Growing demand for safe foods coupled with the intent to reduce food waste, seeing as much of it is lost through contamination by spoilage microorganisms, leads to research on antimicrobial agents such as LAE (Nα-lauroyl-L-arginine ethyl ester monohydrochloride). This compound has great antimicrobial potential against a range of microorganisms and, therefore, its use may be of extreme importance for the food industry in the search for antimicrobial agents with a broad spectrum of action. Thus, the objective of this article is to review the research involving LAE, when studied in vitro, in vivo and in the incorporation in different packaging in order to be released in a controlled manner for food products. In conclusion, despite the fact that it has a strong antimicrobial activity, it is still little known and is not accepted in all countries, including Brazil. With greater insight into this antimicrobial agent, more countries could use it, supporting worldwide in food preservation.

1. Six rumen and abomasal cannulated heifers were used to study the effects of intake on the fractional outflow rates (FOR) of chromium-mordanted cotton-seed meal (Cr-CSM) and meat meal (Cr-MM), CrEDTA, ytterbium and lignin from the rumen. Values of FOR of Cr-CSM and Cr-MM were combined with values of nitrogen disappearance from the protein supplements, placed in porous synthetic (nylon) bags and incubated within the rumen (P), to calculate effective degradation (D)of CSM and MM when fed to heifers eating sodium hydroxide-treated straw. Also, N degradation in vivo (V) was measured as the difference between abomasal N flow and the sum of flows of microbial and endogenous N.2. FOR were positively related to intake and differences between supplements were significant (p<0.01). FOR pertaining to high and low intakes respectively were 0.073 and 0.052 for Cr-CSM, 0.082 and 0.071 for Cr-MM, 0.030 and 0.023 for lignin, 0.082 and 0.073 for CrEDTA and 0, 044 and 0.035 for Yb.3. A rise of 28.8 and 13.4% in FOR of Cr-CSM and Cr-MM respectively, associated with an increase in intake from maintenance to 1.5 times maintenance, resulted in 10.7 and 2.2% reductions inD, 24 h after feeding, for CSM and MM respectively.4. With the exception of CSM at the high intake, estimates ofVwere underestimated byDand were 8.6–25.0% greater than theDvalues when time of incubation (t)= ∞. The two techniques, however, ranked the degradation of the two supplements in the same order at both levels of intake.5. Underestimation ofVbyDmay be attributable to underestimation ofP, overestimation of FOR (both resulting in underestimation ofD) or overestimation ofVdue to biases associated with the estimation of this part of the comparison. The relative importance of these factors remains to be determined.

Abstract Background Approximately 30% of patients on dialysis received combination therapy for their phosphate binder prescription; however, few studies for combined effects of phosphate binders are reported. For the purpose of evaluating the efficacy of combination therapy, we compared the efficacy of sucroferric oxyhydroxide (PA21) combined with calcium carbonate with that of lanthanum carbonate hydrate, sevelamer hydrochloride, and ferric citrate hydrate combined with calcium carbonate. Methods For in vitro studies, calcium carbonate and the other phosphate binders alone or in combination were stirred in phosphate solution at pH 2–8 for 2 h. After centrifuging the suspension, the phosphorus level in the supernatant was determined. For in vivo studies, rats were orally administered calcium carbonate and the other phosphate binders (except for sevelamer hydrochloride) alone or in combination, followed by oral administration of phosphate solution adjusted to pH 2 or 7. Serum samples were collected from the rats at predetermined timepoints and the serum phosphorus levels were determined and analyzed using a two-way analysis of variance. Results In the in vitro study, the measured phosphate-binding capacity of combining sevelamer hydrochloride, PA21, and lanthanum carbonate hydrate with calcium carbonate was approximately equal to or greater than the theoretical values under most conditions. Furthermore, these combined effects were insensitive to pH in that order. The measured phosphate-binding capacity of ferric citrate hydrate combined with calcium carbonate was smaller than the theoretical values, and the combination did not exhibit efficacy under any of the tested conditions. In the in vivo study, the combined effect of PA21 and calcium carbonate at both pH values and that of lanthanum carbonate hydrate and calcium carbonate at pH 2 were additive. In contrast, the combined effect of lanthanum carbonate hydrate and calcium carbonate at pH 7 and that of ferric citrate hydrate and calcium carbonate at pH 2 were antagonistic. Conclusions These results suggest that coadministration of PA21 and calcium carbonate showed good and relatively stable efficacy throughout the range of the gastrointestinal pH and that combining lanthanum carbonate hydrate and ferric citrate hydrate with calcium carbonate may not produce the expected efficacy under certain conditions.

Resistant bacteria to antimicrobials are increasingly emerging in medical, food industry and livestock environments. The present research work assesses the capability of Salmonella enterica var Typhimurium to become adapted under the exposure to a natural cauliflower antimicrobial by-product infusion in consecutive repeated exposure cycles. Caenorhabditis elegans was proposed as in vivo host-test organism to compare possible changes in the virulent pattern of the different rounds treated S. enterica var Typhimurium and untreated bacterial cells. According to the obtained results, S. enterica var Typhimurium was able to generate resistance against a repeated exposure to cauliflower by-product infusion 5% (w/v), increasing the resistance with the number of exposed repetitions. Meanwhile, at the first exposure, cauliflower by-product infusion was effective in reducing S. enterica var Typhimurium (≈1 log10 cycle), and S. enterica var Typhimurium became resistant to this natural antimicrobial after the second and third treatment-round and was able to grow (≈1 log10 cycle). In spite of the increased resistance observed for repeatedly treated bacteria, the present study reveals no changes on C. elegans infection effects between resistant and untreated S. enterica var Typhimurium, according to phenotypic parameters evaluation (lifespan duration and egg-laying).
