How does a destination’s food image serve the common targets of the UNESCO creative cities network?

Purpose As one of the United Nations Educational, Scientific and Cultural Organization initiatives, the creative cities network (CCN) declares the cities that are creative in the contexts of music, gastronomy, design, etc., with the aim of promoting cooperation amongst the member cities and maintaining sustainable urban development. This study aims to identify the destination food image of Gaziantep in Turkey, which is a member gastronomy city of the CCN since 2015. Identified destination food image elements were connected to the common targets of the CCN to show how the city may contribute to the network objectives. Design/methodology/approach A two-stage research process was used in the study. First, qualitative approach was adopted for the clarification of projected and perceived destination food image elements. Projected image elements were derived from a content analysis performed on a totally 113 official, semi-official and unofficial online documents in Turkish and English. Perceived destination food image elements were identified by face-to-face interviews, conducted on 10 participants. As a result, 18 projected and 20 perceived destination food image elements were obtained. These were then grouped under 4 main and 22 sub-categories. At the second stage, destination food image elements were matched with common targets of the CCN. Findings Destination food image elements, obtained by two qualitative studies, are grouped under 4 main and 22 sub-categories as follows: gastronomic identity (with sub-categories of destination’s identity and local culinary culture); diversity of the destination (with sub-categories of attractiveness of the local food, ease of promotion and high brand value); gastronomic attractions (with sub-categories of restaurants and cafes, culinary museums, farmer markets, orchards, gastronomy tours, gastronomy events (e.g. festivals, competitions), culinary education, books on gastronomy, certification systems, organizations, street foods and vendors and handmade or homemade foods); and qualified workforce and stakeholders (with sub-categories of expert chefs and cooks, specialist suppliers, service personnel, locals and local authorities). These are then connected to the common CCN targets (e.g. cuisine, tourism and festivals; extension of the creative value chain; fostering cultural creativity; and sustainability). Originality/value This is one of the early research attempts in examining a member gastronomy city’s food image elements and the role that they played in the success of the CCN’s common targets. Moreover, the study contributes to the literature on the identification of (projected and perceived) destination food image by using content analysis.

Purpose It has recently become more acknowledged that there is a quality of “messiness” to the qualitative research process. The purpose of this paper is to introduce the fieldpath approach—a hermeneutically inspired framework—to account for the non-linearity, uncertainty and ambiguity of the research process. Design/methodology/approach This conceptual paper reviews how the scope of hermeneutics has been partly misunderstood. The paper discusses how the scope of hermeneutics has lately been expanded by works such as Günter Figal’s (2010) Objectivity: The Hermeneutical and Philosophy. Findings The fieldpath approach proposes that a heightened relation to materiality enables the messiness of the process to be preserved, while at the same time offering a way to find one’s footing in the midst of ontologically incomplete phenomena that are still—in a processual fashion—forming and becoming. Research limitations/implications This is a conceptual paper. In addition to the research mentioned here, more studies would be needed to legitimise, test and refine the approach. Practical implications Objectivity provides an additional criterion for researchers to lean on when facing the non-linearity and unexpected turns inherent in the qualitative research process. Social implications The stress on materiality involves an ethical dimension. Post-human ethics are concerned with the future environmental consequences and sustainability of the material world. The way that matter matters in our methodologies is of primary importance. Originality/value First, the paper emphasises that hermeneutics, contrary to the common perception, does offer criteria for evaluating between interpretations. Second, it introduces the notion of hermeneutic objectivity, which stresses the importance of materiality for interpretations. Third, it introduces the fieldpath approach, which, based on the previous criterion of hermeneutic objectivity, allows for the messiness of the research process, while also preserving a tight grip on the hermeneutic imperative of “understanding in a new way”.

Purpose The purpose of this paper is to examine and understand the experiences of travelers to Gallipoli, by analyzing their online comments and reviews. Design/methodology/approach The data were garnered from the well-known online user blog TripAdvisor. Data, concerning visiting the Gallipoli Peninsula, were retrieved from (n=330) travelers’ reviews and comments, and were examined using content analysis to elicit and identify their experiences. Findings Overall, the travelers’ reviews and comments mostly conveyed emotional and nostalgic experiences. Further, the travelers’ nostalgic experiences of Gallipoli emerged as historical nostalgia deriving from the personal attachment of travelers to the site. Research limitations/implications The data have shown that the experiences of travelers to Gallipoli can mostly be identified as emotional, which are generally consistent with the current literature. This paper utilized traveler reviews and comments on TripAdvisor, left by tourists who had previously visited Gallipoli, and this represents the limitation of the present study. Thus, to better understand the experiences of travelers visiting Gallipoli, with regard to their psychological aspect, future research should be conducted with travelers either through face-to-face interviews or via a survey. Originality/value Despite its significance for dark tourists, limited research has been carried out that deals with the experiences of travelers visiting the Gallipoli battlefield. As such, this is the first research project designed to highlight the experience of dark tourism, under the concept of nostalgic tourism, by providing valuable data and a deeper understanding of the field.

