To investigate phytonutrient accumulation in black raspberries, fruits of `Jewel' and `MacBlack' were harvested at stages from the onset of color development (S1) to ripe fruit (S7). S1–S7 samples were characterized for color reflectance and then frozen at –28 °C within an hour of harvest. Additional ripe fruit were maintained at 20 °C for 3 days to overripen (S8) before freezing. After storage, samples were analyzed for dry weight (DW), total soluble solids (TSS), fructose (FRU), glucose (GLU), and organic acid (ORG) contents; total phenolic (PHE) and anthocyanin (ACY) contents; individual cyanidin glycoside levels (ICG); and antioxidant capacity (FRAP and ABTS) by standard methodology. `Jewel' and `MacBlack' ripened similarly. Chroma values and DW percentage decreased while TSS levels, sugar contents (FRU+GLU), PHE, ACY, the ACY: PHE ratio, and ICG increased with progressive ripening stages (S1–S7). Values of PHE, ACY, and ICG were highly correlated (r < +0.95) with FRAP and ABTS values. ACY levels in S6 fruit were 18% to 23% less than those of S7; lower S6 ACY levels were associated with reduced antioxidant capacity in `MacBlack', but not `Jewel'. Overripened fruit (S8) exhibited increased DW (11% to 25%) and decreased sugar contents (16% to 17%), consistent with moisture and respiratory losses after harvest. After correction for these losses, S7 and S8 levels of PHE, ACY, FRAP, and ABTS were similar in `MacBlack'. However, as `Jewel' overripened, ACY levels and antioxidant activity increased 44% and 22% to 26%, respectively. Our data suggests that significant changes in the antioxidant behavior of black raspberries can occur during the periods surrounding peak ripeness.

To investigate the variation in the phytonutrients of Cornelian cherry (Cornus mas L.), fruit was harvested at the blush (S1), red (S2), and ripe (S3) stages from five genotypes maintained at the Secrest Arboretum, Wooster, Ohio. The S1-S3 samples were characterized for color reflectance and then frozen at –28 °C. After storage, samples were analyzed for dry weight (DW), total soluble solids (TSS), sugars (FRU + GLU), organic acids (ORG), total phenols (PHE), total anthocyanins (ACY), individual anthocyanins (IA), hydroyzable tannins (HT), and antioxidant capacity (FRAP and ABTS). From S1 to S3, DW and TSS increased by 24% and 21%, respectively, and L, hue angle, and chroma values decreased. On a DW basis, all analytical parameters were significantly influenced by genotype and stage. The ACY levels rose 7-fold during ripening, but PHE contents declined by 10%. In ripe fruit, HT comprised the bulk of the PHE constituents, whereas ACY accounted for only 7.6% of PHE levels. Variability among genotypes was moderate for all ripe fruit parameters but ACY. Ripe fruit varied little in color parameters and ACY (fwb) and IA (fwb) were not significantly different among cultivars. The Cy 3-gal and pel 3-gal levels were negatively correlated. Antioxidant capacity declined 16% to 18% during ripening. Ripe fruit FRAP and ABTS values were higher than those reported for most fruits, averaging 596 ± 85 and 629 ± 85 μmol TE eq./gDW, respectively. ABTS and FRAP values were highly correlated with each other and with PHE and HT contents, but were loosely and negatively related to ACY levels. Considering our limited sample size, we concluded that the phytonutrient capacity of cornelian cherry is substantial, predominantly associated with tannins and moderately variable among genotypes.

Citrus fruit is preferred in the choice of consumers. Kumquat (F. margarita) is an unconventional citrus of increasing consumer interest because of its exotic flavor, and its functional potential that offers health benefits to consumers. It is a fruit traditionally consumed by whole fruit (peel and pulp), giving this fruit a distinctive flavor. For this reason, this study analyzed the physical, chemical, and nutritional characteristics of kumquat (peel and pulp). The physicochemical analysis was performed according to the Adolfo Lutz Institute. Analysis of moisture, ashes, macronutrients, and total dietary fiber was carried out according to AOAC. Minerals were analyzed by inductively coupled plasma optical emission spectrometry. Vitamins C and E, carotenoids and flavonoids were analyzed by HPLC. Phenolic compounds (Folin-Ciocalteu) and antioxidant capacity (DPPH) were determined by spectrophotometry. The kumquat had low pH, soluble solids content and low caloric value. It was a source of dietary fiber, minerals (K, Ca, P, Mg) and carotenoids; the most expressive was α-carotene (661.81 μg 100 g−1). The ascorbic acid concentration was 2326.24 μg 100 g−1. α-tocopherol (569.00 μg 100 g−1) was the most expressive component of vitamin E. There was a presence of apigenin and eriodictyol. The fruit (peel and pulp) has a high concentration of total phenolic compounds (98.55 ± 1.93 mg GAE 100 g−1) and good antioxidant capacity (62%) was found. Kumquat is a good source of fiber and vitamin A, and due to its antioxidant capacity and the presence of other essential and beneficial nutrients for a diet, consumption of kumquat can be suggested to complement the diet. This fruit is a viable food alternative, and its consumption should be encouraged, contributing a source of income, sovereignty, and food security.

