level (organizational or individual) and foreignness locus (external or internal to an entity), which have not been sufficiently examined in prior research. Originality/value – We discuss how these aspects can inform a novel research agenda in this area.

ABSTRACTFoodborne illnesses associated with pathogenic bacteria are a global public health and economic challenge. The diversity of microorganisms (pathogenic and nonpathogenic) that exists within the food and meat industries complicates efforts to understand pathogen ecology. Further, little is known about the interaction of pathogens within the microbiome throughout the meat production chain. Here, a metagenomic approach and shotgun sequencing technology were used as tools to detect pathogenic bacteria in environmental samples collected from the same groups of cattle at different longitudinal processing steps of the beef production chain: cattle entry to feedlot, exit from feedlot, cattle transport trucks, abattoir holding pens, and the end of the fabrication system. The log read counts classified as pathogens per million reads forSalmonella enterica,Listeria monocytogenes,Escherichia coli,Staphylococcus aureus,Clostridiumspp. (C. botulinumandC. perfringens), andCampylobacterspp. (C. jejuni,C. coli, andC. fetus) decreased over subsequential processing steps. Furthermore, the normalized read counts forS. enterica,E. coli, andC. botulinumwere greater in the final product than at the feedlots, indicating that the proportion of these bacteria increased (the effect on absolute numbers was unknown) within the remaining microbiome. From an ecological perspective, data indicated that shotgun metagenomics can be used to evaluate not only the microbiome but also shifts in pathogen populations during beef production. Nonetheless, there were several challenges in this analysis approach, one of the main ones being the identification of the specific pathogen from which the sequence reads originated, which makes this approach impractical for use in pathogen identification for regulatory and confirmation purposes.

Purpose In the age of information, where people can have an easy access to knowledge, the ethical and content-based examination of dietitians’ sharing in the social media is an important step in determining what to share in the social media in the future. The purpose of this study was to analyse the content of Instagram shares of dietitians, a profession group that is becoming more and more widespread in Turkey. Design/methodology/approach Publicly available dietitian Instagram profiles, aiming specifically at those with =500 followers, were included in the study. The hashtag was chosen as #onlinediyet (Turkish for online diet). A total of 1,986 images were identified for analysis. When these images were identified, 883 images were excluded. Thus, overall 1,103 Instagram images were chosen to analyse during a week’s period. Each Instagram image was classified into one of seven categories by authors as food, individual, nutrition information, motivational, miscellaneous, physical activity and recipe. Food and individual groups were also coded into subgroups. Findings A descriptive analysis of the 1,103 online-diet-related images shared by dietitians showed that 53.5 per cent of the images were in food category. There were no differences between female and male dietitians in terms of categories of shared images (p > 0.05). Dietitians also shared individual images (34.5 per cent) including weight loss follow-up (56.2 per cent), self-portrait (22.0 per cent) and conversation with clients (14.0 per cent) images on Instagram. Originality/value The results of this study set a baseline for future studies. Given the rapid growth of this platform in recent years, not only the field of dietetics but also other health-care fields would benefit from clear guidelines about what information can or cannot be shared on social media.

PurposeThe purpose of this paper is to optimise and characterise the sensory aspects of gelatos flavoured with different types of coffee preparations (brewed, espresso and soluble), to select the most acceptable formulation and investigate the influence of hedonic claims on the consumer acceptance of this product.Design/methodology/approachFirst, the optimal concentration of each coffee type (brewed, soluble and espresso) to be added to the gelato was determined using the just-about-right scale. Second, the acceptance and purchase intentions towards gelatos flavoured with different concentrations of each type of coffee were determined. Finally, the most acceptable concentration for each flavour was selected based on purchase intentions and three other hedonic claims (i.e. texture, flavour and overall impression).FindingsThe estimated optimal concentrations of coffee (in relation to syrup) were found to be 111.09, 135.31 and 59.38 per cent for brewed, espresso and soluble coffee, respectively. Gelatos flavoured with soluble coffee were accepted more readily and associated with higher purchase intentions based on the evaluated sensory attributes (i.e. colour, taste, texture, softness and overall impression). The sensory perceptions towards these gelatos did not change significantly based on the evaluated hedonic claims (“coffee”, “soluble coffee” and “gourmet coffee”). This reveals that consumers may not be influenced by specific information and/or hedonic claims in the case of coffee gelatos.Originality/valueBesides encouraging the availability of a variety of coffee products on the market, this work also supports future studies aimed at the optimization of coffee products from a sensory perspective.

Purpose This paper aims to apply a broader perspective of branding to foster new insights and develop strategies to address product counterfeiting. Design/methodology/approach A review of the counterfeiting and branding literature leads to the development of a new conceptual framework that incorporates proactive, collaborative processes, in addition to the traditional product branding approach. Findings The integrative framework provides a basis to develop innovative, proactive strategies that complement traditional branding approaches to address product counterfeiting. The complexity of an integrative framework (or network) offers more opportunities for the firm to co-create robust meaning with multiple stakeholders. Identity elements are readily copied, whereas meanings are not. These strategies help to control counterfeiting by developing deep and inimitable relationships between managers and other stakeholders in a marketing network. Research limitations/implications A research agenda is proposed to structure future studies on counterfeiting. Practical implications The framework outlines how to leverage collaboration between managers and brand stakeholders to complement conventional approaches to control counterfeiting based on traditional product branding. Originality/value This paper contributes to the growing body of counterfeiting and brand protection literature by adapting and applying contemporary integrative branding concepts, leading to novel strategies to address the issue.