Purpose Whilst the existing literature focuses on developing prevention mechanisms for banks, this paper aims to show how feasible it still is in Austria, Germany, Liechtenstein and Switzerland to finance terrorism without getting detected. Design/methodology/approach A three-step research process, including both qualitative and quantitative methods, was applied. The empirical findings are based upon qualitative content analysis of 15 informal interviews with illegal financial services providers and 15 formal interviews with compliance experts and law enforcement officers. Findings During those interviews, concrete and specific methods of financing terrorism and limiting the risks of facing a criminal prosecution were discussed. The interviews were analyzed based upon a qualitative content analysis. To assess the risk, which criminals, a quantitative survey among 181 compliance officers was conducted to determine what leads to investigations. Research limitations/implications The findings are limited to the 30 interviewees’ and 181 survey participants’ perspective. Practical implications The practical implications include suggestions for providing law enforcement and intelligence agencies with new tools, such as remote online searches of electronic devices. Originality/value Whilst the empirical findings are based upon Austria, Germany, Liechtenstein and Switzerland, the results could be applied on European level.

Purpose – Low- and medium-technology sectors' (LMTs) role in modern economies has been overshadowed by the argument relating knowledge creation to R&D and thus to high-tech industries. Nevertheless, whereas a broader definition of innovation has enabled LMTs to emerge as innovative environments, a blind reliance on non-R&D-based indicators may be harmful too by neglecting LMTs' contribution to the development of cutting-edge, R&D-based knowledge. This paper aims to provide answers to the following questions: do LMTs innovate? Do they induce high-tech innovations across other sectors? Do networks have an impact on LMTs' innovation commitment? Can LMTs' innovation commitment be related to a better performance? Design/methodology/approach – The research method used in this work was based on a case study approach using in-depth face-to-face interviews with representatives from two footwear companies and one technology supplier. Findings – Collaboration with relevant stakeholders along the footwear value chain proved fundamental to the creation of innovation opportunities for all parties involved. Both footwear companies have embraced innovation strategies, allowing them to take over new functions along the value chain and build successful international paths. These strategies involved active participation in cutting-edge, high-tech knowledge prompting innovation at higher-tech companies too. Research limitations/implications – The paper fails to establish a clear causative relationship between companies' performance and their R&DI commitment. In addition, due to the number of companies involved in the study, the findings cannot be simply extrapolated to the whole Portuguese footwear sector. Originality/value – The paper highlights the commitment to innovation in a traditional sector and explores an underresearched topic – that of LMTs' involvement in R&D activities.

Purpose The purpose of this paper is to analyze the value chain activities of shrimp firms in Bangladesh, and mapping the Porter’s (1985) value chain framework to see if it works or not. The present study identifies the gap, synthesizes and analyzes those gaps which lead the firms to create more values from firms to consumers. Design/methodology/approach Interviews were conducted with the shrimp industry managers in the southern region of Bangladesh. Exploratory qualitative research method was used and the questionnaire was semi-structured. Data were gathered from 43 firm managers. After sending multiple phone calls and face to face meeting, the response rate was 35.83 percentages. Findings Poor transportation, communication gap between the stakeholders, shortage of raw shrimps and lack of quality standard were the areas where shrimp industries were suffering. It was found that some of the primary and secondary activities of shrimp industries did not map with Porter’s framework. Based on Porter’s framework, the study suggested that analyzing and synthesizing those gaps can lead the firm more value and competitive advantages. Research limitations/implications Limitations include a lack of knowledge on value chain and shortages of raw materials for the processing plants. Moreover, the sample size was small for this exploratory study. Practical implications Shrimp industries will learn standard value chain activities, and identify the gaps based on the mapping of Porter’s value chain. Originality/value Using Porter’s value chain this is the first empirical study in the shrimp firms in Bangladesh. The primary research contribution is the revised theoretical framework which can be used for further research on shrimp industries in Bangladesh.