ABSTRACT The objective of this work was to evaluate the physicochemical and microbiological characteristics, antioxidant capacity and phenolic compounds of organic cherry tomatoes grown under fertigation with organic dairy cattle wastewater (DCW) with different nitrogen rates. Tomato plants, grown in an agroecological farm in Seropédica, State of Rio de Janeiro, Brazil, were subjected to four different nitrogen rates (T1=0, T2=50, T3=100 and T4=150% of N). The moisture, lipids, ashes, protein and total fiber contents, soluble solids (ºBrix), reducing and total sugars (%), pH and total titratable acidity (mg NaOH per 100 g) were evaluated. The total phenolic content (TPC) and the antioxidant capacity was determined by the DPPH and FRAP methods. The different nitrogen rates (%N) affected the pH, protein and soluble solids contents. The increase in %N increased the antioxidant capacities, according to the DPPH assay, and TPC. On the other hand, the tomatoes under fertigation with the highest %N presented lower antioxidant capacities according to the FRAP assay. The fertigation did not affect the microbiological characteristics of the tomatoes, which presented fecal coliforms count <3 NMP g-1 and absence of Salmonella in 25 g.

Blueberry is a fruit consumed fresh and as an ingredient in formulations such as jam, juice, and wine. Wine is a widely consumed beverage and produced from different berries and fruits. Blueberry wine contains bio-compounds that could have a beneficial effect on health. Therefore, this study aimed to optimize blueberry wine by two response variables (total soluble solids and fermentation time) to obtain the highest alcohol percentage, pH, and lightness. In order to optimize the fermentation process, a central composite design was used. The optimized blueberry wine was obtained at total soluble solids of 25°Brix and fermentation time of 16 d. The optimized blueberry characteristics estimated were: alcohol percentage of 11.91%, pH of 2.98, and lightness (L*) of 26.22, and the optimized blueberry characteristics experimental were: alcohol percentage of 11.93±0.02%, pH of 2.97±0.01, and L* of 25.42±1.80. The optimized blueberry wine had a total phenolic content of 360.27±18.09 mg of gallic acid equivalents L-1, total anthocyanin content of 46.27±3.66 mg cyanidin-3 glucoside L-1, antioxidant capacity by ABTS and DDPH assays of 1,539.8±92.18 and 1,688.07±57.57 mM Trolox equivalent L-1, respectively. The results suggest that optimized blueberry wine can be considered a drink with potential health applications.

Abstract Pereskia aculeata Miller is a native cactaceae found from the Northeast to the South of Brazil. This plant is recognized by the high nutritional value of their leaves, which are the most used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of the ora-pro-nobis fruits are scarce. Therefore, the aim of this study was to determine the best harvest point of the ora-pro-nobis fruits to optimize the content of bioactive compounds and their antioxidant capacity. The fruits were manually harvested, defined by their peel colors in three maturity stages: unripe (green), intermediate (yellowish green), and ripe (yellow) stages. The following attributes were evaluated: soluble solids (SS), titratable acidity (TA), SS/TA ratio, pH, and content of bioactive compounds, such as total chlorophylls, carotenoids, yellow flavonoids, total phenolic compounds, and antioxidant capacity. There was a decrease in the content of chlorophyll followed by an increase in the of total carotenoids and yellow flavonoids, due to the maturity stage. For the total phenolic compounds, it was not observed significant difference between the stages. The antioxidant capacity was quantified by the ORAC method in lyophilized pulp in the unripe (1.95 mmol 100 g-1 trolox) and ripe (3.85 mmol 100 g-1 trolox) stages. The lowest contents were observed in the intermediate (0.80 mmol 100 g-1 trolox in lyophilized pulp) stage. The maturity stage significantly influenced the bioactive compounds of ora-pro-nobis, which presented higher values of total carotenoids, yellow flavonoids, and antioxidant capacity in ripe fruits.

