Sensory, Nutritive and Functional Properties of Sweet Cherry as Affected by Cultivar and Ripening Stage

In this article 11 commercial sweet cherry cultivars were selected to evaluate sensory, nutritive and functional properties over the maturation process on tree. Fruit quality was significantly different among cultivars and maturity stages at harvest, with the highest quality scores being found in the harvest which was 4 days beyond current commercial harvest maturity for all the cultivars tested. Taking into account all of the measured parameters (weight, firmness, color, acidity and total soluble solids), ‘NY-6479’, ‘Prime Giant’ and ‘Sunburst’ could be classified as having the highest quality in terms of sensory attributes. However, ‘Cristalina’ and ‘Sonata’ had the highest functional quality, as determined by the measurement of bioactive compound content and antioxidant capacity. We conclude that a delay of a few days in harvesting of sweet cherries would lead to achieve maximal nutritional (highest sugar and organic acid contents), sensory (greatest firmness and color development) and functional (greatest phenolics content, anthocyanins and antioxidant capacity) quality to provide both eating enjoyment and health benefits to the consumer.

Sour cherry (Prunus cerasus L.) cultivars grown in Hungary are of local origin while most sweet cherry cultivars in Hungary are introduced from other countries.A great phenotypic variability is displayed by both species. In the present study, we analyzed 10 sour and 9 sweet cherry cultivars for their antioxidant capacity, total polyphenolics (TPC) and total anthocyanin (TMAC) contents. In general, sour cherries showed higher levels of antioxidant capacity, TPC and TMAC. The anthocyanin contents varied from 0.16 to 6.85 and 1.41 to 127.56 mg/100 g for sweet and sour cherries, respectively. However, TMAC generally seems to have a limited influence on the antioxidant capacity of cherries.An amarelletype sour cherry, ‘Pipacs 1’ showed the highest antioxidant capacity (21.21mmolAA/l) and TPC (44.07mgGA/l) in contrast to its lowanthocyanin content. The detected diversity presents a choice that can satisfy different consumer preferences, and meet specific nutritional requirements.

Abstract This research was carried out to evaluate the phenolic composition, antioxidant capacities, sugars and organic acids content of sweet cherry cultivars (Bianca, Burlat, Johanna 1, Johanna 2, Kordia, Kunzes Kirsche, Merton Premier, Napoleon, Orleans, Regina, Rivan, Schneiders Spate Knorpelkirsche, Summit, Trebnitzer Lotkirsche) grown in Poland. Significant differences were observed between tested cultivars for all studied parameters. The sum of total soluble solids ranged from 14.3 (‘Burlat’) to 20.9 g 100 g−1 FW (‘Bianca’) and that of organic acids from 0.43 (‘Burlat’) to 0.76 g 100 g−1 FW (‘Napoleon’). Fruit of Bianca cultivar showed the highest levels of anthocyanin (108.5 mg 100 g−1 FW) while ‘Napoleon’ and ‘Kunzes Kirsche’ contained the lowest levels (1.5 and 1.8 mg 100 g−1 FW, respectively). Total phenolic contents ranged from 101 (‘Napoleon’) to 558 (‘Bianca’) mg 100 g−1 FW, tartaric esters from 26.2 (‘Summit’) to 66.5 (‘Bianca’) mg 100 g−1 FW and flavonoids from 7.9 (‘Summit’) to 49.1 (‘Bianca’) mg 100 g−1 FW. Bianca cultivar has also the highest free radical scavenging activity assayed by ABTS and DPPH methods 88 and 90% respectively.

Banjaluka region is characterized by a very rich diversity of old and autochthonous sweet cherry cultivars, which represent a very important genetic potential for future breeding programs. Autochthonous sweet cherry cultivars are spontaneously propagated and used in very few areas for production and consumption in the fresh condition. A very small percentage of autochthonous cultivars are used in local markets or in some forms of processing. The main reason for this is the small number of individual trees whose fruits are used for own household and their poor management. In order to popularize the production and sale of autochthonous sweet cherry cultivars, during this research was perform the basic pomological measurements of the five most common autochthonous sweet cherry cultivars in the Banjaluka region (Ašlamka, Banjalučka crnica, Bjelica-Biljur, Cipov and Crveni hrušt). Pomological (the weight and dimensions of the fruit, weight and dimensions of the pit, dimension of the stalk and the firmness of the fruit flesh) and chemical (total soluble solids content of the fruit) fruit characteristics were determined. Results showed differences in investigated parameters between the cultivars.