Purpose The purpose of this paper is to propose a conceptual framework of experience co-creation that captures the multi-dimensionality of this construct, as well as a research process for defining of the antecedents of experience co-creation. Design/methodology/approach The framework of experience co-creation was conceptualized by means of a literature review. Subsequently, this framework was used as the conceptual basis for a qualitative content analysis of 66 empirical papers investigating alternative consumption models (ACMs), such as renting, remanufacturing, and second-hand models. Findings The qualitative content analysis resulted in 12 categories related to the consumer and 9 related to the ACM offerings that represent the antecedents of experience co-creation. These categories provide evidence that, to a large extent, the developed conceptual framework allows one to capture the multi-dimensionality of the experience co-creation construct. Research limitations/implications This study underscores the understanding of experience co-creation as a function of the characteristics of the offering – which are, in turn, a function of the consumers’ motives as determined by their lifeworlds – as well as to service design as an iterative approach to finding, creating and refining service offerings. Practical implications The investigation of the antecedents of experience co-creation can enable service providers to determine significant consumer market conditions for forecasting the suitability and viability of their offerings and to adjust their service designs accordingly. Originality/value This paper provides a step toward the operationalization of the dimension-related experience co-creation construct and presents an approach to defining the antecedents of experience co-creation by considering different research perspectives that can enhance service design research.

Purpose – This paper aims to assess the links among these supply chain constructs by conducting a full-scale systematic review of all supply chain management (SCM) literature reviews published in ten leading logistics, SCM and operations management journals from 1989 to 2012. Collaboration and integration are as central to SCM as risk and performance management. Design/methodology/approach – The authors apply content analysis to execute the systematic literature review on the sample of 103 articles, supplemented by contingency analysis. These approaches guarantee a replicable, rigorous and transparent research process and minimize researcher bias. The analytical categories required for the content analysis are defined along the constructs of collaboration/integration and risk/performance. Findings – As can be expected, the review highlights the key role of the two constructs in SCM. In this light, the research claims to provide statistical evidence of a link between the constructs of collaboration/integration and risk/performance, most notably between collaboration and performance, information sharing and rewards sharing, as well as integration and supply chain performance. Research limitations/implications – The study assesses the link between the constructs of collaboration/integration and risk/performance through research embedded in literature reviews, pinpointing research gaps and potential future research directions in the field. Contributing to SCM theory building, a thorough review provides statistical proof of the link between collaboration/integration and risk/performance. Originality/value – Although numerous literature reviews have been conducted in the past on the SCM constructs of collaboration/integration and risk/performance, no full review of literature reviews aiming to test a theoretical link in the here presented form has yet been undertaken to the authors’ knowledge.

PurposeThis paper reviews the literature, foundational works and current trends related to the adoption of open innovation (OI) practices in the food industry, with a particular focus on the food value chain, using a bibliometric and content analysis approach.Design/methodology/approachThis study is based on 84 published documents in the field of food OI obtained using the Scopus database. First, a bibliometric analysis was conducted using a bibliographic coupling and co-citation analysis approach to understand the common themes and key clusters of food OI research. It further highlighted authors, countries, journals, years of publication and subject areas to comprehend the scope of the established literature. Second, a content analysis was undertaken to examine the titles and abstracts of the documents to explore the intersection of OI and the food value chain.FindingsThis study provides an integrated framework of the intersection of OI and the food value chain, including information about under-researched and emerging areas in the field of food innovation. It also highlights the critical challenges associated with OI food research and practices.Practical implicationsPractitioners can use the findings to uncover areas with limited open innovation adoption in the food value chain. They can identify extended research areas to explore the food value chain using an open innovation perspective, in different contexts within the food and beverage (F&B) industry. The framework can also be used for conducting comparative studies of current food innovation trends across different contexts within the F&B industry.Originality/valueBy adopting a multi-step approach involving a computer-assisted bibliometric examination complemented by a manual review undertaken through the lens of the food value chain, this literature review provides fresh and unique insights into past and present research on OI in the food industry and paves the way for future studies by laying out specific research avenues.

This paper examines the local freshwater mussel, or kai (Batissa violacea), fishery value chain, its values and contribution to the livelihood of people in Viti Levu, Fiji. The assessment was performed through face-to-face interviews, with the use of semi-structured questionnaires administered to 125 actors. A walk through the value-chain was also conducted that confirmed the sites’ environmental conditions. Results revealed that even though the kai fishery is dominated by rural women, men were also employed as kai processors, transporting agents and exporters. This fishery generated at least 58 other employments through the 500 kai harvesters within the five major provinces understudy. These were drivers, boat builders, retailers, processors, exporters, and harvesters. Three sales pathways were identified that determined the revenues and profits: (i) harvesters sell own harvests directly to the consumer at the municipal markets, (ii) harvesters sell through intermediary traders to consumers, and (iii) harvesters sell through processors to supermarkets, hotels or exporters. When revenues and profits were calculated, harvesters earned much less, compared to intermediary traders, processors, and exporters. Major constraints include continuous reduction in catch size of kai, lack of transport, and marketing at the local municipal markets that require improvements.