Abstract Objectives Sweetpotato leaf (SPL) is a natural source of phenolic compounds with potential utility as an antioxidant. The study aimed to measure the impacts of the years on SPL total phenolic content and antioxidant capacity and to identify and quantify the individual phenolic compounds. Methods Sweetpotato leaves in 2018 (27 varieties) and 2019 (24 varieties) were grinded and lyophilized. Phenolic compounds were extracted with 70% ethanol from SPLs. Total phenolic content was determined by Folin-Ciocalteu method and antioxidant potential was determined by DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging assay. Five SPL samples with statistically highest antioxidant capacity were identified and quantified by HPLC. All statistical analyses were carried out by SAS software using ANOVA. Statistical significance was accepted at P &lt; 0.05. Results The average of total phenolic contents in 2018 SPL samples was 43 ± 13 mg gallic acid equivalent (GAE)/g dry weight (DW) SPL whereas in 2019, it was 53 ± 9 mg GAE/g dry weight SPL. Antioxidant capacity in 2018 was 110 ± 75 µmol Trolox equivalent (TE)/g dry weight SPL whereas in 2019, it was 132 ± 32 µmol TE/g dry weight SPL. SPL1 had the highest antioxidant potential, followed by SPL9, SPL3, SPL28, and SPL11 (P &lt; 0.05). The concentrations of major identified phenolics from the five SPL samples (#1, 9, 3, 28, and 11) in dry weight of SPL were: chlorogenic acid at 3.05 ± 0.35 mg/g, 5-monocaffeoylquinic acid (CQA) at 0.71 ± 0.06 mg chlorogenic acid equivalent (ChAE)/g, 4-CQA at 0.99 ± 0.07 mg ChAE/g, 3,4-diCQA at 1.22 ± 0.18 mg ChAE/g, 3,4,5-triCQA at 1.2 ± 0.18 mg ChAE/g, and 3,5-diCQA at 15.5 ± 4.05 mg ChAE/g. 3,5-diCQA, the predominant phenolic, was present in the highest amounts in SPL1. Conclusions The results showed that sweetpotato leaves collected in 2019 contained higher total phenolics and antioxidant capacity than the ones collected in 2018. Phenolic compounds have strong antioxidant activity in Arkansas-grown sweetpotato leaves. This study warrants further investigation of sweetpotato leaves to be utilized as an antioxidant. Chrysophyllum albidum (African Star Apple) fruit is an indigenous African fruit. The African Star Apple plant popularly referred to as the “alasa” tree grows widely in tropical Africa. Ripening influences biochemical processes and subsequently affects the nutritional and bioactive characteristics of the fruits. This study sampled Chrysophyllum albidum fruit of three maturity stages and determined the colour, proximate, total phenol and antioxidant characteristics of the fruits. Spectrophotometric methods were used in the determination of total antioxidant activity using 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, 2,2-azinobis,3-ethylbenzothiazoline-6-sulfonic acid (ABTS) and Ferric reducing ability of plasma (FRAP) assay. Significant differences (p<0.05) were observed in the colour of the fruit across all the ripening stages. The ripe stage of the fruit recorded the highest extent of lightness among all the other ripening stages. Both the ripe and over-ripe fruits appeared reddish in colour with the ripe fruit demonstrating a higher red intensity than the over-ripe fruit. The calculated metric chroma of the Chrysophyllum albidum fruits were in the range of 2.33-21.67 for the three ripening stages. Hue angle values recorded were in the range 46.46-92.00. Browning and colour indices for fruits of all the stages of development were of range 6.40-80.30 and -14.30-16.96, respectively. Proximate analysis of the three fruit categories showed that the unripe fruits had higher carbohydrate (69.27 %), crude protein (8.17 %), and crude fat (7.99 %) content relative to fruits which were ripe and over-ripe. The over-ripe fruit had higher crude fibre (7.36 %) and ash (3.86 %) content. Total phenolic content for the unripe fruit (20μg GAE/mg) was also higher than fruits of the other ripening stages. The antioxidant ability of the Chrysophyllum albidum fruit showed that the unripe stage recorded the highest DPPH (29.24 %) and ABTS (99.09 %) radical scavenging activity. The ferric reducing antioxidant potential of the fruit at different ripening stages was significantly different (p<0.05) with the unripe stage recording the highest potential. The unripe fruits demonstrated higher proximate and antioxidant composition than the ripe and over-ripe fruits. Extracts from the unripe fruit can serve as useful nutraceuticals in functional food formulations.

