Experiences of international tourists with healthy signature foods: a case study in Malacca

Purpose The purpose of this paper is to investigate the experiences of international tourists with healthy signature food at a tourist destination, and explore the perceptions of food providers regarding the preparation of healthy signature foods. Healthy signature food at tourist destinations has become a crucial factor that can determine whether tourists revisit a tourist destination. The relevant literature review and Urry’s tourist gaze theory indicate that there is a lack of previous research on healthy signature foods among international tourists and food providers. The current study addresses this gap by providing a holistic understanding of healthy signature foods and how they have led to a culture of healthy eating in the tourism industry. Design/methodology/approach A case study was conducted in Malacca, a World UNESCO Heritage Site, to identify the experiences of international tourists with local signature foods. A purposive sampling method was selected to gather information from international tourists and food providers. The data were collected through semi-structured interviews to gain a detailed perspective of healthy signature foods. Findings The results revealed four thematic analysis outcomes, namely, memorable food experiences, food hygiene consciousness, cultural values and tourist happiness, which directly impact tourists’ satisfaction and intention to revisit. Additionally, aspects such as type of trip, trip frequency and the purpose of the trip influenced tourists’ experiences with healthy signature food. Furthermore, it was found that the selected food providers prepared their meals according to the standard procedures. Originality/value The current study extends Urry’s tourist gaze theory by exploring tourists’ perceptions of healthy signature food as well as exploring the way the food is prepared. Healthy signature food has much potential as a means of attracting and sustaining international tourists at tourist destinations. Furthermore, it strengthens the supply chain relationship between international tourists (customers) and food providers (suppliers) in the food tourism industry.

Purpose The purpose of this paper is to explore the relationship between global cities and international tourism with particular reference to the recent experiences of Tokyo which has recently seen a marked increase in arrivals. It addresses questions of the standing of Tokyo as a global city and tourist destination, how the two functions are connected and why changes are occurring. Design/methodology/approach The methodology employed is that of an empirical case study based on the analysis of published materials drawn from a diversity of sources. Findings The defining characteristics of global cities are generally conducive to their function as international tourist destinations. They possess a wealth of tourism resources and amenities which facilitate inbound tourist flows. Tokyo is a prominent example of a global city, but has tended to attract fewer visitors than others in that category. The recent significant growth in arrivals is attributed to changes in the tourism industry and wider environment, yet some challenges remain before it can catch up with its counterparts. Originality/value Fresh insights are afforded into the implications of global city status for tourism and the development of Tokyo as a destination which tends to have been neglected in the literature.

The objective of the analysis developed in this paper is to verify whether the sustainability of the hotel ospitality model contributes to the competitiveness of tourist destinations. The research question is: does the model of “albergo diffuso” satisfy the requirement for a social, economic and environmental sustainability? The research method adopted consisted in a survey with the submission of a questionnaire to a number of alberghi diffusi operating worldwide, that is 130 units of analysis. The submission period went from October to December 2016. Through the questionnaire submitted to the interviewees it has been possible to analyze the motivation for the business start-up as well as the characteristics of the entrepreneur, the managerial systems and the governance style. The results will be analyzed through the application of the Weaver model (2014; 2017) which is considered essential to evaluate the contribution of the albergo diffuso to tourism sustainability. The implementation of the Weaver matrix to evaluate the contribution of the albergo diffuso to the sustainability of a tourist destination is the original element of the paper. The paper discusses the implications of sustainability with particular regards to the “albergo diffuso”. Therefore, it would be suitable to expand the analysis to additional models of tourist hospitality present in the international tourism scenario