Purpose The purpose of this paper is to examine the role and contribution of San Martin and Chazuta subnational governments in promoting development and internationalization of the cocoa and chocolate value chain from the stakeholders’ perceptions. This work was based on a qualitative approach in which information triangulation method, information processing with evaluation rubric and WebQDA software were used. The results showed that stakeholders of both value chains perceive that the subnational government’s actions taken to develop and internationalize these value chains are poorly valued and insufficient. Likewise, six internationalization barriers were identified in which two are perceived as the main limitations: low productivity levels and access to innovations and technology. These results contribute to enrich the decision-making process of political authorities and public officials from the San Martin subnational governments. Moreover, they provide information, according to the Peruvian national requirements, on the perceptions needed to rethink and improve the governmental services available, especially productive activities in the rainforest area (Presidencia del Consejo de Ministros, 2015; Wiener Fresco, 2010). This can improve or create new extension services to increase the quality of the Chazuta’s cocoa and chocolate products and to facilitate their entry into more demanding and profitable markets (Shapira, y otros, 2015). Design/methodology/approach This paper has been developed by using a qualitative approach with an exploratory and descriptive scope. The objective was to examine a study case of how subnational governments contribute in the promotion of development and internationalization of agro-industrial value chains as alternatives to illicit crops (Hernandez, Fernandez, & Baptista, 2010). The Chazuta case was selected because it is representative of the region in terms of coca eradication and is located between two regions of high biodiversity – Cordillera Escalera Regional Conservation Area and Cordillera Azul National Park. Findings One of the issues hindering the ability of the Chazuta cocoa and chocolate producers is based on their perception that the subnational governments’ efforts are focused on meeting already-established goals and little emphasis is placed on solving productive problems. On the other hand, at an articulation level, the most relevant efforts have been connecting the cocoa and chocolate customers to Chazuta producers through events. In spite of this, such events are not considered a permanent activity and the producers do not perceive that these mechanisms enable them to maintain these long-term trade relationships. This can be explained by the fact that Chazuta cocoa and chocolate organizations recognize that they still have incipient productive capacities to meet the foreign market’s demand. Furthermore, associations, cooperatives and SMEs are not able to maintain constant levels of production quality, except the family-based business. Knowledge and techniques provided by subnational governments and private organizations are not fully used or implemented by the associations’ members. This low level of knowledge application can be explained by cultural factors and also because the producers receive multiple and sometimes contradictory information from various providers of technology extension services. This leads to inadequate use or non-implementation of productivity improvements, thus generating a virtuous circle in which production and quality of the goods remain at low levels, which hinders their entry into demanding and profitable markets. Research limitations/implications This paper has been developed with a qualitative approach considering an exploratory and descriptive scope. Chazuta case was selected because it is representative of the region in terms of eradication achievements and it is located between two regions of high biodiversity. A rubric is an evaluation method of individuals or organizations performance, taking into consideration the evaluator’s pre-established criteria to determine if the objectives and goals are being met. Based on these criteria, evidence and performance information is collected. Following, performance is graded based on the researcher’s predetermined criteria and finally a merit-based judgment is made on the performance. Practical implications The results contribute to enrich decision making of political authorities and public officials from San Martin subnational governments. They provide information, according to Peruvian national requirements, on the perceptions needed to rethink and improve provided government services, especially in rainforest area productive activities. This adds up to improvement or creation of new extension services to increase the quality of Chazuta’s cocoa and chocolate products, and to facilitate their entry into more demanding and profitable markets. Social implications The situation of San Martín region and Chazuta district is contextualized and emphasis is given to socioeconomic conditions and the value of cocoa as an alternative crop to coca. From 1980 to early 2000, Peru lived a period of generalized violence due to narcoterrorism, which had large-scale outreach in southern highland and rainforest areas. To deal with this situation, subnational governments in collaboration with international cooperation decided to consolidate agro-industrial value chains in order to generate legal income for rural populations. For this purpose, alternative crop policies were implemented and San Martin region achieved the best results. Originality/value This fieldwork was carried out as part of the undergraduate thesis but after fieldwork, with the use of online software tool WebQDA, codes were created to systematize and quantify the collected information in the content manager. The codes were created taking into account assessment and evaluation variables. Each value represented a code referred to a performance level as perceived by Chazuta cocoa and chocolate value chains stakeholders.