Our objectives were to characterize the quality and maturity changes of peach [Prunus persica (L.) Batsch.] fruit cvs. O'Henry and Nos 21 during maturation and ripening and to identify harvest maturity indices by relating nondestructive and destructive variables. After fruit set, 400 fruit of similar diameter and tree position were tagged to follow maturation and ripening on the tree. During commercial harvest, 48 fruit were ramdomly harvested every 4 to 6 days. Ethylene evolution rate (EER) at 20 °C, fresh weight, and peel ground and cover color (L*, a*, b*, C* and Hue value) were measured to all 48 fruit. Flesh color, firmness at several fruit points, soluble solids (SS), pH, titratable acidity (TA), and SS/TA ratio were measured only to 24 fruit, and the rest were held for up to 7 days at 20 °C as a ripening period to measure the same characteristics previously mentioned. Pearson correlation coefficients were determined between variables to explore possible harvest maturity indices. The most significant changes occurred in EER and ground color (a* value) for both varieties and fresh weight only for cv. O'Henry. For `O'Henry' peaches the highest correlation (P < 0.001) was obtained between EER-suture firmness (r = -0.61). For cv. Nos 21 the highest correlation was between EER-shoulder firmness (r = -0.69). It was also found that fruit softening occurred mainly in the fruit shoulder for both cultivars. Therefore, no harvest maturity indices could be established for these cultivars.

The effects of acetylene at 0, 0.1, 0.2, 0.4, 0.8, or 1.6 ml·liter-1 and exposures of 4, 8, 12, or 24 hours on ripening initiation In mangos (Mangifera indica L.) harvested at three stages of maturity were investigated: Ripeness was assessed before and after treatment in `Tommy Atkins', `Ruby', and `Amelie' mangos by analysis of texture, peel, and pulp color development, soluble solids concentration, and pH. The initiation of ripening depended on the acetylene concentration, exposure time to acetylene, the physiological maturity of the fruit at harvest, and on the cultivar. Changes that can occur during ripening bad different sensitivities to acetylene gas. Acetylene treatment of 0.1 or 0.2 ml·liter-1 for 24 hours at 25C initiated softening, but had no effect on the other ripening processes measured. All the ripening changes measured were initiated with a 24-hour exposure to 0.4 ml·liter-1 in `Tommy Atkins', while 0.8 ml·liter-l was required with `Ruby' mangos. There was an interaction between gas concentration and exposure time taken to Initiate ripening. The 0.8 ml·liter-1 acetylene treatment required 24 hours to initiate full ripening, while 8 hours were required with 1.6 ml·liter-l acetylene and 1.0 ml·liter-1 ethylene. Mature and half-mature fruit showed a similar response to gas treatments; immature fruit failed to show full ripening initiation, although softening and peel color development were enhanced.

Pear texture is similar to that of apple—firm and crispy—and is one of the potential alternatives to apple. However, at a crispy stage the taste is flat. Improving the taste of pears is considered the key to the success of pear salad. This study evaluated the effect of harvest maturity on the quality of pear salad. Fruit were harvested at commercial maturity or 1 month delayed. After 2 and 5 months (1 and 4 months for delayed harvested fruit) of storage at –1 °C, fruit were sliced (eight to 10 wedges per fruit), treated with an anti-browning dip, packaged in zip-lock bags (10 pieces per bag), and stored at 1 °C for up to 21 days. Delayed harvested fruit were larger in size (≈12.5% increase in weight), had lower flesh firmness (≈5 N decrease), lower titratable acidity content (≈20% decrease), and a lower phenolic content (≈45% decrease in pulp). There was no significant difference in soluble solids content. After 2 months of storage, ethylene production and respiration rate were initially lower in delayed harvested fruit in either the intact fruit or cut slices, but tended to similar after 7 days in storage. Sensory evaluation results show that about 80% of the panel preferred delayed-harvested fruit over commercial harvest, especially in terms of visual quality (71% to 92%), sweetness (75% to 93%), taste (69% to 92%), texture of skin (61% to 92%), texture of flesh (53% to 92%), and overall quality (73% to 92%) during 21 days of storage at 1 °C. After 5 months of storage, cutting surface was dry-looking in delayed harvested fruit. However, sensory evaluation showed panels still preferred the delayed-harvested fruit. The results indicate that salad quality of pears can be improved by delaying harvest.