Trends in tourism development of the XXI century suggest that one of the promising areas related to the acquaintance with the production, cooking technology and tasting of national dishes and drinks is gastronomic tourism. The concept of forming a tourist product in the form of a gastronomic or culinary tour combines economic, social and cultural values of the territory, covers the climate, traditional agriculture and crafts, art, national customs, traditions and life. That is, gastronomic tourism fully contributes to the development of the tourism sector and is a means of activating the tourist destination. The article deals with the directions of gastronomic tourism development as a means of activating tourist destinations and supporting national producers through the integration of gastronomic tourism into local event resources. The relevance of these issues is determined by the lack of a holistic understanding of the concept of gastronomic tourism, the imperfection of existing recommendations and conclusions on its formation. The purpose of the article is to study the features of gastronomic tourism as a means of enhancing the development of tourism. The article determines that the basis of gastronomic tourism is the features of regional cuisine and culinary traditions of the tourist destination. The scientific novelty of the research results is the deepening of theoretical approaches to the study of gastronomic tourism - a new direction of cultural and cognitive tourism, which is relevant to combine with eco-tourism, tourism in protected areas, rural green tourism. After all, the latter have a large stock of cultural, culinary, authentic traditions that should be revived and developed. Gastronomic tours will form a new vision of tourism in the context of destination development. The article notes that from the point of view of organizing tourist activities, gastronomic tourism includes not only acquaintance with local cuisines of the region, original technologies of local food organization, culinary processes and food traditions, acquaintance with local products, but also the opportunity for tourists to participate in cooking. national dishes, visiting culinary festivals, various types of tastings and competitions. Purpose The purpose of this study is to explore how creative-cultural hotels can achieve sustainable service design through the development of a holistic conceptual framework. Design/methodology/approach The authors created this framework using a qualitative exploratory multi-case study of four creative-cultural hotels in Taiwan. The framework comprises strategic, organizational and interface levels to describe the design process and implementation of service offerings that co-create value within a multifaceted network of actors. Findings The findings of this study show that incorporating local arts and culture into sustainable service design can generate unique value and experiences for customers. From the perspective of sustainable development, these hotels seek to add value by using local creative and cultural resources to ensure that they have a sound commercial base from which to showcase their cultural features. As such, this study recommends that the hotel industry shift its focus to a paradigm that provides a strategic and sustainability-framed vision to create value for society while protecting local natural and cultural resources. Originality/value This multilevel model reframes the development of customer value constellations through a holistic understanding of user experience, eco-design practice, service encounters aligned with user touchpoints and front-line employee capabilities. To integrate the perspectives of both service providers and their customers, the proposed model embeds these stakeholders within a single model through the vehicle of local value co-creation. This holistic framework can assist in designing sustainable service within the hospitality industry to deliver better services and customer experiences. The findings provide an illustration of how the proposed multilevel sustainable-development-oriented service design framework can serve as a useful tool in guiding hotels toward corporate sustainability.

Purpose The purpose of this paper is to identify features of online content that create engagement amongst consumers by exploring online customer feedback from the world’s leading tourist website (s). This paper also attempts to unveil the factors based on customer reviews, which will be vital for the tourism industry professionals to promote and position India’s tourist destinations. Design/methodology/approach This paper involves an analysis of customer feedback from TripAdvisor.com. The approach to research is exploratory and attempts to uncover critical factors arising out of rising visitor experience in the digital media sphere. Findings Key factors are nuanced around service quality of the destination image. Identified factors that need the attention of the policymakers, site management and service professionals at large are fairness of price, distractions/irritants and varied expectations of the international and national tourists. Practical implications The findings will have substantial implications for the policymakers, the site management and service professionals. Research outcomes are based on the analysis of real customer reviews hence makes this study vital for decision-makers as well as for academic researchers working in this area. Originality/value This study used the real tourist’s data from TripAdvisor.com. The customer’s postings on the website are those of verified visitors. This paper should help in developing a thoughtful discussion around positioning India as a preferred destination in the online arena aiming at future tourists.

Purpose This study aims to cover issues regarding traveling to a tourist destination which has seen war and terrorism. These problems can be addressed altogether, as they are interrelated. Based on tourists’ opinions, this paper aims to focus on measures or steps that can be taken to ensure changing their perceptions about a certain destination. Design/methodology/approach This study targets tourism experts for their opinions regarding the measures most necessary to change the perceptions of tourists. Their opinions were extracted through a questionnaire based on three criteria with four alternatives. Furthermore, raw data extracted are studied using the Fuzzy-VIKOR technique to rank the alternatives in order of importance. Moreover, the questionnaire also aims to know the perception of participants by asking them what would make them trust a destination with a history of terrorism. Findings The problems captivate the attention of government, guiding them to ensure that they need to focus more on physical security of tourists if they expect tourism industry to thrive. It was found that the steps needed to be taken are in the areas of international trade, cultural exchange programs and social media advertising. Originality/value Research based on improving tourist perception of Pakistan to develop Pakistan as a tourist destination is scarce. The study takes four different alternatives into account for image recovery and based on those alternatives, it provides a unique solution to the government in this regard with the necessary steps they need to take and attempts to help the government ensure tourism expansion in the country.