The haskap has been successfully cultivated in many geographical zones in Canada. We investigated whether the latitude has any impact on the anthocyanin accumulation and total antioxidant capacity in the haskap berry. The measured quality attributes were compared with that of the blueberry. Haskap ‘Aurora’ berries were collected from Yukon, British Columbia, Saskatchewan, and Nova Scotia in Canada, and blueberries were collected from Nova Scotia. Cyanidin-3-O-glucoside (C3G), the most abundant anthocyanin of haskap berry, the total anthocyanins, the total polyphenols, the soluble solids (°Brix), the pH value, the total antioxidant capacity, and the moisture content were determined. The results revealed that the total anthocyanin, total phenolic content, and antioxidant capacity of the haskap range between 88 to 273 mg C3GE/100 g fresh weight (FW), 256 to 442 mg GAE/100 g of FW, and 27 to 52 µmol TE/g FW, respectively. The liquid chromatography-mass spectrometry (UPLC/MS) analysis revealed that the C3G contained in the haskap berry is highly dependent on the harvest stage. Among the samples, the haskap berry harvested on July 19, 2019, from the Yukon had the highest C3G content. Interestingly, the total anthocyanin content of the haskap berry is comparable to that of the lowbush blueberry, but higher than the highbush blueberry. A systematic multi-year experiment employing many cultivars and growing locations is recommended to better understand the latitude effect.

AbstractThe study evaluated some agro-morphological (fruit weight, fruit flesh ratio, fruit skin colour, number of fruits per raceme, number of racemes per bush), biochemical (vitamin C, soluble solids content, organic acids), and bioactive (total phenolics, total anthocyanins, total flavonoids, and antioxidant capacity) characteristics of the fruit of a number of selected European Cranberrybush (Viburnum opulus L.) genotypes grown in the Sivas province of Turkey. To evaluate the antioxidant capacity, ferric reducing antioxidant power (FRAP) assays were performed. The results showed genotype-specific differences in most of the agro-morphological, biochemical and bioactive characteristics. The range of fruit weight, number of fruits per raceme, and number of racemes per bush was between 0.67 and 0.82 g, 40.7 and 57.1, and 470 and 581, respectively. The highest vitamin C and soluble solids contents were found in the fruits of genotypes SIV-9 and SIV-6 as 39 mg per 100 g and 12.6%, respectively. Tartaric acid was the main organic acid in all the genotypes; it ranged from 120 to 144 mg per 100 g of fruit FW. Total phenolic, total anthocyanin and total flavonoid contents ranged from 621 to 987 mg gallic acid equivalents per 100 g, 15 to 51 mg cyanidin-3-rutinoside equivalents per 100 g, and 202 to 318 mg rutin equivalents per 100 g, respectively. Genotype SIV-10 had the highest antioxidant capacity (34.90 μmol Trolox per g, based on FRAP assays). The present study shows the potential of the evaluated European Cranberrybush genotypes for improving the nutritional value through germplasm enhancement programmes.

This paper describes the plant-mediated preparation of silver nanoparticles with aqueous extract and infusion of Cistus incanus leaves. To evaluate aqueous extract and infusion antioxidant capacity and total phenolic content the DPPH and Folin–Ciocalteau methods were utilized. The antioxidant capacity and total phenolic content of extract and infusion were equal to 85.97 ± 6.54 mg gallic acid equivalents per gram of dry weight.; 10.76 ± 0.59 mg/mL and 12.65 ± 1.04 mg gallic acid equivalents per gram of dry weight.; 3.10 ± 0.14 mg/mL, respectively. The formed nanoparticles displayed the characteristic absorption band in the 380–450 nm wavelength range. The average size of particles was in the 68.8–71.2 nm range. Morphology and phase composition analysis revealed the formation of spherical nanoparticles with a face-centred cubic structure. Immune compatibility tests of nanoparticles and plant extracts showed no activation of the THP1-XBlue™ monocyte. Cytotoxicity tests performed with L929 mice fibroblasts showed that nanoparticles should be utilized at a concentration of 16 ppm. The minimum inhibitory concentrations determined with the microdilution method for nanoparticles prepared with plant infusion for S. aureus and S. epidermidis were 2 ppm and 16 ppm, respectively.