Rain induced fruit cracking in sweet cherries takes 3 distinct forms: stem end cuticular fractures, calyx end cuticular fractures, and large cracks usually deep into the pulp on the cheek of the fruit. A 4-year study of sweet cherry varieties from a commercial orchard in Tasmania, Australia, was conducted to investigate the incidence of crack type and its relative likelihood, as influenced by both genotype and season. Although all 3 crack types developed in the 3-week period before commercial harvest, the extent of cracking was strongly controlled by season. While initial development of cracks coincided with rainfall, no relationship between amount of rain and incidence of cracking was found for crack type. A significant relationship was found between the tangential stress experienced by fruit skin from fruit at harvest maturity and the incidence of cracking recorded in the orchard. No other fruit property (pulp osmotic potential, fruit diameter, weight) explained the differences in incidence of cracking in the field between seasons or varieties. The results suggest that management of cracking needs to consider both varietal and seasonal factors. The development of turgor in maturing fruit also needs further investigation.

The research concerning the improvement of the cherry assortment, the cultivars’ quality and the avoiding of market crowding with fresh cherries only on a short term are extremely important objectives for cherries’ breeding. To accomplish some of these objectives, during 1981-2017, hybridization and selection of hybrids were performed at the Research Station for Fruit Growing Iași (RSFG Iași), in the N-E part of Romania, concluding with a series of promising hybrid selections. They have been grafted, planted and studied in trial fields. Therefore, during 1994-2016, RSFG Iași released 28 sweet cherry cultivars with high quality fruits and different maturation stages. In the studies performed during 2014-2017, there were analysed three new sweet cherry cultivars (‘Elaiaşi’, ‘Muşatini’ and ‘Croma’), obtained through controlled hybridization. The comparison of these new cultivars was performed against ‘Van’, used as control, this being a well-known cultivar in the orchards from the study area. Observations and measurements concerning the main phenological stages, natural fertility, physical features, organoleptic, quality and chemical traits of fruit were registered. The cultivars with the biggest dimensions of the fruits were ‘Elaiaşi’ and ‘Croma’ (with a weight between 8.9 and 9.4 g and a fruits’ diameter between 25.2 and 26.6 mm), having significantly larger dimensions in comparison with ‘Van’. In the new investigated cherry cultivars, the values of soluble solids content were comprised between 17.0 and 20.2 °Brix, titratable acidity was between 0.46 - 0.57 mg of malic acid 100 mL-1 juice and the total polyphenols content was recorded between 382.87 - 780.25 mg GAE 100 mL-1 of fresh juice.   ********* In press - Online First. To investigate phytonutrient accumulation in black raspberries, fruits of `Jewel' and `MacBlack' were harvested at stages from the onset of color development (S1) to ripe fruit (S7). S1–S7 samples were characterized for color reflectance and then frozen at –28 °C within an hour of harvest. Additional ripe fruit were maintained at 20 °C for 3 days to overripen (S8) before freezing. After storage, samples were analyzed for dry weight (DW), total soluble solids (TSS), fructose (FRU), glucose (GLU), and organic acid (ORG) contents; total phenolic (PHE) and anthocyanin (ACY) contents; individual cyanidin glycoside levels (ICG); and antioxidant capacity (FRAP and ABTS) by standard methodology. `Jewel' and `MacBlack' ripened similarly. Chroma values and DW percentage decreased while TSS levels, sugar contents (FRU+GLU), PHE, ACY, the ACY: PHE ratio, and ICG increased with progressive ripening stages (S1–S7). Values of PHE, ACY, and ICG were highly correlated (r < +0.95) with FRAP and ABTS values. ACY levels in S6 fruit were 18% to 23% less than those of S7; lower S6 ACY levels were associated with reduced antioxidant capacity in `MacBlack', but not `Jewel'. Overripened fruit (S8) exhibited increased DW (11% to 25%) and decreased sugar contents (16% to 17%), consistent with moisture and respiratory losses after harvest. After correction for these losses, S7 and S8 levels of PHE, ACY, FRAP, and ABTS were similar in `MacBlack'. However, as `Jewel' overripened, ACY levels and antioxidant activity increased 44% and 22% to 26%, respectively. Our data suggests that significant changes in the antioxidant behavior of black raspberries can occur during the periods surrounding peak ripeness.