Indonesia is an archipelago country with a sea larger than the mainland, so it is undeniable that in Indonesia there are many fisherman settlements. Often fishermen settlements in Indonesia are marginalized in the development of maritime and service industries and even become victims of the activities of the utilization of coastal areas by the private sector engaged in tourism, industry, and services. The fisherman settlement community is not getting a positive impact from the development, therefore this study aims so that the fisherman settlement community can get a positive impact from the development of the surrounding area. This research takes a case study in the fisherman settlements of Kingking and Karangsari in Tuban Regency, East Java. The approach used in this research is the urban assemblage approach to reveal socio-cultural knits as a cultural force that shapes the sustainability of the place. The urban assemblage approach will be supported by search methods which will then be analyzed descriptively qualitatively. The search was carried out through literature review and field surveys. This research presents the results in the form of a mapping of knits between culture, social, the economy as the cultural strength of the Kingking and Karangsari fisherman settlements with the surrounding tourist areas. The results of this study can be considered by the government and local communities in planning the development of coastal areas or fisherman settlements into tourist destinations.

PurposeThis paper explains how servitization disrupts long-established internal and external boundaries of product-focused manufacturers and investigates the root causes of servitization challenges.Design/methodology/approachThe authors draw from the collective experiences of 20 senior executives from ten multinational manufacturers involved in servitization, using a multiple case study approach, and employ a codebook thematic analysis technique.FindingsThe authors develop an integrative framework based on the theoretical notions of power, competency and identity boundaries to offer insights into the root causes of various servitization-related challenges.Research limitations/implicationsAlthough the extant literature discusses servitization challenges, it does not examine the underlying root causes that create them in the first place. This study contributes to the extant research by establishing rational links between organisational boundaries (internal and external) and servitization challenges in the interest of building a coherent and systematically integrated body of theory that can be successfully applied and built upon by future research.Practical implicationsThis study provides a foundation for managers to recognise, anticipate and systematically manage various boundary-related challenges triggered by servitization.Originality/valueIt is one of the first studies to employ the concept of organisational boundary to understand the challenges created by servitization and to account for both internal (between different functions of the same organisation) and external boundaries (between an organisation and its external stakeholders) to establish a holistic understanding of the impacts of servitization on manufacturers.

Purpose – The purpose of this paper is to present an innovative study with a twofold focus: on highly escalated family business (FB) conflicts and on the interactions between conflicts and the failure of the company as FB. The authors devoted this paper to the question of how family-related conflicts are connected with the demise of FB. Conflicts constitute an essential part of every FB and may definitely have the power to superimpose the performance of the FB as well as the family life in a destructive way. Especially, highly escalated so called relationship conflicts can be seen as one reason for the failure of FB. Design/methodology/approach – The research aims at analysing the meaning of conflict in FB with respect to the failure of the FB. Therefore, the authors use an explorative case study approach. The study is based on a total of five case studies. As the authors use theory of social systems as a theoretical background, the authors focused in the analysis in all cases on patterns rather than on individual characteristics. Findings – As an essential part of the study the authors formulated eight hypotheses describing specific patterns of the conflict process as a communicative system. These hypotheses convey a comprehensible impression of the effects conflicts may have within FB and present a number of new facets of conflict dynamics and patterns of escalation in FB. Originality/value – In particular, the authors provide new insights into the dynamics of highly destructive forms of conflicts in FB and the relationship between family-related conflicts and the failure of FB. The authors also pave the way for future research that aim to develop a more holistic understanding about when and why the outcomes from family and business systems will conflict or be harmonious.
